A Bibliographical Study of Tzeam Using the Meat and Poultry (찜의 문헌적 고찰(I) -수조육류를 이용한 찜을 중심으로-)

  • The tzeam is the one of steaming cook that boiled the main material of poultry. meat and the sub-material of vegetables. It is always setted on the main-table in above seven chup ban sang and also kyoja sang. In this thesis, according to the kinds of tzeam in the main material of poultry, meat was to analysis reference frequency to them the materials, the measuring unit of materials, the terms of cooking and kitchen utensil by 47 books published in Korea from 1420 to 1987. 1. It was 37 kinds of tzeam in the main material of poultry, meat. 2. Materials were classified into the main-material, sub-materials, seasioning and decorations. 3. There were 43 kinds of measuring units, of them 18 kinds were for volume, 12 kinds were for quantity, 4 kinds were for length and the rest measuring units were 9 kinds. 4. There were 26 kinds of kitchen utensil for cooking. They were mainly used a hab 1 rice ball with lids, and castles (cast iron castle). 5. There were 27 kinds of cooking terms. The terms of them, 11 kinds were for heating methods, 16 terms of them were for the cutting process.

Determination of Strategies for the Reduction of Plate Waste and Prevention of Plate Waste Reuse in Foodservice Operations (음식점 남은 음식물 저감화 및 재사용 근절 관리 방안)

  • This study was conducted to provide strategies for the reduction of plate waste and prevention of plate waste reuse in foodservice operations. To achieve these goals, we surveyed the entrepreneurs of foodservice operations, professionals in the field of foodservice management and food safety, and public officials working for food safety enforcement about their perceptions and strategies on plate waste management. The professionals' survey indicated that definition of plate waste needed to be clear for understanding. Also Korean food culture insisting on abundance and variety table settings, foodservice owners' demands for cost reduction, and foodservice workers' insufficient safety perceptions were indicated to bring forth the practice to reuse plate waste. The effective ways to control plate waste management were systematic educational supports for Korean food culture upgrade among consumers and improvements of safety perceptions among owners, as well as workers. Also small portion size was needed to reduce plate waste.

Microbial Contamination Levels in the Raw Materials of Home Meal Replacement Shabu-Shabu Meal Kit Distributed in Markets (가정간편식(Home Meal Replacement, HMR) 샤브샤브 밀키트의 원료별 미생물 오염도 분석)

  • This study assessed the contamination levels of total aerobic bacteria, fungi, coliforms, Escherichia coli, Bacillus cereus, and Staphylococcus aureus and qualitative analysis of Salmonella spp. and Listeria monocytogens in six raw materials (beef, bean sprout, Chinese cabbage, king oyster mushroom, Korean cabbage, and sweet pumpkin) of home meal replacement (HMR) Shabu-Shabu meal kit distributed in markets. The total aerobic bacteria, fungi, and coliforms were detected as 3.98-6.50, 2.78-3.52, and 2.02-3.28 log CFU/g, respectively. Especially, beef was highly contaminated with total aerobic bacteria (6.50 log CFU/g) and coliforms (3.28 log CFU/g). Over 5 log CFU/g of total aerobic bacteria were also detected in bean sprout, Chinese cabbage, and sweet pumpkin. Less than < 2 log CFU/g of coliforms were detected in all vegetables. E. coli was not detected in any of the six samples (ND: < 1 log CFU/g). S. aureus was detected as 1.33-1.71 log CFU/g in most samples but it was not detected in beef and Korean cabbage. B. cereus was assessed as 1.15-2.01 log CFU/g in most samples but it was not detected in Korean cabbage. L. monocytogenes was qualitatively detected as 25-50% in most samples except for king oyster mushroom. Salmonella spp. were not qualitatively detected in any of the six samples. The microbial contamination levels determined in the current study may be potentially used as the basic data to execute microbial risk assessments of HMR foods such as Shabu-Shabu meal kit.

A Survey of the Actual Holding Conditions of Cooking Tools in the Korean Big Cities (한국 대도시 가정의 부엌설비 및 조리기구에 관한 실태 조사 -제2보 : 조리기구의 보유실태조사)

  • This survey was performed to investigate the actual holding conditions of the electric tools, gas tools and small cooking tools in the four Korean big cities; Seoul, Pusan, Kwangju and Taejon. The results were as follows; 1. Each family had more than 8 items on the average, of 24 kinds of electric tools under investigation. The holding ratio of refrigerators was the highest (99.6%), and that of dish washers was the lowest (3.4%). 2. The holding ratio of gas-ranges was the highest(92.2%) and that of gas-ovens was the lowest (2.2%) of 4 kinds of gas tools under investigation. 3. Each family had more than 45 items on the average, of 86 kinds of small cooking tools under investigation. The holdings ratios of openers and wicker baskets were very high (98.2% and 96.6%, respectively), and those of noodle tools and Shinsonros were very low (13.8% and 13.6%, respectively). 4. The holding ratios of various kinds of cooking tools had interrelations with the size of city, housewife's educational background, family income, house style, private residence, etc.

A Survey on the Holding Amount of Cooking Tools of the Farm and Fishing Villages in Chungnam Area (충남지역 농어촌의 조리기구 보유실태에 관한 조사)

  • This survey was performed to investigate the holding amount of the various kinds of cooking tools of the farm and fishing villages in Chungnam area. The results were as follows: 1. The holding ratio of refrigerators was the highest (97.9%), and that of toasters was the lowest (1.9%) among the electric tools. 2. The holding ratio of gas-ranges was the highest (95.7%) and that of gas oven-ranges was the lowest (1.2%) among 4 kinds of gas tools under investigation. 3. The holding amount of pans was the highest among the cooking tools and that of wicker baskets was very high among the small cooking tools. The holding ratios of egg-cutters and lemon-squeezers were very low (4.1% and 2.9%, respectively). 4. The holding ratios of various kinds of cooking tools were related to the housewife's educational background and family income.

Analysis of 236 Pesticides in Apple for Validation of Multiresidue Method using QuEChERS Sample Preparation and PTV-GC/TOFMS Analysis (QuEChERS법과 PTV-GC/TOFMS 이용 잔류농약 분석법 개발을 위한 사과시료 중 236종 농약의 동시분석)

  • The recent trend for pesticide residue analysis in food involves fast cleanup and use of mass spectrometry to achieve quantitative and qualitative analysis at the same time. Recently, the QuEChERS (quick, easy, cheap, effective, rugged and safe) multi-reside method has received much attention as a fast extraction and cleanup method of pesticide residue analysis. Therefore, multi-residue analysis of 236 pesticides was tested with the QuEChERS method by concurrent use of PTV-GC/TOFMS (gas chromatography/ time-of-flight mass spectrometry with programmable temperature vaporizer). PTV condition was optimized and when the method was applied to apples, pesticide recovery rates (spiked at 400 ng/g) ranged from 80% to 120%, and RSD values were under 10% for most compounds. The results showed that the QuEChERS sample preparation and PTV-GC/TOFMS analysis can be applied to multi-residue analysis of pesticides in fruits and vegetables.

Effect of Pre-preparation with Vinegar against Microorganisms on Vegetables in Foodservice Operations (단체급식에서 채소류 전처리를 위한 식초 소독의 미생물적 효과)

  • For hygenic evaluation, microbiological tests of seasoned raw vegetal)les from five high school foodservice operations were conducted. The antimicrobiological effect of pre-preparation with vinegar against microorganisms on vegetables in foodservice operations was also investigated. Total plate counts of leek gukgalli, broad bellflower saengchae and vegetable salad ranged from 10$^4$ CFU/g to 10$^{6}$ CFU/g. Coliform levels of those ranged from 10$^2$CFU/g to 10$^4$ CFU/g. Leek washed three times was pre-prepared at different concentration (0.05%,0.1%,0.5%,1% and 2%) and temperature ( 1$0^{\circ}C$ 2$0^{\circ}C$ and 4$0^{\circ}C$) for 5, 10 and 30 minutes. The higher the concentration and temperature of vinegar were, the more the antimicrobiological activity increased. The sanitizing activity of vinegar increased with treatment time. Considering the quality of vegetable and the expense, when the levels of total plate counts and coliform of vegetable were 10$^{6}$ and 10$^3$ CFU/g, pre-preparation with 0.5% of vinegar at 2$0^{\circ}C$ for 10 minutes was best. The population of total plate count and coliform on row and leek washed three times increased during storage for 72 hours. However, The levels of microorganism on leek samples pre-prepared with 0.5% and 1% vinegar decreased during storage. After the treatment of vinegar at 1$0^{\circ}C$ for 10 minutes, Staphylocucus aureus, Escherichia coli O157, Shigella sonnei, Salmonella entritidis, Listeria monolytogenes were not detected.

Changes of Major Components and Microorganisms during the Fermentation of Korean Ordinary Kochujang (한국재래식(韓國在來式)고추장숙성중(熟成中)의 주요성분(主要成分) 및 미생물(微生物)의 변화(變化))

  • The present study was attempted to obtain the basic data concerning a reasonable preparing method and the optimum fermentation conditions of Kochujang (Red pepper paste). To establish the standard qualify of Kochujang, changes of the chemical composition and the numbers of bacteria and feasts in Kochujang during fermentation were observed. Moisture, salts and crude ash contents of Kochujang were not changed significantly during fermentation. Titrable acidity and amino nitrogen gradually increased with the time-passed, whereas crude fat gradually decreased with the time-elapsed. And reducing sugar and total nitrogen increased until 40 days, but slightly decreased after this period. The numbers of bacteria and yeasts in the ingrients for the preparation of Kochujang were $3.9{\times}10^7/g$, $1.5{\times}10^3/g$ in red pepper powder, $7.6{\times}10^4/g$, $2.8{\times}10^2/g$ in salts. respectively, but those of sugar and malt were not more than 100/g. Microbial counts in Kochujang during fermentation increased until 40 days, but those are gradually decreased after that.

  • Trend of foods and nutrients intake per person per day in Korea from 1970 to 1979, based on reports on national nutrition survey, was analyzed. The average rates of population, GNP and per capita national income were 1.7, 9.6 and 536.2%, respectively. The consumption of cereals, pulses and potatoes was decreased; whereas that of fresh vegdtables, fruits, meat, fresh fish and shells, eggs, milks, and fats and oils was increased. Calorie intake was remained essentially constant, but protein and fat intake was increased by 11.6% and 52.3%, respectively, in ten years. The main sources for calcium, iron and vitamin A were vegetables. Among various nutrients, intake of riboflavin and animal protein were less than RDA.

Changes in quality of fried rice with crab meat depending on the storage period and temperature (저장기간 및 저장온도에 따른 꽃게풍미 볶음밥의 품질변화)

  • The edible crab is among the rich resources that can be used as materials for food products, but living crabs and crabs marinated in soy sauce are the only widely utilized materials for food products. For seafood development, research is needed to promote the use of crabs in various products. In this study, the quality changes of fried rice prepared with crab meat, crab emulsion sauce and crab cooker effluent were investigated. The pH and acidity values did not show any significant difference at $-20^{\circ}C$. The acidity of the fried rice continuously increased during storage at 4 and $25^{\circ}C$. The VBN and TBA values of the fried rice stored at 4 and $25^{\circ}C$ were significantly higher than those of the fried rice stored at $-20^{\circ}C$ during the storage period. The viable cell count of the fried rice stored at $-20^{\circ}C$ changed little during the storage period while that of the fried rice stored at 4 and $25^{\circ}C$ rapidly increased over 2 weeks. For the fried rice stored at $-20^{\circ}C$, the overall quality did not show significant differences during the storage period. In conclusion, the best storage temperature for both quality and safety was found to be $-20^{\circ}C$. At such storage temperature, the quality of the stored instant rice using crab meat did not change, and through research the expanding possibilities of using crab materials were confirmed.
