저온 저장에 의한 양념 돈육의 물리적 특성변화

  • 본 연구는 도축 후 24시간 냉각된 지육에서 등심부위를 채취하여 $5{\times}\;15{\times}\;5cm$ 크기로 잘라 양념액과 육을 1:1로 혼합하여 $1{\pm}\;1^{\circ}C$에서 28일간 숙성시키면서 저장성을 분석한 결과는 다음과 같다. pH는 T1이 다른 처리구에 비해 월등히 낮은 pH를 나타내었으며 저장기간에 따른 pH의 변화는 나타나지 않았다. 전단가는 T2와 T3는 전 숙성기간 동안 전단가가 감소한 반면 T1은 숙성기간이 증가함에 따라 전단가는 증가하였고 보수력은 T1이 숙성 1일부터 낮은 보수력을 나타내었으며, 모든 처리구에서 숙성기간에 따라 보수력이 다소 감소하였다. 근원섬유소편화지수는 숙성 1일 다소 낮게 나타났던 T3구가 숙성 기간이 증가하면서 높은 값을 나타낸 반면 T1은 전 숙성기간 동안 다른 처리구에 비해 가장 낮은 소편화도를 나타내었다.

Quality of Sweet Corn Stored at Different Temperatures and Duration (저장온도와 기간에 따른 단옥수수의 품질변화)

  • To find out the optimum storage temperature and duration, changes in the content of sugars and soluble solids and flavor rate of two sweet corn hybrids (Great Bell and Golden Cross Bantam) and a super sweet corn (Crisp Super Sweet 720) were observed after storing at -20, 0, 5, 10, 15, 20, and 25$^{\circ}C$ for 1,3,5, and 7 days. At the temperatures below 10$^{\circ}C$, contents of soluble solids and total sugars and flavor rate were not changed significantly, but at the temperatures higher than 15$^{\circ}C$ they decreased as storage temperatures increased and duration extended. Storage duration conserving flavor seems to be 7 days at temperatures below 10$^{\circ}C$, 3 days at 15$^{\circ}C$, and 1-2 days at 25$^{\circ}C$. When corn was frozen, flavor rate was a little low compared with corn stored at 0$^{\circ}C$ although sugar content was higher. Both soluble solids and total sugar contents were positively correlated with flavor rate of cooked corn.

Changes on the Characteristics of Salted Mackerel Treated Extracts of Edible Plants during Storage (식용식물 추출물을 처리한 간고등어의 저장 중 특성변화)

  • This study was carried out to analyze the quality change of salted mackeral treated with extracts of edible plan(Diospyros kaki, Teucerium veronicoides and Zanthoxylum schinifolium) during storage for develope of preparation methods and high quality of mackerel. The Hunter's color values of salted mackerel was not changed during strange. L, a and b value of salted mackerel teated with Korean herbal extracts was lower changed than those of control(mackerel not treated extracts of edible plants). Adhesiveness, and viscosity of salted mackerel was higher at $4^{\circ}C$ during storage than those at $25^{\circ}C$, and was higher in groups treated extects of edible plants at early storage than those in control group. Hardness was low in the salted mackerel treated extracts of edible plane and control group during storage. The salted mackerel treated Z. schinifolium extracts was the highest scores in sensory evaluation among groups.

Shelf-life Estimation and Sorption Characteristics of Coated Ascorbic Acid by Fluidized Bed Coating (유동층 코팅 처리한 Ascorbic acid의 흡습특성 및 저장기간 예측)

  • This study was performed to investigate the sorption characteristics and shelf-life of coated ascorbic acid Stability of ascorbic acid, which oxidizes easily during storage and processing, was achieved by applying a fluidized bed coating using Zein-DP and HPMC-FCC as covering materials. The monolayer moisture content calculated using the GAB equation showed a higher level of significance than when calculated using the BET equation. The fit to the isotherm curve was in the order of Halsey, Caurie, Oswin and Khun. The equilibrium relative humidity prediction model was established in terms of time and water activity, it had higher significance. The stability of the coated ascoribic acid during storage was investigated in terms of radical-scavenging activity, which decreased with increasing time of storage and was more affected at higher storage temperatures. The quality reduction rate constant (k) was calculated by a first-order reaction rate. The reaction rate constant increased with increasing storage temperature. The shelf-life of Zein-DP-coated ascorbic acid was estimated to be 45.83 days at 20C and 63.19 days at 10C, and the shelf-life for HPMC-FCC-coated ascorbic acid was estimated to be 28.84 days at 20C and 36.14 days at 10, the ascorbic acid was 24.52 days at $20^{\circ}C$ and 27.22 days at $10^{\circ}C$, respectively. Therefore, the fluidized bed coating effectively increased the stability of ascorbic acid.

단기 숙성 살라미의 냉장 및 실온저장 중 물리${\cdot}$화학적 품질 변화

  • 살라미 시료에서의 식염 및 일반성분 함량은 저장 기간과 온도에 따른 차이는 나타나지 않았다. 일반성분 살라미 시료의 pH와 수분활성도는 4.79와 0.911이었는데 저장 기간 중 pH는 상승하는 대신 수분활성도는 감소하는 경향을 보였다. 살라미는 진공포장하였음에도 불구하고 산화적인 지방과 단백질의 분해는 서서히 진행되었음이 확인되었다. 이러한 변화는 높은 온도에서 더 뚜렷하게 일어났다. 색도 $25^{\circ}C$ 저장된 시료에서 적색도와 황색도가 증가하고 밝은 색이 감퇴하는 현상이 $10^{\circ}C$ 저장 시료에서 보다 더 뚜렷하게 나타났다.

Effect of Partial Freezing as a Means of Keeping Freshness II. Changes in Freshness and Gel Forming Ability of Conger Eel and Yellowtail during Storage by Partial Freezing (Partial Freezing에 의한 어육의 선도유지 효과에 대하여 2. Partial Freezing에 의한 붕장어 및 방어의 선도 및 어묵형성능의 변화)

  • In succession to the previous paper, the present study was directed to investigate the effect of keeping freshness of conger eel (Astroconger myriaster) and yellowtail (Seriola quinqueradiata) by partial freezing, and the changes in the physical properties of fish meat paste product prepared with the muscle of conger eel during storage were also examined. The results obtained are summarized as follows: The period of keeping freshness (days in which k value reaches $20\%$) of conger eel and yellowtail by partial freezing was 10 days and 6 days, respectively. VBN content in the conger eel muscle showed 39.5 mg/100g by icing for 15 days, and did not show a great change by partial freezing and freezing, while that of yellowtail muscle reached at 32 mg/100g by icing, 20 mg/100g by partial freezing and 18 mg/100g by freezing for 15 days. The lipids extracted from the muscles of both fishes by icing were remarkably oxidized than those by partial freezing. The myofibrillar protein in the conger eel muscle during storage for 9 days decreased $3\%,\;10%\;and\;11\%$ by icing, partial freezing and freezing, respectively, and that of yellowtail muscle did $16\%,\;10%\;and\;4\%$ by icing, partial freezing and freezing, respectively. On the other hand, the alkali-soluble protein in both fishes increased with storage time. Gel strength of fish meat paste product prepared with the muscle of conger eel decreased to $35\%$ by icing, $74\%$ by partial freezing and $76\%$ by freezing for 10 days compared to control, and the expressible water increased 1.6 times, 1.2 times and 1.1 times by icing, partial freezing and freezing, respectively, as much as that of control product.

Storage characteristics of milled rice according to milling system types (백미 제조방식에 따른 저장특성)

  • The storage characteristics of milled rice produced using the dry-type (DT), semi-dry-type (SDT), and wet-type (WT) systems were studied. Immediately after rice was milled with these systems, storage experiments on the milled rice were conducted for 12 weeks at three temperatures (10, 20, and $30^{\circ}C$). As the storage period increased, the color (b value) and the fat acidity slowly increased, and the whiteness, moisture content, turbidity, solid matter, and number of total bacteria decreased. The effects of the storage temperature on the moisture content, total number of bacteria, and fat acidity were greater than those of the milling system type. The high storage temperature showed greater potential for increasing the moisture content and the fat acidity and decreasing the total number of bacteria. The initial moisture content of the sample produced using the WT milling system was higher than that of the other samples. Also, the initial turbidity and solid matter of the WT system sample were lower than those of the other samples, but the degree of the decrease was similar to that of the others as the storage period passed. These results showed that the system type and the storage temperature are important factors in the safe storage of wash-free rice. Specifically, the wet type milling system affected the initial quality properties, which made its safe storage period shorter than in the other types.

Quality Changes in Unripe Peaches Jangachi according to Cultivar during Storage (품종별 복숭아 유과 장아찌의 저장 중 품질특성 변화)

  • This study was carried out to examine changes in the quality characteristics of unripe peach Jangachi made from different cultivars during storage at room temperature for 60 days. Based on the results, unripe peach Jangachi-showed decreases in pH of pulps and soaking solutions of all varieties during storage. Salinity of Jangachi tended to increase during storage, whereas it decreased in soaking solutions. Soluble solid contents decreased during storage in all varieties, both in pulps and soaking solutions. Among Hunter's color values, L values decreased, a values increased, and b values decreased during storage in all varieties. Hardness decreased for 30 days of storage and increased slightly thereafter. During storage, yeast and mold counts increased and decreased within the range from 2.30~5.55 log CFU/g, respectively. In the sensory evaluation, Madoka and Nagasawa Hakuho were evaluated as good in overall acceptability.

Chemical Changes of Red Pepper Seasoning Oil during Storage (고추향미유의 저장 중 화학적 특성 변화)

  • Chemical characteristics of red pepper seasoning oil were investigated during storage at $65^{\circ}\C$ for 6 week to obtain information fer the quality control of powdered soups of Korean instant noodles. The acid value increased gradually during storage. The peroxide value increased remarkably at 4 weeks of storage, but decreased at 6 week of storage. Both American Spice Trade Association (ASTA) value that indicates redness of red pepper and the CIE $L^*,\;a^*,\;and\;b^*$ value increased to 4 weeks of storage, but decreased at 6 weeks of storage. The fatty acids were mainly composed of linoleic (51.02%), oleic (30.17%), and palmitic (11.81%) acid Myristic and palmitic acid content increased slightly but linoleic acid decreased during storage. The ratio of total unsaturated fatty acids to total saturated fatty acids slightly decreased during storage. In free fatty acid (FFA) composition, linoleic acid was present in the greatest amount but it decreased remarkably from 85.5 to 65.2 (mg/kg oil) after 6 weeks of storage. Total amount of FFA increased throughout the storage period. The ratio of total free unsaturated fatty acids to total free saturated fatty acids decreased during storage.

Quality Changes of Mustard Leaf (Dolsangat) Kimchi During Low Temperature Storage (돌산갓김치의 저온 저장중 품질특성 변화)

  • Quality changes in mustard leaf kimchi were investigated during storage for 60 days at $5^{\circ}C$. As the storage period changed from 0 to 60 days, the pH and reducing sugar content of mustard leaf kimchi decreased, while the total acidity and hunter's color increased. The vitamin C content in mustard leaf kimchi decreased gradually from 10 to 30 days and then markedly increased after 40 days. The total dietary fiber content and antioxidative activity were significantly higher in fresh mustard leaf kimchi than in fermented kimchi. The major volatile components of mustard leaf and mustard leaf kimchi were determined to be allyl isothiocyanate, 3-butenyl isothiocyanate and phenylethyl isothiocyanate. The contents of allyl isothiocyanate and phenylethyl isothiocyanate, the two major functional components, in mustard leaf kimchi were determined to be 43.72 and $36.17\;{\mu}g/g$ dry weight basis, respectively.
