  • 현재 우리나라에 서식하는 전복은 말전복(Haliotis gigantea), 까막전복(Haliotis discus), 참전복(Haliotis discus hannai), 시볼트전복(Haliotis sieboldii), 오분자기(Haliotis diversicolor superfexta), 둥근전복(Haliotis diversicolor diversicolor) 등 6종이 있고, 이 중 참전복은 가장 맛이 좋아 주로 날 것으로 또는 건제품 및 죽의 형태로 소비되는 고가의 중요한 연안 수산물이다. 특히, 전복은 식품학적 측면으로 볼 때, 오래 전부터 우리나라, 중국 및 일본 등지에서 상당히 귀하게 여기는 기능성 수산물이어서 시장 가치가 매우 높다고 할 수 있다. A Literature Review of on the Abalone in the Royal Palace of Joseon Dynasty (조선왕조 궁중음식(宮中飮食) 중 전복(全鰒)의 문헌적 고찰)

  • This article examines the types of abalone as recorded in 17 royal protocols studies of the Joseon dynasty (1392-1909). The types of abalone food during the Joseon dynasty appeared. The frequency of the Abalone types during the Joseon dynasty in order were; 'Tang with abalone' 37.4%, 'abalone-stir-fried(炒)' 12.8%, 'raw-abalone(膾)' & 'hwayangjeok with abalone' each 9.9%, 'abalone-sever(折)' 8.8%, 'steamed-abalone(蒸)' 7.0%, the other abalone food 6.2%, 'abaloneripening(熟)' 4.4%, 'echae(魚采)' 3.6%. In Jeonbokcho(全鰒炒), abalone and beef were generally used. In the stirfried(炒), raw(膾), hwayangjeok(花陽炙), steamed(蒸), ripening(熟), jeotgal(醢) and dumplings(饅頭) containing raw-abalone(生鰒), raw-abalone(生鰒) was used, and in other cases, abalone(全鰒) was used. This study, based on years of research on Euigwe, emphasizes the academic value of the author's new role and research outcomes. We anticipate that these findings will contribute to product development and the systematic establishment of Korean food culture.

Phylogenetic Study of Genus Haliotis in Korea by Cytochrome c Oxidase Subunit 1 and RAPD Analysis (Cytochrome c oxidase subunit 1과 RAPD 분석에 의한 한국 전복속의 계통 연구)

  • Abalones are gastropod mollusks belonging to the genus Haliotis. Pacific abalones are regarded as a very important marine gastropod mollusk in Korea, Japan, China, and also in food industries around the world. In Korea, 6 species of abalone have been reported to occur along the coasts: Haliotis discus hannai, Haliotis discus discus, Haliotis madaka, Haliotis gigantea, Haliotis diversicolor supertexta, and Haliotis diversicolor diversicolor. This study was performed to discriminate the genetic variances by the partial sequences of the mitochondrial cytochrome c oxidase subunit I (COI) genes and random amplified polymorphic DNA (RAPD) analysis against four species of Pacific abalone (H. discus hannai, H. discus, H. madaka, H. gigantea). COI gene is reasonably well conserved and has been sequenced in various invertebrate taxa. The RAPD analysis technique is a relatively simple and low cost method that allows differentiation of taxa without the need to know their genomes. In this study, we investigated the genetic diversity, phylogenetic relationships within each species. The COI and RAPD analysis were able to distinguish between H. gigantea and the other three species. However, these analysis methods were inadequate to distinguish between H. discus and H. madaka. These results are believed to be able to provide a basis data for future hybrid breeding research by defining the genetically closely related four species of abalone, which is to develop new hybrid abalone for export using hybrid breeding.

Preparation and Physicochemical Characteristics of Abalone Meat Aged in Kochujang (고추장 숙성 전복의 제조 및 이화학적 특성)

  • The physicochemical characteristics of abalone meat aged in Kochujang at $20^{\circ}C$ were studied. Moisture contents of Kochujang, which contained raw, roasted, and steamed abalone, increased to 14.9, 10.7, and 7.8%, respectively, compared to control at day 1. The moisture contents of all products were equilibrated at 53.5% approximately after 2 weeks. Hunter's L, a, and b values increased in all products. Total microbial counts were 5.74, 5.70, and 5.83 log CFU/g in the products and increased to 0.28, 0.30, 0.11 log CFU/g, respectively, after 28 days storage at $20^{\circ}C$. After 8 days, the pH in the steamed abalone meat decreased gradually from 5.48 to 5.16 and the titratable acidity was the highest at day 14. Volatile base nitrogens of raw, roast, and steamed abalone were 1.4, 0.9, and 2.7 mg%, but the values in the Kochujang products were 14.0, 13.8, and 11.6 mg% at day 1, and 15.5, 13.3 and 11.3 mg% at day 8, respectively. Quality of the product prepared with steamed abalone was the most acceptable by sensory evaluation.

Effects of Experimental Diet, Commercial Diets and Algar(Undaria) on Growth and Body Composition Among Juvenile Abalones (Haliotis disucs, H. sieboldii and H. discus hannai) (실험 배합사료, 관행사료 및 미역 공급이 까막전복, 시볼트전복 및 참전복 치패의 성장과 체성분에 미치는 영향)

  • This study was conducted to investigate the effects of three different formulated diets and macroalgae(Undaria) on growth and body comoposition among juvenile Haliotis discus, H. sieboldii and H. discus hannail. Three replicate groups among the three species abalones average weighing 0.31g were fed one of one experimental diet, two commercial diets and Undaria for 9 weeks. The three formulated diets produced significantly (P<0.05) greated body and shell growth than Undaria within same abalone species. Survival rates (97~99%) of H. discus and H. sieboldii were higher than that (74~77%) of H. discus hannai. Whereas different diets had no significantly (P>0.05) distincitive effect on survival within each three different abalone species. Moisture of abalone soft body in final stage reduced compared to those of abalone in initial stage in H. discus and H. discus hannai. Regardless of diet, abalone soft body revealed significantly (P<0.05) increased protein and decreased ash at the end of feeding trial in all three abalone species. This study indicate that all three different formulated diets used in this experiment could be a practical diet in three abalone species.

  • In this study, the results of hybridization were evaluated by analyzing the biomarkers of Haliotis discus hannai and hybrid abalone (H. madaka♀*H. discus discus♂) in marine net cage. The survival rate was similar both experimental groups, but the growth (shell length) was about 10% faster in hybrid abalone. The deformity of respiratory pore in the hybrid abalone was about 6% lower than H. discus hannai, and the shell depression was about 15% lower in the hybrid abalone. In the biochemical composition, crude protein was about 3.1% higher in hybrid abalone, and showed similar values except for the crude protein. In the histological structure of the hepatopancreas, which performs the functions of digestion, absorption and detoxification of abalone, good results were obtained in the hybrid abalone. On these results, it is judged that the hybrid abalone will have high aquaculture productivity in the aquaculture environment.

Analysis and comparison of general compositions, amino acids, fatty acids and collagen of abalone harvested in three different regions in Korea (한국에서 생산되는 전복의 영양성분 비교 분석)

  • In this study, the general compositions, amino acids, fatty acids and collagen content of three abalones, which were harvested in Wando, Heuksando and Jeju Island in Korea, were analyzed and compared. The abalone body and viscera were separated from each other and the physicochemical properties were investigated. The moisture and protein contents of the viscera were lower than that of the body; while the lipid, carbohydrate, and mineral contents were higher. The general compositions and mineral contents also presented fluctuation among the three abalone groups. The amino acid content via hydrolysis in the abalone viscera ranged from 93.16 to 127.02 mg/g, which was lower than the amino acid content of the abalone body of approximately 145 mg/g. However, the free amino acids level in the abalone viscera ranged from 16.81 to 20.10 mg/g, which was higher than that of the abalone body level of approximately 7.90 to 10.59 mg/g. The fatty acid analysis revealed that while the saturated fatty acid percentages in the abalone body were higher than in the abalone viscera, the percentages of the monoenoic and polyenoic fatty acids of the body were significantly lower. The body of the abalone harvested in Wando contained the highest level of collagen ($2.26{\pm}0.46mg/g$), followed by the abalone harvested in Jeju Island and Heuksando. The abalone viscera contained much lower collagen, which ranged from $0.37{\pm}0.15mg/g$ to $0.20{\pm}0.03mg/g$. The results of this study will provide useful information for the future research of abalone.

Influence of elevated temperatures on the physiological response of hemolymph from two species of abalone, Haliotis gigantea and Haliotis discus discus (Reeve, 1846) (수온 증가에 따른 말전복, Haliotis gigantea과 둥근전복, Haliotis discus discus (Reeve, 1846) hemolymph의 생리학적 변화)

  • This study was conducted to examine the effects of alterations in water temperature (WT) on biochemical and immunological factors in the hemolymph of the abalones, Haliotis gigantea and H. discus discus. The abalone were exposed to various WT; 18, 20, 22, 24, 26 and $28^{\circ}C$ for 96 hours. In biochemical factors, total-protein (TP), glucose, magnesium (Mg), aspartate aminotransferase (AST) and alanine aminotransferase (ALT) were not significant changes in hemolymph of H. gigantea and H. discus discus. But calcium was significantly increased by high WT (${\geq}24^{\circ}C$). In immunological factor, The phenoloxidase (PO) activity was decreased in hemolymph of H. gigantea and H. discus discus exposed to high temperature (${\geq}22^{\circ}C$) compared to the control (P < 0.05). Whereas alkaline phosphatase (ALP) was not significantly changed. These results suggested that high temperature adversely affects the immunity of H. gigantea and H. discus discus.

Molecular and Physiological Aspects of Breeding Program for Development of Hybrids between Abalones Distributed in the Coast of Korea (한국산 전복을 이용한 교잡종 개발)

  • Abalones are gastropod mollusks belonging to the genus Haliotis. Fishery products are continuously declining worldwide while abalone production from aquatic farms has considerably increased. Although abalones are regarded as very important marine resources and considered to have big potential in sea-food farming industry around world, the slow growth rate of Pacific abalones is considered to be one of the most serious problems. For the genetic improvements in cultured abalone, advances in various breeding techniques for abalone have been reached through the introduction of selection, crossbreeding, hybridization, and polyploidy in several commercially important abalone species. Six species of abalone have been reported to be distributed along the coasts of Korea: Haliotis discus hannai, Haliotis discus discus, Haliotis madaka, Haliotis gigantea, Haliotis diversicolor diversicolor, and Haliotis diversicolor supertexta. The hybridization between these abalones may be one of the advanced technologies, and the preliminary experiments of interspecific hybrids between abalone species distributed in northern pacific areas including Korea, China, and Japan have been conducted. In this study, we reviewed the phylogenetic relationship of northern pacific abalone species which have the potential traits for aquaculture in Korea and their identifications. We also examined the development of molecular markers and some other aspects of the genetic approaches for successful development of hybrids.
