Possibility of Instrumental Differentiation of Duck Breast Meat with Different Processing and Storage Conditions (가공 및 저장 방법이 다른 오리 가슴육의 기계적 판별)

  • The possibility of instrumental differentiation of duck breast meat treated with different processing and storage conditions was investigated for industrial application. Duck breast meats, which were 1) refrigerated (fresh) after slaughter, 2) fresh but applied the torching process for the removal of remaining feathers (fresh-torched), and 3) frozen and thawed (frozen-thawed), were prepared and the torrymeter value and other quality factors were assessed. The torrymeter values of both duck breast meat and skin showed the lowest in frozen-thawed sample during the whole storage period. The drip loss of frozen-thawed sample was higher than those of fresh or fresh-torched ones. The number of total aerobic bacteria was lower in fresh-torched than fresh but both were not different from frozen-thawed at day 1 while no difference found thereafter. Sensory score of frozen-thawed sample was the lowest. The correlation analysis among the torrymeter value and quality factors of duck breast meat revealed that the torrymeter value is closely related with the total aerobic bacterial number, lipid oxidation, drip loss, and storage period but not with color. The results indicate that once the duck breast meat was frozen then thawed, drip loss and sensory quality can be affected and the torrymeter value can differentiate frozen-thawed from fresh and freshtorched duck breast meat.

  • 본 논문은 사용자가 육아에 있어서 필요한 지식을 제공해주는 육아 정보 제공을 위한 전용 앱 북을 만들고자 한다. 앱 북은 개인의 공감, 신뢰를 실현하는 공간을 연결해주는 정보성을 제공하며, 편리함을 가지고 육아를 하고 있는 사람들이 좀 더 쉽게 어디서든지 사용할 수 있다. 현재 앱북 시장과 앱북 사용자가 점차 증가하고 있기 때문에 육아에 있어서 좀 더 신뢰 있는 정보제공을 통해 사람들이 올바른 지식을 얻을 수 있도록 하는 것이 목표이다. 이를 위해 애니메이션 UI 가 포함된 기술적인 요소를 적용한 앱북을 제작하고자 한다.

라이신 수준이 재래흑돼지 냉동육의 저온저장중 품질특성에 미치는 영향

  • 본 연구는 육성기, 비육기 사료내 라이신 수준이 재래흑돼지 냉동육의 저온저장중 품질특성에 미치는 영향을 구명하고자 실시하였다. 드립감량은 재래흑돼지육이 개량종 돈육보다 낮았으며(p<0.05), TBARS는 저장 7일에 저라이신 수준의 개량종 돈육이 고라이신 수준의 개량종 돈육보다 높았으며(p<0.05), 저장기간 동안 재래흑돼지육과 개량종 돈육간에 차이가 없었다. L 값은 저장5일부터 재래흑돼지육이 저라이신 수준의 개량종 돈육보다 높았고(p<0.05), a 값은 재래흑돼지육이 개량종 돈육보다 유의적으로 높았다(p<0.05). b 값은 재래흑돼지육이 고라이신 수준의 개량종 돈육보다 높았다(p<0.05). 포화지방산은 저라이신 수준의 재래흑돼지육이 가장 높았으나(p<0.05), 불포화지방산과 불포화지방산/포화지방산 비율은 가장 낮았다(p<0.05). 단가불포화지방산/포화지방산 비율은 저라이신 수준의 재래흑돼지육이 고라이신 수준의 개량종 돈육보다 유의적으로 낮았다(p<0.05). 따라서 이상의 결과를 종합해 보면 재래흑돼지육이 개량종 돈육보다 보수력, 육색이 우수하였으며, 저라이신 수준의 사료를 급여시 재래흑돼지육의 포화지방산은 증가하였으나 불포화지방산은 감소하였다.

  • This study investigates the impact of watching motives of parenting reality TV Program, (MBC), (KBS2) on user satisfaction and rewatching. Viewing motives of parenting reality TV Program are found as 'interest', 'charm of children characters', 'relief of loneliness' and 'express everyday feelings'. The result shows that there is significant difference in watching time according to the factor of 'charm of children characters'. Also 'interest' and 'expression of everyday feelings' affect viewing satisfaction of viewers. It is necessary to plan interesting reality program and arrange attractive characters to improve viewing satisfaction of TV program.

An Examination of Factors Influencing Continuous Participation Intention of Online Childrearing Community : Focusing on Moderating Effect of Self-Monitoring (온라인 육아 커뮤니티의 지속적 참여 의향에 영향을 미치는 요인 분석: 자기감시성의 조절 효과를 중심으로)

  • This study looked at what factors lead to continuous participatory intention of online childrearing community. Trust, reciprocity and perceived security from the perspectives of community attributes and reputation motivation, information motivation, enjoyment motivation and self-monitoring from the users' perspectives were conceived as determinants that might have influences on continuous participatory intention of online childrearing community. It were also empirically tested whether they affect continuous participatory intention of online childrearing community. The moderating effect of self-monitoring was examined, too. In order to collect data, online questionnaires were conducted to women whose ages were 20-49 years old and joined online childrearing community. Their responses were analyzed with a regression analysis. The findings showed that trust, reciprocity and information motivation have influences on continuous participatory intention of online childrearing community. The moderating effect of self-monitoring between reciprocity and continuous participatory intention was also found.
