  • This study investigated quality change of ginseng depending on far-infrared (FIR) drying methods. The ginseng was cut into 2 mm slices and measured moisture content (MC), color, total polyphenol content (TPC), total flavonoid content (TFC) and DPPH radical scavenging activity (DPPH). The color values (L, a, and b) were decreased after far-infrared (FIR) drying. As increase in drying time, color was changed. Considering quality parameters including MC, TPC, TFC, and DPPH, the optimum condition for drying was set at $65^{\circ}C$ for 60 min. Furthermore, we compared color and functional compounds depending on drying process including FIR, freeze-, vacuum, and hot-air drying. The color values of ginseng were decreased when dried using vacuum and hot-air. While the color values of ginseng were increased after freeze drying. Comparison with another drying method, FIR drying presented the highest color difference. FIR and vacuum-dried ginseng indicate higher contents of TPC and TFC than freeze- and hot air-dried ginseng. And hot-air-dried ginseng present the highest DPPH when compared to another drying methods. On the other hand, freeze dried ginseng show the lowest TPC, TFC, and DPPH.

  • The effect of far-infrared (FIR) irradiation on the functional compounds of grape seeds extract were evaluated. Grape seed was dried on different heating power (0, 900, 1800 W) and heating time (0, 20, 40 min) with far-infrared drier. Contents of soluble solids, catechins, total phenolics and total flavonoids along with Hunter's color value, electron donating ability (EDA) and nitrite scavenging activity were analyzed. The soluble solids, Hunter's L value and a value were not significantly different from control samples. Cathechin, procyanidin $B_2$ and epicatechin contents changed with heating time. In the treated sample, total cathechins content was found maximum at 900 W of heating power and 20 min of heating time with a high level of total phenolics, total flavonids and EDA. These results indicated that FIR irradiation of grape seed could enhance antioxidant activities of its extracts by increasing the amounts of functional compounds. Moreover, response surface methodology(RSM) was applied to predict optimum conditions for heating by FIR rays of grape seeds. Based on superimposition of contour map with respect to total phenolics, total catechin and EDA, optimum ranges of heating conditions were heating power of 621.82~818.18 W and heating time of 16.3~19.83 min.

  • Effects of different drying processes, such as hot air drying (HA), superheated steam with hot air drying (SHS/HA), and superheated steam with far infrared radiation (SHS/FIR), on the properties of cherry tomatoes (Solanum lycopersicum var. cerasiforme) were studied. Characteristics of dried cherry tomatoes were determined by examining the water content, internal microstructure, and rehydration capacity under different drying processes. Moreover, ascorbic acid (AA) and lycopene levels were also measured to evaluate thermal damage caused by drying. Cherry tomatoes dried using both SHS/HA and SHS/FIR had water content and water activity similar to those of intermediate moisture food, indicating partial dehydration after combined drying processes. Although AA and lycopene levels decreased drastically after drying, tomatoes dried using SHS/FIR showed the lowest losses of AA and lycopene among samples. Cherry tomatoes dried using SHS/FIR showed a less compact internal cell structure than that of cherry tomatoes dried using HA and SHS/HA, resulting in the highest rehydration capacity. These results suggest that a combined drying process such as SHS/FIR is more effective than conventional hot air drying for the production of partially dried cherry tomatoes with improved quality attributes.

  • This study was carried out to investigate the effects of night-time far-infrared irradiance quality of red pepper dried in greenhouses. This study involved 4 treatments: sunlight alone (control), or sunlight plus nightly far-infrared irradiation at $250W{\cdot}6.6m^{-2}$ ($250W{\cdot}6.6m^{-2}$), far-infrared irradiation at $250W{\cdot}3.3m^{-2}$ ($250W{\cdot}3.3m^{-2}$), or far-infrared irradiation $500W{\cdot}3.3m^{-2}$ ($500W{\cdot}3.3m^{-2}$). The drying periods were 12 days in $500W{\cdot}3.3m^{-2}$ and $250W{\cdot}3.3m^{-2}$, and 14 days in $250W{\cdot}6.6m^{-2}$, and 15 days in the control. The daytime temperature was same among the treatments. The lowest temperature was at $23.8^{\circ}C$ in control, and $29.5-37.2^{\circ}C$ in far-infrared irradiation treatments. The marketable yield was 7-14% higher in far-infrared irradiation treatments compared to the control. The rate of marketability was higher in far-infrared irradiation treatments (93.6-96.3%) than in the control (87.0-87.5%). The American Spice Trade Association (ASTA) value was greatest in the $250W{\cdot}3.3m^{-2}$ treatment, followed by $250W{\cdot}6.6m^{-2}$, then $500W{\cdot}3.3m^{-2}$, and finally the control. Capsaicinoid content showed no regular trend among the treatments. Our results provide an optimized method for reducing drying time of red pepper under sunlight, and improving the quality of dried red pepper.

  • The effects of far-infrared (FIR) irradiation and heat treatment on the antioxidant activity of extracts from peanut shells was evaluated. Peanut shells were placed in pyrex petri dishes (8.0cm diameter) and irradiated at $150^{\circ}C$ for 5, 10, 15, 20, 40 or 60min with a FIR heater. After FIR irradiation or simple heat treatment at same conditions, methanol extracts of peanut shells were prepared and total phenol contents (TPC), radical scavenging activities (RSA) and reducing powers of the extracts were determined. The antioxidant activities of the extracts increased as the time of heating or FIR-irradiation increased. When peanut shells were FIRirradiated at $150^{\circ}C$ for 5 min, the values of TPC, RSA, and reducing power of the extracts increased from 40.17mg/mL to 42.30mg/mL, $67.7\%\;to\;76.3\%$, and 0.569 to 0.639, respectively, compared to the untreated controls. Simple heat treatment of peanut shell under the same conditions $(150^{\circ}C\;for\;5min)$ also increased the TPC, RSA, and reducing power of the extracts from 40.17mg/mL to 43.52mg/mL, 67.7\%\;to\;79.3\%$ and from 0.569 to 0.623, respectively. The results indicate that appropriate FIR-irradiation or heat treatment on peanut shells could increase the antioxidant activities of methanolic extracts.

  • This study was conducted to determine the effect of far infrared ray drying on the microbial and quality changes of vacuum packaged waxy corns, such as microbial growth, rehydration, color differences, weight loss and hardness during the storage at $4^{\circ}C$ and $25^{\circ}C$ for 7 months. After far infrared ray drying for 6 hours at $60^{\circ}C$, 2.32 log CFU/g of total microbial counts in raw waxy corns was enumerated, but no microorganism was detected in steamed or sugar-treated waxy corns. However, no microorganism was observed in all treatments except for control samples until 3 month storage at $4^{\circ}C$, whereas steamed and sugar-treated waxy corns showed 2 and 2.7 log reduction compared to that of control after 3 month storage. Yeasts and molds were more resistant than bacteria against far infrared ray drying at the same conditions. Similar results were observed in $25^{\circ}C$ storage. The degree of gelatinization in raw waxy corns far infrared ray drying changed from 98% to 96.2% after 7 month storage at $4^{\circ}C$, whereas steamed waxy corns with far infrared ray drying changed from 81.14% to 58.73%. Water contents in sugar-treated waxy corns with far infrared ray drying gradually reduced compared to steamed waxy corns as drying time increased. The L values in raw waxy corns far infrared ray drying increased as drying time increased, but L values in steamed or sugar-treated waxy corns significantly reduced after 12 hour far infrared ray drying. Hardness in raw waxy corns was higher than in steamed or sugar-treated waxy corns before storage, but similar hardness was observed between raw- and sugar-treated waxy corns after 9 hour drying. This results showed that the microbial reduction, the enhancement of shelf life and quality establishment of steamed or sugar-treated waxy corns could be maximized by using far infrared ray drying.

  • The effect of far-infrared (FIR) irradiation on the antioxidant activity of extracts from grape seed (GS) was evaluated. GS (5 g) were placed in Pyrex petri dishes (8.0 cm diameter) md FIR irradiated at 150$^{\circ}C$ for 10, 20, 30, 40 or 60 min with a FIR heater. After FIR irradiation, water extract (WE) (1.0 g/10 mL), methanol extract (ME) (1.0 g/10 mL) and 70$\%$ ethanol extract (EE) (1.0 g/10 mL) of GS were prepared, and total phenol contents (TPC) and radical scavenging activity (RSA) of the extracts were determined. The antioxidant activities of GS extracts increased as FIR irradiation. For example, FIR irradiation of GS at 150$^{\circ}C$ for 10 min increased the TPC and RSA of WE from 0.95 mM to 1.84 mM and 33,87$\%$ to 58.55$\%$, respectively, compared to non-irradiated control. In the case of ME at the same conditions of FIR irradiation (150$^{\circ}C$ for 10 min), the TPC and RSA also increased from 3.4 mM to 4.52 mM and 76.55$\%$ to 89.41$\%$, respectively. The TPC and RSA of EE increased from 2.65 mM to 4.82 mM and 66.89$\%$ to 84.62$\%$, too. According to the GC/MS analysis, several low-molecular-weight phenolic compounds such as vanillic acid and 3,4-hydroxy benzoic acid were newly formed in the EE after FIR irradiated at 150$^{\circ}C$ for 10 min. There were slight differences in the kinds of phenolic compounds between EE of non irradiated control and FIR irradiated samples. These results indicated that FIR irradiation onto GS could enhance antioxidant activities of its extracts with increasing the amount of phenolic compounds.
