A Study on Improvement of Customer Satisfaction with Coffee Shop (커피전문점의 고객 만족도 증진 방안에 관한 연구)

  • Today, each company focuses on maximizing customer satisfaction by providing the best service. This study examined the effect of coffee shop on customer satisfaction. In addition, we examined the effect of customer satisfaction on revisit intention and word of mouth. The results of this study are as follows: First, in order to investigate the satisfaction of customers using coffee specialty shops, data were gathered through questionnaires and 142 customers were analyzed using statistical analysis, It is important to have a positive image of the company and to influence the decision to repurchase, and should not overlook the role of generating new customers through word of mouth. Second, customers tend to be price-oriented, practical and reasonable. To meet these customers' needs, it is important to attract a large number of products at the same time to attract customers.

The Effects of Self-congruity on Functional Congruity, Brand Attitude and Behavioral Intention in Name-b rand Coffee Shops (자아일치성이 기능적 일치성, 태도 그리고 행동의도에 미치는 영향: 커피전문점 이용고객을 중심으로)

  • In order to examine the effects of self-congruity on functional congruity, brand attitude and behavioral intention in name-brand coffee shops, this study attempted to examine the self-congruity in two types which are nonsocial-type SC and social-type SC. The results showed that self-congruity had positive significant effects on functional congruity and nonsocial-type SC influenced to functional congruity more than social-type SC. Also, these two types of self-congruity didn't have direct significant effects on brand attitude. But it had significant effects on brand attitude through the functional congruity. Finally, brand attitude positively impacted on behavioral intention. These findings provide managers in name-brand coffee shops with strategies for implementing more effective brand image building as well as focusing on satisfying customer's functional congruity.

  • Professional coffee shops are trying to increase customers' satisfaction and to invite more customers by providing the differentiated services. The existing researches show that the effects which the physical environment in shops has on customers' satisfaction and word of mouth intention are appealing to people's attention. In comprehensively examining the studies related to the physical environment, they can be summarized into two main perspectives, that is, the direct effect that the physical environment has on customers' satisfaction, quality perception, and other customers' responses (purchase desire, revisit intention, etc.) and the indirect effect that the physical environment has on customers' responses by means of customers' emotion or value perception. This research established 4 hypotheses by sampling 321 customers of those who have visited professional coffee shops, and empirically analyzed them. The empirical analysis carried out the structure analysis of covariance by using SPSS 17.0 statistics package and AMOS 17.0. As a result of the hypothesis qualification, the other hypotheses excluding one little hypothesis were adopted. The one refused hypothesis is that the only symbolism of the environmental elements in shops doesn't influence the customers' emotion positively (+). This is considered as a very unexpected result, and yet many customers who visit coffee shops express the symbols of professional coffee shops using the expressions such as 'bean coffee shop' or 'star coffee shop', but these expressions seem not to influence customers' mind positively in practice.

An Analysis of the Efficiency and Determinants of Coffee Franchises that Use DEA (DEA를 이용한 커피 프랜차이즈의 효율성 및 결정요인 분석)

  • This study aims to utilize DEA, analyze the efficiency of Korean coffee franchises, look into the factors that affect efficiency, and improve the efficiency of Korean coffee franchises. The main results of this study are as follows. First, according to CCR model standards, there are a total of 9 efficient coffee franchises and according to BCC model standards, there are a total of 12 efficient coffee franchises. A total of three of the inefficient DMUs were found to have a value of 1 for BCC, while the other 25 were found to be inefficient for both technology and scale. Second, of 28 franchises, 11 were analyzed to be decreasing return to scale and through future increased investments of optimum levels, business performance can be improved and efficiency can be enhanced. Analysis showed that 9 franchises appeared as CRS and it is most ideal to maintain the yield of future output elements at current levels and the work efficiency of 8 franchises in increasing returns to scale states expands as production scales increase according to specialization and role division and yield can relatively improve a lot. Third, the analysis of factors affecting the efficiency of franchises through the Tobit regression analysis showed that the number of franchises and operating periods had a positive (+) effect on efficiency. Based on this study, the efficiency of coffee franchises should be analyzed to establish strategies to maximize efficiency.   • This study is composed of both a research of research literature and empirical analysis. With regard to literature based, consideration was given to present conditions of domestic coffee shops, thhe definition of barista, the duty characteristics baristas, and intention to change job. Empirical analysis established hypotheses and verified the effect of duty characteristics on job satisfaction and turnover intention. A survey to verifying the hypothesis of study was performed for 400 baristas who were working at their coffee shops with selecting coffee shops randomly in Seoul and Kyeonggi-do. 2012.08.15~2012.08.30, for 15 days, I performed survey, without faithless answers and questionnaires which weren't written, I used total 331 papers for actual analysis. Collected basic data were analyzed through SPSS 18.0 program by frequency analysis, correlation analysis, factorial analysis, reliability analysis, regression analysis, and so on. I suggested like this for managing effective human resources. For increasing satisfaction of duty of barista, manager should give opportunity for attending important duty to barista, and because of this, barista can feel sense of responsibility and self-esteem.

Impacts of Coffee Shop Companies' Mecenat Activity on Identification, Corporate Image, Love Mark and Loyalty (커피전문점 기업의 메세나 활동이 동일시, 기업이미지, 러브마크, 충성도에 미치는 영향)

  • This study would investigate the impacts of coffee shop companies' mecenat activity on identification, corporate image, love mark and loyalty. For sampling, an investigator who visited the coffee shops in person conducted surveys with customers. 800 copies were distributed for 11 days from May 23 through June 2, 2018, and excluding unreliable questionnaires from the collected questionnaires, 711 copies were used in the final analysis. As a result of the analysis, it turned out that the higher social contribution, purity, public interest and preference, the higher identification became. Also, the higher social contribution, public interest and preference, the higher corporate image became. On the other hand, it turned out that purity had a negative (-) impact on the corporate image. It turned out that purity and preference had positive impacts on the love mark, while did not affect social contribution, while public interest had a negative (-) impact on that. It turned out that identification had a positive impact on the corporate image, and identification and corporate image had positive impacts on the love mark. Also, identification, corporate image and love mark had positive impacts on loyalty. It is expected that the above research result would provide practical implications for coffee shop companies' marketing techniques in the future, and further, it is judged that it would play a positive role in the quality of life of consumers who experience coffee shop companies' mecenat activity.

Analysis of Off-flavor Compounds from Over-extracted Coffee (과추출에 의한 커피의 이취성분 분석)

  • To verify the volatile compounds contributing to coffee off-flavor, medium roasted Colombian, Sumatra, Ethiopian and light and dark roasted Colombian bean coffees were sequentially and studiously over extracted. Eight espresso samples and eight filter-dripped samples were analyzed by gas chromatography/mass spectrometry with the solidphase microextraction method and evaluated by sensory tests. In total, 67 compounds were detected, and desirable aroma decreased sharply, while off-flavors increased rapidly after 30 mL of espresso and 200 mL of drip coffee. Percent peak area of 4-ethylguaiacol revealed a linear increase during extraction and was highly correlated with increasing off-flavor, suggesting that it could be an indicator of over extraction. Considering the odor activity value, guaiacol and 4- vinylguaiacol were also contributory compounds to off-flavors.

  • 한국환경포장진흥원(원장 전명화)이 친환경 포장기술 및 녹색 포장디자인 개발을 촉진하기 위해 매년 개최하고 있는 제8회 그린패키징 공모전 시상식을 지난해 12월 7일 여의도 FKI타워에서 개최했다. 친환경 포장을 통한 자원 절약과 녹색성장, 녹색소비 생활에 기여하는 것을 목적으로 하는 이번 그린패키징 공모전에는 일반 부문은 17개 기업에서 22점, 학생 부문은 8개교에서 134점 등 총 156점의 작품이 출품됐다. 일반부문에서는 대상인 환경부 장관상은 Lion코리아의 '액체세제용 뚜껑'과 소프트팩(주)의 '고차단성 생분해 소재 커피 & 차 봉투'가 수상했고, 최우수상인 한국환경포장진흥원 이사장상은 신세계푸드의 '100% 생분해필름으로 구성된 바나나포장'과 오리온의 '수제초코파이용 종이 트레이'가 수상했다. 학생부문에서는 연세대학교 허채윤 학생의 '조립식 피자박스'가 대상을 수상하는 등 총 33점의 작품이 수상을 했다. 다음에 제8회 그린패키징 공모전의 수상작들을 살펴본다.

Relationships between job stress and caffeine intake in industrial workers (산업체 근로자의 직무스트레스와 카페인 섭취의 상관성)

  • Purpose: This study analyzed the degree of job stress and caffeine intake in workers in industrial positions in order to determine the relationships between job stress and caffeine intake. Methods: For this purpose, this study conducted a survey targeting 361 blue collar workers working for K manufacturing company, Gwangju. Results: The total score for job stress in subjects was $72.7{\pm}6.8points$/100points. According to job stress, subjects were categorized as follows: Q1 for the group who had the least stress; Q2 for the group who had little stress; Q3 for the group who had a lot of stress, and Q4 for the group who had the most stress. As for the effects of caffeine on health, 57.1% thought that caffeine is helpful and not harmful if taken properly while 17.3% responded that less caffeine consumption is better. Daily intake of caffeine according to stress was presented as: $172.0{\pm}85.3mg$ in Q1, $179.0{\pm}83.7mg$ in Q2, $187.9{\pm}81.4mg$ in Q3, and $214.2{\pm}147.3mg$ in Q4 (p < 0.05). The percentages of caffeine consumption compared to the daily safe limit in subjects were: $43.0{\pm}21.3$, $44.8{\pm}20.9$, $47.1{\pm}20.4$, and $53.6{\pm}36.8%$ in Q1, Q2, Q3, and Q4, respectively (p < 0.05). Adverse effects such as nausea or vomiting from caffeine were most common in Q4 (p < 0.05). Conclusion: As a result, higher stress in blue collar workers working for K manufacturing company was associated with more caffeine consumption. Groups with a lot of stress (Q4) consumed approximately 50% of daily safe limit of caffeine. Considering the results above, this study suggests that further research on more precise caffeine intake and its effects is needed.

Structural Relationships between Lifestyle Attributes, Positive Emotion, and Satisfaction: The Case of University Students Who Visit Coffeehouses (라이프스타일 유형별 특성, 긍정감정, 만족도의 구조적 관계 - 커피전문점 이용 대학생을 중심으로 -)

  • In order to maximize customer satisfaction and provide differentiated customer-oriented marketing strategies, it is important to understand the essence of consumer behavior and characteristics of their market segmentation. Therefore, this study explored the relationships among five different food-related lifestyle (i.e., health, fashion, taste, economy and safety oriented), positive emotion, and satisfaction. An analysis of 338 samples drawn from college students who visited coffeehouse at least once in the previous months was performed. The results revealed that, taste, economy, and safety oriented lifestyle significantly affected positive emotion, and positive emotion significantly affected satisfaction. The findings highlight the significant role of coffeehouse customer food-related lifestyle toward positive emotion in the formation of satisfaction, and therefore generate theoretical and practical implications for the coffeehouse industry.
