A Development of Cholesterol Decrease in Cheddar Cheese (Cheddar Cheese의 Cholesterol 감소에 관한 연구)

  • The present study was designed to examine the effects of different homogenization pressure, homogenization temperature and $\beta$-cyclodextrin concentration on cholesterol decrease rate of Cheddar cheese, and to optimize the factors of cheese manufacture Process. Il. The hardness(control 5.46kg/$cm^2$), gumminess(control 5.24kg), chewiness(control 4.87kg/cm) reduced to 2.03kg/$cm^2$, 2.18kg, 2.24kg/cm, respectively. In the result of sensory analysis, treatment of homogenization for cholesterol removed Cheddar cheese improved appearance and flavor, however texture fell. In addition, the resent result of the study indicated that about 75.27% of cholesterol in Cheddar cheese could be removed, and the possibility of development of cholesterol decreased Cheddar cheese was observed.

The Characteristics of an Oxidative Dissolution of Simulated Fission Product Oxides in $(NH_4)_2CO_3$ Solution Containing $H_2O_2$ ($H_2O_2$ 함유 $(NH_4)_2CO_3$ 용액에서 모의 FP-산화물의 산화용해 특성)

  • This study has been carried out to look into the characteristics of an oxidative-dissolution of fission products (FP) co-dissolved with uranium (U) in a $(NH_4)_2CO_3$ carbonate solution. Simulated FP-oxides which contained 12 components have been added to the solution to examine their dissolution characteristics. It is found that $H_2O_2$ is an effective oxidant to minimize the oxidative-dissolution of FP. In the 0.5 M $(NH_4)_2CO_3$-0.5 M $H_2O_2$ solution, some elements such as Re, Te, Cs and Mo seem to be dissolved together with U, while 98${\pm}$2% for Re and Te, 94${\pm}$2% for Cs, and 29${\pm}$2 % for Mo are dissolved for 2 hours. It is revealed that dissolution rates of Re, Te and Cs are high (completely dissolved within 10${\sim}$20 minutes) due to their high solubility in the $(NH_4)_2CO_3$ solution regardless of the addition of $H_2O_2$, and independent of the concentrations of $Na_2CO_3$ and $H_2O_2$. However, the dissolution ratio of Mo seems to be slightly increased with time and about 33 % for 4 hours, indicating a very slow dissolution rate and also independent of the $(NH_4)_2CO_3$ concentration. It is found that the most important factor for the oxidative-dissolution of FP is the pH of the solution and an effective dissolution is achieved at a pH between 9${\sim}$10 in order to minimize the dissolution of FP.

Removal of Uranium by an Alkalization and an Acidification from the Thermal Decomposed Solid Waste of Uranium-bearing Sludge (알카리화 및 산성화에 의한 우라늄 함유 슬러지의 열분해 고체 폐기물로부터 우라늄 제거)

  • This study has been carried out to elucidate the characteristics of the dissolution for Thermal Decomposed Solid Waste of uranium-bearing sludge (TDSW), the removal of impurities by an alkalization in a nitric acid dissolving solution of TDSW, and the selective removal (/recovery) of uranium by an acidification in an carbonate alkali solution, respectively. TDSW generated by thermal decomposition of U-bearing sludge which was produced in the uranium conversion plant operation, was stored in KAERI as a solid-powder type. It is found that the dissolution of TDSW is more effective in nitric acid dissolution than oxidative-dissolution with carbonate. At 1 M nitric acid solution, TDSW was undissolved about 30wt% as a solid residue, and uranium contained in TDSW was dissolved more than 99%. In order to the alkalization for the nitric acid dissolving solution of TDSW, carbonate alkalization is more effective with respect to remove the impurities. At the carbonate alkali solution controlled to about 9 of pH, Al, Ca, Fe and Zn co-dissolved with U in dissolution step was removed about $98{\pm}1%$. On the other hand, U could be recovered more than 99% by an acidification at pH about 3 in a carbonate alkali solution, which was nearly removed the impurities, adding 0.5M $H_2O_2$. It was found that uranium could be selectively recovered (/removed) from TDSW.

  • This paper presents an application result of on-line fault diagnosis system for glass melting furnace using a fuzzy expert system. Operators maintain the furnace using the furnace Knowledge and experience, which directly influence the furnace and glass product. Firstly, knowledge and experience is achieved and analyzed to implement the furnace Knowledge and experience into fuzzy expert system. The acquired Knowledges determined as a crisp rule or a fuzzy rule to expect its characteristics. And, a linear regression is used as the input of fuzzy rule to consider the exact knowledge of human operator. The fuzzy expert system is implemented with G2 which is an on-line expert system tool of Gensym Co. The application to a production furnace of Samsung-Corning Co. in Suwon shows successful results of proposed fuzzy expert system.

  • Effects of cereal kojis and legumes on alcohol fermentation and fibrinolytic activities of Korean traditional wines were investigated. The Korean traditional wine which was brewed by addition of 10% barley koji into the mash showed the greatest fibrinolytic activity of 20.0 U and good ethanol productivity (16.8%). The fibrinolytic activity was increased up to 26.0 U by addition of 50% of mungbean and its acceptability were improved by addition of jujube (3%) into the mash.

  • Fucoidan은 갈조류 세포 내의 골지체에서 합성되어 세포간물질, 세포벽 구성 물질, 엽상체 표면의 삼출액 둥에 존재하는 산성 다당류의 일종으로 혈액 중에 존재하는 heparin과 그 구조가 비슷하여 혈액 항응고 작용이 있는 것으로 보고(Mori et al., 1982)되어 있으며, 그 외에도 항암작용(Noda, 1990)등 다양한 생리적 기능이 밝혀지고 있다. 또한 fucoidan은 점성이 낮고 용해성이 우수하여 수용성 식이섬유 소재로서의 이용가능성도 매우 높다. (중략)

  • Soybean protein isolates were acylated with succinic anhydride and partially hydrolyzed with trypsin. Chemical modification decreased protein contents of samples and, in amino acid composition, tyrosine was increased comparatively. And lysine was increased remarkably by partial proteolysis. Succinylation and trypsin treatment increased the aqueous solubility and shifted the isoelectric potint that showed high pH-dependence of protein solubility. Protein solubility was influenced by salt concentration such as $NaCl,\;CaCl_2,\;NaNO_3$ and $NaH_2PO_4$. Chemical modification increased the absorption of oil and water, emulsification properties and foam capacity, but decreased foam stability, ultraviolet absorbance and bulk density. Protein-protein Interaction between soybean protein isolates and beef protein increased the emulsifying activity, emulsifying activity index and foaming properties, but it didn't have any influence on emulsion stability.

Properties of β-carotene-loaded chitosan/hyaluronic acid nanocapsules: solubility and redispersibility (베타카로틴 함유 키토산/하이알루론산 나노캡슐의 용해도 및 재분산성 특성)

  • To improve the solubility of β-carotene, three types of β-carotene-loaded nanocapsules were prepared using chitosan (CS) and two cross-linkers, sodium tripolyphosphate (TPP) and hyaluronic acid (HA), alone or in combination (CS-TPP, CS-TPP-HA, and CS-HA). The entrapment efficiency of all nanocapsules significantly increased with an increase in TPP and HA, with the efficiency ranging from 95% to 99%. The solubility of β-carotene was significantly improved by CS nanoencapsulation before and after lyophilization and during storage. CS/HA nanoencapsulation significantly improved (by 11-fold) the water solubility of β-carotene. In particular, CS/HA nanoencapsulation was the most effective in terms of not only the solubility of β-carotene, but also the redispersibility ratio. Therefore, CS/HA encapsulation could be useful for improving the solubility of poorly soluble active ingredients, such as β-carotene.

  • 항만 및 해양 구조물은 육상과는 비교할 수 없을 정도로 가혹한 해수 환경에서 사용되며 계속적으로 부식 손상을 받는다. 따라서 강구조물이 장기적으로 안전하게 사용되기 위해서는 적절한 방식은 물론 철저한 유지관리가 필수적이다. 한편, 현재 해양환경 중 항만, 조선, 해양산업 등에 많이 이용되는 강구조물은 이에 대응하기 위하여 일반적으로 도장방식이나 음극방식이 사용되고 있다. 음극방식은 피방식체를 일정전위로 음극 분극하는 원리로써 외부전원을 인가하거나 비전위의 금속을 희생양극으로 연결하여 방식하는 방법이다. 이와같이 해수 중 음극방식을 실시할 경우 해수 중 용존하는 많은 이온들 중에서 특히 $Ca^{2+}$ 이나 $Mg^{2+}$ 이온이 탄산칼슘, 수산화마그네슘을 주성분으로하는 화합물로 형성된다. 이렇게 생성된 전착막은 산소 확산을 방지하는 물리적 장벽을 형성하고 부식율을 감소시키는 것으로 보고되고 있다. 그러나 전착막은 소지 금속과의 결합력이 불균일 함은 물론 막을 형성하는데 있어서 장시간이 소요된다는 단점이 있다. 따라서 본 연구에서는 해수 중 음극방식 응용 원리에 의해 전착막을 형성하고, 석출속도, 밀착성 및 내식특성을 향상시키기 위해 해수 중 기체를 용해시켜 제작한 막의 특성을 분석-평가하였다. 본 연구에 사용된 기판(substrate)은 일반구조용 강(SS400)을 사용하였으며, 면적은 $70mm{\times}30mm$, 두께는 1 mm로 제작하여 실험을 진행하였다. 외부전원은 정류기(Rectifier, xantrex, XDL 35-5T)를 사용하여 3 및 $5A/m^2$ 의 조건으로 인가하였고, 양극은 Carbon Rod를 사용하였다. 이때 해수에 주입한 이산화탄소의 양은 0.5 NL/min 였다. 각 조건별로 제작된 전착막에 대해 외관관찰, 석출량, 모폴로지, 조성원소 및 결정구조 분석을 실시하였고, 밀착성 및 내식특성을 평가하기 위해 테이핑 테스트(Taping Test, JIS K 5600-5-6)와 3.5 % NaCl 용액에서 전기화학적 양극 분극 시험을 진행하였다. 시간에 따른 전착막의 외관관찰 결과 전류밀도의 증가와 함께 상대적으로 많은 피막이 형성되었고, 용해시킨 기체에 의해 더 치밀하고 두터운 피막이 형성됨을 확인할 수 있었다. 성분 및 결정구조 분석 결과 $Mg(OH)_2$ 성분의 Brucite 및 $CaCO_3$ 성분의 Calcite 구조 및 Aragonite 구조를 확인하였으며, 용해시킨 기체의 영향으로 $CaCO_3$ 성분의 Aragonite 구조가 상대적으로 많이 검출되었다. 이는 해수 중 용해된 이산화탄소의 영향으로 인해 풍부한 ${CO_3}^{2-}$ 이온이 형성되고 용액 pH를 낮게 유지시켜 Ca 화합물 형성이 용이한 환경이 조성되는 것으로 판단된다. 밀착성 및 내식성 평가를 실시한 결과 해수중 용해시킨 기체에 의해 제작한 시편의 경우 견고하고 화학적 친화력이 높은 Aragonite 결정이 표면을 치밀하게 덮어 전해질로부터 산소와 물의 침입을 차단하는 역할을 하여 기체를 용해시키지 않은 $3A/m^2$$5A/m^2$ 보다 비교적 우수한 밀착성 및 내식 특성을 보이는 것으로 사료된다.
