Studies on the Antimicrobial Effect of Extracts of Propolis (프로폴리스 추출물의 항균 활성에 대한 연구)

  • Approved chemical preservatives have been widely used to preserve foods and increase their shelf life. There are increasing demends of the partial or complete removal of chemical preservatives from foods vecause of adverse health effect of chemicals. In this study, the possibility of natural antimicrobial compounds, Korean propolis as food preservatives are investigated. Propolis samples were extracted on various concentration of ethanol. Propolis extracts extracted with 100% ethanol showed the highest inhibitory effect aginst food spoilage microorganisms. The 100% ethanol extracts of propolis were selected and the antimicrobial activites of 100% ethanol extracts of proplis against several food spoilage microorganisms were examined. Bacillus subtilis, Micrococcus luteus, Escherichia coli, Staphylcoccus aureus, Bacillus cereus, Shigella sonnei, Salmonella choleraesuis, Erwinia rhapontici, and Vibrio parahaemolyticus as food poisoning microorganisms were chosen for the examination. The Propolis extracts had antimicrobial activity against food spoilage microorganisms. When the microorganisms were treated with propolis extracts, the population of food spolige microorganisms were decreased by 1~9 log.

Development of antimicrobial edible films and coatings: a review (항균 가식성 필름/코팅 개발 현황)

  • Food packaging strategies have steadily improved with increasing demand for improved food safety, convenience, and shelf life. The development of edible film has been hailed as a technology substituting packaging using synthetic plastics. There has been a surge for research to develop antimicrobial edible films and coatings that can increase microbiological safety while preserving foods. This review addresses recent results that are useful in advancing and extending research into antimicrobial edible films. In this review, we suggest the trend of the development of antimicrobial edible film/coatings by outlining edible film materials, antimicrobial substances, antimicrobial and physical properties of the films, commercial antimicrobial edible films, and methods to statistically predict the efficacy of antimicrobial edible film/coatings, reported in recent studies.

Determination of Propionic, Benzoic, and Sorbic Acids in Dried Seasoned Seafood Products in Korea (유통 조미건어포 중 프로피온산, 안식향산, 소브산 함유량 조사)

  • This study was performed to determine the contents of propionic, benzoic, and sorbic acids in dried seasoned seafood products (n=27) sold in Korea. Propionic acid was determined using a gas chromatogramphy-flame ionization detector. Benzoic and sorbic acid were analyzed by using a high-performance liquid chromatography-diode array detector. Benzoic acid was not detected in the dried seasoned seafood products; however, propionic and sorbic acid were detected in some samples. The concentrations of propionic acid and sorbic acid were up to 125.10 mg/kg and 658.18 mg/kg in dried seasoned seafood products, respectively. Of eight samples labeled with potassium sorbate, sorbic acid was detected in seven of them. The detected sorbic acid levels in these samples met the regulations for sorbic acid usage in Korea. The propionic, benzoic, and sorbic acid contents of dried seasoned seafood products determined in this study can provide basic data for safety management of dried seasoned seafood products in future.

Screening of Antimicrobial Activity of Chopi(Zanthoxylum pipertum A.P. DC.) Extract (초피(Zanthoxylum piperitum A.P. DC.) 추출물의 항균활성)

  • 천연 식품보존료 개발의 일환으로 우리 나라에서 옛부터 조미료 및 향신료 등으로 널리 이용되고 초피를 가시 있는것과 없는 것으로 구분하여 이들의 잎, 과피 및 종실을 대상으로 물과 에탄올로 항균성 물질을 추출하여 수종의 병원균과 식중독균, 식품과 관련이 있는 세균 및 효모 줄 10균주들에 대하여 항균성이 있는지의 여부를 관찰하였으며, 항균성이 강한 에탄올추출물의 초소저해농도, 추출물에 함유된 항균성물질의 열안전성, pH안정성 등을 조사하였다. 초피와 민초피의 항균활서은 tkdydd된 10균주 중 젖산균과 효모를 제외한 대부분의 세균에서 잎과 과피에서 물과 에탄올추출물 모두에서 항균활성이 나타났으나 종실에서는 항균활성을 보이지 않았다. 초피 에탄올추출물의 최소저해농도는 Bacillus cereus 균주가 0.25mg/mL로 가장 낮게 나타났으며, 젖산균과 효모에서는 항균활성 물질은 121$^{\circ}C$에서 15분간 가열한 후에도 활성이 유지되었으며, pH의 변화에도 영향을 받지 않았다.

Quality Characteristics of Grape Suspensions Using Protopectinase (Protopectinase를 이용한 포도 단세포화물의 품질 특성)

  • This study was conducted to investigate the changes of macerating properties from grape suspensions for which both were treated with protopectinase(PPase) and mechanical maceration stored at $4^{\circ}C$ for 28 days. Changes of macerating properties such as pH, total acidity, color, total polyphenol and antioxidant activity of suspensions after enzymatic hydrolysis were determined before and after heating, and microscopic observation made on suspensions containing single cells. With the PPase, grapes were enzymatically macerated to separate cells to primary cell wall without damage. Also, the changes of macerating properties in grape suspension treated with PPase and after heat treatment at $80^{\circ}C$ for 30 min were more stable than those of mechanical maceration, indicating the thermal stability. Thus, the PPase treatment for grapes could be a better choice for preparing highly valuable and functional processed food as well as for prolonging preservation periods.

Effect of Green Laver on the Extention of Shelf-life of Muk (Starch Jelly) (파래첨가가 묵의 저장성 향상에 미치는 영향)

  • The purpose of this study was to evaluate the antimicrobial effect of green laver (Enteromorpha linza) on the muk (starch jelly) preservation. The methanol extract of green laver completely inhibited the growth of Vibrio parahaemolyticus at 500 $\mu\textrm{g}$/ml level, and inhibited the growth of Bacillus subtilis, Escherichia coli and Staphylococcus aureus at 100 $\mu\textrm{g}$/ml level. The Listeria monocytogenes was inhibited by 98.89% at the same concentration. When various amounts of green laver powder were added in muk (starch jelly), 5% of green laver powder-added muk showed very low level of total bacterial count compared with the control group. Also, green laver did not give negative sensory qualities such as color, flavor and overall quality. Five % green laver muk was selected as the most preferable sample among the green laver muks in overall quality test.

Sorbic Acid Contents Survey on Ham, Sausage and Dried Meat in Market (시판 햄류, 소시지류, 건조저장육류 중 소르빈산 함량조사)

  • This study was performed to investigate the contents of nitrites in 450 meat products in Seoul from Jan. to Dec. in 2002. Sorbic acid contents of the samples were determined by Gas Chromatography. 67 samples of 450 (14.9%) were detected in sorbic acid contents. In each meat products, 65,6% (21/32) in dried meats, 17.6% (3/17) in bacon, 11.7% (27/231) in hams, 11.7% (13/111) in sausages, and 11.5% (3/26) in meat cu. The concentration range of Sorbic acid and its average content in each of the meat products are as follows: ND-1.21 g/ Kg and 0.34 g/kg in dried meat, ND-0.84 g/Kg and 0.12 g/Kg in bacon, ND-1.27 g/Kg and 0.074 g/Kg in ham, ND- 0.90 g/Kg and 0.077 g/Kg in sausage, and ND-0.20 g/Kg, 0.015 g/Kg in can meat. Together, these results demonstrated that the processed market meat products must be reinforced to supply for the citizens as safe foods.

Antimicrobial Activity of Lentinus edodes Extract (표고버섯(Lentinus edodes)추출물의 항균활성)

  • To develope natural food preservatives, ethanol and water extracts were prepared from the Lentinus edodes and antimicrobial activities were examined against 10 microorganisms which were food borne pathogens and / or food poisoning microorganisms and food-related bacteria and yeasts. Ethanol extract exhibited antimicrobial activities for the microorganisms tested, but not on lactic acid bacteria and yeast Especially, minimum inhibitory concentration(MIC) for Escherichia coli were as low as 0.5 mg/mL. Antimicrobial activity of the ethanol extract was stable by the heating at 121$^{\circ}C$ for 15 min and not affected by pH. The ethanol extract of Lentinus edodes exhibiting high antimicrobial activity. The highest antimicrobial activity adjust bacteria tested was found in the ethylacetate fraction.

Change of Physicochemical Characteristics of Persimmon Vinegar by Vacuum Concentration (진공농축에 따른 감식초의 이화학적 특성 변화)

  • This study was performed to offer fundamental data for concentration of persimmon vinegar. The $5.4^{\circ}Bx$ raw persimmon vinegar was concentrated to $20^{\circ}Bx$, $30^{\circ}Bx$, $40^{\circ}Bx$, $50^{\circ}Bx$, $60^{\circ}Bx$ and $70^{\circ}Bx$ concentration by vacuum concentration at $55^{\circ}C$ and diluted to $5.4^{\circ}Bx$ solution with distilled water. The physicochemical properties such as color, viscosity, pH, acidity, organic acid content and free sugar content of various persimmon vinegar concentrates were examined. The recovery yield of water soluble solid to concentrates was 55.5% on $20^{\circ}Bx$ vacuum concentration. Color of $5.4^{\circ}Bx$ persimmon vinegar diluents from concentrates became more dark brown by vacuum concentration. Flow behavior of persimmon vinegar concentrates was pseudoplastic. As the concentration of persimmon vinegar concentrates increased, pH of $5.4^{\circ}Bx$ diluents increased and acidity as acetic acid decreased compared to original raw vinegar. Acetic acid, lactic acid and citric acid were detected, malic acid and oxalic acid were not detected in persimmon vinegar concentrate. Fructose and sucrose only were detected in persimmon vinegar concentrate.

  • The purpose of this study is to process a seaweed resources that is easy to find in Korea and has outstanding phlogistone and high yield seaweed vinegar solution through mass-production and facility development for utilization. The compound uses wasted seaweeds, such as brown seaweed, kelp, seaweed fusiform, and laver, and carbonizes them in high temperature by drying in poly step trap to extract them. In also involves the development of a process that separates and refines the extracts to create a high value-added anti-bacterial bio solution that can replace chemicals in agriculture and industries and even chemical food additives. so, studied separation and refining of seaweed extracts to analyze the compounds. and processed and compared to seaweed vinegar extracts to prove superiority.
