Comparison of Cooking Properties between Imported and Domestic Rices according to Cooking Method and Added Water Ratio (취반 방법과 가수량에 따른 수입쌀과 국내산 쌀의 취반 특성 비교)

  • To make of basic date for the progressive global brand of Korean rice, we compared with characteristics of Calrose and two Korean rice cultivar, Chucheongbyeo(medium-late maturing cultivar) and Odaebyeo(early-maturing cultivar). General characteristics of rice, pasting property of rice flour by Rapid visco Analyser, determination of optimal ratio of water to rice for cooking by electric and pressure cooker and eating quality(sensory evaluation) of Calrose with that of Korean rice cooked at the optimal cooking conditions were measured. One kernel length of Calrose, Chucheongbyeo and Odaebyeo were 6.00, 4.73 and 5.22 mm, respectively. Calrose showed higher viscosity(195 RVU) in all parameters than Korean rices(Chucheongbyeo 176 RVU, Odaebyeo 178 RVU), of which the values were similar. These data imply that the properties of starch of Calrose may be different from that of Korean rice. In general, it is agreed, in Korea and Japan, that the balance of hardness and stickiness of cooked rice is very important. However, stickiness and overall eating quality for cooked Calrose was significantly poorer than Korean rices. Cooked Calrose did not significantly different in hardness, stickiness and overall eating quality compared with those of Korean rices. Calrose cooked with the ratio of water to rice of 1.4 with electric cooker was less sticky than Korean rices and thus was poorer in eating quality compared with Korean counterparts. Calrose cooked with the ratio of water to rice of 1.3 with pressure cooker had the same eating quality with Korean rices.

Identification of Fungal Strains Isolated from Salami Casing (살라미 외피로부터 분리한 곰팡이의 동정)

  • The fungi play an important role in smell and taste during the fermentation of salami. In this study, the fungi from the salami casing during the fermentation process in Korea were isolated. They were examined by morphological and molecular methods and were identified as Aspergillus cibarius, Penicillium echinulatum, Cladosporium sphaerospermum. Of these, A. cibarius formed white or light green conidial heads on salami casing and it was widely distributed through almost whole casing. P. echinulatum occurred sparsely on the casing of the salami and formed white masses. C. sphaerospermum occurred rarely and formed black spots. It is considered that additional studies on their roles on salami are required.

  • 동물의 전염성 해면형 뇌증에는 양과 염소의 스크래피, 사슴과 엘크의 만성소모형, 밍크의 전염성 밍크 뇌증, 소 및 소과 야생동물의 소 해면형 뇌증 그리고 고양이의 고양이 해면형 뇌증등이 알려져 있다. 전염성 해면형 뇌증의 원인은 알려져 있지 않으며, 스트레인간의 차이는 숙주의 프리온 유전자에 있어서의 대립유전자의 차이에 의존되는 것으로 추정되고 있다. 이러한 동물의 전염성 해면형 뇌증들은 우리나라에서의 발생보고가 없는 해외 가축전염병이며 현재 영국에서 문제되고 있는 소 해면형 뇌증 즉 일명 광우병은 영국에서 1986년 최초로 확인된 새로운 가축전염병으로서 사람의 크로이츠휄트-야콥병과의 어떤 연관 가능성 때문에 수의학계의 관심의 대상이 되고 있는 질병이다. 영국정부 보건장관 스티픈 도렐은 최근(1996년 3월 20일)에 과거 10년 동안 영국의 소에 감염되어 온 소 해면형 뇌증이 사람의 희귀한 뇌 질환인 크로이츠휄트-야콥병의 새로운 스트레인과 관련성이 있는 증거가 있을 수 있는 것으로 과학자문위원회가 믿고 있다고, 영국하원에서 보고한 바 있다. 한편, 영국의 농업장관 더글러스 호그는 영국에서 30개월 이상된 소를 도살할 때에는 모든 뼈를 제거하여야 하며, 모든 포유동물의 조직은 농업용 사료로 사용해서는 아니된다는 새로운 규정을 공표하였다. 그러나 영국의 쇠고기는 안심하고 먹을 수 있다고 발표하면서 만일 문제가 된다면, 영국에서 사육하는 1천 1백만 마리의 소를 전부 도살할 용의가 있다고 하였다. 이러한 영국정부 견해는 다음 날 CNN News 등 세계 각 매스컴을 통하여 보도되었으며, 아직까지 과학적인 증거가 확립된 바는 없지만, 수의학이나 의학적인 사실 확인의 여부를 떠나, 사회 경제적인 문제로 큰 놀라움과 많은 의문사항을 남겨둔 채, 영국산 소와 쇠고기의 수입금지 조치 등 국제적인 문제로 확대되었다. 본편에서는 동물의 전염성 해면형 뇌증에 대하여 종합적으로 고찰해 보고자 한다.

  • In the conventional recirculation fish farms, there is a lot of difficulties due to lack of professional manpower and high reliance on imported measurement equipment. In this paper, we implement an automatic water quality measurement system which can measure the pollution degree in a water tank of fish farms using an optical sensor(pH, DO) with the IoT technology. The problem with existing systems is that the fish tank should be checked by means of human, or put the measuring equipment into the water tank of fish farms and measurement directly. But, it has a bad influence on the growth of fish. In this paper, we propose a method of indirect measurement without immersing the measurement equipment in a water tank of fish farm and develop a sustainable measurement system in an environment containing salt and lots of pollutants without affecting the growth of fish within the water tank of fish farms.

Effects of Cysteine on the Texture and Color of Wheat Flour Noodle (밀국수의 물성과 색에 미치는 cysteine의 영향)

  • Cysteine, a thiol group-containing reducing agent which is known to relax the strain and increase the viscosity of dough, was added to Korean and imported wheat flour noodles to investigate the effect on the properties of raw, dried, and cooked noodles and to determine the optimum cooking time and amount to improve the color of noodles. Addition of cysteine up to 1% of flour (8.25 mmole/100 g flour) was not effective in increasing the brightness of raw and dried noodles and in changing the water activity of dried noodle. However, cysteine improved the brightness of cooked noodle made of both Korean and imported wheat flours. Also, there were notable differences in cooking and sensory properties of cysteine-added cooked noodles such as less firm and stickier texture due to the extraction of organic compounds into broth. When the noodles were cooked for their optimum cooking time, no difference was noticed in the texture and overall preference regardless of the addition of cysteine. Overall, the addition of 1 % cysteine increased the brightness of cooked noodles and reduced the cooking time.

Method for Making High Purity Gallium by Electrowinning (전해채취에 의한 Gallium의 정제기술)

  • Gallium is an important material and is used by industry of oxide semi-conductor and LED chip. However, the most of the gallium-containing waste resources became outflow abroad and the most of which is imported from oversea by following technical problem and low circulation rate. In this research, the recovery of high purity Gallium metal from Gallium scrap, which containing about 30% of Gallium, was investigated by using hydro-metallurgical process. As pretreatment, the Gallium scrap was pulverized and leached by strong acid such as hydro chloric acid. At the leached solution, Indium was separated as an Indium sponge by substitution reaction and then Gallium and Zinc hydroxide separated and filtrated using strong alkaline solution such as sodium hydroxide by precipitation method. Also, Gallium metal and Zinc metal was recovered by electrowinning method. To make an electrolytic solution, Gallium and Zinc hydroxide was leached by strong alkaline solution. Finally, High purity Gallium metal was recovered by vacuum refining process to remove the Zinc impurity.

  • 중량물 혹은 철골구조물 등을 고정시키는데, 건축구조물의 철골기둥, 터빈 제네레이터 기기등을 콘크리트 구조물에 부착시키기 위해 널리 쓰인다. 1990년대 들어 국내 건물의 리모델링, 보수 및 유지관리의 증가에 따라 앵커의 사용량도 현저히 증가하고 있으나 대부분 고가의 외국산제품을 수입하고 있다. 현재 국내외에 주로 시행되는 앵커타입은 마찰형 앵커이나 마찰형 앵커와 달리 지압형 앵커의 경우, 외국에서는 이미 그 유효성에 대한 인식이 널리 퍼져있으며 각국의 지반조건에 적합한 설계법이 개발되었다. 그러나 국내의 경우 이러한 연구가 미진한 실정이며 이에 대한 연구가 절실한 상황이다. 본 연구에서는 중량물앵커(Heavy Duty Anchor)의 인장시험을 실시하여 내력을 규명하고 도출한 결과를 기존 시험연구 결과와 비교분석하여 기 제안된 이론식들과 사업경제성에대해 보다 깊이있고 정확한 적용성을 입증하는데 본 연구를 수행하였다. 시험을 통한 저강도 파괴시험의 결과 구조부재의 접합부에서 각 시험체마다 뽑힘파괴가 발생하였으며, 뽑힘파괴가 발생한 시험체는 앵커강재의 파괴력 또는 콘크리트의 콘파괴를 발생시키기에는 앵커슬리브의 확장력이 작게 작용되었다. 그 결과, 콘파괴 대신 구조부재의 접합부에서 뽑힘파괴가 발생되었으며 이를 통해 설계시, 앵커의 안정성을 증가시키기 위해 구조부재의 접합부를 연성적이며, 부가여력을 충분히 지니도록 설계하는 것이 효과적인 것으로 나타났다. 고강도 파괴시험의 결과 콘파괴가 발생되었음을 알 수 있는데, 본 시험에 사용된 앵커의 경우 정착위치가 구조물의 연단 모서리 거리와 너무 근접하여 앵커의 내력이 감소하게 되어 콘크리트의 콘강도가 발생되기 전에 먼저 파괴되었다. 따라서 설계시, 앵커의 파괴강도를 증가시키기 위해 앵커의 정착위치를 고려한 설치를 통해 앵커체결과정에서 적정 연단거리를 확보하는 것이 효과적인 것으로 나타났다. 앵커볼트 최소간격과 연단거리에 따른 파괴시험결과 앵커볼트의 간격이 허용범위 내에서 넓어질수록 불균등 부반력의 차는 감소하였으며, 최대 부반력도 감소하였다. 따라서 앵커의 파괴저항강도를 증가시키기 위해서는 허용범위 내에서 앵커볼트의 설치간격을 증가시키는 것이 효과적인 것으로 나타났다.

Effect of Accession to OPRC-HNS Protocol on Korean Industry (OPRC-HNS 의정서 가입이 국내 산업계에 미치는 영향)

  • Since the OPRC-HNS Protocol entered into forced in the June of 2007, the potential effects on industrial circles are encouraged to be analyzed according to the obligatory regulations listed in the Protocols. This study was conducted on the quantitative analysis of the possible effect on the industrial circles if Korea accedes to OPRC-HNS Protocol. In spite of any burdens caused by keeping "accident emergency program memorandum" and performing "education and any training program for the crews", potential decrease of insurance fee is in possibility provided it follows. In addition, the oil refinery and petrochemical industries may also have burdens for potential costs for acquiring any materials including equipments and fees for education and training related to HNS. However, minimizing any costs by swift response against accidents would be big advantage that comes with paying of small amounts of expense by international convention related to HNS.

Piroplasma Infections of Canadian Cows Imported to Kyungpuk, Korea (경북지방(慶北地方)에 수입(輸入)된 CANADA 산(産) 유우(乳牛)의 Piroplasma 감염피해(感染被害)에 관(關)한 조사보고(調査報告))

  • A survey on the piroplasma infections for Canadian cows imparted from November 1968 to June 1969 to Kyungpuk, Korea was conducted by means of enumeration of erythrocytes and examination of Giemsa staining blood films from the cows and their calves. The results obtained were summarized as follows: 1. So-called small type piroplasma (Theileria) infections were suspected in almost all of imported cows and their calves during their first pasture season and mixed infections with so-called large type piroplasma (Babesia) or Eperythrozoon wenyoni were detected in some cows and calves. 2. Fever, anorexia, depression, marked decreased milk production, sever anemia and jundice were observed in the imported cows with havy infection of so-called small type piroplasma (Theileria). And the piroplasma infection was most important cause of deaths of imported cows. 3. Sever anemia, malnutrition and poor growth were observed in many calves from imported cows with havy infection of so-called small type piroplasma(Theileria). 4. Good results were obtained in treating cattle acutely ill with so-called small type piroplasmosis by injection of pamaquine but they may need scond injection 3 to 4 weeks after the first treatment for reapperence of the piroplasma in the erythrocytes.

  • This study wished to construct and propose correct Korea-USA FTA business model in Food Industry for FTA practical use maximization. First, the application item of Wholly Obtained Criterion may have to construct Wholly Obtained Criterion FTA practical use strategy. This strategy is to export to FTA country concerned after process domestically made main material. Second, the application item of Change in Tariff Heading may have to construct Change in Tariff Heading FTA practical use strategy. This strategy exports to FTA country concerned after that process that receives tariff cut(Cost reduction) benefit, and satisfies Change in Tariff Heading importing main material from third country (The FTA conclusion country).
