  • 4차 산업시대로의 진입과 함께 인구 고령화 현상이 지속되면서 정보, 의료, 식품 분야 등의 역할이 중요해지고 있다. 특히 건강한 삶을 영위하기 위해 식품과 의료가 융합한 식치 정보에 대한 사람들의 관심과 필요성이 증가하고 있는 것에 비해 이에 대한 연구는 부족한 실정이다. 따라서 본 연구는 식품과 한의 정보를 수집하고 융합하여 식품 또는 식재료의 영양, 성질, 효능, 질병 등이 결합된 하나의 식치 데이터를 시스템 상으로 구축하고자 하였다. 이를 위해 고조리서, 한의서, 역사서 등의 고문헌과 논문, 특허 등의 현대 과학적 연구 자료를 수집하였으며, 수집된 자료들을 일정 기준에 따라 분류하고 코드화 하였다. 이후 정제된 각각의 데이터들 간의 연관성을 파악하고 연결 지어 식품과 한의 정보가 통합된 하나의 새로운 식치 데이터를 구축하였다.

  • "Euibangyoochui" is a great medical encyclopedia composed of 91 symptoms and signs of diseases which classified 150 kinds of reference books. It consisted mainly of fifty thousands of herbal prescriptions and therapeutics but it deals with other treatments like diet therapy, precautions, acupuncture and moxibustion, physical and breathing exercises as well. Unlike other medical references, this book made up these treatments as independent chapters. We tried to catch the meanings and characteristics of each chapters.

  • Various records on health, food and treatment are written in ancient documents of Korea such as old recipe books, Korean medical books and history books, through these records, the principle of Sikchi can be discovered. Sikchi includes the meaning of medicine and food work on the same principle, and it is not only as traditional knowledge but also affecting modern food culture. Based on this principle of Sikchi, this study tried to lay a foundation that can be used as a modern health food material through scientific verification of foods recorded in the ancient literature. For this purpose, Omigalsu, a traditional drink made from omija, soybean, and honey, which is related to blood glucose control, which is one of the representative metabolic diseases of modern people, was selected as the subject of this study. In order to compensate for the agglomeration of beverages caused by honey or the rise in postprandial blood glucose, which occurs when the traditional Omigalsu recorded in the ancient literature is reproduced, the raw material that can be substituted for honey was discovered. The health promotion and quality improvement effects of newly prepared Omigalsu using honey substitutive raw material were confirmed through a comparative test with traditional Omigalsu. Based on this study, through scientific research using the principle of Sikchi, we intend to lay a foundation that can be used as various contents in the medical and food fields such as food bio and healthcare in modern society.

Literary Investigation of Food-Therapy(食治方) Using Foxtail Millet (Setaria italica L. Beaur) - Korean Medicine Literature in 1300's-1600's - (조(속미(粟米)·출미(秫米))를 이용한 식치방(食治方)의 문헌(文獻) 조사 -1300년대에서 1600년대 한국 의서(醫書)를 중심으로-)

  • Foxtail millet (Setaria italica L. Beaur) is a native Korean herbal medical food and a native millet, and Koreans have eaten it as a substitute for rice since ancient times. Foods using foxtail millet (Setaria italica L. Beaur) have been recorded not only in cookbooks but also in Korean traditional medical books several times. Therefore, the purposes of this study was to investigate Food-Therapy (食治) using foxtail millet (Setaria italica L. Beaur) recorded in the literature from 1300 to 1600 from early to mid-Joseon (朝鮮) and provide data required to develop menus for Yaksun (藥膳, herbal food). This study examined Food-Therapy using foxtail millet (Setaria italica L. Beaur) in 10 types of literatures from the 1300s to the 1600s. and is described in the literature a total of 63 times. According to classification by cooking method, porridge (粥) was most frequently mentioned in the literature at 27 times. The cooking method of Soup (湯) is described 11 times. Cooking methods such as porridge juice and soup are frequently used since those methods are digestive and absorptive. Other food ingredients described using foxtail millet (Setaria italica L. Beaur) are white leek (Allii Fistulosi Bulbus) ginger (Zingiber officinale), chicken egg, Allium chinense, sparrow (Passer montanus), rooster liver, Du-si, crucian carp (Carassius auratus L), and white broiler. Other medicinal herbs described with Setaria italica are Panax ginseng (人蔘), Poria cocos (茯笭), Angelica acutiloba (當歸), Ziziphus jujuba (大棗), Liriopeplatyphylla (麥門冬), and cinnamon (肉桂). Food-Therapy using Setaria italica L. Beauv was described as a prescription for stomach and spleen (脾胃), stomach reflux (反胃), defecation and urinary disorder (大小便難), cholera, deficiency syndrome (虛症), and tonification (補益). This focus on promoting health and preventing diseases by strengthening the stomach and spleen and improving defecation and urination using Food-Therapy when herbal medicine was rare.

  • 중국인들이 동지나 춘절(설)에 교자를 먹는 풍습은 중국 고대의 의학인물인 장중경(張仲景)과 관련이 있다. 동한말(東漢末)의 혼란기를 살면서 중국 의학사상 중요한 영향력을 행사했던 장중경(張仲景)은 죽을 치료에 응용하기도 했으니 그의 저서 속에 다양하게 투영되어 있다. 본고는 그의 죽과 교자에 관한 역사와 신화를 저서와 설화를 통해 재구성했다.

A Study on Food Cure for Stomach Diseases - Focusing on Eumsunjungyo·Singnyojaebyeong, Singnyochanyo - (비위(脾胃)질환의 식치(食治)에 관한 소고(小考) - 『음선정요(飮膳正要)·식료제병(食療諸病)』, 『식료찬요(食療纂要)』를 중심으로 -)

  • Objectives : This study selected the food ingredients mainly appearing in the stomach-disease-related articles from Eumsunjungyo Singnyojaebyeong and Singnyochanyo, and investigated their effects to turn these data into references for modern people, use the food therapy of ancestors for modern life, and prevent and cure stomach diseases of modern people due to unhealthy lifestyle. Methods : This study selected the stomach-related food therapies from Eumsunjungyo and Singnyochanyo, and organized the therapies by chief virtue, effect, ingredient, and recipe. Also, this study analyzed and investigated characteristics, tastes, and target organs of the food ingredients in the recipes. Results : There are 8 stomach-related recipes among 61 recipes in Eumsunjungyo Singnyojaebyeong, and there are total 34 types of stomach-related recipes in Singnyochanyo including 27 types of BiwiBuBanui Five and 7 types of GutoBuHaeyeokByeonggyeonBiwi fifteen. Both Eumsunjungyo Singnyojaebyeong and Singnyochanyo contains food therapies for diseases due to week stomach. Most recipes in Singnyochanyo uses only food ingredients, whereas most recipes in Eumsunjungyo Singnyojaebyeong uses ingredients which can be used as medicine. Conclusions : The food therapies in Eumsunjungyo Singnyojaebyeong and Singnyochanyo proves that people in all regions have used food to cure diseases from old times. On the other words, people have clinically used the characteristics, tastes, and cooking forms of food ingredients for a long time. Thus, this study can be a reference for creating another food therapy.

A Review on the Food-Therapy with Five-Grain in 『Sikryochanyo』 (『식료찬요(食療纂要)』에서 오곡(五穀)을 이용한 식치(食治) 연구(硏究))

  • Objective : Foods could be materia medica through food-therapy in oriental medicine. "Sikryochanyo" is a food-therapy book totally. Therefore, there are many kinds of food are treated as materia medica. Method : Finding out cases of food-therapy with Five-Grain(RIce, Barley, Millet, Soy, Panicum miliaceum) in "Sikryochanyo" Result : In "Sikryochanyo", there were many methods of food-therapy with Five-Grain. Five-Grain were treated as materia medica even though they were usual food as normal meal. Conclusion : Five-Grain used in "Sikryochanyo" as many types of themselves and they had objectively effects comparing with "Materia Medica".
