In this study, the stability of O/W cosmetic facial cream emulsions according to HLB values was evaluated by mixing nonionic surfactants, such as Brij 78&72 and Brij 98&92. Brij 78&72 (steareth-20&steareth-2, EMS-01), saturated fatty acid, and Brij 98&92 (oleth-20&oleth-2, EMS-02), unsaturated fatty acid, were used as mixed surfactants. The stability of the O/W emulsion was evaluated by using the emulsion viscosity, particle size, particle size distribution, and zeta-potential. The viscosity of the emulsion increased with the increase of time for EMS-01 while that of EMS-02 decreased with the increase of HLB value. The particle size of both EMS-01 and EMS-02 increased with time. The emulsifier with a HLB value of 10.8, which is the most similar to the required HLB value of mineral oil, 10.5, had the smallest particle size and highest density and also showed the highest emulsion stability. The zeta-potential of both emulsions tended to increase with the HLB value. No significant changes were observed in emulsions of the HLB value of 10.8 or more. The saturated fatty acid system, EMS-01, exhibited a higher zeta-potential value than that of the unsaturated fatty acid EMS-02 and also was superior in the stability.
To investigate the effect of nonionic surfactant and emulsion stabilizer on O/W emulsions, various emulsion formulations with different types of nonionic surfactants and emulsion stabilizers were prepared and their rheological properties were compared. In this study, polysorbate 60 (Tween 60), PEG-60 hydrogenated castor oil (HCO 60), octyldodeceth-16 (OD 16), and ceteareth-6 olivate (Olivem 800) were used as hydrophilic nonionic surfactants, whereas cetyl alcohol, glyceryl monostearate, and stearic acid as emulsion stabilizers. Phase separation occurred only in the emulsion formulation with octyldodeceth-16 and all other emulsion formulations maintained a stable phase. The viscosity, hardness, and creaminess of emulsion formulation using a mixture of ceteareth-6 olivate and cetyl alcohol were the highest, and the emulsified droplet size was also the largest. These results are due to the formation of a network structure texture with the development of a large amount of liquid crystal in the O/W emulsion. In this formulation, the value of elastic modulus was large and the thixotropic behavior, in which the viscosity varies with the history of external force, was observed.

Emulsification is a fundamental process of cosmetics manufacture which produces stabilized emulsion by dispersing the liquid from the one side to the other by adding an emulsifier in an immiscible liquid. Various types of emulsifiers can produce various cosmetics. In this study, we evaluated the stability of emulsifier by measuring variations in the viscosity, particle size and particle size distribution. HLB values of nonionic emulsifiers which are used in this paper are 12.9, 12.9, 12.6 and 12.5 for EMU-01, EMU-02, EMU-03 and EMU-04, respectively. All types of emulsions showed an increase in the particle size and a decrease in the viscosity with the time. Also they showed a decrease in the particle size and an increase in the viscosity with respect to increasing the stirring speed. However, the stability of emulsions up to 56 days was secured by observing the non-separation of emulsions. In addition, the viscosity of the emulsions was measured in the order of EMU-01 > EMU-02 > EMU-03 > EMU-04 while the size of particles was measured in the order of $EMU-01{\approx}EMU-02$ > $EMU-03{\approx}EMU-04$. This indicates that our emulsion can be potentially used for preparing a cosmetic facial cream.

This study is concerned with coemulsifier which is better emulsifiable properties than emulsifier itselves' use only. It's compound was synthesized by esterification of propylene glycol and succinic acid. The structure of them was comfirmed with FT-IR and $^1H$-NMR. Surface active properties with surface tension, cmc, emulsing power were tested respectively at given conditions. Their surface tensions in the aqueous solution was decreased to 33-35 dyne/cm and their cmc was evaluated by surface tension method. And it's emulsifying power was excellent in jojoba oil. As results, the synthesized dipropylene glycol succinate is expected to apply as O/W coemulsifier.

The objective of this study was to investigate the influence of emulsion processing with various homogenization treatments on the physical properties of nanoparticles. For the manufacturing of nanoparticles, by taking the emulsion-diffusion method, various coating materials, such as gum arabic, hydroxyethyl starch, polycarprolactone, paraffin wax, ${\kappa}$-carrageenan and emulsifiers like Tween$^{(R)}$60, Tween$^{(R)}$80, monoglyceride and Pluronic$^{(R)}$F68, were added into the emulsion system. Furthermore, the various speeds (7,000 rpm to 10,000 rpm), and times (15 s to 60 s) of homogenization were treated during the emulsion- diffusion process. NEO II homomixer was the most effective homogenizer for making nanoparticles as 51 nm ($D_{10}$) and 26 nm ($D_{50}$). To manufacture smaller nanoparticles, by using NEO II homomixer, 10,000 rpm of agitation speed, polycaprolactone as coating material, and Pluronic$^{(R)}$F68 as an emulsifier were the optimum operating conditions and components. For the stability of nanoparticles for 7 days, $20^{\circ}C$ of storage temperature was appropriate to maintain the particle size. From these results, the type of homogenizer, homogenization speed, homogenization time and storage temperature could affect the particle size. Moreover, type of coating materials and emulsifier also influenced the size and stability of the nanoparticles.
This study was carried out to evaluate the rheological properties of cake flour with 3% of commercial multi-emulsifiers(P company, W company, O company) based on flour. Rheological properties were analyzed by Falling number, RVA, Alveograph and Farinograph. In Falling number, viscosity of cake flour with multi-emulsifiers was increased. In RVA, initial pasting temperature was increased by adding multi-emulsifier except for W company. and peak viscosity, final viscosity and setback were increased but breakdown was decreased. In Alveogram, P and P/L value were decreased but L and G value were increased. In Farinogram, water absorption was decreased but dough development time was increased and stability was increased except for P company.

고추의 효능을 높이기 위한 방법의 하나로 향신성 분을 보유하면서 자기저자이 가능한 oleoresin을 추출하여 유화제로 수용성을 부여시킨 후, 이때의 유화안 정성과 고온에서 조리를 하였을 때 고추 oleoresin의 항산화 활성을 검토하였다. 100mesh로 분쇄한 고추에 증류수에 가하여 감압증류시켜 정유성분을 추출하고, 잔사에 에틸 알코올을 가하여 $25^{\circ}C에서$ 3시간 진탕 추출한 후 여과, 농축시켜 정유성분과 합하였다. 여기에 물과 유화제 (PGDR)를 첨가, 유화시켜 고추 oleoresin으로 하였다. $60^{\circ}C에서$ 24시간 방치했을때의 enulsion 생성율은 PGDR을 4% 첨가한 경우가 94.5%로 가장 높았고, 또한 100분간 원심분리(200$\times$g) 시킨 후에도 emulsion 잔존율은 80%정도로서 유화안전성이 가장 좋았다. 고추 oleoresin의 항산화 활성은 가열조리 온도 100$\times$의 경우 BHA의 효과 만큼은 미치지 못하나 상당한 항상화성을 나타내었고, 온도 $150^{\circ}C의$ 경우는 BHA 첨가와 마찬가지로 항산화성 효과를 인정하기 어려웠다.
Palm oil was crystallized and melted in the differential scanning calorimeter (DSC) in the presence and the absence of sucrose fatty acid ester (SE) at the different scanning rate. In the presence of SE, the crystallization temperature of palm oil was lowered, because SE inhibited the formation of mother crystal at the initial cooling stage The melting curves of SE added palm oil changed irregularly in the ${\alpha}-form$ transition and fusion entropy. It was that the presence of SE affected the molecular diffusion in palm oil.

The effects of dietary exogenous hydrophilic emulsifiers on the growth, nutrient digestibility, and carcass characteristics of broilers were evaluated. A total of 200 one-day-old broilers (Ross 308) were allotted to one of four treatment groups in a randomized complete block design in five replicates with 10 birds per pen during a 5-week growth experimental period. Birds were fed a corn-soybean meal-based diet with or without the addition of 0.025, 0.050, or 0.075% exogenous hydrophilic emulsifiers. The diets contained 3,025 and 3,075 metabolizable energy/kg for Phases 1 and 2, respectively. For each phase and the overall experimental period, body weight gain (linear, P<0.05) and feed conversion ratio (linear, P<0.05) improved in proportion to the dietary exogenous hydrophilic emulsifier level, while the average daily feed intake was not affected by dietary treatment. Improvement in growth performance by dietary treatments was observed during the last two weeks rather than the first three weeks of the growth phase. In carcass traits, abdominal fat content increased as dietary exogenous hydrophilic emulsifier level increased (linear, P<0.05), whereas dietary emulsifier level did not affect the relative weight of the liver, breast, and leg muscles. In conclusion, addition of dietary exogenous hydrophilic emulsifiers from 0 to 0.075% in broiler diets improved the growth rate and feed efficiency of broilers without any deleterious effects on nutrient digestibility, although a corn-soybean meal-based diet had less energy content (3,025 and 3,075 metabolizable energy/kg) for 0-3 weeks and 3-5 weeks, respectively.
