Change of Nucleotides, Free Amino Acids in Kwamaegi Flesh by Different Drying for Pacific saury, Cololabis saira (건조조건에 따른 꽁치과메기의 핵산류, 유리아미노산의 변화)

  • New drying method was tested comparison with a traditional one used for production of Kwamaegi, semi dry pacific saury in east coast area of Kyungbuk province. During 15 days of total drying period, change in nucleotides and free amino acids were measured in edible portion of pacific saury from different dry methods, natural(traditional) and artificial method. ADP and AMP detected in raw fish were decrease while IMP, inosine, hypoxanthine increased during drying period. K1 values expressed as(Hx+HxR$\times$100/Hx+HxR+IMP) increased gradually throughout drying period, indicating the decline of freshness by drying. Freshness judged by change in nucleotides and related compounds was better in samples from artificial drying than from natural one. Special flavors of Kwamaegi were regarded to be synergistic actions of IMP and some amino acids. Content of total free amino acids of raw fish comprised 2.9g by weight(100g) and sum of glutamic acid, aspartic acid and histidine was over 34% of total amino acid content. Glutamic acid content. Glutamic acid, aspartic acid contents were reduced rapidly from 3rd to 9th day more decrease by artifical drying than by natural drying. Lysine content were gradually increased under two different drying conditions and threonine didn't change by two drying conditions.

셀레늄 급여원에 따른 쇠고기의 육색 안정성 비교 연구

  • 유기셀레늄급원을 달리하여 쇠고기 육색 안정성에 미치는 영향을 분석한 결과는 다음과 같다. Myoglobin의 함량은 대조구와 시험구에서 각각 6.39%, 14.18%로 대조구가 시험구에 비하여 낮은 결과를 보였으며, Oxy-Myoglobin의 함량은 반대로 대조구 89.07%, 시험구 83.47%로 시험구가 대조구에 비하여 낮은 결과를 보였다(p<0.05). 그러나 Met-myoglobin 함량은 대조구가 4.56%이였고 시험구가 2.35%로 대조구가 높은 결과를 보였다. 보다 정확한 결과를 평가하기 위해서는 시료를 Met화 시킨 후 측정해 볼 필요성이 대두되어 도축후 $4^{\circ}C$에서 14일 및 21일간 숙성한 시료를 $20^{\circ}C$에서 48시간 산화시킨 후 측정 육색소 화학적 조성을 비교한 결과, 육색소 화학적 조성을 비교한 결과로 Myoglobin 함량은 저장 14일차와 21일차에서 유의적인 차이를 보이지 않았으나, Oxy- myoglobin은 저장 14일차와 21일차 모두 유기셀레늄 강화 버섯 폐배지 급여구가 대조구와 무기셀레늄 급여구에 비하여 높은 결과를 보였다. Met-myoglobin함량에 있어서는 대조구와 무기셀레늄구가 유기 셀레늄구와 유기셀레늄강화 버섯 폐배지 급여구에 비하여 높은 결과를 보였다(p<0.05). 유기셀레늄 강화 버섯 폐배지 급여구가 대조구나 유기셀레늄구에 비하여 Oxy-myoglobin production이 유의적으로 높았으며, Met-myoglobin Activity는 유기 셀레늄 급여구가 가장 높았으며, 그 다음으로는 유기셀레늄강화 버섯폐배지 급여구가 높았다(p<0.05). 이러한 결과는 소매상품 으로 제조 판매시 Oxy-Mb이 Met-Mb으로의 전환을 억제하여 이상적인 육색을 장시간 유지할 수있을 것으로 판단된다.조직감과 염도에서 매우 좋게 평가되었다. 이러한 결과는 제조 가능한 식염첨가최저수준은 0.5%이상임을 보여주었다. 따라서 로인 햄의 제조에 필요로 되는 식염의 첨가량은 0.5${\sim}$1.5% 범위로 평가된다. 차후의 연구로는 저염 로인 햄의 경우 품질의 저하를 보완할 수 있는 기능성 첨가물이나 가공기법이 필요할 것으로 보인다.97.22로 가장 낮았고, 기타 처리구는 1.19${\sim}$1.59의 처리를 보이고 있는데 비하여, 대조구(100) 대비 증체율에서는 생봉독 처리 2구에서 103.30으로 3.30%가 높았다.양성이 무엇보다 중요하다. 특히 지역자원 활용 소스 중심의 문화관린 산업의 seeds 발굴과 향토상품의 상품화와 네트워크 조직망 구축을 위한 지역중심의 복합 생활문화 공간이 필요할 것이며, 이를 촉진키 위한 mentor academy시스템 접근을 통해 점점 고령화되어 가고 있는 재래시장에 대해 차별적 특성이 반영된 종합적이고 체계적 접근 방법연구가 필요하다./TEX> 자체기술개발, 선진기술 도입, 산업간 및 산업내 기술확산, 국제기술협력 ${\rightarrow}$ 기술혁신의 촉진 ${\rightarrow}$ 총요소생산성과 기업경쟁력(자원 및 역량, 프로세스 경쟁력, 품질경쟁력, 시장경쟁력, 고객성과, 시장성과, 재무성과)의 제고 ${\rightarrow}$ 가격경쟁력(임금, 금리, 물류비용, 환율 등)과 비(非)가격경쟁력(디자인, 에프터서비스, 품질, 운송 등)의 제고 ${\rightarrow}$ 국가경쟁력의 제고 ${\rightarrow}$ 국제수지 흑자 ${\rightarrow}$ 성장 ${\rightarrow}$ 물가 및

Geographic Variation in Needle Characteristics of Pinus densiflora in Korea (우리나라 자생 소나무의 지역에 따른 침엽특성 변이)

  • This study was carried out to investigate geographic variation in needle characteristics of Pinus densiflora, one of the most economically important tree species in Korea. Needles were collected from 35 natural populations and their morphological and anatomical characteristics were studied. ANOVA showed statistically significant differences among populations as well as among individuals within populations in needle length, needle width, number of stomata row, density of stomata in $0.25mm^{2}$, number of serrations in 0.5mm, and number of resin ducts. In all these traits, variance components among individuals within populations were larger than those among populations. The density of stomata in $0.25mm^{2}$ increased as the latitudes and elevations of the populations increased, while the number of serrations in 0.5mm decreased as the decrease of latitudes and elevations. The number of resin ducts was higher in inland populations than in coastal populations. The resin duct index appeared to be higher in western populations than in eastern populations. Cluster analysis based on morphological characteristics divided populations into three groups. The third group was composed of populations selected from the Taebaek mountains. The number of serrations in 0.5mm of this group was lower than that of other two groups, while the density of stomata in $0.25mm^{2}$ was higher.

A Study on the Korean Local Foods for the Construction of a Traditional Korean Food Data Integration System (한국 전통음식 통합 검색 시스템 구축을 위한 향토음식 연구)

  • This study was conducted to construct database of Korean local foods, and to investigate the total kinds of local foods using a traditional Korean food classification system. A total of 2,137 kinds of local foods were investigated. The results for 10 local provinces are as follows. Seoul had a total of 116 kinds of local foods that were investigated including 13 main dishes, 41 side dishes, 22 kinds of ttdok lyou, 20 kinds of hangwa lyou, and 19 kinds of emuchong lyou. The Gyeonggi local foods totaled 209 kinds: 37 kind main dishes, 130 kind side dishes, 26 kinds of ttdok lyou, 7 kinds of hangwa lyou, and 9 kinds of emuchong lyou. The Gangwon local foods included a total of 198 kinds: 37 main dishes, 111 side dishes, 35 kinds of tteok lyou, 8 kinds of hangwa lyou, and 7 kinds of eumchong lyou. The Chungbuk local foods included a total of 123 kinds: 19 main dishes, 68 side dishes, 17 kinds of tteok lyou, 14 kinds of hangwa lyou, and 5 kinds of eumchong lyou. The Chungnam local foods totaled 185 kinds: 26 main dishes, 124, side dishes, 16 kinds of tteok lyou, 14 kinds of hangwa lyou, and 5 kinds of eumchong lyou. The Gyongbuk local foods investigated included 314 kinds: 52 main dishes, 170 side dishes, 52 kinds of tteok lyou, 21 kinds of hangwa lyoll, and 19 kinds of eumchong lyou. The Gyongnam local foods totaled 342 kinds: 63 main dishes, 234 side dishes, 16 kinds of tteoks lyou, 15 kinds of hangwa lyou and 14 kinds of eumchong lyou. The Jeonbuk local foods totaled 146 kinds: 25 main dishes, 85 side dishes, 18 kinds of tteok lyou, 14 kinds of hangwa lyou, and 4 kinds of eumchong lyou, The Jeonnam local foods totaled 309 kinds: 32 main dish, 207 side dishes,20 kinds of tteok lyou, 27 kinds of hangwa lyou, and 23 kinds of eumchong lyou. Finally, the Jeju local foods totaled 195 kinds: 36 main dishes, 123 side dishes, 19 kinds of tteok lyou, 10 kinds of hangwa lyou and 7 kinds of eumchong lyou.

Development of Jeju Local Food Tour Package and Economic Value Estimation based on Contingent Valuation Method (제주 향토음식을 활용한 음식관광상품 개발 및 CVM을 적용한 경제적 가치 평가)

  • Local food reflects the identity and image of a specific region. It is also a core element for determining tourists' experience of a region. The purpose of the present study was to develop a Jeju food tour package using local foods and estimate the economic value of the suggested tour package using Contingent Valuation Method (CVM). Five food tour packages were developed by researchers. In order to modify and measure the value of each package, an expert panel survey was conducted, and 'package 5' was selected as a food tour scenario for the tourist survey. A survey was conducted on 295 domestic tourists who visited Jeju within the past 10 years in order to evaluate the economic value and feasibility of the Jeju food tour package. A total fo 72.9% of respondents answered that they were willing to pay for the Jeju local food tour, and the willingness to pay (WTP) range was between ₩45,000 and ₩105,000. The primary factors correlated with WTP was food expenses, followed by leisure experience expenses, interest in local foods, education level, visit frequency and age. The WTP of the Jeju local food tour was calculated with the significantly affected factors using stepwise regression model. The result of the present study reveal that tourists' WTP increased with higher food expenses, education level, and age group. The average value of food expenses, education level, and age were substituted into the formula derived from the regression analysis, yielding 58,385.752 KRW as the WTP. The expected economic value created by exploiting the Jeju local food tour was shown to be 700 billion KRW per year, calculated by multiplying WTP of the food tour packages by the number of tourists. This study examined the feasibility and plan of the food tour package to increase the economic value of Jeju local food. In the case of the culinary tour program based on Jeju local food launching, the estimated economic effect was great. Therefore, in-depth research to merchandise the Jeju local food tour program is needed.

A Study on the Damyang Area Restaurants in Bamboo food village (향토음식 특화 거리의 관광상품화와 활성화 방안 연구 - 담양 죽순 푸드빌리지를 중심으로 -)

  • This study intends to provide preliminary data for improving dining experience in the restaurants of Bamboo food village and help draw up guidelines for the improvement of these dining venues by surveying customer perception and satisfaction in 15-restaurants of the food village. The restaurants were surveyed mainly for satisfaction of the menu, especially, on the signature dishes of Damyang, "ddeokgalbi" (grilled short rib balls) and "daetongbab"-the grilled short rib balls and bamboo rice. The two dishes were more liked by people in the the 20- to 29-year age group with a score of 3.92 and 4.11, respectively. Although the 30-49 age group showed the highest satisfaction score on the fixed price menu, there was no statistically significant difference. The age group of 20-29 also showed the highest satisfaction on plating and table setting with a score of 4.09 and 4.04, respectively, and there was significant difference among age groups in this regard (p<0.05). All the age groups surveyed answered "time-honored taste" should be captured when working on menus, which suggests it should be the first choice for the restaurants in the food village when they develop their menus. When it comes to the restaurant environment, satisfaction on sanitary conditions was significantly different among the groups with a score of 4.21 given by 30-49 age group and 3.88 by the 50 and over group (p<0.05). In the category of service satisfaction, the two aforementioned age groups again showed significant difference in catering to customer needs with a score of 3.99 and 3.63, respectively (p<0.05), whereas welcoming customers and serving food was scored without statistical difference by age. Being asked what needs to be done to strengthen competitive advantage of the restaurants, all the age groups answered "taste" would matter the most while the 20 to 29 and 30 to 49 age groups picked "hygiene" and the 50 and over selected "table setting and ambience" next, which was statistically different with a p value of <0.05. Regarding the competitive advantage of the Korean restaurants in Damyang Bamboo food village, the first two younger groups (20 to 29 and 30 to 49) chose "table setting and ambience" and the eldest (50 and over) age group answered "location wise advantage," indicating significant difference by age. More than 80 percent of the people surveyed were willing to revisit the venues, which suggests improving restaurant environment in Bamboo food village and offering customers a better experience are very likely to build a image of culinary tourism for Damyang.

  • This study was analyzed the destination image and tests of image value of forest region festival by segmenting the market. A field survey was conducted during the Acasia-Honey Festival days in Chilgok, the famous acasia-honey products place, from May 12-15, 2001. In this study, 20 image items on five-point Likert scale were examined through factor analysis using a sample of 394 visitors. Four factors were identified as follows : environment, behavior-facilities, festival programs, and products. The author observed if there were statistically significant differences of destination images between the first-time and the repeat visitors, between residents and non-residents, and between purchasers and non-purchasers of acasia-honey products. The results indicated that repeat visitors and residents group had a more positive image of behavior factor such as hospitality and information for festival. And, the author found that purchasers of acasia-honey products had more positive image of product as well as environment factor such as special atmosphere, nostalgia, natural attractions, local culture, and novelty. For these results, it is possible to conclude that local government must effectively provide the festival visitors with well-defined information such as festival contents and schedule, also, develop the programs involved unique attributes of forest region festival to improve festival image.

Consumer Characteristics Related with Choice of Eco-Friendly Functional Food (생태 친화적 기능성식품 선택과 관련된 소비자 특성 분석)

  • Consumers' growing interest in the environment has recently led them to recognize the importance of their dietary life and sustainable consumption. Thus, there is an increasing necessity to identify consumers' response on the relationship between the consumption of functional food and their interest in helping environment. This research was conducted to analyze consumers' behaviors as related to Spirulina, an eco-friendly functional food brand, by subdividing markets according to consumers' food lifestyle. The results showed that consumers were categorized into 3 types (high involvement in diet, pursuit of safety in diet, and pursuit of convenience in diet), and there was a significant difference in the consumption behaviors of the functional food according to the 3 types. Their positive attitude towards functional food and interest in the environment led to changes of their actual purchasing behavior by increased purchase of Spirulina. Also, consumers who displayed high environmental involvement showed a more favorable attitude towards functional food. Therefore, to expand the market of eco-friendly functional food, it is necessary to subdivide the market and target the consumers who are highly involved with protecting the environment, and to execute marketing strategies for eco-friendly products, in order to increase the consumers' awareness about eco-friendly functional food.

Status of Exotic Plant Species in Gyeongju Yangdong Village (경주 양동마을의 외래식물 현황)

  • This study aims to examine the traditional living space to reflect the environment-friendly design methods and principles of reestablishment. To do so, this study carried on a related literature study and field survey. The traditional living space in terms of the environmental friendliness is reflected on site selection and space composition, and utilization of natural energy and natural materials. Focused on the Kwangajeong in Yangdong Village, this study is to identify eco-friendly techniques on the traditional living space. As a result, it shows that Kwangajeong with the side of the southeast in site selection had been considered in aspect of environmental control such as sunshine and solar radiation. Also building construction techniques had been used to minimize the variation of terrain. In aspect of environmental conservation, Kwangajeong had structurally arranged the gate, an inner yard and an inner floor to allow good ventilation. In aspect of space composition, Kwangajeong with the emphasis of scenic view had utilized the methods that attract external landscape through the control of its fences. Environment-friendly techniques and control principles in traditional space had been developed by a long experience through the long periods and the traditional techniques suitable for local climate and local environment have been developed. The technical development of these techniques to resolve the global environmental and energy issues and create a more pleasant living environment of human beings might be critical.

Study on how to vitalize the historical record management of the provinces (지방의 역사기록관리 활성화 방안 연구)

  • This study presents how to vitalize the record management of the provinces by investigating the current issues and by identifying the universality and the distinctiveness of the record management in local agencies. However, it only deals with the system of the record management, focusing on the history of the provinces. Although the related projects conducted by the provinces of Korea consist of various types, including publishing the local history, creating the activities of local cultural institutes, and collecting and organizing the historical records, these have not been active in many regions with insignificant achievements. In this regard, local self-governing bodies need to actively fulfill the duty of the management not only for the administrative archives but also for the historical archives by aggressively interpreting the associated parts suggested by the Act on the Management of Public Archives. Ultimately, it is proper to integrate theses two functions. Moreover, an effective collection is the core part of the record management of history. Therefore, a 'committee' with experts should provide in-depth views from planning to post-processing stages. Meanwhile, a consensus on the importance and the necessity of the historical archive management between owners and concerned parties should be formed during the collection process. In conclusion, each local autonomous entity should make sure of the active record management of history through establishing their own mid to long-term development plans, securing experts in archive management, as well as providing the service for record contents.
