The Structural Relationship between On-line Word of Mouth, Value, Satisfaction, Loyalty and Popularization of Yaksun Food (약선음식의 온라인 구전, 가치, 만족, 애호도 및 대중화 간의 구조관계 분석)

  • The purpose of this study is to analyze the relationship between characteristics of online word-of-mouth communication regarding medicinal cuisine on value, satisfaction, loyalty and popularization, as well the interrelationship among them, and ultimately to propose a relationship model. The survey design, empirical analysis, hypothesis examination and model application were found to be suitable. The research results are summarized below. First, regarding the characteristics of online word-of-mouth communication, professionalism and proper timing were found to have a positive influence on value and the satisfaction. Second, the value of medicinal cuisine was found to have a positive effect on satisfaction and popularization, but not on loyalty. Overall, stressing the professionalism and proper timing of online word-of-mouth communication increases the value and customer satisfaction of medicinal cuisine, which in turn increases its popularity. In particular, those interested in increasing the popularity of medicinal cuisine should not only be knowledgeable of it, but also post accurate information that details each dishes unique traits and how to properly manage ingredients and cooking methods.

Current State of Consumption of Yaksun (Medicinal) Food and Medicinal Food Education Participation Intentions by Food-Related Lifestyle (조리 교육생의 식생활라이프스타일에 따른 약선음식 이용특성 및 약선음식 교육 참여의사)

  • The purpose of this study was to examine the current state of consumption of medicinal food and the intent to participate in medicinal food education by food-related lifestyle. A total of 264 samples were conveniently selected from students enrolled in culinary education at the Seoul Institute of Technology and Education from September 5, 2014 to September 20, 2014. The results were as follows. Factor analysis showed five factors in food-related lifestyle named as adventure-seeking factor, taste-seeking factor, health-seeking factor, convenience-seeking factor, and safety seeking factor. There were three factors in awareness of medicinal food named as health characteristic, negative perception, and intent to purchase. The cluster analysis showed five dimensions for food-related lifestyle named as convenience-seeking group, safety-seeking group, health & safety-seeking group, health-seeking group, and taste-seeking group. Among the demographic characteristics, there was a significant difference in age, cooking career, and households by food-related lifestyle group. Among intent to participate in education regarding medicinal food, there was a significant difference in medicinal food educational institution preferences by food-related lifestyle group. Among medicinal food awareness, there was a significant difference in negative perception by food-related lifestyle group.

Effect of Health-Orientated Menu for Restaurant Customers on LOHAS, Herbal Food, and Customer Satisfaction (외식소비자의 건강지향 메뉴가 LOHAS와 약선 음식 및 고객만족에 미치는 영향)

  • As a life cycle changed and people who eat out rapidly increased, the imbalance of nutrition through eating out has been suggested as a risk factor for chronic diseases. This has cast light on health-oriented menu for restaurant customers, raising it as a new social issue in the food service and health industry. In light of this situation, this thesis focuses on the relationship among health-oriented menu for restaurant customers, herbal foods and its influence on customer satisfaction to provide useful information on LOHAS and herbal foods. Also, it investigates their vegetable diet, including eating herbal food, and Buddhist temple foods which are in close relationship with health. The results are as follows. First, health orientation had a significant impact on LOHAS. Second, health-oriented menu proved to give significantly positive influence on customer satisfaction by introducing herbal foods. Third, LOHAS gave a significant impact on herbal foods, and by herbal foods, it gave positive influence on customer satisfaction. Finally, the hypothesis which said herbal food has a significant impact on customer satisfaction also had significant influence.

  • This research suggests development of medicinal food in the future, establishes a marketing strategy for securing and maintaining customers of medicinal food restaurants and proposes efficient management directions for medicinal food in the food service industry. The higher the level of medicinal food that can satisfy consumer demand for health such as prevention of adult diseases, fat content, Organic food, etc, the more the purchasing motives of medicinal food including repurchase intention and recommendation are shown. The result of the hypothesis testing shows that the purchasing motives in the influencing factors such as prevention of adult diseases, fat content, organic food, food balance have significant influence on satisfaction in the mediating factors. Based on these analysis results, this study offers useful information about medicinal food and management of a restaurant specializing in medicinal food.

Effects Recognition and Elective Attributes on Satisfaction and Recommendation for Medicinal Foods (약선음식의 인지도와 선택속성이 만족도와 추천의향에 미치는 영향)

  • This paper is 1) to find out how they recognize medicinal foods, 2) to analyze what make it select for functional restaurants, then which attributes affect on satisfaction and recommendation, 3) and to suggest distinguished guidelines for attracting core customers continuously. The questionnaires are distributed 200 who had only visited in medicinal restaurants and used for data analysis 181 except 19. The findings are summed up as follows; 1. All three factors which are showed 'health managing & prevention', 'functional foods', and 'cuisine presentation' had significant on satisfaction, recommendation, and revisited intention in medicinal restaurant. Among them, 'health managing & prevention' factor had significant highly. 2. Satisfaction variable had affected strongly on recommendation, and also, recommendation had affected on revisited intention.

Research on Medicinal Food Consumption Patterns in Gyeongju Area (경주지역 주민들의 약선요리 이용형태에 관한 연구)

  • The purpose of this study is to examine medicinal food consumption patterns focusing on the consumers living in Gyeongju area, and it attempts to provide database about developing medicinal food products as tourist attractions grounded on the results. For this study, the data was analyzed using SPSS WIN 20.0 for an empirical analysis. Moreover, the survey questions were sent out to 300 people, and total 256 copies of questionnaire were returned for the sample data. For the result that "It will have a significant impact on the selecting attributes of medicinal food according to gender," there was a meaningful difference between gender on the average cost. For the result that "It will have a significant impact on the selecting attributes of medicinal food according to marital status," there was a significant difference between married and single for comparing tastes. For the result that "It will have a significant impact on the selecting attributes of medicinal food according to age," there was a meaningful difference on the degree of awareness, comparing tastes, and comparing health. For the result that "It will have a significant impact on the selecting attributes of medicinal food according to occupation and education," there was a meaningful difference on the degree of awareness. Based on the results of this study, medicinal restaurants should offer various menu items and services to prepare methods to remind consumers of their professionalism in order to enhance competitive power of medicinal food.

Effects of Selection Attributes of Medicinal Food on Customer Satisfaction and Purchase Attitude in Jinju Area (진주지역 약선요리 선택속성이 고객만족과 구매태도에 미치는 영향에 관한 연구)

  • The purpose of this research is to examine the effects of selection attributes of medicinal food on customer satisfaction and purchase attitude in Jinju area. A survey was conducted to 300 people who live in Jinju area, and 252 completed copies of questionnaire was returned. Statistical package 'SPSS WIN 20.0' was used to analyze the sample data, and the result of the analysis is as follows. First, for the hypothesis, 'selection attributes of medicinal food have a significant effect on satisfaction,' food quality, health food and services have a significant effect on customer satisfaction. Second, customer satisfaction with medicinal food has a significant effect on revisit. Third, customer satisfaction leads to recommendation to others. In conclusion, this research shows that medicinal food restaurants in Jinju area should provide healthy food menu, high-quality food and high-class services, which could be effective to promote the specialty of medicinal food restaurants for costumers.

  • A growing interest in health has been leading to more interest in function of food rather than its taste and nutrition. Usually we think chemical-free or oriental food to be good for health. Yaksun is a food with herbal stuff, which reflects our desire for health and longevity and China's splendid food culture. It is based on the traditional medical thought of the Orient that both medicine and food have the same origin. Yaksun is a traditional functional or nourishing food with both nutritive and medicinal elements, which therefore provides such effects as epicurean pleasure, prevention of diseases and improvement of health. It is recorded that in China there was a dietitian in the royal court from the period of Seoju(B.C. 11∼7), who was responsible for supervising and controlling the health, nutrition and disease of an emperor. Therefore, herbal food has a very long history. Currently, there are many Yaksun stores in Japan and Taiwan as well as China, which are one of popular tourist destinations. Basically Yaksun follows the theory of the Oriental medicine. Yaksun is categorized into four(cold, cool, hot and warm) according to its temperature and into five basic tastes(bitter, sweet, pungent, salty and sour). Yaksun has the functions such as preventing diseases and aging improving internal organs, and healing diseases. In China many colleges of medicine have a department of Yaksun studies through which systematic researches have been being made since a long time ago. For Korea, the discipline of Yaksun studies is still at the beginning stage. To respond to a growing interest in health and prevent chronic adult diseases, it is required to develop a functional food by establishing a systematic theory of Yaksun and making more researches into it.

A Survey on the Recognition and Satisfaction of Korean Herbal Foods according to Dietary Behavior in Lifestyle (식생활 라이프스타일에 따른 한국 약선음식 인지도 및 만족도 조사)

  • This study aimed to investigate recognition and satisfaction toward Korean herbal foods according to dietary lifestyle as well as the actual status of using ingredients for Korean herbal foods while looking for methods to improve use. The general characteristics of the respondents included relations with foods such as learning or working on them, and the correlations with the examined items were analyzed by grouping according to dietary lifestyle. Five significant dietary lifestyle groups were derived by analyzing the groups using the factor scores from the analysis. Recognition of Korean herbal foods was higher with older respondents and more cooking experience. Regarding experience related to Korean herbal foods, the housewives showed higher satisfaction when the ingredients of foods were bought and cooked. And satisfaction with price differed significantly by dietary lifestyle. With regard to experience of using ready-to-cook or ready-to-eat products, the groups with more cooking experience indicated relatively lower satisfaction with the taste of such products. When visiting restaurants, the groups with less cooking experience showed higher satisfaction with taste and nutritional values. Regarding the actual status of using ingredients for Korean herbal foods, most of the respondents answered that hygiene and quality management, distribution and marketing, and the promotion of ingredients are all essential.

  • The purpose of this study is to suggest guidelines for drawing and keeping customers through knowing function of herbal and food. Customers have known herbal foods to high nutritional foods, prevention of high blood pressure, heart disease, and obesity. Also, people recognized highly garlic which has function prevention cancer, brown seaweed which is controlled blood pressure, and ginkgo nut which is helpful for asthma, detoxication. They know specifically function of herbal materials such as mugwort, ginseng, and royal golly. The guidelines are as followed. The first, seasonal herbal tea provide in stead of water like medicinal foods. The second, various cereals, Chinese herbal materials, and vegetables are added to the main rice. So it can make to eat everyday like nutrition rice which is mixed with garlic and ginkgo. The third, specific function food' and herbal's should be explained on the menu. Therefore, it make attract customer's curious and interest.
