Development of Coffee Production and Land Mobility in Dak Lak, Vietnam (베트남 닥락지역의 커피재배와 토지유동성)

  • Vietnam is the second-largest coffee exporter in the world. Most of the coffee areas are concentrated in Dak Lak-a province of commercial agricultural production, making up 32.4% of the total coffee area in Vietnam. At present, coffee is the main income source for the province, with coffee accounting for 85% and 40%(2010) of the export value of the province and of the country, respectively. Although the rapid development of Dak Lak's coffee production significantly benefits the province and its coffee planters socioeconomically, emerging urgent problems such as land dispute among ethic groups need to be addressed. This paper aims to examine how coffee-production development in Dak Lak has affected land mobility. In addition, we consider how these changes have affected the livelihoods of the Kinh-the majority ethnic group in Vietnam-as well as the ethnic minorities. As a result, it is pointed out that the coffee development in Dak Lak creates the individual ownership on land. This ownership is more and more fortified when the encroaching land of the Kinh immigrants happens impetuously defying the customary law of the ethnic minorities.

Production of Bio-Carbon from Unused Biomass through CO2 Activation: Removal Characteristics of Formaldehyde and Acetaldehyde (미이용 바이오매스의 이산화탄소 활성화를 통한 바이오카본 생산: 포름알데하이드 및 아세트알데하이드 제거 특성)

  • In this study, bio-carbons were produced by activation process from unused biomass (Grade 3 wood pellet and spent coffee grounds) to determine the removal performance of formaldehyde and acetaldehyde. The activation experiments were conducted in a fixed bed reactor using CO2 as an activation agent. The temperature of the activation reactor and input of CO2 were 900 ℃ and 1 L min-1 for all the experiments. The maximum BET surface area of about 788 m2 g-1 was obtained for bio-carbon produced from Grade 1 wood pellet, whereas about 544 m2 g-1 was achieved with bio-carbon produced from spent coffee grounds. In all the experiments, the bio-carbons produced were mainly found to have micro-porous nature. A lower ash amount in raw material was favored for the high surface area of bio-carbons. In the removal test of formaldehyde and acetaldehyde, the bio-carbon produced from spent coffee grounds showed excellent adsorption performance compared with woody biomass (Grade 1 wood pellet and Grade 3 wood pellet). In addition, the comparative experiment of commercial impregnated activated carbon and bio-carbon produced from spent coffee grounds was conducted. In terms of formaldehyde removal performance, the commercial impregnated bio-carbon was excellent, while bio-carbon produced from spent coffee grounds was excellent in acetaldehyde removal.

  • 최근 석유공급 불안정성과 이산화탄소 배출 규제 움직임에 대응하기 위한 수단으로 바이오연료의 공급이 전세계적으로 증가하고 있다. 이와 같은 바이오디젤의 보급 활성화는 식물성 기름의 가격 상승과 수급 불안정 문제, 그리고 식량자원과의 충돌 문제를 야기하고 있다. 국내 바이오디젤 생산 원료로 사용되는 대두, 유채, 해바라기, 팜 등은 모두 식용시장과 수급 균형을 형성하고 있어 바이오디젤의 생산이 증가하게 되면 식용 오일 시장의 수급균형이 깨져 오일곡물 가격의 변동을 초래하게 될 것이다. 과거에는 수거비용을 들여 폐기하던 폐식용유 마저 이제는 돈을 주고 구입해야하는 실정에 다다랐다. 바이오디젤 생산비의 70~80%를 차지하는 원료유의 부족 현상에 따라 바이오디젤 업계에서는 soapstock, trapped grease, 폐식용유 등의 저급유지 활용 방안을 강구하고 있으며 자트로파와 같은 비식용 작물의 해외플랜테이션도 진행하고 있다. 본 연구에서는 커피찌거기에 남아 있는 오일을 속슬렛추출장치를 이용해 추출하고 전이에스테르화 반응을 수행하여 반응 특성과 커피오일 바이오디젤의 지방산 조성을 알아보고 바이오디젤 원료유로서의 사용가능성에 대해 알아보았다. 석유에테르를 용매로 속슬렛 추출장치를 이용해 추출시 원료대비 약 17%(w/w)의 오일을 추출할 수 있었다. 추출된 오일의 산가는 18.79mgKOH/g으로 매우 높아 직접 전이에스테르화 반응이 불가능하다. 고체 산 촉매 하에서 전처리 반응을 실시하여 유리지방산을 전환 제거한 후 염기촉매를 이용해 전이에스테르화 반응을 진행한 결과 약 80%의 바이오디젤(FAME) 함량을 얻을 수 있었다. 지방산 조성 분석 결과 리놀레익산(Linoleic acid, C18:2), 올레익산(Oleic acid, C18:1), 팔미틱산(Palmitic acid, C16:0)이 대부분을 차지하며 이 중에서도 리놀레익산이 44.17%로 가장 많은 함량을 보였다. 이는 커피찌꺼기 추출 오일이 바이오디젤 원료유로 활용 가능성을 나타내는 결과로, 색소성분 등의 불순물을 효율적으로 제거하여 증류정제 전단계에서의 바이오디젤 순도와 생산 수율을 증대시키기 위한 추가 연구가 필요한 것으로 판단된다.

Development of Substrates for the Production of Basidiocarps of Flammulina velutipes (팽나무버섯 자실체 생산을 위한 기질개발)

  • Agricultural and forest wastes were tested as substrate for the production of Flammulina velutipes. Among the meranti, pine tree, mixed sawdust, coffee waste and peanut hull tested, coffee waste was the best basal substrate for the production of basidiocarps. When various supplements, such as ricebran, brewer's grain, defatted corn flour, defatted soybean flour and defatted rapeseed flour were tested, defatted corn flour was chosen for the production of basidiocarps. Maximum yield of basidiocarps(129.38 g/bottle) was obtained from the mixed medium at 4 : 1 ratio of coffee waste and defatted corn flour.

Global Value Chains and Creating Shared Value in Vietnamese Coffee Frontier (베트남 커피변경지역의 글로벌 가치사슬과 공유가치 창출)

  • The main aim of the research attempts to identify value relations appropriated and realized in the coffee frontier of Vietnam by investigating the ways in which it is integrated into coffee global value chains driven by multinational companies, and to provide some implications of the integration of the frontier into sustainable coffee global value chains for creating shared value in Dak Lak, Vietnam. Recently Dak Lak has gone through the transition of value relations from exploitative value chains based upon conventional coffee production into shared value chains relied upon the production of sustainable or certified coffee in Dak Lak. The transition has been expected to result in sustainability in the creation of value by enhancing regional competitive advantages and regional bargaining power in global value chains driven by multinational companies. However, the reality has shown the intensification of hierarchical profits allocation among stakeholders such as farmer, middlemen, and multinational companies in the region. The main reasons for this could be found in two perspectives. Firstly, the formation of exclusive relations among farmers, middlemen, and processors has led to stakeholders to secure market, but resulted in the intensification of hierarchy among them in global value chain, because multinational companies could control indirectly over the farming system through exclusive middlemen. Secondly, social and ecological costs imputed by multinational companies to coffee farmers in the name of creating shared value has deteriorated the economic profits of stakeholders such as farmers and middlemen. As a result, it has led to the configuration of systematically hierarchical and subordinated global value chain in Dak Lak.

Larch Pellets Fabricated with Coffee Waste and the Commercializing Potential of the Pellets (커피박과 낙엽송 목분을 이용한 펠릿 제조 및 이에 대한 상용화 검토)

  • This study was conducted to suggest the effective management and recycling processes of coffee waste, which can be easily obtained from coffee shops and coffee-related products industries. Prior to the fabrication of pellets, the potential of coffee waste as a raw material of pellet was investigated through the examination of its chemical compositions and fuel characteristics. Major gradient included in coffee waste was holocellulose, followed by fat/oil and protein. Coffee waste contained a small quantity of ash (0.7%), such as calcium, sodium, potassium and magnesium. Interestingly, coffee waste was easily dried probably due to its porous structure. Pellets fabricated with coffee waste and larch sawdust showed good fuel characteristics, such as moisture content, ash content, density and durability. The pellets exceed greatly the minimum requirements of $1^{st}$-grade wood pellet standard designated by National Institute of Forest Science (NIFOS). Particularly, the high calorific value of coffee waste showed the potential as a raw material of pellet. However, owing to high nitrogen and sulfur contents, coffee waste is like to be used as a raw material of wood pellet for combined heat and power plants equipped with a reduction system of $NO_x$ and $SO_x$ gases. On the other hand, 91 wt% larch sawdust and 9 wt% coffee waste are required to fabricate the $1^{st}$-grade wood pellets designated by NIFOS. Pellets fabricated with the conditions are estimated to have nitrogen content of 0.298% and sulfur content of 0.03%. Lastly, if amounts of coffee waste and sawdust in the production of wood pellets are adequately adjusted according to its purchasing price, the manufacturing cost of pellet can effectively be reduced. In addition, it is expected tp prepare the effective recycling process of waste and to relieve the environmental burden with the reduction of waste from the commercialization of coffee waste/larch pellets.

Expansion of Coffee Plantation and Institutionalization of Customary Land Ownership - Case study of Dak Lak Province in Vietnam (베트남 중부고원지대 커피재배지역의 확대와 토지소유관행의 제도화: 닥락성(省)을 사례로)

  • This paper aims to clarify the process of institutionalization of customary land ownership along with the expansion of coffee plantation in Dak Lak Province, Vietnam. Vietnam is the second-largest coffee exporter in the world. Most of the coffee areas are concentrated in Dak Lak-a province of commercial agricultural production. The expansion of coffee plantation in Dak Lak have brought a severe competition of land resources, and resulted in the transition of land ownership scheme from customary commons by ethnic minorities to those of exculsive private assets which is secured by the state. Institutionalization of customary land ownership in Dak Lak, however, was differently happened according to the geography from the center of state power as well as the value of land resources. In this paper, the authors argue that institutionalization of customary land ownership in Dak Lak was a result of compromising between statemaking process in the frontiers and "everyday resistance" of ethnic minorities, comparing 3 geographically different ethnic minorities' communities.

A Study of the Characteristics of Different Coffee Beans by Roasting and Extracting Condition (종류별 커피의 볶음 및 추출조건에 따른 품질 특성에 관한 연구)

  • Caffeine is one of the most well known stimulants which can potentially increase mental performance, release fatigue and decrease depression. Green beans from different soils and climates contain different levels of caffeine, and as well as extracted coffee with different roasting and extracting methods. An investigation looking at pH, acidity, extractable solid and caffeine contents was assessed according to roasting and extracting conditions of various coffee beans. Brazilian coffee beans did not show much variation in pH with respect to roasting and extracting temperature, however, acidity increased in low roasting and extracting temperatures. This was however most prominently observed in Ethiopian and Indonesian coffee beans. The large expansion of coffee bean cells renders them highly porous to the passage of water, consequently extracted solids were found to increase with increasing temperature. This was especially apparent in Columbian coffee which had the highest extracted solids. The amount of caffeine extracted from coffee beans also increased with the higher temperature extraction. The Indonesian and Vietnam robusta coffee varieties showed the highest caffeine content.
