Oriental and Western Convergence Study and Alimentotherapy Application of Yulmubokyeoljuk (율무복령죽의 동·서 융합적 섭취효능 및 식이요법 활용에 관한 연구)

  • The purpose of this study is to understand the food and nutritional value of based on the oriental Qi-flvor theory and to convergence understanding of dietary effects. In this study, dietary effect of Yulmubokyeoljuk based on oriental theory and analyzed the contents of general composition and minerals. We recognize the value as a food that can be used for therapy of Yulmubokyeoljuk. Phosphorus content was high and high calory foods. In addition, by discharging stagnant water in the spleen, excessive wetness is removed and the function of transportation of the spleen is strengthened. The results of this study suggest that it provided the basis of the characteristics of food and the necessity of convergence approach to dietary efficacy based on the traditional Qi-flvor theory and nutrional composition.

A Study on Food Cure for Stomach Diseases - Focusing on Eumsunjungyo·Singnyojaebyeong, Singnyochanyo - (비위(脾胃)질환의 식치(食治)에 관한 소고(小考) - 『음선정요(飮膳正要)·식료제병(食療諸病)』, 『식료찬요(食療纂要)』를 중심으로 -)

  • Objectives : This study selected the food ingredients mainly appearing in the stomach-disease-related articles from Eumsunjungyo Singnyojaebyeong and Singnyochanyo, and investigated their effects to turn these data into references for modern people, use the food therapy of ancestors for modern life, and prevent and cure stomach diseases of modern people due to unhealthy lifestyle. Methods : This study selected the stomach-related food therapies from Eumsunjungyo and Singnyochanyo, and organized the therapies by chief virtue, effect, ingredient, and recipe. Also, this study analyzed and investigated characteristics, tastes, and target organs of the food ingredients in the recipes. Results : There are 8 stomach-related recipes among 61 recipes in Eumsunjungyo Singnyojaebyeong, and there are total 34 types of stomach-related recipes in Singnyochanyo including 27 types of BiwiBuBanui Five and 7 types of GutoBuHaeyeokByeonggyeonBiwi fifteen. Both Eumsunjungyo Singnyojaebyeong and Singnyochanyo contains food therapies for diseases due to week stomach. Most recipes in Singnyochanyo uses only food ingredients, whereas most recipes in Eumsunjungyo Singnyojaebyeong uses ingredients which can be used as medicine. Conclusions : The food therapies in Eumsunjungyo Singnyojaebyeong and Singnyochanyo proves that people in all regions have used food to cure diseases from old times. On the other words, people have clinically used the characteristics, tastes, and cooking forms of food ingredients for a long time. Thus, this study can be a reference for creating another food therapy.

  • In the medical science of 'Sa-sang', a constitutional examination(diagnosis) and a medical treatment are important, however a dietary cure is considered as very important at the medical prevention and treatment. But there has been a confusion due to the different view concerning the constitutional foods in between scholars. There it is necessary for us to bring up the theoretical basis of the 'Sa-sang' constitutional - dietary cure by menas of the bibliographical study in relation to a historic, characteristics, efficiency of the major foods.

  • 최근 들어 리얼 버라이어티가 TV 프로그램의 주를 이루면서 인체 기관에 자극을 주는 다양한 음식을 먹는 것이 게임에 등장하고 있다. 특히, 까나리액젓이나 레몬 빨리 씹어 먹기 등 인체에 자극을 주는 벌칙 게임들이 펼쳐지고 있다. 레몬은 모든 독의 해독제라고 할 만큼 우리 몸에 이로운 점이 많으나 과하거나 급할 경우 오히려 병이 될 수도 있다. 따라서 본 논문에서는 대체 및 예방의학에 이용되는 중요한 요소 중 하나인 식이요법에 대한 효능을 입증하기 위한 방법으로 음성신호 분석 기술을 적용하여 레몬 섭취에 따른 성대 진동의 변화를 측정하고 이에 대한 분석을 통해 레몬과 음성과의 관계를 규명하는 연구를 수행하고자 한다.

  • This study was understanding the application of Misutgaru in Diabetes mellitus. To address these concerns, this study was performed to provide basic ideas to further the understanding oriental medicinal cuisine and its application. Also this study designed to provide basic information applicable to promotion of health and medical cure for modern people through the Korean traditional dietary treatment. Basic data on the nutritional composition and oriental diet therapy area approach of Misutgaru was acquired to predict the usefulness of Misutgaru as tonify the liver and kidney. Thus nourish the blood through tonify the liver & kidney. Misutgaru energy was 309.76Kcal per 100g, crude protein was 39.27 g, crude fat was 4.40g, crude ash was 5.21g and carbohydrate was 28.27g per 100g. This study realize the value of functional effects on various foods with oriental theory. I want that many researchers concerning our traditional theory for dietary food effects.

The Bibliographical investigation of the mallow, hollyhock, darkpull, sunflower (아욱(葵菜), 접시꽃(蜀葵), 닥풀(黃蜀葵), 해바라기(向日葵)에 대한 문헌고찰)

Purpose of study In the medical science of 'Sasang', a constitutional examination(diagnosis) and a medical treatment are important however a dietary cure is considered as very important at the medical prevention and treatment. But there has been a confusion due to the different view concerning the constitutional foods in between scholars. There it is necessary for us to bring up the theoretical basis of the 'Sasang' constitutional - dietary cure by means of the bibliographical study in relation to a historic, characteristics, efficiency of the major foods. A mellow as called "Baekchejiju" has been used as a source of adding food materials when we make a boiling soup, which is only in Korea but not other countries case. We also studied a hollyhock, a 'Darkpull', a sunflower together with a mellow, because these plants contains a similar characteristics and same chinese word of 'Gue' at their name. At this study we would like to bring up the basis correcting the evil of the misinterpretation to be translated 'Gue' into 'Sunflower', which would be helpful to the current academic circles studied very rarely for the introduction process of sunflower. 2. Method of study We did a comparative study based on not only 'Bonchoseo - original plants book' but also agricultural books, boos of the same kinds and private books. 3. Result of study 1) A mellow has been changed its inscribed name from 'Abushil' to 'A-uk', to 'A-ok', to 'A-uk'. And a winter mellow is called as 'Dol-a-uk' which means the thing is changed a year. 2) The heliotropism of mellow has been used as the symbol of the loyalty and the intelligence. Its meaning has been interpreted expansively engaging with the heliotropism of a hollyhock, a Darkpull, and a sunflower. 3) Once 'Darkpull' had been recognized as 'one day flower'. But after sunflower come, people have confused and misread 'Darkpull' by 'Sunflower'. 4) The first record of sunflower among the existing bibliographical documents is "Chung-jang-gam-chun-seo" (1795). And It is presumed thal the sunflower had introduced in Korea at the early to mid of the eighteen century. 5) The interpretation for mellow has been made s confusion by a several documentary and dictionary record, but should be corrected to be right.

고추(번초(番椒), 고초(苦椒))의 어원(語源)연구

  • 1. 연구 목적 한국의학사(韓國醫學史)의 한 분야인 식품사(食品史) 및 약물사(藥物史)는 미개척분야라 해도 과언은 아닐 정도로 연구 업적이 부족하다. 특히 식물명칭에 대한 정리는 기초학문이지만 방치되어진 것도 부인할 수 없다. 따라서 본고는 식품문화사(食品文化史)를 정리하는 과정중의 일환으로 고추의 어원(語源)을 중심으로 살펴보고자 한다. 이는 식품사(食品史) 연구에 도움이 되는 동시에 체질식이요법을 강조하는 사상의학(四象醫學)의 식품 분류에 대한 학술적 근거를 제시하는 계기로 삼고자 한다. 1493년 콜럼버스에 의해 알려진 고추는 우리 나라에 들어와 천초(川椒)대신 사용됨으로서 현재 중요한 양념이 되었다. 이에 고추의 도입과정과 호칭변화를 살펴봄으로서 현재 사전류에서 잘못 서술되고 있는 것을 시정하고, 고추가 도입된 이래 우리가 어떻게 이해하고 응용하였는 지에 대하여 문헌고찰을 통하여 의학사적(醫學史的) 입장으로 정리하는 것이 본 연구의 목적이다. 2. 연구 방법 "산림경제(山林經濟)"(1715), "임원경제지(林園經濟志)"(1827)같은 농서(農書), "물명고(物名考)"(1830), "오주연문장전산고(五洲衍文長箋散稿)"(1850) 같은 유서(類書), "훈몽자회(訓蒙字會)"(1527), "신증유합(新增類合)"(1574)같은 사전류, "지봉유설(芝峰類說)"(1614), "성호사설(星湖僿說)"(1763)같은 문집류, "흠정수시통고(欽定授時通考)"(1737), "본초강목습유(本草綱目拾遺)"(1765)같은 중국본초서(中國本草書) 등과 국내의서 등 을 통하여 고추에 대한 문헌정리를 시도하였다. 3. 연구 결과 고추가 도입된 이래 남만초(南蠻椒), 남초(南椒), 번초(番椒), 왜초(倭椒), 왜고초(倭苦椒), 왜개자(倭芥子), 고초(苦椒), 랄가(辣茄), 고쵸, 등으로 표기되어 왔다. 하지만 고추가 도입되기 전에 출간된 "구급간이방(救急簡易方)"(1489)에 '초(椒) 고쵸, 죠피'라는 기록이 나온다. 이는 천초(川椒)(초피나무)를 의미하는 '고쵸'로 보아야 한다. 후에 고추가 도입됨에 따라 의미가 변하여 고추를 의미하게 되는데 이를 정리하면 다음과 같다. 첫째, 현존하는 문헌 중 고추에 대한 최고기록인 "지봉유설(芝峰類說)"(1614)에 근거하여 고추(남만초(南蠻椒))는 임진왜란때 일본에서 도입되었다는 것이 정설이었다. 하지만 임진왜란 이전에 일본을 통하여 고추가 도입되었고 이의 개량종을 오히려 임진왜란때 일본으로 전해주었을 가능성이 높다. 둘째, 현재 대부분의 사전류에서 "훈몽자회(訓蒙字會)"(1527)의 '고쵸 쵸(초(椒))'를 고추에 대한 최초의 어원으로 보고 있으나 이는 잘못된 것이다. "훈몽자회(訓蒙字會)"의 '고쵸(초(椒))'는 고추가 아닌 매운 열매의 총칭으로 호초(胡椒), 천초(川椒), 진초(秦椒)를 의미한다. 이는 "구급간이방(救急簡易方)"(1489)의 천초(川椒)를 의미하는 '초(椒) 고쵸'에서도 확인할 수 있다. 셋째, 현재 대부분의 사전류에서 고추의 한문표기가 고초(苦草)로 되어 있으나 고초(苦椒)로 정정되어져야 한다. 초(草)(상성(上聲))와 초(椒)(평성(平聲))는 발음은 같지만 성조(聲調)가 다르며, 또한 "본사(本史)"(1787)에 고초(苦椒)와 고초(苦草)는 서로 다른 식물로 기록되어 있다. 넷째, 고초(苦椒)는 '고쵸'라는 우리말에 맞추어 만든 국자(國字)로 고추가 천초(川椒)와 비슷하지만 맵고 쓰다라는 뜻으로 사용된 것이다. 다섯째, 맵고 뜨거운 성질이 있는 고추는 냉증(冷症)을 유발시킬 수 있는 냉성(冷性)야채를 중화(中和)시키는 작용을 한다. 여섯째, 고추는 소음인 식품의 경향성을 띈 훈채류에 속한다.

Literary Investigation of Food-Therapy(食治方) Using Foxtail Millet (Setaria italica L. Beaur) - Korean Medicine Literature in 1300's-1600's - (조(속미(粟米)·출미(秫米))를 이용한 식치방(食治方)의 문헌(文獻) 조사 -1300년대에서 1600년대 한국 의서(醫書)를 중심으로-)

  • Foxtail millet (Setaria italica L. Beaur) is a native Korean herbal medical food and a native millet, and Koreans have eaten it as a substitute for rice since ancient times. Foods using foxtail millet (Setaria italica L. Beaur) have been recorded not only in cookbooks but also in Korean traditional medical books several times. Therefore, the purposes of this study was to investigate Food-Therapy (食治) using foxtail millet (Setaria italica L. Beaur) recorded in the literature from 1300 to 1600 from early to mid-Joseon (朝鮮) and provide data required to develop menus for Yaksun (藥膳, herbal food). This study examined Food-Therapy using foxtail millet (Setaria italica L. Beaur) in 10 types of literatures from the 1300s to the 1600s. and is described in the literature a total of 63 times. According to classification by cooking method, porridge (粥) was most frequently mentioned in the literature at 27 times. The cooking method of Soup (湯) is described 11 times. Cooking methods such as porridge juice and soup are frequently used since those methods are digestive and absorptive. Other food ingredients described using foxtail millet (Setaria italica L. Beaur) are white leek (Allii Fistulosi Bulbus) ginger (Zingiber officinale), chicken egg, Allium chinense, sparrow (Passer montanus), rooster liver, Du-si, crucian carp (Carassius auratus L), and white broiler. Other medicinal herbs described with Setaria italica are Panax ginseng (人蔘), Poria cocos (茯笭), Angelica acutiloba (當歸), Ziziphus jujuba (大棗), Liriopeplatyphylla (麥門冬), and cinnamon (肉桂). Food-Therapy using Setaria italica L. Beauv was described as a prescription for stomach and spleen (脾胃), stomach reflux (反胃), defecation and urinary disorder (大小便難), cholera, deficiency syndrome (虛症), and tonification (補益). This focus on promoting health and preventing diseases by strengthening the stomach and spleen and improving defecation and urination using Food-Therapy when herbal medicine was rare.

  • Since new continental was discovered, potatoes and sweet potatoes originated from America have been known worldwide. Through literary consideration about potatoes and sweet potatoes, several conclusons were obtained as enumerated below. 1. Based on work done by taxonomist in Orient, both of sweet potatoes and potatoes which were classified to the families of Convovulaceae and Solansceae repectively were included in Seo-rue(薯類). In contrast, both plants' identities were differed systematically. 2. Because potatoes fulfilled with like-cold keep warm, potatoes help So-um-in(少陰人) achieve Yang-nan-ji-gi(陽煖之氣). Meanwhile, the characteristic of sweet potatoes typically in wild living style assists Tae-um-in(太陰人) to own Ho-san-ji-gi(呼散之氣). That sweet potatoes affect on bodies as much as Mar(山藥=마) does makes this pant be defined as good food. 3. The inside contents of Nam-bang-bon-cho-sang(南方本草狀) cited from sweet potatoes chapter in the book of Bon-cho-gang-mok(本草綱目) indicated that the word of sweet potatoes was not found, but called as a kind of Mar(山藥=마) which lived wildly in a mountain Unfortunately, due to that medical scientist cited contents of Nam-bang-bon-cho-sang(南方本草狀) without pursuing carefully, sweet potatoes have been misunderstood. 4. According to the book of Sasang Constitutional medicine, sweet potatoes are good for Tae-um-in(太陰人) who has constipation, and potatoes are good for So-um-in(少陰人) who suffers form stomach illnesses like ulcer and hotburn. Therefore two plants have been used for curing those illness. ln addition, the taking oriental medicine with those plants are recommenced for dietary treatment according to the Constitution.

Exercise Prescription and Dietary Modification for Prevention and Treatment of Chronic Degenerative Disease II. On Arteriosclerosis and Hypertension (성인병의 예방과 치료를 위한 영양과 운동처방 II. 고혈압과 동맥경화에 미치는 영향)

  • Regular exercise is effective in preventing coronary disease such as angina pectoris and infarction, inside it can lower the blood pressure and aids in weight control and release of stress. Risk factors of arteriosclerosis is hypertension, hyperlipidemia, diabetes, obesity, physical inactivity and excessive smoking. Arteriosclerosis begins at young age worsens with age, particulary in male. For people with risk factors of arteriosclerosis, it is important to prevent arteriosclerosis-related disease with dietary, living pattern and exercise prescription. Dietary fibers promote exercise of the digestive tract and shortens the time food remains inside the digestive tract. It can prevent obesity, hyperlipidemia, arteriosclerosis and colin cancer by blocking the absorption of cholesterol. Various vegetables and sea foods are lichen unsaturated fats and prevent the absorption of cholesterol inside the digestive tract. Essential fatty acids and unsaturated fats which are contained in vegetable oils, promotes metabolism while preventing absorption. In fruits, pectin water-soluble fiber, is present and lowers the level of cholesterol. By consuming foods that low in cholesterol and saturated fats, and rich in unsaturated fats, aliomentotherapy alone can reduce the plasma cholesterol by 10~l5$\%$. For ideal exercise, it should be aerobic with intensity of 60~80$\%$ HRmax, duration of 15~60min/day. The frequancy of 3~6/week is desirable the better exercise prescription is endurance aerobic exercise. To get more effect exercise, exercise consistency is very important.
