Incompatibility of Casein-Alginate Mixtures (카제인-알긴산 혼합물의 비혼합성)

  • Phase separation is the typical phenomenon in protein-polysaccharide mixtures because of thermodynamic incompatibility between two macromolecules. Phase separations of casein-alginate-water systems were investigated by using phase diagram under varying pH (6, 8 and 10) and NaCl concentrations (0, 0.25 and 0.5 M). Incompatibility decreased with increasing pH and decreasing NaCl concentration. Molecular weight of alginates did not significantly affect the phase diagram of casein-alginate-water systems. The results strongly suggested that compatibility of casein and alginate involved electrostatic interactions.

Application of Functional Carbohydrates as a Substitute for Inorganic Polyphosphate in Pork Meat Processing (돈육 가공에서 기능성 탄수화물을 이용한 인산염 대체 소재 개발)

  • Guar gum, ${\kappa}$-carrageenan, alginic acid and chitosan were applied to pork as a model system, and evaluated as a substitute for inorganic polyphosphate, which is one of the essential additives in conventional meat processing. The tested materials did not alter the fat content or pH of the pork meat; however, they did affect water holding capacity and cooking loss significantly. The pork with added guar gum and ${\kappa}$-carrageenan exhibited lower cooking loss than the pork with added polyphosphate. Also, theses materials showed no negative coloring effect within the pork meat blends, which suggest the possibility for their application in final products. In addition, the pork processed with guar gum showed a similar emulsion stability to that with polyphosphate. Overall, guar gum and ${\kappa}$-carrageenan were confirmed as possible substitutes for inorganic polyphosphate.

Preparation of Jam Using Undaria pinnatifida Sporophyll (미역귀를 이용한 잼의 제조)

  • In the preparation of jam using Undaria pinnatifida sporophyll, effects of food ingredients to the jam rheology were investigated. The paste was prepared by crushing the sporophyll using chopper and homogenizer with 2.5 times water and then it was filtrated before to make a jam. The sporophyll jam was adjusted to 62$^{\circ}$Brix by heating and concentration. It was a similar to the commercial jam in the gel strength. Among the various treatments, the jam prepared with 60% (w/w) sugar, 0.75% (w/w) high methoxy (HM) pectin and 0.3% (w/w) citric acid showed best quality aspects of both texture profile analysis (TPA) and sensory evaluation. Addition of 0,08% (v/w) synthetic strawberry flavor and 0.5% (w/w) cinnamon powder to sporophyll paste gave a good masking effect for the undesirable sea mustard flavor.

Fabrication of BCP/Silica Scaffolds with Dual-Pore by Combining Fused Deposition Modeling and the Particle Leaching Method (압출 적층 조형법과 입자 추출법을 결합한 이중 공극 BCP/Silica 인공지지체의 제작)

  • In recent years, traditional scaffold fabrication techniques such as gas foaming, salt leaching, sponge replica, and freeze casting in tissue engineering have significantly limited sufficient mechanical property and cell interaction effect due to only random pores. Fused deposition modeling is the most apposite technology for fabricating the 3D scaffolds using the polymeric materials in tissue engineering application. In this study, 3D slurry mould was fabricated with a blended biphasic calcium phosphate (BCP)/Silica/Alginic acid sodium salt slurry in PCL mould and heated for two hours at $100^{\circ}C$ to harden the blended slurry. 3D dual-pore BCP/Silica scaffold, composed of macro pores interconnected with micro pores, was successfully fabricated by sintering at furnace of $1100^{\circ}C$. Surface morphology and 3D shape of dual-pore BCP/Silica scaffold from scanning electron microscopy were observed. Also, the mechanical properties of 3D BCP/Silica scaffold, according to blending ratio of alginic acid sodium salt, were evaluated through compression test.

Effects of Experimental Formulated Diets, Commercial Diet and Natural Diet on Growth and Body Composition of Abalone (Haliotis discus hannai) (실험 배합사료, 외국 시판자료 및 생사료가 참전복의 성장 및 체성분에 미치는 효과)

  • This study was carried out to investigate the effects of experimental formulated diets, commercial diets and natural diet(dried Undaria) on growth and body composition of Haliotis discus hannai. Experimental diets was formulated to provide 34.1% protein and 7.5% lipid, and prepared by different $CaCl_2$ concentration (5, 10 and 15%) and dipping time (10, 20 and 60 second) in solution. The juvenile abalone average weighing 0.3g were distributed in a flow-through aquarium system using a cmpletely randomized desing with 13 diets and 3 replictes per diet (50 abalone/tank), and fed diets for 17 weeks. The abalone fed the time nine experimental formulated diets and two commercial diets showed better growth performance than that of natural diets. No significant differences were found among abalone fed the experimental diets and commercial diets in survival rate, weight gain, soft body weight and soft body composition (P>0.05).

Changes in Physico-Chemical Properties of Salted Sea Mustard (Undaria Pinnatifida) by Gamma Irradiation (염장미역의 감마선 조사에 따른 이화확적 특성 변화)

  • The effect of gamma irradiation on physico-chemical properties of salted sea mustard (Undaria pinnatifida) was investigated. Chlorophyll and carotenoid pigment of salted sea mustard were partially decreased by irradiation. However there was no significant difference in the retention rate of pigment between control and 2 kGy-irradiated samples after six months of storage at around $10^{\circ}C$, ranging values of 74 to 77% in chlorophyll and 54 to 56% in carotenoid. Total organic acids and volatile acids associated with the organoleptic quality of sea mustard increased in the samples of lower salt concentrations and of higher storage temperatures. The softening of sample tissue by irradiation was shown to be correlated with the extraction properties of alginic acid.

Removals of 1-Naphthol in Aqueous Solution Using Alginate Gel Beads with Entrapped Birnessites (버네사이트를 고정화한 알긴산 비드(Bir-AB)를 이용한 수용액 중 1-Naphthol의 제거)

  • In this study, alginate beads containing birnessite (Bir-AB), a highly reactive oxidative catalyst for the transformation of phenolic compounds, was prepared and its 1-naphthol (1-NP) removal efficiency was investigated in a batch test. Based on scanning electron microscopy image, it can be inferred that the alginate gel cluster acts as a bridge which bind the birnessite particles together. Kinetic experiment with Bir-AB of different mixing ratios of birnessite to alginate (Bir : AG=0.25 : 1~1 : 1 w/w) indicate that pseudo-first order kinetic constants, $k(hr^{-1})$ for the 1-NP removals increased about 1.5 times when the birnessite mixing ratio was doubled. The removals of 1-NP was found to be dependent on solution pH and the pesudo-first order rate constants were increased from 0.331 $hr^{-1}$ at pH 10 to 0.661 $hr^{-1}$ at pH 4. The analysis of total organic carbon for the reaction solutions showed that a higher removal of dissolved organic carbon was achieved with Bir-AB as compared to birnessite. HPLC chromatographic analysis of the methanol extract after reaction of 1-NP with Bir-AB suggest that the reaction products could be removed through incorporation into the aliginate beads as a bound residue. Mn ions produced from the oxidative transformation of 1-NP by birnessite were also removed by sorption to Bir-AB. The Bir-AB was recovered quantitatively by simple filtration and was reused twice without significant loss of the initial reactivity.

Bioluminescence Activity of Toluene Analogs by Alginate-immobilized Pseudomonas putida mt-2 KG1206 (고정화한 유전자 재조합 균주 Pseudomonas putida mt-2 KG1206의 톨루엔 계열 화합물에 대한 생물발광 활성 조사)

  • In this study, the applicability of alginate-immobilized Pseudomonas putida mt-2 KG1206 on the environments, contaminated with toluene analogs was conducted. Genetically engineered strain KG1206 produces light by direct (m-toluate, benzoate) and indirect (toluene, xylenes) inducers. The protocol for the alginate-immobilization was determined in terms of the cell to alginate ratio, solution, proper number of alginate beads, and other conditions. Maximum bioluminescences of five chemicals by immobilized strain were generally observed in following orders: m-toluate > p-xylene > toluene > o-xylene > m-xylene. In relationship between bioluminescence activity and inducer reduction, initial m-toluate (5 mM) in solution was removed approximately 48% of initial at 5 h exposure, showing continuous decrease of inducer chemical in solution. These results of study with alginate-immobilized beads would be useful, especially, for biomonitoring of contaminated environments with specific compounds, such as petroleum hydrocarbon compounds including toluene analogs.

A Study on Fabrication of 3D Dual Pore Scaffold by Fused Deposition Modeling and Salt-Leaching Method (열 용해 적층법과 염 침출법을 이용한 3 차원 이중 공 인공지지체 제작에 관한 연구)

  • Scaffold fabrication technology using a 3D printer was developed for damaged bone tissue regeneration. A scaffold for bone tissue regeneration application should be biocompatible, biodegradable, and have an adequate mechanical strength. Moreover, the scaffold should have pores of satisfactory quantity and interconnection. In this study, we used the polymer deposition system (PDS) based on fused deposition modeling (FDM) to fabricate a 3D scaffold. The materials used were polycaprolactone (PCL) and alginic acid sodium salt (sodium alginate, SA). The salt-leaching method was used to fabricate dual pores on the 3D scaffold. The 3D scaffold with dual pores was observed using SEM-EDS (scanning electron microscope-energy dispersive spectroscopy) and evaluated through in-vitro tests using MG63 cells.

Studies on the Physical Properties of Sea Tangle Extracts by the different Extract Methods (추출조건에 따른 다시마 추출액의 특성에 미치는 물리적 특성의 영향)

  • The objective of this research was to characterize viscosity of sea tangle extract isolated from sea tangles in Korea to obtain basic data for production of dietary fiber materials with new functional properties. The viscosity of sea tangle extract was increased as the the extraction time increased. However, these values increased significantly up to 1 hour of extraction time and then slow increased in case of hot water extraction and enzymatic hydrolyzed sea tangle extract. As for addition of sugar and salts, the values of viscosity of sea tangle extract was very low in the addition of EDTA-2Na regardless of concentration. But in case of sucrose and NaCl, the viscosity of sea tangle extract were tended to decreased up to 2.5% concentration.
