Content of Pesticide Contaminants Content in Organic Vegetables (잔류농약, 무기물 분석에 의한 유기농 채소의 판별: 유기농 채소의 잔류농약 함량)

  • Pesticide contaminants content was determined about both general vegetables marketed at Garak-dong market and organic vegetables cultivated at Hongchun, Kangwon-do. The vegetables were kale, Angelica Keiskei Koidz, celery, lettuce and Allium fistulosum. Pesticide contaminants content of 5 kinds general vegetables were 93.5, 57.7, 112.4, 76.5, 65.2 ppm, respectively. This residual levels were showed 75.35, 70.68, 78.49, 70.49% about standard level, respectively. Angelica Keiskei Koidz was not able to calculate the residual level because the standard level was not established in Korea. In contrast, the residual levels of organic vegetables were determined 36.4, 21.0, 42.9, 29.1, 25.1ppm, respectively. This level was about 30% of standard level, 38.93, 36.40, 38.17, 38.04, 38.50% of general vegetables. At the result, pesticide contaminants content of organic vegetables was less than 40% of general vegetables.

Analyses of Nutrient Composition in Genetically Modified β-Carotene Biofortified Rice (유전자변형 베타-카로틴 강화 쌀의 주요 영양성분 분석)

  • This study was conducted to analyze nutrient composition of a genetically modified $\beta$-carotene biofortified rice (GM rice), developed by the Rural Development Admistration in Korea. The nutritional constituents of GM rice were compared with those of the parental rice cultivar 'Nakdong' as a non-GM control to access nutritional equivalence. Proximate components (moisture, starch, protein, lipid, and ash) of the GM rice were similar to those of the conventional non-GM rice. $\beta$-Carotene contents of GM brown and milled rice were 2.35, 2.03 ${\mu}g/g$(d.b.), respectively. There were no significant differences between the GM and non-GM rice with respect to most of their nutrient composition, despite minor differences in most amino acids and minerals. This result demonstrated that the nutritional composition of this GM rice would be equivalent to that of the parental non-GM rice without major changes in its chemical contents.

Proximate compositions of wild and cultured sweet smelt (Plecoglossus altivelis) muscles and eggs (천연 및 양식산 은어의 근육 및 난의 일반성분 조성)

  • Proximate compositions of muscles and eggs between wild sweet smelt which were caught in Seomjin river and Miryang river, and cultured sweet smelt which were purchased from certain cultured farms in Hadong and Miryang, were compared. Proximate compositions of wild sweet smelt muscles were $76.7\~77.5\%$ for moisture, $18.4\~19.9\%$ for protein, $2.41\~3.47\%$ for lipid, and $1.04\~1.33\%$ for ash content and there were almost no differences between the fishes from Seomjin and Miryang river. Protein and ash content in the cultured fish muscles were similar to those of the wild fish muscles, while the former contained much more lipid and carbohydrate, and less moisture than the latter, especially lipid content differed greatly according to their cultured farms. This might be the result of their different diet compositions. Lipid, protein and carbohydrate content in eggs of the wild and cultured fishes were much higher than those in their muscles. There was a negative correlation between moisture and lipid content in all samples; y= -0.2715x+24.903 (r= -0.7253, p<0.001).

Lipid Components of Rice Bran of Tongil and Japonica Type Varieties (통일계(統一系) 및 일반계(一般系) 쌀겨의 지질(脂質) 성분(成分))

  • Total lipid contents in rice bran for Poong-San(Tongil) and Dong-Jin(Japonica) were 16.13% and 16.97%, respectively. Neutral lipids for Pong-San(75.20%) were slightly higher than those for Dong-Jin(73.69%), whereas contents of glycolipid for Poong-San(16.71%) were lower than those for Dong-Jin(22.80%). Contents of phospholipid in Poong-San(8.09%) were much higher than those in Dong-Jin(3.51%). Acid, peroxide and thiobarbituric acid value of total lipids extracted from rice bran of Poong-San were slightly lower than those of Dong-Jin. Iodine value showed the reverse trend. The neutral lipids were fractionated and identified as hydrocarbon, esterified sterol, triglyceride, free fatty acid, free sterol, diglyceride and monoglyceride. Triglyceride contents were less than common edible oils, but diglyceride and monoglyceride contents were higher. Among the glycolipids contained in the polar lipids, esterified sterylglycoside(11.46%) was the most abundant. Of the phospholipids, phosphatidyl ethanolamine, phosphatidyl inositol and phosphatidyl choline were the major components. Main fatty acids in the total lipids, three lipid components and stepwise eluted individual lipids were olelic acid, linoleic acid and palmitic acid. The fatty acid composition of the neutral lipids was similar to that of the total lipids. In glycolipids, the content of linoleic acid was higher than that of oleic acid, and palmitic acid was predominant in the fatty acid composition of the esterified sterylglycoside.

Current status of comparative compositional analysis for GM crop biosafety assessment (유전자변형작물 안전성평가를 위한 영양성분 비교연구 동향)

  • Approvals for cultivation and import of genetically modified (GM) crops have dramatically increased around the world. Comparative compositional studies are an important aspect of safety assessments of products from GM crops and are based on substantial equivalence. Compositional analyses focus on determining similarities and differences between the compositions of the GM crops and their conventional counterparts, and thereby assessing the compositional equivalence of GM crops and their conventional comparators. The analytes, such as major constituents, key nutrients, and antinutrients, are generally determined on a crop-specific basis according to the OECD consensus document. The use of standard methods throughout the processes, such as selection of comparators, field trials, analytical methods, and statistical data analysis, is crucial. In this study, we showed the general framework of compositional studies. Literature for compositional studies of GM crops conducted abroad and in Korea was reviewed to obtain information about analytes, conventional counterparts, cultivation year, location, and statistical methods. The studies conducted abroad assessed for commercial release of GM crops such as soybean, maize, and cotton, while domestic studies were mainly performed for research in rice. In addition, we suggested a guidance for conventional comparators and field trials applicable to the domestic situation.

Food Components and Antioxidant Activities of Dried Jerusalem Artichoke with White and Purple Colors (일반과 자색 건조 돼지감자의 식품 성분 및 항산화 활성)

  • This study investigated the food components and antioxidant activities of dried Jerusalem artichoke (Helianthus tuberosus L.) with white and purple colors. For the proximate composition of dried Jerusalem artichoke, regardless of color, carbohydrate content was highest, followed by crude protein, ash, and moisture contents, and breed-specific differences were not detected. The highest mineral content of dried Jerusalem artichoke was potassium, followed by calcium, magnesium, sodium, and iron. The major minerals of white color sample were calcium, magnesium, and zinc, whereas those of the purple color sample were potassium, sodium, copper, and manganese, and no significant differences between the samples were detected. The main amino acid of dried Jerusalem artichoke was arginine, regardless of color, followed by asparagine, aspartic acid, and ${\gamma}-amino-n-butyric$ acid in order. Cysteine, leucine, and tyrosine were significantly (P<0.05) more abundant in the purple color sample than in the white color sample. In contrast, phosphoethanolamine was significantly (P<0.05) higher in the white color sample than in the purple color sample. Antioxidant activity was higher in the purple color sample than in the white color sample for all activities except the 2,2-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) assay methodology. Ferric-reducing antioxidant power and oxygen radical absorbance capacity assays at low concentrations of extracts found no differences between the two samples, although the purple sample at high concentration showed relatively high antioxidant activities.

Changes in the taste compounds of Kimchi with seafood added during its fermentation (수산물 김치의 발효과정 중 정미성분 변화)

  • This study was conducted to investigate changes in the physicochemical properties (proximate compounds, reducing sugar, organic acid, ATP and related compounds, and free amino acid) of beachu kimchi (BK) with octopus, abalone, squid and webfoot octopus added during its storage at $4^{\circ}C$ for 35 days. The crude protein content of the seafood Kimchi, 1.98~3.41%, was higher than that of the BK. The organic acid level did not significantly differ in the four kinds of seafood during their fermentation, and their malate and succinate contents decreased while their lactate content increased. The levels of the ATP and related compound substances of the hypoxanthine contents were high but decreased during their fermentation. However, $3.40{\mu}mol/g$ of IMP was detected in the Kimchi with octopus added; $0.67{\mu}mol/g$ in the Kimchi with abalone added; and $1.80{\mu}mol/g$ in the Kimchi with squid added after they were fermented for 21 days, but the same were not detected in the BK. The taurine and ${\gamma}$-amino-n-butyric acid contents of the free amino acids in the seafood Kimchi were approximately two to 10 times and 1.5 to three times higher than in the BK, respectively.

Effects of Roasted Cassia tora L. Extracts on the Chemical Changes and Microbial Growth (열처리가 결명자의 화학성분 변화 및 추출물의 균체증식에 미치는 영향)

  • The effects of roasting Cassia tora L. were investigated for proximate composition, color, volatile flavor profile, microbial growth and alcohol fermentation. While moisture, protein and fat contents decreased with increasing roasting temperature, fiber and ash contents increased. The L, a and b values of Cassia tora L. extracts decreased with increasing temperature, and only a small difference in total color difference$({\Delta}E)$ was observed. A little difference in major flavor components between raw and roasted treatment was found during roasting. Furfuryl alcohol, a major component of coffee flavor, was separated from Cassia tora L. extracts extracted with ethyl ether. The yeast growth was the highest on the water-extract of Cassia tora L. roasted at $160^{\circ}C$. With increased levels of water-extract at $160^{\circ}C$, S. cerevisiae grew rapidly for 24 hr incubation and the growth rate was higher than the unroasted control group. The growth rate of Bacillus subtilis was the highest in a treatment of 0.5% concentration. Little differences in ${\alpha}-amylase$ produced from Bacillus subtilis were observed among the treatment groups. The total alcohol content increased with increasing roasting temperature during alcohol fermentation.

Quality and Volatile-Flavor Compound Characteristics of Hypsizigus marmoreus (느티만가닥 버섯의 품질 및 휘발성 향기 성분 특성)

  • Hypsizigus marmoreus is a wild mushroom commonly consumed in South Korea due to its beneficial effects on health. In the present study, the general chemical and inorganic-element composition, the total amino acid contents, and the volatile-flavor compounds of H. marmoreus were investigated for food uses. The proximate compositions consisted of 60.1% carbohydrate, 32.0% crude protein, 8.98% moisture, 5.0% ash, and 2.0% crude lipid. The minerals in H. marmoreus were found to be as follows; potassium (429.5 mg), phosphorus (101.9 mg), sodium (20.3 mg), magnesium (54.86 mg), calcium (2.7 mg), zinc (0.8 mg), iron (0.7 mg), manganese (0.2 mg), and copper (0.1 mg), based on 100 g of mushroom dry weight. Seventeen kinds of total amino acids were found in H. marmoreus, with the glutamine acid content being the highest (2,340 mg/100 g), followed by the asparagine, serine, arginine, and leucine contents. The volatile-flavor components of H. marmoreus were collected via simultaneous steam distillation extraction (SDE), and were analyzed via gas chromatography-massspectrophotometry (GC-MS). A total of 17 volatile-flavor compounds were identified, including eight aldehydes, seven alcohols, one acids, and one other compounds. The most abundant compound was 2,3,6-trimethy1 pyridine, which accounted for more than 40% of the total volatiles; other important compounds were 1-octen-3-o1, buty1hydroxytoluene (BHT), isoocty1 phthalate, 3-octanal, 1-undecanol, and 2-amylfuran. These results provide preliminary data for the development of H. marmoreus as an edible food material.

Study on the Special Nutrient Contents of Eggs Enriched with Vitamins, Fatty Acids and Other Nutrients (지방산, 비타민 및 특정성분 강화란의 성분함량에 관한 연구)

  • 계란에 함유되어 있는 영양소 함량을 좌우하는 주요한 요인은 사료적 요인에 의한 닭의 영양상태라 할 수 있으며, 이러한 사료적 변화에 현저하게 반응을 나타내는 것은 다수의 미량괄물질, 비타민, 불포화지방산 등이다. 본 실험에서는 지방산 강화란 16종, 비타민 강화란 4종 및 일반란 10종에 대해서 선분 함량을 분석하였으며, 지방사나 강화한 제품의 경우 16개사 제품에서 모두 DHA가 검출되었고, 6개사를 제외한 10개사의 제품에서 EPA가 검출되었다. DHA 함량은 두 개사 제품에서 69.84 mg, 46.16 mg을 나타낸 반면 대부분의 제품에서 100~300 mg 미만의 DHA 함량을 나타내었으며, $\omega$6/$\omega$3비율은 16개사 제품 모두 다른 비율을 나타내었다. 비타민 강화란은 비타민 A와 E를 동시 분리, 정량하였으며 비타민 A와 E 함량은 4개사 제품에서 유의차가 나타나지 않았으며, 일반란과의 비교에서도 큰 차이를 나타내지 않았다. 요오드 강화란 및 사포니 강화란과 비교해서 유의적으로 높은 함량을 나타내었다.(P<0.05) 이상의 결과에서 특수란의 특수성분 함량은 각 브랜드별로 다양한 분포를 보였으며 특히 비타민 강화란의 경우 일반란과의 차별성이 크게 나타나지 않았다. 이는 특수란 제품에 대한 소비자의 신뢰도를 저하시킬 수 있어 앞으로 이에 대해 관리 및 대책이 필요한 것으로 사료된다.
