학령전 아동의 식습관과 식이섭취평가에 관한 연구 (A Study on the Food Habit and Dietary Intake of Preschool Children)

  • This study was conducted to investigate the dietary habits and assess the dietary intake of preschool children. Food habit, preference and nutritional supplement status were investigated using a questionnaire answered by the mothers of 453 subjects aged 3 to 6 years old. Also, a dietary intake survey using a 24-hour recall method was performed by mothers of the children. It was found that 81.2% of subjects had milk, dairy products, cookies, fruit and bread between meals once or twice per day. As well, 60.3% of subjects had an unbalanced diet and 20.7% had an overeating habit. Thus, unbalanced diet was a serious problem for many of the subjects. Due to weight controls, digestion problems and allergies, 11.7% of subjects had special dietary consideration. And 26.4% of subjects were using nutritional supplements. From the 24-recall survey, it was found that all nutrient intakes were higher than the Korean RDA except calcium and vitamin A. Nutrient intakes for protein, calcium, phosphorus and vitamin B2 were significantly different by sex, and also increased with age but not significantly. Children received 35% of daily energy, 44% of daily fat and 52% of daily calcium from snacks, so snacks clearly play an important role in dietary intake. The average number of foods consumed per day by subjects was 17.6 and that dishes was 11.0. Most children consumed 4 or 5 food groups per day. In conclusion, the dietary intake of children aged 3 to 6 were deemed adequate judging from nutrient intake and dietary diversity. More attention should be paid to the nutritional value of snacks in this age group.

서울지역에 사는 유아의 식습관, 영양소 섭취와 영양소 질적 평가에 대한 연구 (A Study on Food Habits, Nutrient Intakes and Nutritional Quality of Preschool Children in Seoul)

  • The purpose of this study was to investigate food habits, nutrients intakes and nutritional quality of the preschool children living in Seoul. The study was performed by analyzing a questionnaire answered by the mothers of 233 subjects aged 2 to 6 years old. A three-day dietary intakes survey, using a 24 hour recall method was used by both the mothers and teachers of the children in day care centers. Twenty eight, 65.9 and $21.8\%$ of preschool children were underweight, normal and overweight or obese, respectively. It was found that $19.8\%$ of preschool children replied that they skipped breakfast sometimes. The major reasons for skipping breakfast were 'snacks' ($38.3\%$) and 'no appetite' ($32.6\%$). The proportion of subjects having unbalanced meals was $61.6\%$. From the 24-recall survey, it was found that all nutrients intakes were higher than those of the Korean RDA except zinc. The proportions of carbohydrate, protein and fat from total calories were 56,1, 17.2 and $30.7\%$. The P/M/S ratio was 0.62 : 0.86 : 1. Nutrient adquacy (NAR), mean of nu-trient adequacy ratio (MAR) and index of nutritional quality (INQ) were considered adequate. In conclusion, the dietary intakes of children aged 2 to 6 were assumed adequate judging from nutrient intakes, although some attention should be paid to fat intake in this age group.

  • This study was conducted to investigate the menu patterns consumed frequently in 5 Korean rural areas for all seasons, using 24-hour recall method with 1,185 subjects. The purpose of this study was to suggest the menu pattern in rural areas for the basis data of the nutrition education program and nutrition intervention project. The result were following : most frequently used menu patterns by the number of side dish were rice + soup + kimchi + 1 side dish> rice + soup + kimchi + 2 side dish> rice + soup + kimchi > rice + stew + kimchi + 1 side dish in the order. Most frequently used menu patterns by the kind of side dish were rice + soup + kimchi > rice + stew + kimch > rice + kimchi> noodle + kimchi in the order. In menu patterns showed higher frequency, Nutrient Adequacy Ratio(NAR) of all nutrients except Ca and Vit A was over 0.7. The Mean Adequacy Ratio (MAR) of rice + soup(or stew) + kimchi + 2(or 3) side dish was 0.76∼0.82. The number of dishes consumed in winter was the highest. The menu had traditional menu pattern based on cooked rice, Korean soup and kimchi in Korean rural areas. With these results, we can conclude that nutrient balances from the menu pattern can be improved, if the composition of main dish and side dish are adequate . For the nutrition program in the community menu patterns should be examined carefully. The result from this study can be used as basic data for nutrition education programs in Korean rural areas.

우리나라 농촌지역의 메뉴패턴에 관한 연구 (III) -끼니별, 연령별 비교 분석 - (The Study of Menu Patterns in Korean Rural Areas (III) - Compared by the Heal and Age -)

  • The purpose of this study is to compare menu patterns by the meal and age (10- 19, 20- 49, 50 - 69, 70 - 84 years old) in Korea rural areas. Frequently consumed menu patterns were investigated using the 24-hour recall method with 1,185 subjects in 5 Korea rural areas for the spring, summer, fill and winter. Results were as follow : most frequently used basic menu pattern, excluding side dish, was rice + soup in breakfast, and was only rice in lunch and dinner. Most frequent menu pattern by the number of side dish was rice + soup + kimchi + 1 side dish in the breakfast and dinner. The Mean Adequacy Ratio (MAR) in the dinner is higher than that of the breakfast. For the 10 - 19 and 70 - 84 years old, frequently used menu pattern was rice + stew + kimchi + 1 side dish. Most frequently used menu patterns, was rice + soup + kimchi + 1 side dish for the 20 - 29 years old, was rice + stew + kimchi for the 50 - 69 years old. MAR with the same menu pattern in 10 - 19 years old is higher than that of 70 - 84 years old. Intake frequency of menu pattern including noodles was higher in 10 - 19 and 20 - 49 years old than that of the other age groups. With these results, for the nutrition program in the community menu patterns should be carefully examined by the meal and age. The result from this study can be used as basic data for nutrition education program in Korean rural areas.

  • This study was conducted to investigate frequently consumed menu patterns by the area and season, using the 24-hour recall method. Subjects were 1,041 living in five different Korean rural areas for the spring, autumn and winter. The purpose of this study is to suggest the menu pattern in rural areas for the basic data of the nutrition education program and nutrition intervention project by the area and season. The result are following : Most frequently used basic menu patterns, excluding side dishes, were rice+soup in Yeoju, Hoensung and Jungup, rice+stew in Ulsan, and only rice in Chungju. The most frequent menu pattern by the number of side dish was rice+soup+kimchi+1 side dish in Yeoju and Ulsan were rice+stew+kimchi in Hoengsung, and was rice+soup+2 side dish in Chungju and Frequently used menu patterns by the kind of side dish weer rice+soup+kimchi>rice+stew+kimch>rice+kimchi>noodle+kimchi in the order The most frequent menu pattern was rice+soup+kimchi in spring and autumn, and was rice+stew+kimchi in winter. The mean adequacy ratio(MAR) in spring and autumn was higher than that in winter. MAR in Ulsan is higher than that of other areas. With these results, we can conclude that there are difference in menu pattern by the season and area. For the nutrition program in the community, menu patterns should be carefully examined by the season and area. The results from this study can be used as basic data for nutrition education program in Korean rural areas.

중국 연변 조선족 성인과 한국 구리지역 성인의 영양소 및 식품섭취 비교 평가 (Comparative Assessments of Dietary Intake of Korean-Chinese and Koreans)

  • This study was conducted to assess dietary intake and quality obtained by 24-hour recall method between Korean-Chinese in Yanbian, China(Korean-Chinese) and Koreans in Kuri, Korea(Koreans). The subjects consisted of 730 Korean-Chinese and 696 Koreans. Mean daily energy intake of Korean-Chinese was 1,788kcal and that of Korean was 1,844kcal. Proportions of energy intake from carbohydrate, fat, and protein were 62.6: 16.9: 14.2 for Korean-Chinese and 65.4: 16.3: 14.4 for Koreans. Nutrient intake levels of Koreans were higher than those of Korean-chinese in most nutrients. Calcium and vitamin $B_2$ intakes as percent of Korean RDA were less than 60% in Korean-Chinese. Koreans consumed calcium and vitamin A in the level less than 80% of Korean RDA. Iron intake level of Korean females was less than 75% of Korean RDA. Korean-Chinese consumed 90.4% of food from plant origin, and Koreans consumed 82.5% of food from plant origin. Mean dietary diversity score(DDS) of Korean-Chinese, $3.00{\pm}0.39$, was significantly lower than that of Koreans, $3.73{\pm}0.76(p<0.05)$. Mean dietary variety score(DVS) of Korean-Chinese, 13.6, was significantly lower than that of Koreans, 20.1(p<0.001). According to these results, some adults in the both Korean-Chinese and Koreans did not consume enough nutrients, especially calcium and vitamin $B_2$ intake for Korean-Chinese and calcium and vitamin A intake for Koreans. Dietary qualities of Korean-Chinese subjects and Korean females were not adequate. In the future, further research to promote dietary quality of Koreans including Korean-Chinese must consider the results of this study.

정상체중 성인과 과체중 성인의 에너지 섭취량, 휴식대사량, 활동대사량 비교연구 (A Comparison of Energy Intake and Energy Expenditure in Normal-Weight and Over-Weight Korean Adults)

  • The purpose of this study was to compare the energy expenditure and energy intake of normal-weight and overweight Korean adults. We recruited 242 adults to determine resting energy expenditure, physical activity and energy intake. Resting energy expenditure was measured by indirect calorimetry. Energy intake for consecutive two days was assessed by 24 hour recall method. Daily activity pattern for 24 hour was collected from each subject. Body weight, lean body mass and percentage body fat were measured by INBODY 3.0. The subject were divided into normal ($20\leqBMI$ < 25) and overweight ($BMI \geq 25$) groups by BMI. There was no significant difference in intake of energy between two groups. Energy intake of each group was lower than the 7th Korean RDA of energy. Overweight subjects showed significantly lower REE/kg body weight. However, REE/kg lean body mass (LBM) did not differ between the two groups. Total activity energy was significantly higher in the overweight group compared to the normal group. Daily activity coefficient of overweight group in male was lower than that of normal group. Daily activity coefficient was almost same in two female groups. LBM was highly correlated with REE and total energy expenditure. We concluded that the overweight group consumed more energy than the normal group due to the heavier body weight.

재미 한인을 위한 식이섭취빈도 조사 설문지에 관한 연구 (Development of Food Questionnaire for Korean Americans)

  • This study was conducted to develop a food frequency questionnaire for an epidemiological study of dietary patterns and nutrient intake among Koeran American. A random sample of 101 Korean Americans between the ages of 17 and 71 residing in New York and New Jersey was interviewed by the method of 24-hour dietary recall. The foods Korean Americans consumed most frequently were rice (91% of the population), kimchee (81%), coffee(59%), bread(49%), apple(45%), bean sprouts (33%), milk (30%), dried anchovies (27%), eggs(27%), juice (26%), bulgogi, and soybean paste soup (24%, equally. The classification of food items standardized portion sizes were according to both Block's questionnaire and the standardized portion sizes by the Korean Nutrition Association. The value of this food frequency questionnaire is that it can accurately estimate dietary food patterns and nutrient intake among Korean Americans for epidemiological studies. It could also potentially be modified to study the relationship between specific diseases and food intake in the future.

Dietary Thiamin Intake and TPP Effect of Elderly Women

  • The present study was conducted to assess the dietary and nutritional status of thiamin in fourty-two elderly women. Dietary intake was determined by 24hour recall method and nutritional status of thiamin was determined by measurement of transketolase activity in erythrocytes. Average dietary intake of energy and thiamin were found to be low, and not more than 78% and 63.2% of Recommended dietary allowances(RDA) respectively. Transketolase activity in erythrocytes was distributed in the range of 0.227-0.589mU/mgHb and the mean value and 0.434mU/mgHb. The mean value of Thiamin pyrophosphate effect(TPP effect) was 24.0% and the range was from 9.36% to 83.9%. It appeared that 95% of 42 elderly women were severely or marginally deficient in thiamin status, showing 22 persons to be above 20% and 18 persons to be 15-20% of TPP effect. Transketolase activity and TPP effect did not show any significant correlation with dietary thiamin intake.

칼슘강화 메뉴 첨가에 의한 학교급식 식단 조정이 여고생의 영양소 섭취 개선에 미치는 효과 (Effect of School Lunch Menu Intervention through Calcium Enriched Menus on Nutrient Intakes of High School Girls)

  • This study was conducted to improve the nutritional status of high school girls via lunch menu intervention. Surveys were carried out twice to evaluate basal status and status after lunch menu intervention. In the first survey nutrient intakes of 24-hour and school lunch were each estimated by 24-hour recall dietary survey and self-recording, respectively. Calcium intake was the lowest among nutrients, and stir-frying was the most preferred cooking method. Five dishes of school lunch menus which were included in the first survey were replaced with recipes containing foods with higher calcium level; anchovy stir-fried with red pepper paste, anchovy stir-fried with almond, pork stir-fried with shredded kelp, crab meat soup, and tteokbokki with cheese. In the second survey calcium intake from school lunch was significantly (p < 0.001) increased from 45.5% to 50.2% of one thirds of recommended intake (RI) after calcium enriched lunch menu intervention. Intakes of vitamin A and E were also significantly increased, whereas those of energy, thiamin, and vitamin C were decreased. Index of nutritional quality values of nutrients of 24-hour intakes (except thiamin, vitamin B6, vitamin C) is increased by intervention; however, those of calcium, folic acid, iron are still very low. Even though this study shows a possibility of improving nutrient intakes of students through school lunch menu intervention, lunch intervention by itself is not enough action to improve nutritional status of micronutrient for adolescents.
