The Quantitative Change of Chitin as a Criterion to Indicate Fungal Invasion to Rice Storage (미곡저장중 Fungus 침해 판정에 관한 연구)

  • In order to find out a reliable chemical indicator which can be used to tell whether rice, during storage, is invaded by fungi or not, 90 percent milled rice (Tongil) was stored at 26$^{\circ}C$ for 4 weeks and weekly analyzed for changes in several chemical components. The results were as follows : 1) Of several genera of fungi (Aspergillus sp., Penicillium sp., and Rhizopus sp.) observed in stored rice after surface disinfection, Aspergillus sp. were the most frequent fungi. 2) Chitin content in the rice was 25 ug/g at the beginning of the experiment and increased proportionly with moisture content of the storedrice to become 1980 ug/g at 26.9% moisture after 4 weeks. 3) Non-reducing sugartended to decrease with increasing moisture content and or prolonged period. 4) Fat acidity showed a tendency of increase with rise in moisture content of the stared rice. Consequently, changes in chitin content can be mployed as a reliable measure to evaluate the quality of stored rice in connection with fungal invasion.

Use of High $CO_2$ Gas to Control Decay on Peach Fruits (복숭아의 부패 억제를 위한 고농도 탄산가스 처리 효과)

  • 본 연구는 저장 중 부패된 복숭아(‘황도’)에서 Botrytis cinerea를 분리한 후 $25^{\circ}C$에서 배양 중 고농도 탄산가스 (35, 60, 100% + 24, 48, 72시간) 환경에서의 생장억제 효과를 구명하고 이에 따른 과실의 품질 변화를 고찰하였다. 실시한 모든 처리 농도에서 곰팡이 생장이 억제되었으며, 가스 농도 및 처리 시간의 증가에 의해 효과가 극대화되었다. 특히, 100% 탄산가스를 24, 48, 72시간 처리할 경우 5일 배양 후 곰팡이의 생장 정도는 무처리구에 비해 각각 25, 39, 46% 감소되었다. 고농도 탄산가스 처리 기간 동안 곰팡이 성장은 억제되었고 가스 환경이 제거될 경우 정상적인 생장을 재개하는 양상을 보였다. 수확된 ‘황도’ 과실을 대상으로 가스처리 효과를 검증한 결과 100% + 24, 48시간, 60% + 48시간 처리가 부패억제에 효과적인 것으로 나타났다. 35% 농도의 경우 효과가 미미하였다. 가스 처리에 따른 과실의 당도 변화는 없었으며 100% + 48시간 처리의 경우 경도가 높게 유지되었다.

Radiosensitivity of Molds Isolated from Honey Pollen (꿀화분 곰팡이의 방사선 감수성)

  • 방사선을 이용한 화분의 저장방법을 개선하기 위하여 저장중인 메밀 화분으로 부터 곰팡이를 분리, 동정하고 이들의 방사선 감수성을 조사하였다. 분리, 동정된 곰팡이는 Penicillium jenseni, Aspergillus oryzae, Asp. niger, Alternaria SP. 으로 이들 포자의 $D_{10}$ 값은 각각 0.43, 0.54, 0.58, 0.97kGy 이었고, 유도선량은 각각 0.23, 0.18, 0.23, 0kGy이었다. Pen. jenseni 포자의 방사선 감수성은 용존산소하에서 증가하였으며 이에 열처리를 병용하였을 때는 유도선량이 현저하게 감소하였다. 화분 중의 총세균과 곰팡이의 $D_{10}$ 값은 각각 1.25kGy와 $1.50{\sim}4.30kGy$이었다.

Effect of Storage Conditions on Survival of Fungi in Red Pepper Powder (저장조건이 고춧가루 중 곰팡이 생존에 미치는 영향)

  • In this study, we analyzed the effect of storage conditions on the survival of fungi in red pepper powder. Red pepper powder was inoculated with a total of six fungal species, namely Aspergillus terreus, Aspergillus flavus, Rhizopus microsporus, Aspergillus fumigatus, Aspergillus niger, and Aspergillus ochraceus at a final cell count of 4-6 log CFU/g. After inoculating the sterilized red pepper powder with fungi, we dried the powder on a clean bench and packaged it in zipper bags. Following drying, the water activity was 0.502±0.001. Subsequently, the red pepper powder inoculated with fungi was stored at -20℃, 5℃, 15℃, and 25℃. All six species of fungi perished the quickest at 25℃ and survived for the longest (168 days) at -20℃. In summary, this study showed that fungi survive for an extended period in red pepper powder at -20℃ and 5℃ compared to 15℃ and 25℃. Therefore, to prevent fungal contamination, red pepper powder should have a water activity below 0.6 and be stored in a zipper bag at room temperature.

Effect of Sorbitol on the Physicochemical and Microbial Characteristics of Chiffon Cake (소비톨 첨가 시폰 케이크의 품질 특성 연구)

  • Sucrose in chiffon cakes was replaced with different levels of sorbitol (0, 30, 50, 70, and 100%), and the effects on the physical properties and storage stability of the cakes were measured. The specific gravity and viscosity of the batter, as well as the volume and moisture content of the cakes, decreased with increasing sorbitol content. The hardness of the cakes slightly decreased as the amount of sorbitol increased, whereas the lowest cohesiveness was observed in the cakes with equal amounts of sucrose and sorbitol. Storage for one day slightly increased the hardness of the cakes and decreased their cohesiveness. Although the amount of mold and total microbial count increased with increasing storage days at room temperature, the replacement of sucrose with 70 or 100% sorbitol was effective in suppressing microbial growth. In sensory tests, the formulation with 70% sorbitol substitution in the chiffon cakes was the most acceptable.

Microbiological Quality Stability of Fresh mushroom (Agaricus bisporus) by Gamma Irradiation (감마선조사에 의한 양송이버섯의 미생물적 품질안정)

  • The effect of gamma irradiation on microbiological quality of fresh mushrooms (Agricus bisporus) were investigated. Gamma irradiation was found to be effective in lowering microbial counts initially and throughout storage. Decreases in microbial counts were strongly correlated with doses initially and during storage. Microbial counts of 2 to 3 kGy irradiated mushrooms remained significantly lower than unirradiated control mushrooms for a period of up to 2 to 3 weeks when stored at $9\;{\pm}\;1^{\circ}C\;and\;80\;{\pm}\;7%$ RH. Therefore, qualitative and quantitative changes in mushroom microflora by irradiation contributed to overall increases in shelf life of fresh mushrooms.

Survey of Fungal Infection and Fusarium Mycotoxins Contamination of Maize during Storage in Korea in 2015 (2015년 국내산 저장 옥수수에서의 후자리움 독소 오염 및 감염 곰팡이 조사)

  • Maize is one of the most cultivated cereals as a staple food in the world. The harvested maize is mainly stored after drying, but its quality and nutrition could be debased by fungal spoilage and mycotoxin contamination. In this study, we surveyed mycotoxin contamination fungal infection of maize kernels that were stored for almost one year after harvest in 2015. The amount of deoxynivalenol and zearalenone detected were higher than the other mycotoxin, such as aflatoxin, ochratoxin, fumonisin and T-2 toxin. In particular, level of deoxynivalenol was detected as $1200{\pm}610{\mu}g/kg$ in small size kernels, which was four to six times higher than the large and the medium size kernels. Moreover, the amount of deoxynivalenol, zearalenone, and fumonisin were increased with discolored kernels. 10 species including Fusarium spp., Aspergillus spp. and Penicillium spp. were isolated from the maize kernels. F. graminearum was predominant in the discolored kernels with detection rates of 60% (red) and 40% (brown). Our study shows that the mycotoxin contents of stored maize can be increased by discolored maize kernels mixed. Therefore elimination of the contaminated maize kernels will help prevent fungal infection and mycotoxin contamination in stored maize.

Quality Characteristics of Unshiu Orange and Pear Packaged with Paper Incorporated with Antimicrobial Agents (항균소재를 함유한 포장재로 포장한 밀감과 배의 저장중 품질 특성 변화)

  • In order to help the preservation of the unshiu orange and pear, antimicrobial paper incorporating grapefruit seed extract and zeolite was applied to pack fruits. Unshiu orange was packed in a box (24${\times}$24${\times}$22 cm) attached with antimicrobial paper and then stored respectively at l$0^{\circ}C$. Pears were wrapped individually before storage at l$0^{\circ}C$. During the storage, weight loss, pH, total acidity, soluble solid content, microbial load and decay were measured as quality indices. Steady pH increase in unshiu orange was observed to slightly decrease total acidity during the storage with little difference between the packaging treatments. The microbial loads of total aerobic bacteria, and yeast/mold counts were suppressed during storage by the antimicrobial paper packaging, which also contributed to reducing the decayed unshiu orange. Limited reduction of total aerobic bacteria and yeast/mold counts was observed only for initial storage period for the pears wrapped with 9 and 12% antimicrobial agent-added papers. Antimicrobial paper was useful for the reduction of microbial load in unshiu orange and pear without other quality deterioration.

Effect of Harvest Time, Precooling, and Storage Temperature for Keeping the Freshness of 'Maehyang' Strawberry for Export (수출딸기 '매향'의 신선도 유지를 위한 수확시간, 예냉 및 저장온도의 효과)

  • This study was conducted to examine effects of harvest time (09:00 vs. 14:00), precooling at $4^{\circ}C$ vs. no precooling, and storage temperature (4 vs. $8^{\circ}C$) on the storage life of 'Maehyang' strawberry fruits for export. Fruits at a 60% ripe stage were harvested from a commercial greenhouse in Gyeongsangnamdo, Jinju on May 4, 2010. Fruits were precooled by a forced draft cooling for three hours, transported for about 30 minutes and then stored, immediately. Small precoolers set in the farm were used for precooling. Fruits were placed in constant temperature chamber (4 or $8^{\circ}C$) after packaging using PVC wrap and a cardboard box. Fruits were examined for their changes in weight, hardness, Hunter color values, soluble solids content (SSC), and incidence of gray mold (Botrytis cinerea) during storage at a two days interval from May 6 to May 14, 2010. Hardness and SSC decreased as the ripening stage progressed. The Hunter's 'L' and 'a' value of fruit color decreased as time passed. Also, fresh weight decreased during storage at all temperatures. Soft rot appeared on epidermal tissues and followed by gray mold. Incidence of gray mold was greater at $8^{\circ}C$ storage temperature than in $4^{\circ}C$ storage temperature. However, no difference by the harvested time and precooling. The results indicate that effectiveness for keeping the freshness was best achieved by precooling at $4^{\circ}C$ and storage at $4^{\circ}C$, respectively.
