Characterization of Shelf Life Extension Packaging Material for Food and Fresh Cut Agricultural Product: A Review (식품, 신선편이 농산물용 저장기간 연장 포장 소재 특성 및 평가)

  • Fresh-cut agricultural products provide convenience to consumers. However, quality changes or microbial growth can easily occur due to physical changes such as cutting and peeling etc. during processing. Therefore, efforts have been made to develop a functional packaging for extension of shelf life of fresh-cut agricultural products, food etc., and researches on prolongation of storage period have been actively developed. The shelf life is extended by antimicrobial, far infrared rays, air permeability, anti-fogging, weak current, ethylene gas adsorption or decomposition, gas composition changes such as MA (Modified Atmosphere) or CA (Controlled Atmosphere). The method of extending the shelf life by various complex factors. This paper based on the published literature to extend the shelf life of fresh-cut agricultural products, food etc., The paper has summarized the storage period extension packing method, packaging material for shelf life extension and comprehensive evaluation method.

  • Fresh agricultural product in Korea are currently being exported overseas through expensive air transportation, supported by the governments's farm export subsidies. However all members of the World Trade Organization(WTO) must halt government subsidies by 2023. Accordingly, it is necessary to use marine transport capable of carrying freight at low cost. Reefer containers are used for marine transportation of fresh produce but it have a problem due to the temperature difference inside the reefer container which causes of fresh cargo and drop in freshness during sea transportation. In order to solve the problem, we developed a temperature control algorithm for reefer container that maintain a constant temperature and minimizes the deviation inside reefer container. The result showed that the maintained a constant temperature within a maximum of $0.5^{\circ}C$ based on the set-point of $4.0^{\circ}C$ inside reefer container.

The Risk Estimation of Listeria monocytogenes for Ready-to-eats Fresh Cut-Vegetables (국내 즉석섭취 신선채소류 중 Listerial monocytogene위해수준 평가)

  • Ready-to-eats fresh cut-vegetables that may be consumed without further cooking or reheating can be grouped as potentially high risk foods. The foodborne disease outbreaks associated with consumption of the fresh cut-vegetables have been related with the contamination of Listeria monocytogenes. The food survey and consumption data sets for fresh cut-vegetables and also the published dose-response models for L. monocytogenes, was used to estimate the risk of L. monocytogenes for fresh cut-vegetables in Korea. Also, the simulation model and formulas with Microsoft@ Excel spreadsheet program using these data sets and chose dose-response model was developed. The mean case of listeriosis by consumption of the fresh cut-vegetables per 10 million per year was estimated as $3.23{\times}10^{-6}$. Results suggest that additional studies were needed to allow for a more realistic and accurate microbial risk assessment (MRA) in the future.

  • Maintaining steady and low temperature during distribution process is a key technique to inhibit microbial growth, one of the most important factors in determining the shelf life. It is possible to provide high-quality fresh products to consumers only when precise and adequate temperature control is guaranteed throughout the entire distribution process for fresh seafood. This study investigated the shelf-life of packaged fresh flounder (Paralichthys Olivaceus) in order to learn the feasibility of super-chilled distribution of fresh seafood. To estimate the shelf life, weight, number of bacteria such as E. coli, pH, sensory test and volatile basic nitrogen were investigated. As a result of the study, the difference in shelf life of 6 days at the super-chilling temperature (0±1℃) and 1 day at the general refrigeration temperature (8±2℃) (based on volatile base nitrogen) showed the market possibility of super-chilling distribution. Through additional empirical studies such as packaging methods and economic feasibility, it is expected to promote commercialization of super-chilling containers and packaging system developed in the future and secure customer reliability.

  • This study investigated the effects of dietary supplementation of fermented apple pomace (FAP), fermented pear pomace (FPP), fermented orange pomace (FOP), and fermented Angelica keiskei Koidz pomace (FAKP) on performance, shelf life, fatty acid composition and cholesterol in broiler chickens. A total of 600, 1-day-old male broiler chicks (Cobb strain) were randomly divided into six groups with four replicates of 30 birds each. There were five treatment groups: control (C), FAP (1.0%, T1), FPP (1.0%, T2), FOP (1.0%, T3), and FAKP (1.0%, T4). The body weight of the broiler chickens fed FAP diet was higher (1,758 g) than the other treatments. There was no difference in the thiobarbituric acid reactive substances (TBARS) in chicken meat between all groups at days 1, 3, and 5 of storage, while the FAP-supplemented group displayed lower TBARS values at day 7. There was no significant difference in fatty acid composition between the groups but the cholesterol content of chicken meat was lower than the control groups. These results suggest the possibility that FAP could be used as a functional feed to improvement the quality performance of broiler chickens.
