Oriental and Western Food Effects Analysis of Misutgaru for Fusion Remedy in Diabetes Mellitus (당뇨의 식·의약 치료를 위한 약선 미숫가루의 동, 서 식품학적 효능 분석)

  • This study was understanding the application of Misutgaru in Diabetes mellitus. To address these concerns, this study was performed to provide basic ideas to further the understanding oriental medicinal cuisine and its application. Also this study designed to provide basic information applicable to promotion of health and medical cure for modern people through the Korean traditional dietary treatment. Basic data on the nutritional composition and oriental diet therapy area approach of Misutgaru was acquired to predict the usefulness of Misutgaru as tonify the liver and kidney. Thus nourish the blood through tonify the liver & kidney. Misutgaru energy was 309.76Kcal per 100g, crude protein was 39.27 g, crude fat was 4.40g, crude ash was 5.21g and carbohydrate was 28.27g per 100g. This study realize the value of functional effects on various foods with oriental theory. I want that many researchers concerning our traditional theory for dietary food effects.

Effect of the extracts of various foods and medicinal herbs on the antioxidant activity and sensory characteristics of jujube-omija herbal sauce (식품과 한약재 에탄올 추출물이 대추.오미자 약선소스의 항산화 및 관능적 특성에 미치는 영향)

  • In order to increase the antioxidant effect and preference of jujube-omija herbal sauce, we added ethanol extracts of 12 kinds of food and 12 kinds of medicinal herb to the sauce, and then evaluated the antioxidant activity and sensory characteristics. The antioxidant activity of the jujube-omija herbal sauces was greatly increased by the addition of ethanol extracts of foods such as green tea, mugwort, mint, lemon, leek, etc. and those of medicinal herbs such as ginseng. pine needle, the root of arrowroot, orange peel, etc.. Due to the high content of phenolic compounds, the ethanol extracts foods and medicinal herbs appeared to be responsible for high electron-donating ability and low hydroperoxide productivity. While the jujube-omija sauce with the extracts of green tea, mugwort, ginseng and pine needle were not preferred by the panels due to bitter taste and aroma, those of lemon, fruit of Chinese quince, orange peel, etc. were preferred with their sweet and a little sour taste and showed a high antioxidant activity. Especially, lemon juice was the best to increase the antioxidant activity and the preference of the jujube-omija herbal sauce.

Analysis of Nutritional Composition and Effects of Yak-sun Tea Prescription from Oriental Medicinal Herbs for Serum Lipid Levels and Homocystein Content (한약자원을 이용한 약선차의 영양성분 분석 및 약선차의 섭취가 여대생의 혈청지질수준과 호모시스테인 농도에 미치는 효과)

  • This research was planned and executed to evaluate how the composition of Yak-sun (oriental diet therapy) can effect health conditions of people who are suffering from diet-related diseases like obesity and hyper lipidemia by taking Yak-sun in a form of nutritional supplement with our daily meals. We produced Yak-sun tea with $Ky\hat{a}lmy\hat{a}ngja$, Kamguk, $K\hat{u}m\hat{u}nhwa$, Ch'onkung and observed nutritional composition and evaluated how this tea effects on serum lipids and homocystein concentration by clinical practices. With this observation, we found out that this tea has significant effect on increasing of HDL-cholesterol, decreasing of LDL-cholesterol and homocysteine concentration, and we think that scientific and objective evaluation was done on the components of Yak-sun tea prescription. We concluded that we could apply the components not only in a form of tea, but also in other forms of various food. The information we received from this conclusion will be a basic information on how we can apply oriental medicinal resources into other food and will also be a stepping stone for medicinal herbs to step foot in the field of functional food research, which already draws sizable attention world-wide.

Physicochemical Characteristics of Concentrates and Dried Powder Extracted from Herbal Plant Mixture (약용식물자원의 배합비와 제형이 추출물의 품질특성에 미치는 영향)

  • 우리나라를 비롯한 동양문화권에서는 천연 약용식물자원의 이용을 통하여 전통적으로 지역 보건향상을 도모해 왔으며 최근 성인병과 난치병 해결을 위한 대체의학에 대한 관심이 증가하면서 약용식물자원을 이용한 건강기능식품 분야가 주목되고 있다. 약용식물자원은 민간에서 약선음식 등에 널리 활용되고 있지만 원료 농산물을 그대로 이용하는 수준으로 광범위한 적용성을 가지는 약선식품용 소재화 기술개발은 약용식물자원의 소비촉진에 크게 기여할 것으로 기대된다. 본 연구에서는 약선식품용 식품소재 개발의 일환으로 약용식물자원의 배합비와 추출물의 제형이 품질특성에 미치는 영향을 조사하였다. 스트레스 경감기능을 보유하는 약용식물자원은 고문헌에 기초하여 선정하였으며 약선원리에 따라 소정의 조건으로 3종(CLP 1, CLP 2, CLP 3) 배합비를 설정하였다. 추출물은 온도를 달리한 열수에 추출하고 유동Ext, 분무건조분말 및 과립으로 제형화 하였고 품질특성은 폴리페놀함량, 용해도, 투과도 및 색도특성을 분석하였다. 약용식물자원 혼합 추출물의 수율은 CLP 2가 65%로 가장 많았으며 1차 추출에서 76%의 수율을 보였고 추출시간대비 수율은 상업적 추출의 경우가 가장 높았다. 유동 Ext의 폴리페놀함량은 CLP 2가 g 당 11~13 mg을 함유하여 가장 많았고 CLP1과 CLP 2는 동등한 수준을 나타냈다. 유동 Ext는 99%의 용해도를 보였으며 투과도는 CLP 3가 52~68%로 가장 낮았으며 추출조건에 따라 색도가 차이가 있었다. 분말형태의 경우 폴리페놀 함량은 분무건조로 제조한 CLIP 2가 15.40mg/g으로 가장 많았다. 부형제로 과립화한 CLP 3가 g당 1.7 mg으로 가장 적었다. 분무건조분말은 98~99%의 용해도를 보였으며 부형제를 사용하여 분무건조하거나 과립화한 시료는 투과도와 명도가 높았으며 적색도와 황색도 및 갈색도가 낮았다. 이상의 결과는 약용식물자원 혼합 추출물은 원료의 조합비와 추출물의 제형은 식품소재화에 따른 품질특성의 영향인자로 작용함을 나타낸다.

  • This study was performed to provide basic ideas as understanding and application for oriental medicinal cuisine (Yak-Sun). We investigated background, history of Yak-Sun in China. Also we conducted to investigated how to apply the theories of oriental medicine appropriately, which direction should be taken, and how it should be developed. To develop medicinal cuisine, it is necessary to grasp the theoretical system. And to develop medicinal cuisine for health enhancement, it is also required not only to consider constitutions but also to suggest the need of knowledge for moderation in terms of regimen along with the theory of oriental medicine. Also to develop medicinal cuisine according to the perspective of oriental medicinal theory, what should be taken into account is not only the understanding of the characteristics of food materials, but also the properties of them that the theory of oriental medicine. Lastly the scientific effect of the medicinal cuisine which is developed according to the oriental medicinal theory. And it is believed to be essential for the government to make effects to set a standard and laws to validate the medicinal effects and the process of assessment so that the systematic development can be encouraged, and to prepare guidance to food development for national health improvement.

The information we received from this conclusion will be a basic information on how we can apply oriental medicinal resources into other food and will also be a steppingstone for medicinal herbs to step foot in the field of functional food research, which already draws sizable attention world-wide.

Effects of Medicinal Enzyme Powder on Intestinal Mobility, Lipid Level, and Blood Parameters of Loperamide-Induced Constipation in Rats (약선효소 분말식이가 Loperamide의 투여로 유발된 변비 쥐의 장 운동과 지질 함량 및 혈액학적 성분 변화에 미치는 영향)

  • This study was aimed at investigating whether dietary therapy using medicinal enzyme powder is effective in reducing constipation caused by loperamide in rats. Nine-week-old male Sprague Dawley were subdivided into 4 groups: normal diet group (C), loperamide treatment and normal diet (CL), medicinal enzyme powder diet (E), and loperamide treatment and medicinal enzyme powder diet (EL). Constipation was induced by subcutaneous injection of loperamide (1.5 mg/kg) 3 days prior to sacrifice. The treatment with loperamide led to an increase in weight gain, a decrease in the number and wet weight of fecal pellets, and a decrease in intestinal motility. The administration of the medicinal enzyme powder significantly reduced weight gain but increased intestinal mobility compared with the loperamide-treated group. The treatment with loperamide in the normal diet group reduced the activities of both suggesting that constipation may be involved in the low level of glutamic oxaloacetic transaminase (GOT) and glutamic pyruvic transaminase (GPT). Additionally, the loperamide treatment in the medicinal enzyme powder diet group increased the level of GOT, but reduced the level of GPT. Loperamide treatment also reduced cholesterol and increased the atherogenic index (AI) and cardiac risk factors (CRFs). Interestingly, the treatment with the medicinal enzyme powder effectively attenuated both the increase in AI and the reduction in high density lipopretein (HDL)-cholesterol, caused by the treatment with loperamide. Although there were no significant differences in the blood protein level, including hemoglobin and hematocrit, between the normal diet group and the loperamide-treated group, the administration of the medicinal enzyme powder to the loperamide-treated group effectively increased the levels of both hemoglobin and hematocrit. Collectively, the results demonstrate that the medicinal enzyme powder can help to combat the negative events caused by constipation.

  • 본 연구는 한국 의료관광의 국제 경쟁력 향상을 위한 전략으로 한식의 도입가능성을 알아보고 이를 활용할 수 있는 방안을 제시하기 위한 목적으로 연구되었다. 연구 결과 한식은 의료관광에 있어서 잠재적 가능성이 높은 자원으로 활용이 가능하며, 이를 위한 전략으로 약선음식과 같은 전통음식을 차용한 의료관광상품의 개발, 한국 의료관광에 한식의 이미지 도입을 통한 차별화 전략을 제시하였다.

  • This research was planned and executed to evaluate how the composition of Yack-sun tea can affect the health conditions of people who are suffering from diet-related such as being overweight, are obese and have hyperlipidemia, by taking Yack-sun tea in a form of a nutritional supplement with our daily meals. We produced Kangjieum with Lycium chinense Mill., Polygonum multflorum Thunb, Cassia tora L., Crataegus pinnatifida Bge and Salvia miltiorrhiza Bge. Thus, we approach of oriental diet therapy area research of Kangjieum and analysis proximate composition, water soluble antioxidant content. The content(%, dry basis) of total carbohydrate was 60.23%, crude protein was 18.18%, crude ash was 11.36% and crude fat was 10.23% in Kangjieum. Total water soluble antioxidant content was 1.027 ${\mu}g/m{\ell}$ of Kangjieum. We think that scientific and objective evaluation was done on the components of the Kangjieum prescription. This basic data could help guide the application of oriental medicinal resources into other foods and serve as a stepping-stone for use of Kangjieum in the burgeoning field of nutraceutical foods. Last, the scientific effects of oriental medicinal foods developed according to oriental medicinal theory. This theory is believed to be essential for government policy development concerning validation of medicinal effects and assessment, with the aim of fostering systematic development and providing guidance to food development in the interest of national health.
