EU의 원양어업정책에 관한 연구

  • EU는 세계 3위의 어업생산지역임에도 불구하고 가공어류와 양식수산물에 대한 세계 최대의 소비시장을 가진 탓에 만성적인 수산물 공급부족을 겪고 있다. 이에 따라 EU는 일찍부터 제3국과의 어업협정을 통한 원양어장 진출을 적극적으로 추진해 왔다. EU의 원양어장 진출정책을 시기별로 분류하면 1세대 유형에서부터 4세대 유형으로 구분가능하다. 수역별로는 크게 유럽북부와 남부수역으로 분리되어 있으나, 어업협정 유형으로는 북유럽형, 발틱형, 북미형, 중남미형, 그리고 ACP형으로 세분화 할 수 있다. EU는 특히 대부분의 쌍무어업협정을 아프리카, 인도양, 서태평양 연안국들과 맺고 있어, 이들 국가와의 쌍무적 어업관계가 EU 원양어업정책에 있어 매우 중요하다. 최근 원양어장의 자원부족현상이 점차 심각해짐에 따라 EU 위원회는 그들의 공동어업정책 개혁안에 제3국과의 어업협력강화 방안을 수립하였다. 이는 연안국과의 어업관계를 단순입어에서 동반자적 입어관계로 발전시키는 한편, 어업 외적인 부문의 협력을 포함하는 포괄적 접근 정책을 추진하고 있다. 이러한 EU의 움직임은 단순한 어획쿼터할당에 대한 입어료지급 방식은 조업국과 연안국 간의 신뢰관계 증진에 그다지 도움이 되지 못한다는 것을 의미한다. 따라서 조업국은 연안국에 대한 자원관리기술을 지원해 주고, 자원평가에도 공동으로 참여함으로써 양국간 협력적 수산자원관리정책을 지향하도록 하여야 한다는 것을 시사하고 있다.

Design of Environment Monitoring for distribution of Living Fishery products (활수산 유통을 위한 환경 모니터링 설계)

  • In this paper, we designed and built a system that is site manager can be monitored remotely to the growth of the fishery environment. To this end, modular distribution system and environmental monitoring of live fishery products. Simulation results, were building a purification system and the oxygen supply to the fishery living inside the container was to build a system that can be monitored in real time. As a result, it was able to raise the necessary environment for the storage and distribution of fisheries products. We constructed a monitoring system with database and communication environment and created the optimal environment suitable for growth with sensor. As a result, it was possible to monitor the environment for the storage and distribution of fishery products and to build a suitable fishery products management system.

A Study on the Difference of Perceptions of Seafood and Processed Seafood Products: The Case of University Students in Busan and Gyeongsang Area (수산물 음식과 수산물 가공식품에 대한 인식 조사: 부산·경상도 지역 대학생을 중심으로)

  • The purpose of this study is to understand the perception of fishery products and processed food of marine products in college students through empirical analysis. 446 questionnaires were used in the analysis. As a result of the empirical analysis, the frequency of consumption of aquatic food was 2~3 times a week, the place of intake was good for taste of home and aquatic foods, respectively. Purchase motifs of processed fish products are easy, the frequency of ingestion is 3 to 4 times a week, the criteria for selection were always consumed, and the taste was considered to be high when purchased. The perception of nutrition and necessity of consumption of aquatic foods was high and radioactivity was low. 133 male students (57.8%) and 98 female students (45.4%) were aware of the aquatic traceability system. The college students generally has a high preference for the taste of marine products and high frequency of consumption, and they recognized that nutritional excellence and necessity were positive. The marketing strategy should be developed by developing proper product considering the age level and sex of consumers. The limitation is that they are college students in Busan and Gyeongsang provinces and coastal areas.

Review on the necessity of boarder quarantine to prevent introduction of salmonid alphavirus into Korea (연어 알파바이러스 감염증의 국경검역 필요성에 대한 고찰)

  • Infection with salmonid alphavirus (SAV) is a serious disease that mainly affects rainbow trout (Oncorhynchus mykiss) and Atlantic salmon (Salmo salar L.) reared in seawater or freshwater. SAV is prevalent in European countries including Norway that exports rainbow trout and Atlantic salmon to Korea. Consequently, SAV was listed as a disease notifiable to the OIE and many salmonid-producing countries either designate SAV as their notifiable disease or do research on the development of diagnosis and epidemiology to reduce the possibility of SAV infection. Unlike other salmonid-producing countries, SAV is not listed as a notifiable disease in Korea, thereby arousing concern that SAV will get into the country through the importation of live salmonids. Under the circumstance, Korea needs to have a legal basis to take much stricter follow-up measures, including listing SAV as a notifiable disease, establishing surveillance system based on OIE standards to declare Korea free from SAV, killing infected fish and conducting fallow system against affected farms.

A Study on the Housewives Recognition and Preference of Seafoods and Fermented Seafoods Add Kimchi (젓갈 및 수산물 첨가 김치에 대한 주부의 기호도 및 의식조사에 관한 연구)

  • This study was carreid out to investigate present comsuming behavior and consumer preference of SEAFOODS as a stuff in KIMCHI making, adopting a questionaire survey for 500 housewives living in Korea except Chejudo Province. Frequency distribution and percentage of preferences were measured. Out of total housewives responded, 65.5% consider, THEY SHOULD EAT KIMCHI DAILY. Which conforms, kimchi is still an important side dish at most of the households On the other hand, some others consider EATING KIMCHI EVERY DAY is not neccesary(6.0%) or dislike it(0.5%). This result might suggest that kimchi may or may not be an essential sidedish for every households in the future. 96.3% of Housewives used fermented salited fish and 45% used seafoods as a staffing in making kimchi. Major reasons for adding seafoods in kimchi were: it improves teste and flavor(79.5%) and nutritional value(54.2%). Reasons for rejecting seafoods as a stuffing in making kimchi were: it worsens taste and flavor(13.5%), hygenic treatments of seafoods are below the necessary level(13.5%) and shelf life become shorter(12.8%), respectively. Among the fermented salted sauces, 84.9% and 69.1% of house wives responded as anchovy and shrimp sause were most favorite(base) material in Kimchi making, respectively. Out of total seafoods utilized in making kimchi,76.4%, 54.7% and 31.4% of housewives responded as oyster, small shrimp and sea-staghorn as the favorite seafoods in Kimchi making(raw material). Majority of housewives responded to develop it's taste and flavor to meet that of international one(86.5%) and that hygienic level(treatments) should be upgraded(50.9%).

Safety Assessment of Biogenic Amines in School-Meal Fishery Products (학교급식 수산물의 바이오제닉아민 안전성 평가)

  • This study analyzed the content of eight biogenic amines (BAs), including histamine, in 198 fishery products (121 school-meal products and 77 distributed products) in Korea in 2019. Changes in BA content according to time, temperature, and salt treatment in Japanese Spanish mackerel, chub mackerel, and salmon were also observed. The average histamine content of 198 fishery products was 0.4±2.3 mg/kg, and all were within histamine criteria (200 mg/kg or less). As a result, the margin of exposure (MOE) was calculated to evaluate the risk of fishery products, and school-meal fishery products were evaluated as safe with a MOE of 1 or more. At 30℃, the histamine content of the fish increased rapidly to 144 mg/kg (Japanese Spanish mackerel, 36 h), and 308 mg/kg (chub mackerel, 24 h). When the Japanese Spanish mackerel, chub mackerel, and salmon were stored at 4℃, histamine was not detected for 3 days, and it was not detected for 14 days at -20℃. The BA content (histamines, etc.) of salt-treated Japanese Spanish mackerel and chub mackerel was lower than that of fish not treated with salt.

Residue analysis of penicillines in livestock and marine products (국내 유통 축·수산물 중 페니실린계 동물용의약품에 대한 잔류실태조사)

  • Penicillins belong to the ${\beta}$-lactam class of antibiotics, and are frequently used in human and veterinary medicine. Despite the positive effects of these drugs, improper use of penicillins poses a potential health risk to consumers. This study has been undertaken to determinate multi-residues of penicillins, including amoxicillin, ampicillin, oxacillin, bezylpenicillin, cloxacillin, dicloxacillin, and nafcillin, using liquid chromatographic tandem mass spectrometer (LC-MS/MS). The developed method was validated for specificity, precision, recovery, and linearity in livestock and marine products. The analytes were extracted with 80% acetonitrile and clean-up by a single reversed-phase solid-phase extraction step. Six penicillins presented recoveries higher than 76% with the exception of Amoxicillin. Relative standard deviations (RSDs) were not more than 10%. The method was applied to 225 real samples. Benzylpenicillin was detected in 12 livestock products and 7 marine products. Amoxicillin, ampicillin, cloxacilllin, dicloxacillin, nafcillin and oxacillin were not detected. The detected levels were 0.001~0.009 mg/kg in livestock products excluding eggs and milk. In marine products, the detected levels were under 0.03 mg/kg. They were under the MRL levels. As monitoring results, it is identified to be safe but it is considered that safety management of antibiotics should continue by monitoring.

Effects of Additive materials on the Quality Characteristics of Dasik (다식의 제조시 첨가하는 부재료와 품질특성)

  • This study was carried out to investigate the possibility of improving the texture and flavor of Dasik by adding various types of sugar (syrup, honey) and flavor ingredients (omija, chija, coffee, green tea extract) to rice powder. Dasik samples were prepared, and the sensory quality and physical characteristics of those were compared. The moisture content of Dasik added with syrup was higher than that of honey. Coffee Dasik with syrup was the highest (23.6) in moisture content. In sensory quality, the omija and coffee Dasik showed the highest score in flavor quality (p<.001). Omija Dasik with honey and coffee Dasik with syrup showed the highest scores in overall acceptability (6.4, 6.2). Green tea Dasik with syrup showed the highest value in the lightness (L) of color. Omija Dasik with syrup showed the highest value in the redness (a) of color Chija Dasik was the highest in the yellowness(b) of color. In physical characteristics, the hardness was negatively correlated with the moistness, tenderness, and texture acceptability in sensory quality(p〈0.001). The cohesiveness was positively correlated with the overall acceptability in sensory quality (p〈0.01). In the relation of texture characteristics and sensory quality, the higher the moisture content, the lower the hardness and springiness were, but the higher the brittleness and the cohesiveness were(p〈.001). Overall, omija and coffee Dasik appeared to have desirable flavor, taste and overall acceptability.

Antimicrobial and Antioxidant Activity of Grapefruit and Seed Extract on Fishery Products (수산물에 대한 Grapefruit 종자추출물의 항균 및 항산화효과)

  • The antimicrobial and antioxidant activities of grapefruit seed extract(GFSE), which was extracted with glycerine in the special schematic extraction apparatus, were investigated for handling and processing of fishery products. The effectivity of GFSE has been tried on sardine, mackerel and shrimp divided into six lots for each fishery product: control(no treatment) and five GFSE-treated samples. Samples were inoculated with Salmenella typhi, incubated for 24hrs at $30^{\circ}C$ in dextrose-tryptone broth medium and prepared for microbiological 8f chemical analysis and organoleptic assessment. The bacteriological analytical results with GFSE(250ppm) showed the reduction of $1.8\times10^6\to2.0\times10^4,\;1.9\times10^6\to1.8\times10^4$ and $1.6\times10^6\to2.7\times10^3$ in total bacterial count for sardine, mackerel and shrimp, respectively. The test results with GFSE(500ppm) showed a $100\%$ reduction of bacterial mackerel treated with GFSE(500ppm) was reduced to $1.1\times10^4$ and $9.0\times10^3$ respectively. Antioxidant effect of treatment with GFSE at 500ppm level for three products was significant. LSD test results on organoleptic parameter for the samples treated with various showed a significant influence on the appearance, odor and texture in which at concentration 500ppm level give the excellent scours compared to each control.

A Survey of Purchasing Management for School Foodservice Foods in Daegu and Gyeongbuk Province (대구.경북지역 학교급식 식재료 구매 관리 실태 조사)

  • This study was conducted to investigate the food purchasing management of school food services. The subjects consisted of 271 school dietitians in the Daegu and Gyeongbuk area. The percentages of ready-to-use vegetables actually being used were as follows: root of balloon flowers, 88.4%; garlic, 87.8%; blanched bracken, 80.1%; raw lotus root, 65.7%; burdock, 63.5%; small green onion, 63.5%; stem of taro, 57.6%; ginger, 35.1%; radish root, 30.6%; blanched asterscaber, 29.2%; large type welsh onion, 25.8%; carrot, 25.5%; onion, 21.4%; and potato, 8.9%. The percentages of HACCP-certified products being used were as follows: meat, 75.9%; eggs, 66.7%; soybean curds, 65.5%; ready-to-use seafood, 55.1%; starch jellies, 49.9%; spice, 44.9%; kimchi, 30.9%; ready-to-use vegetables, 22.7%; and fruits, 6.9%. The percentages of environment-friendly food items being used were as follows: eggs, 31.0%; meat, 28.7%; soybean curds, 22.1%; and fruits, 17.7%. Of these food items, meat and ready-to-use seafood were being used the most in the elementary schools. The percentages of imported food items being used were as follows: starch jelly, 29.2%; ready-to-use seafood, 24.7%; soybean curds, 20.5%; spice, 15.9%; and fruits, 10.1%. The food items requiring HACCP certification were as follows: beef and pork, 81.5%; chicken, 80.1%; ready-to-use seafood, 78.6%; frozen dumplings, 73.8%; soybean curds, 71.6%; peeled eggs, 70.8%; fish paste, 69.4%; starch jelly, 65.7%; milk, 63.1%; kimchi, 54.6%; spice, 50.6%; frozen noodle, 45.4%; ready-to-use vegetables, 44.3%; and bean sprouts, 29.5%. It was confirmed that 8.1% of the sanitation monitoring results were intentionally misreported. Therefore, to supply good and safe foods to schools, active management is needed in schools and food manufacturing and delivery companies.
