Development of Traditional Doenjang Improved in Color (색상이 개선된 재래식 된장 개발)

  • In case of doenjang, solution of browning problem might be an important remedy in order to dissolve consumers' dissatisfaction, therefore this study was performed to develop traditional doenjang which has improved in color aspect for consumers' needs. Physicochemical compositions and color values of commercialized traditional doenjang which was processed by history references of our country, were analyzed. doenjang used as samples were processed with traditional meju, which were made with soybean and mixed with various rates after following process such as soaking, steaming, cooling, chopping and grinding. The doenjang processed were storaged at $30^{\circ}C$ for 27 days, and their amino-N, pH, color values and sensory evaluation were analyzed with fermentation period. Furthermore, nitrogen results analyzed were compared with that of commercialized traditional doenjang. In the comparison with control, treated with only traditional meju, and doenjang treatments processed with different mixing rates of traditional meju and steamed soybean, the content of amino-N in control were higher than the others, and the contents of amino-N decreased with increasing contents of steamed soybean. Their pH were changed weak alkalic region into weak acidic region with fermentation period. In the aspect of color, traditional doenjang having the rate of traditional meju and steamed soybean (1:4) was most improved and also, in comparison of result of sensory evaluation with commercial traditional doenjang, its color, taste and falvor were evaluated predominent, therefore it might be thought to have competition on the market.

Comparison of Antioxidant Activity and Flavor Effect According to Processing Method of Red ginseng and Herbal Medicine (홍삼 및 생약재의 가공방법에 따른 항산화활성 특성 및 향미 효과 비교)

  • In this study, the effect of functional substances such as polyphenols and flavonoids contained in large quantities in red ginseng and herbal medicines on the antioxidant activity properties and flavor effect were investigated by increasing the content and activity of functional ingredients by convert red ginseng through a steaming heat-drying process compared to the traditional dry processing method of ginseng and herbal medicines. According to the experimental results, the addition of pre-heat treatment significantly increased antioxidant properties such as DPPH radical scavenging ability, polyphenols, and flavonoids. In addition, during the steaming and heat-dried red ginseng manufacturing process, the amino-carbonyl browning reaction was promoted, resulting in increased brownness and a savory flavor. However, the content of ginsenosides, the main medicinal ingredient in red ginseng, became the main cause of the bitter and harsh taste. In addition, the bitter and harsh taste of red ginseng has been significantly improved by roasting and producing powder, but on the other hand, Radix Angelicae sinensis, polymorphic angelica and Peony, which are used as main medicinal ingredients in oriental medicine for nutritional tonic prescriptions such as 10 herbal medicine and 4 herbal medicine have a very strong herbal medicine-specific flavor and have a bitter and harsh taste. It is so strong that in order to use it as an instant extraction material, it was reviewed that a steaming and heating manufacturing method was needed during the manufacturing process.

Enhancement of Cosmeceutical Activity from Codonopsis lanceolata Extracts by Stepwise Steaming Process (증숙 및 초고압 증숙 공정을 통한 더덕의 향장활성 증진)

  • In general, stepwise hot steaming process is known to be effective in improving its biological activities; however, not much employed in processing Codonopsis lanceolata due to its hardness. The complex processed C. lanceolata showed highest free radical scavenging acitivity as 45.21%. Total phenol and flavonoid content were of complex processed C. lanceolata higher than conventional extract and alone steaming process. It was showed the lower melanogenesis rate on melanin production test by B16F10 cells as 27.46%. High inhibitory of tyrosinase was also measured as 28.61% by adding steamed Codonopsis lanceolata extracts by high pressure extraction of 1.0 $mg/m{\ell}$. And anti-wrinkle activity were 39.08%. In comparing phenolic acids profiles in the extract, in general higher amounts of polyphenol were obtained possibly by easy release of active components during thermal processing, which results in better antioxidant activities than that of general extract. This findings can also be supported by result that the extract by steaming process showed better activities than the general extraction extract.

Enhancement of Immune Activity of the Extracts from Codonopsis lanceolata by Stepwise Steaming Process and High Pressure Process (증숙 및 초고압 증숙 공정을 통한 더덕의 면역활성 증진)

  • This study was to investigate the improvement of immune activities of the extracts from Codonopsis lanceolata by stepwise steaming process and high pressure process. The phenol contents was $8.742{\mu}g/mg$ which was higher than that from conventional extraction using 70% ethyl alcohol at $80^{\circ}C$ for 24 hours. All of extracts at a concentration of $1.0mg/m{\ell}$ showed relatively low cytotoxicity on human normal kidney cell (HEK293) in range of 16 19%. The immune B and T cell growth was improved by extracts using the steamed and high pressure precess of C. lanceolata up to $180{\times}10^4cells/m{\ell}$ and $96{\times}10^4cells/m{\ell}$, respectively. The extract prepared also greatly increased the secretion of both IL-6 and TNF-${\alpha}$ from the stepwise steamed and high pressure process. This results can conclude that stepwise steamed and high pressure process effectively released active biomaterials which could important role in enhancing immune activity in the body.

Chemical Components of Hololeion maximowiczii Root and Change by Drying Methods (께묵뿌리의 화학성분과 건조방법에 따른 변화)

  • Hololeion maximowiczii root was analyzed for proximate composition, free sugar, fatty acids of crude lipid, amino acids and minerals after freeze dried (FD), hot air dried (HAD) and hot air dried after blanched (HADB), respectively. Proximate composition was little different among drying methods. Free sugar was abundant in order of sucrose $(28{\sim}29mg/g\;dw)$, fructose $(0.8{\sim}3mg/g\;dw)$, glucose and xylose (trace). Fructose was decreased in HADB. In fatty acid composition of crude lipids, linoleic acid was highest $(55{\sim}59%)$ and then palmitic and linolenic acid in abundance. These three fatty acids made $88{\sim}90%$ of total lipid, Low molecular fatty acids showed decreasing tendancy in HAD and HADB. Amino acid composition of hydrolyzed sample showed abundancy in order of arginine $(34{\sim}42mg/g)$, lysine, glutamic acid, glycine, aspartic acid, valine and histidine, while that of free amino acids was arginine, histidine, lysine, aspartic acid, serine, glutamic acid, isoleucine. Glycine and glutamic acid in hydrolyzed sample showed slight decreasing tendency in HADB. Mineral content was abundance in order of Ca $(1927{\sim}2379\;ppm),\;K\;(1159{\sim}1259ppm)$ and $Mg(760{\sim}777\;ppm)$. No difference was found in drying methods.

Physiological Functionalities of Tea Thermally Processed from Ixeris dentata Root (열처리 가공조건에 따른 씀바귀 침출차의 생리활성)

  • This study was carried out to investigate physiological functionalities of tea prepared by various thermal processing methods from Ixeris dentata root in order to elevate utilization of Ixeris dentata root as food. These methods included natural drying (ND), hot-air drying (HAD, $75^{\circ}C$), hot-air drying after steam (HADS, steaming at $95^{\circ}C$ for 30 min) and roasting after hot-air drying (RHAD, roasting at $140^{\circ}C$ for $2{\sim}3$ min). Physiological functionalities of tea prepared by ND, HAD, HADS, and RHAD were measured as hot-water extracts and each tea was extracted by 100 mL water on 1 g dried Ixeris dentata root powder. Electron donating abilities were the highest in HADS treatment at 98%. SOD-like activities were the highest in RHAD at 35.61%. Both ACE and tyrosinase inhibitory activities were the highest on ND treatment at 52.34% and 44.60%, respectively. Nitrite scavenging abilities of all treatment were the highest at pH 1.2 and the highest activity among them was on RHAD treatment at 50.5%.
