Effects of a Brown Rice and Vegetable Diet on the Defecation Conditions and Health Status of High School Students (현미-채식 식단 프로그램이 고등학생의 배변상태와 건강상태에 미치는 효과)

  • Purpose: This study was conducted to evaluate the effects of a brown rice and vegetable dietary program on the defecation conditions and health status of high school students. Method: A non-equivalent control group and pretest-posttest design was used. The subjects were 62 students (28 in the intervention group, 34 in the control group) who voluntarily participated in the study. The program was conducted from April 6, 2012 to July 3, 2012 at two high schools in Daegu city. During that time, two meals a day were supplied to the experimental group. Data on defecation condition and health status was collected using self-questionnaires. Results: After 12 weeks, students in the intervention group had a significantly better defecation condition than students in the control group. Students in the intervention group also had a significantly higher health status than students in the control group. Conclusion: The results suggest that a brown rice and vegetable dietary program improves the defecation condition and health status of high school students. Therefore, the development and study of nursing intervention and public health education program about brown rice as well as vegetable and fresh fruit consumption are necessary for these subjects.

Comparison of Antioxidant Level of the Elderly Living in Institutions: Vegetarian and Non-vegetarian Diet (채식·비채식 식단에 따른 시설거주노인의 항산화 상태비교)

  • Purpose: The purpose of this study was to compare the antioxidant level, serum cholesterol and skin ${\beta}$-carotene, of female elderly who had been living more then 10 months in institutions which offered either vegetarian or non vegetarian diet. Methods: Total of 110 female elderly, 56 from institution serving vegetarian diet and 54 from nonvegetarian diet, were recruited from institutions located in S and N city in Korea. ${\beta}$-carotene level was measured on their palm using Pharmanex Biophotonic Scanner and annual health evaluation data was utilized for the analysis of serum cholesterol. Results: The subjects on a vegetarian diet had a significantly higher level of phosphorus, carotene, and folic acid. The elderly who were living in an institution offering a vegetarian diet had a lower level of serum cholesterol and higher level of skin ${\beta}$-carotene, compared to those living in an institution offering a non-vegetarian diet. Conclusion: This study reveals that a vegetarian diet is beneficial in increasing skin ${\beta}$-carotene level, decreasing serum total cholesterol level. The skin ${\beta}$-carotene measurement appear valuable as a bio-marker of antioxidant intake. Further study on antioxidant food and effective serving strategy for elderly are recommended.

  • This study was conducted to investigate the association between breast cancer-related risk factors including socio-demographic characteristics and the lifestyle-related factors and the development of breast cancer. The study was comparative analysis of cancer patients group and control group. 102 breast cancer patients visited in J university hospital and 110 randomly-selected community controls were recruited from October 2011 to June 2012. Eating vegetables, physical activity and stress coping reduce breast cancer risk. Therefore, this study highlights the importance of eating vegetables, physical activity, and stress management in preventing breast cancer.

A Comparison of Plasma Lipid Levels between Vegetarians and Non Vegetarians (채식인과 비채식인간의 혈장지질 수준에 관한 연구)

  • Plasma levels of lipids were observed in vegetarians and non-vegetarians in order compare the values between the two groups with different dietary habits, and among different age groups. All 162 vegetarians and 95 non-vegetarians were selected for this study. In detail, male vegetarians subjects were devided into three groups according to their ages, 20's, 30's and 40's. And three control groups were also selected at matching basis. Two groups each were selected for female subjects in their 20's and 40's. All ten groups were adopted and the lipids levels were compared appropriately. Dietary habits of vegetarians were shown to be fairly strict. They consumed almost no animal foods and depended largely upon plant foods with emphasis on unrefined cereals and legumes. on the other hand, non-vegetarians consumed meats, fish egg and milk frequently. Most of plasma lipid levels measured were found to be lower in vegetarians and tended to be higher for the higher age groups of both vegetarians and non-vegetarians. Although the lipids levels of non-vegetarians were higher than the ones for vegetarians, the levels were within optimal range, and it can be concluded in this study that the plasma lipid levels of non-vegetarians under Korean dietary pattern are quite acceptable.

A Study on Vegetarian Market Segmentation by Vegetarian Selection Attributes (채식 선택 속성에 따른 채식 시장세분화 연구)

  • Consumption market research was conducted on gradually increasing vegetarians using various selection attributes. Factors were extracted to identify vegetarian selection attributes and to divide the study cohort into groups, continuous variables (health, animal welfare, eco-friendliness, religion, familiarity, convenience, stability, and cost) and categorical variables (age, marital status, vegetarian duration, and vegetarian frequency) were simultaneously subjected to two-step cluster analysis. Cluster 1 contained high proportions of 20-29 and 30-39 year-olds, which are MZ-generation age groups. A high proportion had a vegetarian duration of 1-3 years, and the popular reasons for vegetarian selection were animal welfare and eco-friendliness. Cluster 2 contained high proportions of 50-59 and 40-49 year-olds, and many in this cluster were married, and mean vegetarian duration was ≥15 years. In addition, significant differences were observed between Clusters 1 and 2 in terms of religion, health, familiarity, cost, stability, and convenience. This study should contribute significantly to predicting vegetarian consumers' selection decisions and consumption behaviors and provide reliable marketing data for foodservice companies that develop vegetarian foods.

Studies on Grazing Behaviour and Herbage Production by Different Grazing Systems in Timothy-Ochard Grassdominied Pasture (티머시-오처드그라스 우점초지에서 방목방법별 가축의 습성과 생산성에 관한 연구)

  • From June, 1980 to October, 1982, this study was carried out to find an optimal grazing system on the timothy and orchardgrass-dominated pasture. Five different systems consisted of set stocking, modified set stocking, rotational grazing, 'wye college' system and zero grazing have been applied. The results obtained were as follow: 1. Herbage DM yield per ha with 'wye college' system, set stocking, modified set stocking, rotational grazing and zero grazing were 6936.7 kg,6794.3 kg, 6686.9 kg 6675.7 kg and 5083.4 kg respectively. Among treatments were not different in DM yield. 2. In herbage utilization, zero grazing was the highest than other. Zero Grazing, Rotational grazing, 'Wye college' system, Modified set stocking and set stocking was 89.3%, 70.8%, 64.4% and 46.1% respectively. 3. Daily intake per head with 'wye college' system was the highest than others and zero grazing was the lowest than others. 4. Daily gain with 'wye college' system, rotational grazing, modified set stocking, set stocking and zero grazing were 0.60kg, 0.55kg, 0.50kg, 0.43kg and 0.42 respectively. Among treatment, there was no significance. 5. Total weight gain per ha with 'wye college' system, rotational grazing, modified set stocking, zero grazing and set stocking were 339.5kg, 299.1kg, 253.3kg, 226.6kg and 222.2kg respectively. 6. Grazing time among treatments was not significant. 'Wye college' system spent the shortest time, 367.3 minutes and set stocking consumed the longest time, 422.1 minutes. 7. Daily grazing time by seasonal change with June, July, August, September and October was 304.9 min., 359.4 min., 437.9 min., 483.3 min. and 395.8 min., respectively. According to passing the season, grazing time was lengthened. 8. Grazing time for Korean native cow, native cow charolais and native cow holstein were not significant. Native sow charolais consumed the longest time, 457.0 min., whereas Korean native cow consumed the shortest time, 422.4 min..

Studies on the Dietary Self-selection by Egg-type Layers (난용계(卵用鷄) 산란기(産卵期)의 선택채식(選擇採食)에 관(關)한 연구(硏究))

  • In order to get information for the improvement of feeding systems of egg-type layers, a dietary self-selection study was conducted. Corn diet, soybean meal diet, wheat bran diet, soybean meal+fish meal diet, and limestone diet were individually prepared for self-selection regime. Forty brown layers were offered either a control laying diet (C) or one of the 3 self-selection regime consisted of corn-soybean meal-limestone diet ($T_1$), corn-soybean meal-wheat bran-limestone diet ($T_2$) and corn-soybean meal+fish meal-wheat bran-limestone diet ($T_3$) for one wk each at 31 wk and 41 wk of age. In all dietary treatments, most of the eggs were laid from 0700 h 1300 h and hens consumed more feed, energy and protein on egg forming days than on non-forming days. On egg forming days, hens fed self-selection regime consumed less energy and protein than those fed control diet. On egg forming days, the consumption of feed, energy and protein increased continuously from 1000 h 2200 h in the control diet group but they decreased during the last 3 hours from 1900 h to 2200 h in self-selection regime groups. Up to 1600 h, calcium intake of the self-selection regime groups were much less than that of the control group but after that time, they increased markedly and were much more than that of the control group. The results of the study suggest that the practical self-selection regime for layers should be developed to meet the daily cyclic requirement for nutrients without consuming an excess energy and protein at certain times of the day.

Effects of Feeding Levels of Concentrate on the Growth, Carcass Characteristics and Economic Evaluation in Feeds Based on Rice-straw of Korean Black Goats (볏짚 위주 사양 시 비육 흑염소의 농후사료 급여 수준이 발육, 도체특성 및 경제성에 미치는 영향)

  • This study was conducted to examine the effect of feeding levels of concentrate feed on growth performance, meat quality and economic evaluation of Korean black goats. The 40 male Korean native goat were divided into four treatment groups T1 (1.5%), T2 (2.0%), T3 (2.5% feeding of concentrate feed body weight per day) and T4 (ab libitum) with ab libitum rice straw. Rice straw intake decrease as against feeding levels, however average daily gains were 22, 50, 69 and 94 g/day in T1, T2, T3 and T4 groups respectively levels (p<0.05). Dressing percentage were 41.77, 42.78, 46.12 and 49.78% in each group (p<0.05), also fat percentage were a significant increase according to feeding levels. In economic efficacy, T4 was higher than other treatment groups. In conclusion, both rice straw and concentrate feed ab libitum are good for feeding and management system on Korean black goats.

Palatability and Yield of Winter Annual Forage Crops under Horse Grazing System in Jeju (제주지역 말 방목체계에서 동계사료작물의 말 기호성 및 생산성)

  • The purpose of this study was to evaluate winter annual forage crops for yield, and horse palatability under horse grazing during the fall and spring in Jeju. The winter annual forage crops such as Italian ryegrass(IRG), rye, and oat were planted in randomized block design in October 30. The horse grazing was initiated on March 17 of the following year. At the first cutting, the dry matter yield of rye was the highest with 4,600 kg/ha compared to the IRG and oat (p<0.05). But there were no significantly different in the yield of winter annual forage crops after the second and third harvests. The total dry matter yield showed rye 12,593 kg/ha, IRG 10,941 kg/ha, and oat 9,424 kg/ha respectively. The horse intake duration of the IRG was significantly higher than the oat and rye (p<0.05). In the first grazing and the second grazing, the intake duration of the IRG was 853.2 seconds and 989.4 seconds, respectively, with oat at 147.6 seconds, and 73.0 seconds, and rye at 89.4 seconds, and 33.18 seconds. The intake duration of IRG was longer than that of oat and rye (p<0.05). The intake rate of the IRG was 60.0% in the first and 82.8% in the second, and the average intake rate was 71.4%. When considering the maintenance of pastures and the palatability of horses, the IRG is the most suitable forage crop in winter annual forage crops in Jeju.

Studies on the Improvement and Utilization of Pasture in the Foerst II. The effect of shde on the intake palptability and grazing behavior (임간초지의 개량 및 이용에 관한 연구 II. 채식기호성 및 방목습성에 미치는 비음의 영향)

  • This study was conducted to determine the effects of shade (full day light; 100, 80, 60, 40 and 20%) and fertilization levels (high; $N\;30kg-P_2O_5\;35kg-K_2O\;30kg$, moderate; $N\;20kg-P_2O_5\;25kg-K_2O\;20kg$, and low; $N\;10kg-P_2O_5\;15kg-K_2O\;10kg$) of forest pasture on intake palatability of Korean native goat, and the effects of shade under the conditions of 50% shaded forest pasture and full day light pastures on grazing behavior. This experiment was done at the experimental field of Chungnam National University, in Taejon, from 1983 to 1984. The results obtained are summarized as follows: 1. The dry matter intake, R.I.I. and Touch number of Korean native goat were affected by the shade degrees and fertilization levels, generally the increase of the fertilization level and high shading degree increased the NO_3-N$ contents in the plants, but decreased the soluble carbohydrate contents. It means that the decrease of the utilization of the shade culture grasses is due to the decreased intake palatability of forest pastures, particularly the conditions high fertilization level and above 60% of shading level seemed to have a nitrate stress. 2. Grazing time of forest pastures by Korean native goat tended to be spend more time than full day light pastures, also tendency of the major grazing activity tended to be graze continuously without difference of variation of grazing time within a day. Considering of the characteristies os shade, the intensive utilization of forest pastures seemed to be most effective during the high temperature season in August.
