Physicochemical Properties of Wheat Bran in Different Areas Prepared by a High-pressure Homogenizer Process (고압균질처리에 따른 산지별 밀기울의 이화학적 특성)

  • In this study, the effects of high-pressure homogenizer treatment on the physicochemical properties of wheat bran from different areas were evaluated. The results showed that the high-pressure homogenizer process could effectively decrease particle size and loosen the microstructure of the wheat bran matrix. As the particle size decreased, the bulk density of wheat bran was significantly decreased (p<0.05) and the water-holding capacity, swelling capacity, oil-holding capacity, and cation-exchange capacity were substantially increased. In addition, microscopic analysis revealed the gradual disintegration of the original cell wall structure and the dissociation of bran tissues over the course of high-pressure homogenization treatment. Scanning electron micrographs showed that the process could also effectively separate out the structural components of wheat bran. These results suggest that the high-pressure homogenizer process is an effective method to modify the physicochemical properties of wheat bran and likely other cereal brans, which might provide potential fiber-rich ingredients for use in functional foods.

  • This study was to investigate the physicochemical and sensory characteristics of snack with various amounts Cham chwi and oil. This result was used to determine the optimum condition of adding levels of Cham chwi and oil. Flavor, crispness, greasiness, oil absorption, expansion rate were selected as the physicochemical and sensory characteristics to determine the optimum conditions of the amount of Cham chwi and oil. The predicted values were obtained by the regression method of RSM(response surface methodology). Conditions were standardized with maximum range of expansion rate when expected value of crispness was more than five and expected value of greasiness was less five. The optimum conditions of Cham chwi snack was established as the 8.6% of Cham chwi and 7.6% of oil.

Quality Characteristics of Alcohol fermentation Broth and By-Product of Brown Rice Varieties (현미 품종별 알코올발효액 및 부산물의 품질특성)

  • This study was investigated quality characteristics of alcohol fermentation broths and by-produce produced from 4 type of brown rice varieties. The result showed that Daeanbyeo(A), Baekjinju(B) and Sulkyeong(C) produced the high alcohol content(9.5, 9.7 and 9.8%) by non-steamed alcohol fermentation period whereas the Goami(D) gave poor content(3.5%). In addition, the effect of total free sugar content were examined for non-steamed alcohol fermentation period. Among these 4 type, 244.2 mg% showed the highest contents in the Goami(D). The steamed alcohol fermentation showed higher sugar content in overall with slight difference between the various brown rice. The total dietary fiber content variation according to the alcohol fermentation methods in non-steamed and steamed periods came up with the highest content in the Sulkyeong(C) fellowed by Baekjinju(B), Daeanbyeo(A), and Goami(D). The total free amino acid content by alcohol fermentation methods timed out to show the highest content in non-steamed Goami by-product followed by Goami powder steamed Goami by-product Although, the above result revealed the lowest alcohol fermentation efficiency in non-steamed Goami, but it had the highest by-product utilizing capacity. Therefore, Goami(D) was the lowest alcohol yield in alcohol fermentation treated with non-steam among groups, but Goami by-products of the Goami had the various nutritional constitutes including starch, dietary fibers and free amino acids, which can be suggested to be used as various functional food ingredient.

Determination and Physical Properties of Dietary Fiber in Vegetables (채소류(菜蔬類)의 식이성(食餌性) 섬유소(纖維素)의 함량(含量)과 물리적(物理的) 특성(特性))

  • Procedures for Dietary Fiber(DF) determination were applied to some common vegetables. The samples selected in this study were: Radish(Leaf), Chinese cabbage, Spinach, Shepherd's purse, Red pepper(Leaf), Perilla(Leaf), Soybean(Leaf) and Cabbage. DF was analyzed by the method of detergent fractionation. Values for NDF, ADF, Lignin, Hemicellulose, Cellulose were obtained. NDF for most samples was $12.9{\sim}27.4%$, except Soybean(Leaf) (41.9%), ADP was $7.7{\sim}16.9%$. Lignin was around $1.0{\sim}2.1%$; Red pepper (Leaf) (7.6%), Perillar(Leaf) (5.7%), Soybean(Leaf) (4.2%) were exceptions. $Hemicellulose(NDF{\sim}ADF)$ was about $2.9{\sim}12.0%$, except Soybean(Leaf) (25.0%). $Cellulose(ADF{\sim}Lignin)$ was $6.3{\sim}13.0%$. This paper describes two properties of the fiber of commonly eaten vegetables; Water-Holding Capacity(WHC) and Density. The capacity of the ADP to hold water was estimated. The WHC measurements differed from 6.6g per g of ADP for Red pepper(Leaf) to 10.4g per g of ADP for Radish(Leaf). Radish(Leaf), Soybean(Leaf) had the greatest WHC whereas Red pepper(Leaf), Perillar(Leaf) had the least. Two types of density determinations are shown. Direct (non-packed) values largely correspond with bulk(packed) density.

Bionomics of Tetranychus urticae Koch on Eggplants under Various Potassium Regimes in Controlled Environment (시설 재배 가지에서 칼리 시비 수준에 따른 점박이응애의 생물적 특성)

  • Development of T. urticae was studied on the leaves of eggplant grown in hydroponics with potash contents of 0 mM, 2 mM, 6 mM, and 12 mM. As the levels of potash increased, that of nitrogen decreased and that of P, K, Mg increased in the plant. While contents of crude protein and fiber decreased, those of ash and sugar increased. Carbohydrate content was the highest at 2 mM. Water contents increased as those of potash increased with the exception at 0 mM. Biomass was the heaviest as 552.7 g at 6 mM and the lightest at 0 mM. Leaf thickness and the content of chlorophyll increased as the content of potash increased. Laboratory leaf disc tests provided with various potash levels revealed that feeding and oviposition preferences of T. urticae were high at 6 mM and 12 mM, respectively. Ratio of damaged leaf by naturally occurring T. urticae on eggplants of 99 days post-transplant in the greenhouse was the highest at 6 mM. Development of immature stages of T. urticae shortened as the levels of potash increased with a less tendancy in male than in female. No differences were detected in adult longevity and oviposition period but the number of eggs laid was the most as 84.7 at 6 mM and the least as 40.6 at 0 mM. There were no differences in the rate of egg hatch and the ratio of sex. $R_o,\;r_m,\;and\;{\lambda}$ were the highest at 6 mM and the lowest at 0 mM. T and Dt were the lowest at 6 mM and the highest at 0 mM. There was a descending trand of T. urticae developmet when levels of potash either gets high or low in the hydroponics.

Comparison of Nutritional Composition in Korean Rices (쌀 품종별 백미와 현미의 영양성분 조성 비교)

  • The purpose of this research was to prove the excellency of unpolished (brown) rice with respect to nutritional composition and to compare chemical composition among six varieties of rice. Some nutritional composition in the Polished (well -milled) rice and unpolished (brown) rice of the six typical Korean varieties (Chucheong, Hwasung, Odae, Ilmi, Dongjin, Ilpum) were determined. Most of nutrients in the brown rice were much greater than those in the milled rice and there was significant difference among rice varieties in some chemical compositions. The major minerals of milled rices were Ca, 6~15 mg%;P, 91~125mg%;Fe, 0.3~1.2mg%; Na, 10~14mg%;K, 106~205 mg%; Zn, 1.0~1.8mg%; and Mg, 32~58 mg%. The mineral contents of brown rices wre Ca, 4~11mg%;P, 92~286mg%;Fe, 1.3~1.9mg%;Na, 12~15mg%;K, 243~320mg%;Zn, 1.5~2.3mg%;Mg, 112~140mg%. Major fatty acids in six rice varieties were linoleic acid, oleic acid and palmitic acid, which comprised of about 93% of total fatty acid. Amino acid analysis showed that aspartic acid, glutamic acid, arginine and leucine were major amino acids, whereas histidine, threonine and tryptophan were minor ones of rice. Most ammo acid contents was higher in Ilmi than the other varieties. The contents of vitamin in brown rices were considerably higher than those in well-milled rice. There was not significant difference in total dietary fiber among rice varieties : 1.1~1.2% for milled rice,3.2~3.5% for brown rice.

Effect of Onion Extracts on Serum Cholesterol in Borderline Hypercholesterolemic Participants (양파추출물 섭취가 경계역 고콜레스테롤혈증 대상자의 콜레스테롤 저하에 미치는 효과)

  • The aim of this study was to examine the effects of 10 week onion extract supplementation on blood lipid profiles in borderline hypercholesterolemic participants. The study consisted of 10 males and 17 females aged $45.9{\pm}10.0$ years. At baseline, serum total cholesterol level was $228.6{\pm}4.1$ mg/dL (201~239 mg/dL). This study was designed as randomized single blind placebo controlled cross-over study. After 1 week wash-out period, subjects were randomized into two groups; they took onion extract (150 mL/1 pack, containing 30 mg quercetin) or placebo for 10 weeks. After 1 week wash-out period again, subjects took exchanged samples for another 10 weeks. The total-cholesterol ($226.7{\pm}4.6{\rightarrow}206.8{\pm}3.6$ mg/dL; p<0.01), LDL-cholesterol ($151.6{\pm}5.0{\rightarrow}127.1{\pm}4.1$ mg/dL; p<0.01) and atherogenic index (AI: $4.0{\pm}0.3{\rightarrow}3.4{\pm}0.2$; p<0.05) decreased significantly after 10 weeks of onion extracts supplementation, while there were no significant changes during placebo periods. The levels of HDL-cholesterol (onion extract: $46.5{\pm}2.0{\rightarrow}50.2{\pm}2.1$ mg/dL, placebo: $47.8{\pm}2.1{\rightarrow}50.1{\pm}2.4$ mg/dL), GOT (onion extract: $36.8{\pm}1.8{\rightarrow}32.3{\pm}1.8$ IU/L, placebo: $35.1{\pm}2.1{\rightarrow}32.8{\pm}2.0$ IU/L), and GPT (onion extract: $36.5{\pm}3.2{\rightarrow}32.9{\pm}1.8$ IU/L, placebo: $36.6{\pm}3.8{\rightarrow}33.8{\pm}2.8$ IU/L) showed no significant changes in both periods. These results indicate that the consumption of onion concentrated extracts exerts beneficial effects on dyslipidemia through the decrease of serum total cholesterol and LDL cholesterol levels in borderline hypercholestrolemic subjects. In conclusion, onion was useful as dietary therapy for hypercholestrolemia and adequate onion intake may help to prevent cardiovascular disease.

Comparison of Nutritional Status of the Daejeon Metropolitan Citizens by Frequency of Eating Out (외식 빈도에 따른 대전시민의 영양상태 비교)

  • This study aims at investigating the health and nutritional status of the adults according to frequency of eating out. One day food intake data were collected by 24 hr recall dietary survey and body size, blood pressure and some blood lipids and other constituents were measured on 137 Daejeon metropolitan citizens 20 yrs old and above who visited Chungnam National University Hospital for physical examination during the period of December 6, to December 15, 2008. The frequency of eating out were categorized into four levels: less than once a week, once a week, 2-3 times a week, 4 times a week and above. Body mass Index, waist circumference, blood pressure, blood lipid, blood glucose, GPT and GOT did not showed any significant difference according to the frequency of eating out of the subjects. Though, systolic blood pressures and serum levels of total cholesterol and LDL-cholesterol showed a little tendency to be high in the subjects eating out 2-3 times a week. In the contrary, serum triglyceride level tended to be low in the same group. The subjects eating out 4 times a week and over took more total protein, animal protein, animal fat, phosphorus and vitamin $B_2$ than any other group. Also protein energy ratio was the highest in the group eating out 4 times a week and above and they took more animal food group, other food group, beverages teas and alcohols than other groups eating out. These results showed that higher frequency of eating out leads to higher intake of protein, fat, phosphorus, animal food groups and other food groups (oils, beverages, seasonings) and to lower intake of vitamin C and plant food groups. It, thus, suggested that the strategy for restaurant business is required to provide the menu substituted animal food by more plant food.

Seasonal Variation of Nutritional Intake and Quality in Adults in Longevity Areas (고령인구 비율이 높은 지역 성인 및 노인의 계절별 영양소 섭취실태)

  • The purpose of this study was to estimate seasonal variation of nutritional intake and quality in adults in longevity areas. Dietary survey was given to 469 subjects over age 20 living Bukjeju-gun, Yecheon-gun, and Sunchang-gun of Korea, using 24-hour recall method every 4 seasons over one-year period. The mean daily intakes (%RDA) of 4 seasons were 1313.3 ㎉ (72.0%) for energy, 47.3 g (82.2%) for protein, 20.2 g for fat, 228.0 g for carbohydrate, 12.8 g for dietary fiber. The differences were hardly significant among the seasons. Mean daily intakes of most of the vitamins and minerals were lower than RDA except vitamin C and folate, especially %RDAs of Ca, vitamin D, vitamin B$_2$, vitamin E were less than 60% of RDA. In general, nutrient intake were high in spring compared to other seasons except vitamin C which was high in fall and winter. Mean daily intakes of cholesterol were 151.7 mg and 124.3 mg in males and females, respectively. The differences was significant between the two sexes but not among the seasons. PUFA : MUFA : SFA ratio of the subject was 1.0 : 1.3 : 1.2. Average CPF ratio of energy intake was 72.7 : 14.4 : 12.9, and energy intake ratio from carbohydrate was low in spring, in contrast energy intake ratios from protein was significantly high in spring. Mean adequacy ratio (MAR), an index of overall nutritional quality was 0.64 for female and 0.71 for male. The indices of nutritional quality (INQ) were over 1 for most of nutrients except 0.73 of Ca, 0.87 of vitamin A, 0.69 of vitamin B$_2$, and 0.65 of vitamin E. Both MAR and INQ were significantly different among sex and seasons, values were higher in males than in females and were higher in spring with the exception of vitamin C. In conclusion, subjects in longevity areas did not consume enough nutrients quantitatively as well as qualitatively, especially Ca, vitamin A, vitamin B$_2$, and vitamin E. Also mean daily intakes of most of vitamins and minerals were insufficient in females, and were significantly different among season. Therefore we must consider a counterplan to augment nutrition intake for them. In addition, it seems to be essential to micro nutrients to the food composition database to estimate dietary intakes more accurately.

Analysis of the General and Functional Components of Various Soybeans (여러 종류 콩의 일반 및 기능성 성분 분석)

  • The objective of this study was to analyze the general and functional components of various soybeans, used for producing soy sauce, tofu, bean sprouts, and for cooking with rice. The moisture, crude protein, crude fat, and ash content of soybeans were in the ranges of 5.50~6.16%, 38.49~41.08%, 14.89~21.89%, and 4.89~5.86%, respectively. Mineral and functional components varied by sample and showed no relationship with usage type. Somyeong for bean sprouts had the highest level of Ca (406.36 mg/100 g), and Sinpaldal for soy sauce and tofu had the highest level of Mg (247.79 mg/100 g). However, Jinpum No. 2 for soy sauce and tofu had the lowest level of Ca (199.51 mg/100 g), and Seonhuk had the lowest level of Mg (90.03 mg/100 g) among the soybeans tested. The isoflavone content in soybeans was in the range of 97.54~402.00 mg/100 g. Somyeong for bean sprouts had the highest level and Seonheuk for cooking with rice had the lowest level. Total oligosaccharides were in the range of $5,838.52{\sim}9,345.90{\mu}g/100g$. Sucrose content was approximately 50% of total oligosaccharides in all samples. Raffinose content was $516.28{\sim}806.95{\mu}g/100g$, and stachyose content was $2,047.13{\sim}3,454.10{\mu}g/100g$. Phytosterols including bracassisterol, campesterol, stigmasterol, and ${\beta}$-sitosterol ranged from 19.25~35.34 mg/100 g. ${\beta}$-sitosterol represented 50% of total phytosterols in almost all samples, followed by campesterol, stigmasterol and bracassisterol. The phytic acid content in soybeans tested was around 2%, except for Sinpaldal No. 2 and Jinpum No. 2 at 0.86% and 1.65%, respectively. The dietary fiber of soybeans was in the ranges of 24.20%~29.20%.
