  • 국내 커피자판기 시장의 변화 동향이 심상치 않다. 기존 인스턴트커피 시장의 한계를 극복하고 새로운 원두커피 시장을 열어 나가려는 새로운 도전과 시도들이 산업의 새로운 흐름을 형성하고 있다. 일부에서는 아직도 원두커피자판기 시장은 시기상조이지 않나 하는 부정적인 의식도 있지만 언제까지 포화상태를 향해 치닷는 인스턴트 자판기 시장에 목을 메고 있을 수 있는 태평성대의 상황은 아니다. 인스턴트커피 자판기 시장이 시장한계로 점점 대체시장으로 가는 상황에서 새로운 시장 개척의 돌파구로서 원두커피자판기는 대안 없는 선택이다. 반드시 가야하는 시장. 그 시장을 먼저 가려는 업체들의 의욕은 산업의 분명 큰 활력이다. 바리스타코리아도 국내 미개척분야인 원두커피자판기 시장에 당당한 출사표를 알리고 의욕적인 사업을 진행하는 업체 중 하나이다. 뛰어난 맛과 성능을 자랑하는 유럽식 `바리스타` 원두커피자판기를 가지고 본격적인 사업전개에 나선 바리스타 코리아의 그 심상치 않은 사업 행보를 살펴봤다.

  • 올해 자판기 시장의 주목되는 이슈 중의 하나가 과연 원두커피자판기 시장이 활성화 될 수 있는지 여부이다. 기존 인스턴트 자판기가 시장 확대의 한계를 보여가는 마당에서 원두커피자판기가 시장 활성화의 새로운 바턴을 이어 받기를 바라는 기대가 크다. 하지만 시장은 기대만큼 녹녹치가 않다. 원두커피자판기 관련업체의 기대만큼 빠른 시장 확대를 보이지 못하고 여전히 가능성의 시장 시장에 머물러 있다. 아직은 인스턴트 커피의 아성에 위협을 가하기는 역부족인 게 사실이다. 그렇지만 최근 원두커피자판기 시장에 있어 서서히 훈풍이 불어온다 할 정도로 한단계 한 단계 씩의 시장이 확대되고 있는 점은 고무적이다. 비록 성에 찰 정도는 아니지만 서서히 보급률이 확대되고 있고, 필드에 설치된 제품들의 운영효율이 높아지고 있다. 과거 인스턴트 일색의 커피자판기는 문화에 있어 원두커피를 하나의 트랜드로서 서서히 확산시켜 가고 있는 것이다. 목표지점을 향한 행보는 빠르지 않지만 끊임이 없다는 점에서 큰 희망을 갖게 한다. 이러한 가운데 최근 이태리 ‘콜리브리’월두커피자판기를 전개하는 칼라비전사의 사업행보가 주목을 받고 있다. 초창기 판매지향의 사업방식을 탈피하고 임대위주의 사업으로 승부수를 던지며 잔잔하지만 파급력 있는 시장공략을 진행하고 있다.

  • 최근 저가 시장에 신규로 진입하는 브랜드들이 급격히 증가하면서 메가엠지씨커피, 빽다방, 컴포즈커피, 더벤티, 커피에반하다, 요거프레소 등 중견 커피 프랜차이즈 경쟁도 치열해 지고 있다. 최근 중견 커피 프랜차이즈 시장 변화가 입지요인에 미치는 영향을 AHP기법 적용하여 우선순위를 도출하였고, 이를 5년 전 결과와 비교하였다. 입지요인 중 과거의 연구에서 높은 중요도를 보였던 '경쟁업체의 수'는 본 연구에서 중요도가 낮아진 것으로 나타났으며, 상대적으로 중요도가 낮았던 '경쟁업체와의 경쟁력'은 상위를 차지하는 결과를 보였다. 본 연구를 통하여 중견 커피 프랜차이즈의 주요 입지요인을 도출하여, 과거의 입지요인과 비교하여 그 원인을 파악하고 향후 커피 프랜차이즈의 발전방안에 대해 고려하고자 한다.

Study on the Curriculum standards model of Green Coffee Education (그린커피교육 교과과정 기준 모형 개발에 관한 연구)

  • It has been realized that the flavor of coffee depends on the coffee-producing region and the growing condition. It has also been realized that the species of coffee beans influence the taste of coffee. However, coffee education is currently underway mainly for the simple job training of baristas such as roasting, extracting and customer service, and very little education on green coffee is being done. Therefore, this study is to contribute to the basic research material for the curriculum development of green coffee education. Through surveys to coffee instructors and students to investigate the current situation of green coffee education and awareness level of green coffee, the requirements of green coffee education has been analyzed. Further, the teaching direction and learning factors of green coffee have also been analyzed through Interview Analysis to coffee professionals. Based on the result thereof, this study is to suggest systematic lecturing-learning standards by presenting an education goal of green coffee, selection of education contents, determination of subject name, and composition and listing of education units to be learned. This study will be one of the basic research materials to plan and design the curriculum for green coffee education.

Coffee consumption behaviors, dietary habits, and dietary nutrient intakes according to coffee intake amount among university students (일부 대학생의 커피섭취량에 따른 커피섭취행동, 식습관 및 식사 영양소 섭취)

  • Purpose: This study was conducted to examine coffee consumption behaviors, dietary habits, and nutrient intakes by coffee intake amount among university students. Methods: Questionnaires were distributed to 300 university students randomly selected in Gongju. Dietary survey was administered during two weekdays by the food record method. Results: Subjects were divided into three groups: NCG (non-coffee group), LCG (low coffee group, 1~2 cups/d), and HCG (high coffee group, 3 cups/d) by coffee intake amount and subjects' distribution. Coffee intake frequency was significantly greater in the HCG compared to the LCG (p < 0.001). The HCG was more likely to intake dripped coffee with or without milk and/or sugar than the LCG (p < 0.05). More than 80% of coffee drinkers chose their favorite coffee or accompanying snacks regardless of energy content. More than 75% of coffee takers did not eat accompanying snacks instead of meals, and the HCG ate them more frequently than LCG (p < 0.05). Breakfast skipping rate was high while vegetable and fruit intakes were very low in most subjects. Subjects who drank carbonated drinks, sweet beverages, or alcohol were significantly greater in number in the LCG and HCG than in the NCG (p < 0.01). Energy intakes from coffee were $0.88{\pm}5.62kcal/d$ and $7.07{\pm}16.93kcal/d$ for the LCG and HCG. For total subjects, daily mean dietary energy intake was low at less than 72% of estimated energy requirement. Levels of vitamin C and calcium were lower than the estimated average requirements while that of vitamin D was low (24~34% of adequate intake). There was no difference in nutrient intakes by coffee intake amount, except protein, vitamin A, and niacin. Conclusion: Coffee intake amount did not affect dietary nutrient intakes. Dietary habits were poor,and most nutrient intakes were lower than recommend levels. High intakes of coffee seemed to be related with high consumption of sweet beverages and alcohol. Therefore, it is necessary to improve nutritional intakes and encourage proper water intake habits, including coffee intake, for improved nutritional status of subjects.

  • The purpose of this study is to examine the differences of selecting coffee shop and type of coffee according to the reason for the visit. The proposed model was empirically tested by using survey data collected from 209 university students in Seoul and Gyeonggi Province. SPSS has been used to preform this analysis. The study found six reasons for visiting Coffee shops which are convenience, social contact, psychological factor, economic factor, mental factor, and habitual visit. As we gorup these six reasons into three groups, students who visit coffee shops according to economic or habitual factor consider more on 'diversity of coffee'. And students who visit coffee shops according to convenience or habitual factor consider more on 'kindness of worker'. And last group who visit coffee shops according to social factor consider more on 'moderate price of coffee'. The reason why the reason for the visit and the attributes of selecting Coffee Shop are not meaningful to the type of coffee which students chose is that most of students tend to choose certain type such as Americano. And this also result from the traditional managements which don't have enough effort or the differentiation about the variety of menu.

  • A series of coffee middlemen has come to be regarded as an exploitative force in the lives of small and poor coffee farmers, which is called 'coyote', controlling production, paying unfair prices for labor and goods, and participating in fraudulent practices to maximize their own profits. However, the reality of gains captured by coffee middlemen in the value chain might be exaggerated and even unfair. Therefore, the main aim of this paper is to reconsider the implication of coffee middlemen for the development of coffee value chain in Vietnam. It also attempts to identify their characteristics by investigating relations among coffee farmers, middlemen and processing/exporting firms. In terms of middlemen's margin in the coffee sub-sector, their margin is quite small when compared to other actors higher in the value chain. Rather, coffee middlemen in Vietnam have played a critical role as an intermediary of change in local economies. More specifically, coffee middlemen in Dak Lak has played a significant role as a market facilitator by stimulating the access of farmers to markets by providing buyers for farmers thanks to changes in institutional environment. Also, they have played a critical role as an agent of sustainable coffee production by encouraging sustainable coffee production in accordance with the demand of processing and exporting firms.

Bone mineral density and nutritional state according to milk consumption in Korean postmenopausal women who drink coffee: Using the 2008~2009 Korea National Health and Nutrition Examination Survey (한국 폐경 후 여성 커피소비자에서 우유섭취여부에 따른 골밀도와 영양상태 비교 : 2008~2009년 국민건강영양조사 자료 이용)

  • Purpose: This study investigated bone mineral density and nutritional state according to consumption of milk in Korean postmenopausal women who drink coffee. Methods: Using the 2008~2009 Korean National Health & Nutrition Examination Survey data, a total of 1,373 postmenopausal females aged 50 yrs and over were analyzed after excluding those with diseases related to bone health. According to coffee and/or milk consumption, subjects were divided into four groups: coffee only, both coffee & milk, milk only, and none of the above. All data were processed after application of weighted values and adjustment of age, body mass index, physical activity, drinking, and smoking using a general linear model. For analysis of nutrient intake and bone density, data were additionally adjusted by total energy and calcium intake. Results: The coffee & milk group had more subjects younger than 65 yrs and higher education, urban residents, and higher income than any other group. The coffee only group showed somewhat similar characteristics as the none of the above group, which showed the highest percentage of subjects older than 65 and in a lower education and socio-economic state. Body weight, height, body mass index, and lean mass were the highest in coffee & milk group and lowest in the none of the above group. On the other hand, the milk only group showed the lowest values for body mass index and waist circumference, whereas percent body fat did not show any difference among the groups. The coffee and milk group showed the highest bone mineral density in the total femur and lumbar spine as well as the highest nutritional state and most food group intakes, followed by the milk only group, coffee only group, and none of the above group. In the assessment of osteoporosis based on T-score of bone mineral density, although not significant, the coffee and milk group and milk only group, which showed a better nutritional state, included more subjects with a normal bone density, whereas the none of the above group included more subjects with osteoporosis than any other group. Conclusion: Bone mineral density in postmenopausal women might not be affected by coffee drinking if their diets are accompanied by balanced food and nutrient intake including milk.

Analyses for Current Research Status for the Coffee By-product and for Status of Coffee Wastes in Seoul (커피부산물의 최근 연구 동향 및 서울시의 커피찌꺼기 현황 분석)

  • Coffee consumption has been increased all around world as well as in South Korea. Coffee by-products occurred from the coffee consumption also have been rapidly increased, but the technology and methods to handle the by-product have not been much developed, resulting the severe environmental problems in soil and water. In order to solve this environmental problem, using the coffee by-product, eco-friendly and cheap methods for the recycling have been actively discussed and suggested. In this article, we discussed the types and characters of the coffee by-product and investigated the trend about the methods for utilizing the coffee by-product. In addition, we figured out the current status of coffee waste in Seoul, South Korea and discussed plans that Seoul government is working on to handle the coffee waste.

Market Segmentation by Preferable kind of Coffee Type (선호커피유형에 따른 세분시장의 특성)

  • The purpose of this research study was to identify the factors that influence comsumer who make decisions on preferred coffee types. Data was collected for a month from September $12^{th}$ to October $10^{th}$, 2010 from 807 participants who visited a cafe' in Seoul. The Limdep(LIMited DEPendent) 8.0 program was used in analyzing the determinants for preferred types of coffee using the multinomial logit model(MNL) approach. The results revealed that there were four taste preference groups being Espresso, Americano, Cafe' Late, and Cafe' Mocha ; as well as confirming that demographic characteristics influenced the coffee selection attributes, type of packaging, preferred coffee brand, and visit frequencies. This study found seven coffee selection attributes were significant factors in influencing patrons choices for purchasing speciality coffee being age range, profession, packing status, elation, superficial appearance, weight control, and habitual, respectively. The research reflects the coffee selection attributes by the customers' preference and concludes that it would be helpful to make marketing strategy for particular coffee brands.
