Quality Characteristics of Pound Cake with Vegetable Oils (식물성유를 사용한 파운드케이크의 품질특성)

  • The effects of vegetable oils addition on the quality characteristic of pound cake were investigated. The volume of pound cake prepared by adding vegetable oils increased from 1005.8 to 1075.8 mL, compared to 752.8 mL for the control. The volume index of pound cake prepared by adding vegetable oils increased by 3.46${\sim}$3.65, compared to 2.88 for the control. The hardness and penetration of pound cake with added vegetable oils were decreased significantly compared to those of the control during storage for 72 hours. The texture of pound cake with added vegetable oils was not decreased compared to that of the control. The lightness and yellowness values of the cake increased and the redness values of the cake decreased by adding vegetable oils compared to those of the control. The sensory quality of the pound cake with added vegetable oils, as estimated by color, taste, moistness and overall acceptability, was better than that of the control.

  • 식품으로 사용된 미강유는 1994년 이래로 미국에서 상업적으로 생산되어 왔다. 다른 식물성 기름과 비슷한데도 불구하고 미강유가 niche 시장에서 특별한 기름으로 부각된 것은 몇 가지의 독특한 성질 때문이다. 미강유는 견과류와도 같은 향기가 매우 좋고 추출될 때는 튀김유로서 매우 안정적이다. 그러나 미강유의 가장 주목할만한 특징은 $ \gamma-oryzanol과 tocotrienols같은 nutraceutical value가 매우 높은 수준으로 함유되어 있다. 1997년 식물성유의 연간 세계 총생산은 약 8천4백만 톤으로 추정된다(USDA, 1998). 전세계 쌀 수확량으로부터 약 7백만 톤의 쌀겨기름을 생산할 수 있다. 이 양은 연간 총생산 식물성유의 약8%에 해당된다. 그러나 현재 연간 세계 미강유 생산이 80만 톤 미만으로서 모든 식물성유의 약1%로 추정된다 대규모 정미기가 갖추어져야만 실용적인 규모로 미강으로부터 기름을 추출하고 미강의 안정화 시스템 설비를 구비할 수 있다. 그러나 세계 미곡 생산량의 대부분이 소규모 정미기로 가공된다. 이러한 이유 때문에 가까운 장래에 전체 미강 생산의 50%이상으로부터 미강유를 생산할수 있을 것 같지는 않다.

Oxidative Stability and Flavor Compounds of Sesame Oils Blended with Vegetable Oils (식물성유를 첨가한 참기름 혼합유의 산화 안정성과 향기 성분)

  • Oxidative stability and flavor of sesame oil blended with canola oil (Ca), corn oil (Co), and soybean oil (Sb) at ratios of 90 : 10, 70 : 30, and 50 : 50 (w/w), respectively, were evaluated. Oxidative stability of sesame oil increased with the addition of vegetable oils (10, 30, and 50% of Ca and Co, and 10% of Sb). Pyrazines, pyrroles, pyridines, and thiazoles, good contributors to the characteristic flavor of sesame oil, were also found in sesame oil blended with vegetable oil. The sensory evaluation showed that no difference was observed between sesame oil and sesame oil blended with 10% of Ca, Co or Sb, which showed higher oxidative stability.

Effects of Replaced Plant Oils on the Quality Properties in Low-Fat Hamburger Patties (식물성유 대체가 저지방 햄버거 패티의 품질특성에 미치는 영향)

  • Effects of substituting olive, corn, soybean, and sunflower oils (each at 50% substitution) on chemical composition and sensory quality of beef hamburger patties were determined. Although beef patties added with plant oils were not different in chemical composition to control (added beef fat 10%), they had 2.0-3.8% lower caloric contents, 3.7-5.9% lower cooking loss, and less diameter and thickness changes after cooking. Beef patties with olive oil had lowest $L^*-values$ before and after cooking. In textural properties, control had higher hardness, cohesiveness, and gumminess than patties with plant oils, whereas no differences in springiness were observed between control nod all plant oil-treated patties. Beef patties containing olive oil had higher scores for overall acceptability than other patties.

Fuel Properties of Various Biodiesels Derived Vegetable Oil (다양한 식물성유지에서 유래된 바이오디젤의 연료 특성)

  • Biodiesel is an alternative diesel fuel which can be obtained from the transesterification of vegetable oils, animal fats and waste cooking oil. The objective of this study is to evaluate the properties of biodiesel obtained from different feedstocks (soybean, waste cooking, rapeseed, cottonseed and palm oils). The biodiesel derived from different feedstocks was analyzed for FAME (fatty acid methyl esther) content, kinematic viscosity, flash point, CFPP (cold filter plugging point) and glycerin content. The quality of biodiesel was tested according to the Korean and European standard (EN14214, requirements and test method for biodiesel fuel). The biodiesels derived from soybean, waste cooking, rapeseed and cottonseed oils contain high amount of unsaturated fatty acid, while palm biodiesel is dominated by saturated fatty acid. The fuel properties of biodiesel, such as low temperature performance, kinematic viscosity and oxidation stability are correlated with the FAME composition components in biodiesel.

  • With the purpose of reducing autogenous shrinkage of high strength mortar, shrinkage reduction effect was examined in this study using plant oils as the compound for shrinkage reduction. As a result of examination, satisfactory reduction effect was shown using plant oils in comparison to plain mixture. Most excellent effect was shown by soybean oil.

Quality Characteristics of Low-Fat Plant Oil Emulsion Pork Patties (식물성유 유화물로 대체한 저지방 돈육 패티의 품질 특성)

  • This study investigated the effect of plant oil emulsion as a replacement for animal fat on the quality characteristics of low-fat pork patties. Pork patties were manufactured using a pork fat control (CON) and olive (OPP), soybean (SPP), and canola (CPP) oil emulsions. Replacing animal fat with the plant oil emulsions increased the moisture content and decreased the fat content of the patties as compared to those with pork fat. The water holding capacity and cooking yield, and the moisture and fat retention of the patties were significantly increased, and the diameter reduction and shrinkage ratio decreased with the plant oil replacements. The color parameters of the samples were affected by the addition of the plant oil emulsions, and higher L* and a* values were observed in CON. The b* value of the raw pork patty was highest in OPP, and palmitic acid was the most abundant saturated fatty acid. In terms of unsaturated fatty acids, oleic acid was highest in CON, OPP, and CPP, and linoleic acid was highest in SPP. Hardness, cohesion, and chewiness were no different among the samples, although higher springiness was observed in the pork patties with added plant oil emulsions. The taste, flavor, and palatability of the OPP and CPP patties were higher than in the CON and SPP groups. Fat replacement with plant oil emulsion therefore had a positive effect on the quality characteristics of the pork patties, and due to reduced saturated fatty acids, the end-product provides the healthy low-fat option desired by consumers.
