The Characteristics of Sensory Evaluation by various Cooking Methods of Salted-Dried Flathead (II) (염건양태의 조리방법에 따른 관능적 특성(II))

  • The purpose of this study was to determine the best cooking condition for salted-dried flathead by sensory evaluation. Raw flathead and 3 different kinds of salted(2%, 4%, 6%)-dried flathead were cooked by various methods such as steaming, boiling, baking and different cooking times(5, 10, and 15min). The results of this study were as follows: 1. In steamed samples, the meaty flavor was significantly related with brown color, cooled level, and softness at 5% level. 2. In boiled samples, meaty flavor was significantly related with cooked level, moistness, and fishy odor at 5% level. 3. For broiled samples, meaty flavor was significantly related with fishy odor, meaty aroma, and bitter taste at 1% level. 4. The best cooking conditions determined by a quantitative descriptive analysis(QDA) were steaming 6% salted-dried samples for 5min, and boiling or broiling 6% salted-dried samples for 10min. The most favored cooking method was broiling. 5. In comparison of the samples by QDA, 2% salted-dried samples cooked 15 min gave better scores in the order of boiled > overall score > steamed > broiled, 4% samples cooked 5min were boiled > steamed > overall score > broiled, and 6% samples showed similar scores among all conditions. The 6% samples cooked for 5min gave high scores in 7 terms of QDA in steaming, and 6% samples cooked for 10min for boiled and baked.

A Research on Effect of Motion Modality on Aspects of Genre and Medium (모션의 양태성이 매체·장르에 미치는 효과 연구)

  • This study is regarding what motion modality has influences on aspects of genre and media. Nowadays, motion modality becomes an element which is actively manipulated in live actions as well as animations. And, it has been generally accepted that a strategy on manipulation of motion depends on matters of genre or medium. As respected, can we say the premise is correct? if it is, can we refine the premise more theoretically, without using the words, 'genre' or 'media' which have not been are not been defined on an academic aspect. I intend to discuss on this issue. I will speculate the issue of manipulation of motion modality on theoretical bases. According to McLuhan's hot/cool media theory and Bolter's oscillation theory, the effect of it turns out to be same as manipulation of sentience ratio of media readers, and the ideal result will be examined by an example analysis. In the analysis, I will explore what effects manipulation of motion has on several examples. Then, by examining what kind of correlation these effects has with media/genre positioning, I ultimately will evaluate the genre/medium-based determinism of motion modality, which is represented by a typical premise like "Animation is most realistic when it has the most animation-like movement." Conclusively I suggest a refined premise like the following. Modality of motion is a strategy depending on issues of genre, with no regard to issues of medium, and the issue of genre is a category which is positioned considering mixture ratio of sentience. With this reason, A strategy of modality of motion depends to sentience a certain sequence needs. So, motion modality becomes a strategy which has to be approached in functionality of genre rather than economic values which spring from technical devices like a motion capture.

On the 'realization' meaning of possibility expressions - '-ul swu iss-' and its counterparts in Japanese and Chinese - (가능 표현의 실현 용법에 대하여 - '-을 수 있-' 및 일본어·중국어의 대응 표현을 중심으로 -)

  • It is noted that generally speaking, the expressing of actualization or non-actualization of events is not the main role of possibility for the utilization of expressions. In spite of this fact, it is possible to see many examples in which possibility expressions represent actual events, and impossibility expressions represent a type of non-actualization in relation to events. This effect can be described as a semantic extension, by which the participant-internal possibility is extended to actualization due to participant-internal factors, and the participant-external possibility is extended to the actualization due to participant-external factors. When the related possibility expressions are used in this extended sense, they express the dynamic evaluative meaning of 'desirability' of the realized event, while it is determined that when the impossibility expressions are used in this extended sense, they are seen to express the evaluative meaning of 'regretfulness' about the non-actualization of the event. In Modern Japanese, it is noted that there are a few expressions of ability and possibility. They can be largely divided into four types of expressions, according to their origins or uses of expression, which are 'ability verbs', affixes '-れる/られる(-reru/rareru)', '-できる(-dekiru)', and '-得る(-eru)'. They can all express participant-internal possibility and participant-external non-deontic possibility. While 'ability verbs', affixes '-れる/られる' and '-できる' can express participant-external deontic possibility, '-得る' cannot. However, '-得る' is the only possible element to designate the event of a epistemic possibility. Also, the four types of expressions have the usage of conveying 'actualization/non-actualization,' as is the case of the Korean language. However in Japanese, in fact adjectives cannot be associated with 'ability verbs' or 'ability affixes.' Thus the expressions of 'regrets' should in that case depend on the use contexts, unlike the expression 'adj+-지 못하다' as noted in Korean. The ability and possibility in Modern Chinese are mainly expressed by means of the four auxiliary verbs '能($n{\acute{e}}ng$)', '会(huì)', '可以(kěyǐ)' and '可能 ($k{\check{e}}n{\acute{e}}ng$)'. '能' and '会' along with '可以' can all convey participant-internal possibility. In this way '能' and '可以' can express participant-external possibility. Only '会' and '可能' can express epistemic possibility. As for 'actualization,' among the four auxiliary verbs, only '能' can represent actualization. Also, among the negatives of the four auxiliary verbs, only '沒能' can represent non-actualization.

  • 원자력 발전소에서 대기중으로 방출된 방사성 물질의 이동 양태는 지형과 기상조건에 의해 크게 좌우되므로, 해안가에 위치해 있는 월성부지의 경우는 빈번히 발생하는 해륙풍 특성을 규명하여 이에 적합한 환경영향평가 및 비상대응체제를 구축해야 한다. 월성부지의 해륙풍 순환구조를 파악하기 위해 봄철 해륙풍 상층기상 특별관측을 월성부지를 중심으로 4개 지점에서 실시하였다. 관측결과를 분석하여 해륙풍이 방사성 물질의 대기확산에 미치는 영향을 분석하고, 해륙풍을 반영할 수 있는 새로운 환경영향평가 방법론을 고찰하였다.

A Study on the Modes of Human Communication Reflected in the New-style Novels of the Korean Enlightenment Era (신소설을 통해 본 개화기의 인간 커뮤니케이션 양태)

  • This paper analyzed the modes of human communication of the Korean enlightenment era through 9 new-style novels with the assumption that the fictitious world of novels reflect the social realities of that time. The most noticeable fact was that the communication environment of that time were remarkably diversified with the new media, such as newspaper, printed book, postal system, telegraph, telephone, and photo. But the communication of most people was mainly relied on traditional oral communication. In oral communication the hierarchical relationship and age were the most important variable as usual but the formality and etiquette were weakened than Late Chosun Dynasty. The distribution of written culture was enlarged especially by women and lower class. The contact with the foreign cultures which had become possible after the opening of ports brought about intercultural communication. In conclusion it can be said that the communication of people in the enlightenment era was mainly by oral communication but the reliance on the media was enlarged gradually.
