Studies on the Analysis of Special Components of Major Pine Needles for Searching of the New Functional Substances (I) - Analysis of Pectin, Tannin and Terpenoids - (신기능성 물질 탐색을 위한 침엽수잎의 특수성분 분석에 관한 연구 (I) - 펙틴, 탄닌, 테르페노이드의 분석 -)

  • Pectin and tannin analysis were carried out to inverstigate any available components from Pinus densiflora, P. koraiensis, P. thunbergii and P. rigida. To analyze terpenoid components, the essential oils were extracted with steam distillation method from four kinds of pine needles. The essential oil was analyzed by GC and GC-MS spectroscopy. The results were summarized as follows: Pectin content was highest in P. koraiensis with 0.40%, and tannin content was highest in P. koraiensis with 1.05. Major components of P. densiflora needles were ${\alpha}$-pinene, ${\beta}$-caryophyllene, ${\Delta}^3$-carene and phytol. ${\alpha}$-Pinene, ${\Delta}^3$-carene, ${\beta}$-caryophyllene, germacrene D, and camphene were found major components in P. koraiensis. Major components of P. thunbergii needles were ${\beta}$-pinene, ${\alpha}$-pinene, ${\beta}$-caryophyllene and germacrene D. ${\beta}$-Pinene, ${\alpha}$-piene, humulene oxide and ${\alpha}$-elemene were major components in P. rigida. Sabinene and citronellol were infrequent components in P. koraiensis, and ${\alpha}$-pinene oxide was present only in P. rigida. ${\alpha}$-Pinene, limonene, and bornylacetate well known as the main components of green air bath were found in P. densiflora and P. koraiensis.

  • 백리향(Thymus quinquecostatus)은 꿀풀과의 낙엽반관목으로 국내에서 자생하는 허브 식물 중 하나이다. 백리향은 특유의 좋은 향기 및 항산화, 항염증, 항균, 미백 등의 효능을 가지는 각종 폴리페놀 성분을 함유하고 있어 의약품이나 기능성 식품, 화장품의 천연 소재 원료로 활용되고 있다. 국내에서 백리향은 재배 환경에 맞추어 주로 고산지대의 노지에서 재배되고 있다. 노지 재배는 지역, 시기, 기후 등의 외부환경에 영향을 받아서 백리향의 유효성분, 품질 및 생산성을 안정적으로 유지하기 어렵다는 한계를 가지고 있다. 따라서 본 연구에서는 스마트팜 시스템을 활용하여 백리향의 유효 성분 등을 안정적으로 얻기 위한 생장조건을 탐색하기 위해 4종의 Light Emitting Diode(LED) 광원과 4종의 토양 조성에 따라서 백리향의 생육조건을 수행하였다. LED는 white, purple, RGB1, RGB2를 사용하였으며, 토양은 상토:펄라이트 비율(상토, 5:1, 3:1, 1:1)로 조성하여 백리향 묘목을 이식한 뒤 생장과 개화시기를 분석하였다. 재배환경은 백리향 재배지의 기상 데이터를 참고하여 동일하게 설정하였으며, 총 8주 동안 생육상태를 관찰하였다. 연구 결과 백리향 재배 4주차에 일부 개체에서 봉오리가 올라오며 개화를 시작하였으며, 8주차에는 대부분의 조건에서 개화를 관찰할 수 있었다. 백리향의 지상부 면적을 비교한 결과 가장 우수한 생장을 보이는 조건은 토양은 3(상토):1(펄라이트) 비율로 분석되었다. 따라서 이번 연구 결과를 바탕으로 백리향 재배에 스마트팜 농업 기술을 활용한다면 기존 노지 재배 한계를 보완하여 안정적이고 지속적인 백리향을 생산할 수 있을것으로 기대된다.

  • Product distribution and consumption in the military is difficult due to unique contracts and supply systems. It is difficult to change suppliers immediately when quality problem is encountered. Due to these special circumstances, the quality of products must be thoroughly controlled. Sesame oil is used to increase the taste and nutrition of food, but it is more expensive than other cooking oils. Oil producers may blend other cooking oils with sesame oil to make higher profits, so it has become important to identify good and bad products. In this study, pure sesame oil and blend oils were compared by analyzing their smell, taste, chemical components, and near infra-red spectra to determine quality differences between them.

Discrimination of the Heated Coconut Oil using the Electronic Nose (전자코를 사용한 가열처리 야자유의 판별)

  • Effect of heat (160, 190, and $220^{\circ}C$ for 24 hr) on coconut oil was examined by principal component analysis using electronic nose consisting of six metal oxide sensors. Increase in heating temperature decreased ratio of resistance and first principal component score (from +0.952 to -0.325), indicating rancidity of coconut oil increased at high heating temperature. Result of electronic nose based on GC with surface acoustic wave sensor showed significant changes in volatile profiles of coconut oil. High resolution olfactory imaging $(VaporPrint^{TM})$ was particularly useful for evaluating oil quality. Peak numbers and areas increased with increasing heating time and temperature (160, $220^{\circ}C$). Electronic nose analysis can provide simple, fast, and straightforward results and is best suited for quality control and process monitoring in flavor field of food industry.

  • This study aimed to identify the factors contributing to perceived healthiness by analyzing consumer reviews of healthy restaurants. While previous studies have primarily focused on the healthiness of food products, comprehensive research from the perspective of restaurants through online review analysis is limited. To achieve this, co-occurrence network analysis and LDA topic modeling, methods of text mining, were used to investigate consumers' health-related perceptions and preferences for healthy restaurants based on a large dataset of online reviews. The analysis revealed that consumers emphasize various health-related factors such as taste, ingredient categories, freshness, price, nutritional content, healthy options, and menu diversity when choosing healthy restaurants. These factors significantly influence the evaluation and selection of restaurants. Notably, it was found that the taste of food offered in healthy restaurants is closely linked to the perception of healthiness, highlighting the importance of a healthy taste derived from ingredients. In conclusion, this study provides practical insights into how healthy restaurants can reflect and meet consumers' health perceptions and suggests strategic directions for the food and dining industry to respond to health trends.

Quantitative Analysis of Carbohydrate, Protein, and Oil Contents of Korean Foods Using Near-Infrared Reflectance Spectroscopy (근적외 분광분석법을 이용한 국내 유통 식품 함유 탄수화물, 단백질 및 지방의 정량 분석)

  • Foods contain various nutrients such as carbohydrates, protein, oil, vitamins, and minerals. Among them, carbohydrates, protein, and oil are the main constituents of foods. Usually, these constituents are analyzed by the Kjeldahl and Soxhlet method and so on. However, these analytical methods are complex, costly, and time-consuming. Thus, this study aimed to rapidly and effectively analyze carbohydrate, protein, and oil contents with near-infrared reflectance spectroscopy (NIRS). A total of 517 food samples were measured within the wavelength range of 400 to 2,500 nm. Exactly 412 food calibration samples and 162 validation samples were used for NIRS equation development and validation, respectively. In the NIRS equation of carbohydrates, the most accurate equation was obtained under 1, 4, 5, 1 (1st derivative, 4 nm gap, 5 points smoothing, and 1 point second smoothing) math treatment conditions using the weighted MSC (multiplicative scatter correction) scatter correction method with MPLS (modified partial least square) regression. In the case of protein and oil, the best equation were obtained under 2, 5, 5, 3 and 1, 1, 1, 1 conditions, respectively, using standard MSC and standard normal variate only scatter correction methods with MPLS regression. Calibrations of these NIRS equations showed a very high coefficient of determination in calibration ($R^2$: carbohydrates, 0.971; protein, 0.974; oil, 0.937) and low standard error of calibration (carbohydrates, 4.066; protein, 1.080; oil, 1.890). Optimal equation conditions were applied to a validation set of 162 samples. Validation results of these NIRS equations showed a very high coefficient of determination in prediction ($r^2$: carbohydrates, 0.987; protein, 0.970; oil, 0.947) and low standard error of prediction (carbohydrates, 2.515; protein, 1.144; oil, 1.370). Therefore, these NIRS equations can be applicable for determination of carbohydrates, proteins, and oil contents in various foods.

An iodine database establishment and iodine intake in Korean adults: Based on the 1998~2014 Korea National Health and Nutrition Examination Survey (요오드 DB 구축 및 한국 성인의 요오드 섭취 추이 분석 : 1998~2014 국민건강영양 조사 데이터를 이용하여)

  • Purpose: This study analyzed iodine intake by establishing an iodine database of general Korean foods eaten by Korean adults based on the data from the 1998 ~ 2014 KNHANES (Korea National Health and Nutrition Examination Survey). Methods: Data on 56,818 subjects aged 19 years and older were obtained from health behavior interviews and a 24-hour dietary recall survey. Iodine intake of subjects was analyzed according to general characteristics, dietary lifestyle, food groups, and cooking method. Results: An iodine database was established for 312 food items. The mean iodine intake of Korean adults decreased from $641.6{\mu}g$ in 1998 to $236.2{\mu}g$ in 2014 per day. Iodine intake of women was higher than that of men. For age distribution, those aged 30 ~ 49 years constituted more than 39 ~ 46% of subjects by survey year. Regarding iodine intake according to dietary lifestyle, the highest iodine intake was 29.4 ~ 34.4% for lunch while that of breakfast decreased. The highest iodine contribution by food group was seaweed such as kelp, sea mustard, and laver. Conclusion: The results of this study indicate that iodine intake of Korean adults has been decreasing, and iodine intake is associated with the prevalence of thyroid disease. This study provides basic data for the estimation of iodine intake in Korean adults.

Validation of a trienzyme-Lactobacillus casei method for folate analysis in fishery resources consumed in the Korean diet (Trienzyme과 Lactobacillus casei를 이용한 국내 수산 자원의 엽산 분석 및 유효성 검증)

  • Fishery resources have been widely consumed as protein- and vitamin-rich food sources in the Korean diet. However, information regarding their vitamin levels is extremely limited. In this study, trienzyme-Lactobacillus casei method was validated and used to determine the folate contents in fishery foods. The trienzyme-L. casei method for folate analysis showed excellent accuracy (85.2 to 95.3% recovery) and precision (repeatability 1.4% RSD and reproducibility 2.4% RSD). Folate contents of 20 fish foods (4 fish, 3 crustaceans, 3 sea algae, 3 cephalopods, 4 shellfish, and 3 others) ranged from 1.75 to 97.98 ㎍/100 g. Furthermore, we found that the folate content in seaweed fusiforme was the highest, followed by gulfweed (69.73 ㎍/100 g). Folate analysis using the trienzyme-L. casei method was determined excellent based on the z-score of -0.3 in the Food Analysis Performance Assessment Scheme test. Analytical and method validation data generated in this study could be used to update the national food composition table on vitamin B9 in Korean fishery resources.

  • 최근에 지리 정보를 검색, 관리, 분석할 수 있는 지리 정보 시스템(Geographic information System)의 사용이 확대됨에 따라 단순한 수치지도 정보 이외에 좀 더 현실적이고. 사실적인 정보를 제공해 줄 수 있는 시스템에 대한 요구가 커지고 있다 이러한 요구에 부응하는 한 방향으로써 차량에 부착된 카메라 등등 사용하여 획득한 비디오 데이터와 수치지도 정보를 연계하여 특정 수치지도 객체의 영상을 제공함으로써 수치지도 객체에 대한 자세한 현장의 정보를 쉽게 파악할 수 있도록 하는 비디오 지리 정보 시스템이 등장하였다. 하지만 기존의 비디오 지리 정보 시스템은 획득한 비디오 데이터를 수치지도의 한 속성으로서 표현하거나, 수치지도에서 비디오 데이터로의 단순한 링크를 사용하여 수치지도와 연계함으로써 수치지도의 검색을 통한 영상 정보의 출력이라는 단방향 검색만을 지원한다. 즉, 비디오 데이터에 존재하는 수치지도 객체의 검색을 통한 수치지도의 검색 및 관리, 분석은 지원해 주지 못하고 있다. 본 논문에서는 비디오 데이터와 수치지도의 양방향 검색 및 관리를 지원하는 비디오 지리 정보 시스템을 설계하고 구현한다. 이를 위해 1) 비디오 데이터와 수치지도 정보를 효율적으로 연계하기 위한 데이터 모델을 제안하고, 2) 비디오 데이터와 수치지도 정보의 연계 정보를 추출 및 구축하는 과정을 제안하며, 3) 비디오 데이터의 출력 및 검색, 수치지도의 출력 및 검색, 연계 정보를 통한 비디오 데이터와 수치지도 정보의 연동 등을 효율적으로 지원하기 위한 시스템을 컴포넌트(Component) 구조를 사용하여 설계한다. 이해성 및 이를 기반으로 하는 교육용 애플리케이션 개발의 용이성의 증대를 기대할 수 있으며, 모델의 재사용성을 보장할 수 있다. 제안한다.수행하였다. 분석에서는 제품의 효율성뿐만 아니라 보안성을 중요하게 생각하였으며, 앞으로 보안 관련 소프트웨어 개발에 사용될 수 있는 도구들이 가이드 라인에 대한 정보를 제공한다.용할 수 있는지 세부 설계를 제시한다.다.으로서 hemicellulose구조가 polyuronic acid의 형태인 것으로 사료된다. 추출획분의 구성단당은 여러 곡물연구의 보고와 유사하게 glucose, arabinose, xylose 함량이 대체로 높게 나타났다. 점미가 수가용성분에서 goucose대비 용출함량이 고르게 나타나는 경향을 보였고 흑미는 알칼리가용분에서 glucose가 상당량(0.68%) 포함되고 있음을 보여주었고 arabinose(0.68%), xylose(0.05%)도 다른 종류에 비해서 다량 함유한 것으로 나타났다. 흑미는 총식이섬유 함량이 높고 pectic substances, hemicellulose, uronic acid 함량이 높아서 콜레스테롤 저하 등의 효과가 기대되며 고섬유식품으로서 조리 특성 연구가 필요한 것으로 사료된다.리하였다. 얻어진 소견(所見)은 다음과 같았다. 1. 모년령(母年齡), 임신회수(姙娠回數), 임신기간(姙娠其間), 출산시체중등(出産時體重等)의 제요인(諸要因)은 주산기사망(周産基死亡)에 대(對)하여 통계적(統計的)으로 유의(有意)한 영향을 미치고 있어 $25{\sim}29$세(歲)의 연령군에서, 2번째 임신과 2번째의 출산에서 그리고 만삭의

Anti-cancer effects of kelp extract in mouse melanoma B16-F0 cell line through apoptosis (마우스 흑색종 세포주 B16-F0에서 다시마 추출물의 세포사멸을 통한 항암 효과)

  • Kelp belongs to the brown algae family and has been reported to exert anti-cancer effects on some cancer types, however studies have not been reported on the anti-cancer effects of kelp extracts on melanoma. In this study, the anti-cancer effects of kelp extract in B16-F0 cells were investigated, and the underlying molecular mechanisms were assessed. Kelp extract was found to inhibit the proliferation of B16-F0 cells, induce cytotoxicity, inhibit cell colony formation, and induce DNA fragmentation and apoptosis. The molecular mechanism was found to involve kelp extract increasing the expression of cytochrome-c and activated caspase-9 in the intrinsic apoptotic pathway. In addition, kelp extract upregulated the expression of Fas-associated protein with death domain and activated caspase-8 in the extrinsic apoptosis pathway. Activation of caspase-9 and caspase-8 by kelp extract induced activation of caspase-3 and cleaved poly adenosine diphosphate-ribose polymerase, consequently inducing apoptosis. These data suggest that kelp extract represents a potential therapeutic agent for melanoma.
