  • Authors investigated the tenderness effect of beef which was treated with papain and obtained results indicated as follow. 1. By using the sensory test, most desirable tenderness were obtained in 0.05% of enzyme solution for 40minute to 1 hour at $25^{\circ}C$. 2. It was also somewhat recognized as a tenderness effect with treated for 40minute to 1 hour at $10^{\circ}C$. 3. Water soluble and amino acid nitrogen were increased in proportion to enzyme concentration, reaction temperature and reaction time and opposite in connective tissue nitrogen. 4. It will be recognized that there were correlation between result of sensory test and water soluble, amino acid and connective tissue nitrogen.

Softening Studies of Raw Sea Tangle Texture for Improvement of Its Processing Compatibility (가공적성 향상을 위한 다시마 조직의 연화에 관한 연구)

  • This study was performed to investigate softening methods of raw sea tangle for development of sea tangle processing products and intermediate materials. In examination of various softening agents, it was revealed that 0.3% sodium triphosphate was best effective on softening with heat treatment. Softerness and spreadability of sea tangle treated with sodium triphosphate and heat treatment were indicated to be better than the others. In blanching studies, microwave was extremely effective on softening and the effect was as follows: microwave>steaming>boiling water in softening order. In the case of adding 0.3% sodium triphosphate in blanching treatment, there was synergy effectiveness on softening. The color change of treated sea tangle was significantly different at p<0.05 depending on blanching method and addition amount of the agent.

Pre-treatment effects on softening of carrot during enzyme immersion process (당근의 전처리 조건에 따른 효소의 연화 효과 비교)

  • Softening effects of enzyme following pre-treatments were examined. Four pre-treatments: raw (R), heat (H), heat and freeze-thawing (HFT), heat and freeze-drying (HFD) were applied to carrot. Subsequently, each treated sample was immersed in 10% celluclast enzyme solution for up to 6 h and then their properties were compared. The minimum and the maximum color change was observed in HFD and H, respectively. R showed no change in hardness after 6 h immersion, indicating that the enzyme did not penetrate the carrot. The number and size of pores were greater in samples undergone HFT or HFD as observed by microstructure analysis using SEM, and HFD caused 99.5% reduction in hardness after 6 h immersion. After 6 h immersion post-HFT or 3 h immersion post-HFD, the hardness was less than $20,000N/m^2$, indicating tongue ingestion was possible, and the samples retained their original shape and easily collapsed by spoon pressing.

Non-enzymatic softening of Calendula officinalis L. petals and its anti-skin aging effect for food materialization (식품소재화를 위한 Calendula officinalis L. 꽃잎의 항피부노화 기능성 규명 및 비효소적 연화 기술 연구)

  • Calendula (Calendula officinalis L.) petals are edible flowers which have been used as a decorative ingredient in dishes or as a medicinal food. In this study, the anti-skin aging potential of calendula petals was investigated. Additionally, the texture was softened by non-enzymatic methods to broaden their application as a food or cosmetic agent. Treatment of calendula prevented ultraviolet-induced matrix metalloproteinase-1 expression in skin cells. We investigated whether heating-based processing could soften calendula petals. The results from the punctual test demonstrated significant changes in the hardness of calendula petals depending on the pH, heating temperature, and time. Although there were minor differences among various processing conditions, the largest alteration in hardness was observed when the petals were softened by incubation at $80^{\circ}C$ and pH 2.3 for 120 min. Collectively, these results show that the application of proper processing conditions can soften calendula petals without using enzymes.

Effect of Edible Coatings on Softening of the Stored Immature Plums (식용코팅이 미숙 자두의 연화에 미치는 효과)

  • Immature plums(Prunus salicina L.) were coated with edible coatings, calcium-added methyl cellulose(CaMC) and hydroxy propyl methyl cellulose-15(CaHPMC-15). Weight loss and respiration rate of immature plums coated with CaMC and CaHPMC-15 were lower only at the earlier storage period. The titratable acidity of plums was decreased and pH was increased during storage, Soluble pectin, pectinesterase, and polygalacturonase activity as the marker of softening were commonly increased with storage time, but those increases were lower in CaMC and CaHPMC-15-coated plums. Mechanical firmness became significantly soft during storage, while the coated plums were remained harder. As a result of sensory evaluation, softening of plum tissue was found during storage, but the coated plums had the harder texture. These data suggest that the application of CaMC or CaHPMC-15 coatings into immature plums can reduce the postharvest softening during storage.

  • The hardness of kelp(Laminaria japonica) blade is a major deterrent to mass consumption in spite of its value as food. For improvement of kelp products as a special product of 'Donghae', the effect of additives on softening of kelp blade was studied. Kelp was composed of $34.74\%$ ash, $50.5\%$ carbohydrates, $4.81\%$ lipids and $9.98\%$ proteins on a dry weight basis. Glutamic and Aspartic acid are the principal free amino acids with percentage compositions of $2340mg\%\;and\;1650mg\%$ respectively of the $4719mg\%$ of total free amino acids. The softening effects of acetic acid and commercial mixed polyphosphate are more effective than that of monosodium carbonate. Boiling for more than 1hr was necessary for adequate softness of kelp blade in $0.3\%$ acetic acid solution. But, the kelp blade were softened more satisfactorily to 0.165kg/mm for only 30 min boiling in $0.2\%$ phosphate solution, and it is equal to boiling in $0.3\%$ acetic acid for 1hr.

Effect of hot water and ethanol extracts from Nelumbo nucifera Gaertner flower on lipid accumulation and reactive oxygen species (ROS) production in adipogenesis of 3T3-L1 cells (3T3-L1 세포분화 중 지방축적 및 ROS 생성에 대한 연화 열수 및 에탄올 추출물의 효과)

  • The present study was designed to investigate the effects of hot water and ethanol extracts of Nelumbo nucifera Gaertner flower on lipid accumulation and reactive oxygen species (ROS) production during adipogenesis in 3T3-L1 cells. 3T3-L1 preadipocytes were treated with both hot water and ethanol extracts for up to 8 days following standard induction of differentiation. Regarding anti-adipogenic activity, compared with the control, the hot water and ethanol extracts significantly inhibited lipid accumulation (37.4 and 66.6%, respectively) and ROS production (46.4 and 46.8%, respectively) during adipogenesis in 3T3-L1 cells. Treatment with hot water and ethanol extracts significantly inhibited mRNA expression of peroxisome proliferator-activated receptor gamma ($PPAR{\gamma}$) and CCAAT/enhancer-binding protein alpha ($C/EBP{\alpha}$), thereby reducing the mRNA expression of adipocyte-specific fatty acid binding protein (aP2). Moreover, both the extracts significantly inhibited mRNA expression of NADPH oxidase (NOX4). Overall, our research suggests that N. nucifera Gaertner flower extracts might be a valuable source of bioactive compounds that exhibit anti-adipogenic activity and could have applications in the field of medicine and food industry.

Studies on Softening Stability of Softened Sea Tangle Depending on Various Softening Agents (연화제의 종류에 따른 다시마의 연화 안정성에 관한 연구)

  • This study was carried out to develop the intermediate material for its processing product of sea tangle by investigating softening stability of softened sea tangle for storage. The change of softening stability, Avrami (equation) exponent, color and sensory characteristics was examined during storage when hydrophilic softening agent was added to the softened sea tangle. Inclination of the sample added with isomalto oligosaccharide showed the lowest value in relation of ln(E$\_$L/- Et) vs t for four days of storage. Exponent range of Avrami equation was 1.00-1.67 and isomalto oligosaccharide having 1.0 of exponent exhibited the most stable effect in softerness. The sample formulated with isomalto oligosaccharide indicated the lowest value in rate constant and its rigidity was progressed very slowly during storage. The L, a and b value of softened sea tangle during storage was relatively decreased. Color preference, odor, cohesiveness, softerness, process compatibility were revealed to be in best when isomalto oligosaccharide was added. When softening agent was added to the softened sea tangle it showed the positive result in processing compatibility and the available value in intermediate material for its processing product. It was relatively effective on softening stability when isomalto oligosaccharide was added to the softened sea tangle.

Effect of Blanching Condition on the Physicochemical Properties of Burdock, Lotus Root, and Garlic Scape (데치기 조건에 따른 우엉, 연근 및 마늘종의 이화학적 특성 변화)

  • This study investigated the effects of blanching conditions on the quality characteristics of burdock, lotus root, and garlic scape. The selected plants were blanched at varying temperatures (70-100℃) for 1-5 min, and moisture content, shear force, color, and total microbial count were analyzed. Burdock exhibited browning discoloration when it was blanched at a relatively low temperature (70-80℃). In addition, thermal tenderization of burdock was not evident in the blanching conditions adopted in this study. Blanching affected the tenderness and moisture content of lotus root without deteriorative discoloration. In particular, low temperature blanching (80℃) was favorable to blanching lotus root. Alternately, thermal tenderization of garlic scape was possible by blanching at 80-100℃ for 3-5 min, while discoloration of the blanched garlic scape dominated at high-temperature blanching (100℃). Consequently, the result indicated that low temperature for a long time (80℃ and 3-5 min) provided a better blanching condition for lotus root and garlic scape than high temperature applied at a short time (100℃ and 1-3 min).

최소가공 수박의 품질유지를 위한 칼슘제제 처리 효과

  • 최소 가공 수박의 가공과 유통 중 품질 열화에 있어 가장 중요한 문제는 과육의 조직연화이다. 따라서 본 연구에서는 세포 분리를 제한하고 과실 조직의 경도를 유지시키는데 효과가 있는 것으로 알려져 있는 칼슘제제 중 calcium chloride, calcium lactate, CaO를 처리하여, 최소 가공 수박에서 조직연화로 발생되는 품질저하 억제에 가장 효과적인 칼슘제제를 알아보고자 하였다. 수박의 과육부위를 2cm의 정육면체 형태로 절단한 후, 0.5% calcium chloride, 0.5% calcium lactate, 0.05% CaO용액에 3분 동안 침지시켰다. 그리고 fan을 이용하여 상온에서 30분 동안 draining한 다음 PP tray에 담아 PP film로 sealing하고 $10^{\circ}C$에서 일주일간 저장하며 품질변화를 살펴보았다. 호흡특성은 0.05% CaO 및 0.5% calcium chloride용액을 처리한 구가 호흡률이 가장 낮게 나타났다. 가용성고형분은 처리 직후 처리구의 함량이 무처리구에 비해 다소 낮아지는 경향을 보였으나, 저장기간 중 0.5% calcium chloride 용액처리구는 다른 처리구에 비하여 큰 함량 변화 없이 당도가 일정 수준으로 유지되었다. pH 변화는 0.5% calcium chloride용액 처리구에서 변화가 가장 작았으며, 경도변화 역시 저장 초기값과 비교하였을 때보다 감소가 적게 일어나 다른 처리구에 비하여 연화 저해에 효과가 있는 것으로 확인되었다. 따라서 최소가공 수박에 대해 칼슘제제 중 calcium chloride용액 처리가 품질유지에 가장 효과적임을 알 수 있었다.
