Oral administration of H. syriacus L. flower ameliorates photoaging and dryness in UVB-irradiated skin (무궁화 꽃 추출물 경구투여에 의한 피부 광노화 및 건조증 개선에 관한 효과)

  • Wrinkle formation and dryness are the most well-known symptoms of skin aging. This study investigated skin anti-aging and moisturizing effects of Mugunghwa (Hibiscus syriacus L.), the national flower of Korea. The effect of H. syriacus L. flower extract was examined in skin cells originating from humans in vitro and in hairless mice exposed to UVB in vivo. The in vivo study results showed that skin hydration-related factors such as involucrin, filaggrin, HAS1, HYAL1, and matrix metalloproteinase-I (a primary skin photoaging factor) were regulated by H. syriacus L. Additionally, epidermal thickness and collagen disruption, which resulted in wrinkle formation and skin dryness, were ameliorated by oral administration of H. syriacus L. These results indicate that H. syriacus L. flowers can play important roles in preventing aging and promoting skin moisturizing.

Studies on Stability for the Quality of Ginseng Products -3. Determination of Sorption Properties and Optimum Moisture Contents in Extract, Extract Powder and Extract Tea of Red Ginseng- (인삼제품(人蔘製品)의 품질안정성(品質安定性)에 관한 연구(硏究) -3. 홍삼정(紅蔘精), 정분(精粉) 및 정차(精茶)의 흡습특성(吸濕特性)과 적정수분함량(適正水分含量) 기준설정(基準設定)-)

  • To investigate stability for the quality of selected ginseng products, their sorption properties were clarified in red ginseng extract(RGEP), and red ginseng extract powder(RGEP), and red ginseng extract tea(RGET). Simultaneously, the BET monolayer value of each product was determined in order to inquire out the possibility of establishment as a criterion for the optimum moisture content of the ginseng products. Based on the BET monolayer moisture level of spray dried RGEP which ranged from 4.08 to 4.65%, it would be desirable to establish the optimum moisture content of the products at 4.4${\pm}$0.3%. This is 1.3 to 1.9% lower than the criter on, "less than 6.0%". The optimum moisture level for RGET of which monolayer value ranged 0.93 to 1.37% would be 1.2${\pm}$0.17%. In this case, the maximum permissible limit of moisture content could presumably be raised up to 1.37% in place of current criterion, "less than l.2%". From the results of a study on the growth of molds, the optimum moisture content for RGE assumed to be extended up to 40.0${\pm}$1.07 despite 36.0${\pm}$1.0% of the present criterion. On the other hand, a storage study under the maltreated condition, $48{\pm}2^{\circ}C$ 75%RH, was also carried out in order to make it clear whether the BET monolayer values were able to be used as indices for optimum moisture level of the products. In all samples tested adsorption occurred at even higher levels of moisture than the monolayer values. However, since there are many other possible factors affecting the quality of products the optimum moisture content is preferable to be reduced to the monolayer value. As a result, it was proved that the optimum level of moisture for both RGEP and RGET could be established by the monolayer values.

Application as a Functional Cosmetic Ingredient of Carrot Glycoprotein (당근 당 단백질의 기능성 화장품 소재로서의 응용성)

  • The present studies were undertaken to compared application as cosmetic ingredients of carrot glycoprotein(CG) manufactured by carrot and it's application for raw material of beauty ingredient with those of scale collagen peptide(SCP). CG and SCP apply functionality of each cream did not have fading, smell change, creaming effect and cohesion, that means the CG's properties turned out to be very stable in $5^{\circ}C$, $25^{\circ}C$. Trans epidermal water loss content was significantly lower in CG and amount of water contained in skin was significantly higher in CG. These results suggest that cream containing CG turned to be very effective in improving wrinkles excellent humid-protection as well as SCP to skin.

Antibaterial Activity of Persicaria hydropiper Extracts and Its Application for Cosmetic Material (여뀌 추출물의 항균 활성과 화장품소재로서의 응용)

  • In this study, the antibacterial activity and the moisturizing effect of cream contaning Persicaria hydropiper L. extract were investigated by clinical trial. MIC values of ethyl acetate fraction from Persicaria hydropiper on P.acnes, S.aureus, P.ovale were 0.13~0.25%. The results showed that the antibacterial activity of the ethyl acetate fraction was higher than or equal to the methyl paraben and quercetin. The cream containing the ethyl acetate fraction of Persicaria hydropiper L. extracts was formulated for skin hydration effect. Also, the transepidermal water loss (TEWL) and the water contents in skin were measured. The cream containing Persicaria hydropiper L. extract was applied to the right lower arm. After 180 min, TEWL of parts was decreased as $6.5\;g/m^2h$ (experimental cream) and $7.5\;g/m^2h$ (placebo cream) respectively. And the water contents in skin were increased by 2~4% than the placebo cream. These results indicate that extract/fractions of Persicaria hydropiper L. can function as high potential as bactericide against the skin pathogenic bacteria and the increase of skin hydration of the cream containing extract could be applicable to new functional cosmetics for antiaging.

The Additional Effects of Various Materials on Microwave Heating Property of Frozen Dough (품질개량제 첨가가 냉동반죽의 Microwave 가열특성에 미치는 영향)

  • This study was conducted to improve the properties of frozen dough foods (buns and noodles etc.) on the quality deterioration with microwave oven cooking. Microwave is a useful cooking method, but it quickly takes moisture from food surface and makes lowering food quality abruptly. For improvement of these problems, mixing doughs with addition of various additives of 34 types manufactured respectively; starches, modified starches, gums and emulsifiers etc. Each mixing dough produced in sheet type $(30{\times}30{\times}1mm)$ and steamed them, was quickly froze at $-70^{\circ}C$ and packed with polyethylene. Packed samples kept at $-20^{\circ}C$ for 48 hours. After they were steam or microwave treatment packed or non-packed with polyethylene, studied for improvement effects of quality as sensory evaluation and selected 6 type additives; modified starches (TA, ST), gums (AR, GA) and emulsifiers (E, S1) as improvement agent. Because moisture loss from microwave oven cooking leads to quality deterioration of frozen dough foods, additive, such as including starches, modified starch, gums, and emusifiers were added to improve dough properties. Amylogram, scanning electron microscopy, textural analysis, and differential scanning calorimetry revealed addition of additives improved textural properties including surface-hardening of frozen dough foods compared to the control.

Protective Effect of Mulberry and Lithospermum erythrorhizon Extracts on Anti-aging against Photodamage (오디 및 자초추출물의 피부 광노화 보호효과)

  • We investigated the protective effect of UVB inducing photodamage from mulberry extract (ME) and Lithospermum erythrorhizon extract (LE). The contents of total anthocyanin and shikonin as a color compound of ME and LE were 4.92 mg/g and 9.58 mg/g, respectively. The electron donating ability and superoxide radical scavenging activity of ME were 84.32% and 76.34%, respectively. The oxygen radical absorbance capacity of the ME ($545.37{\mu}moles$ TE/g) was higher than LE ($427.18{\mu}moles$ TE/g). MMP-1 production in the HS68 cells were exposed to UVB suppressed by treatment with $200{\mu}g/mL$ of ME (68.6%) and LE (32.7%). ME and LE were applied to a skin aging mouse model, which was induced by the irradiation of UVB to the backs of hairless mice. The value of skin erythema index, wrinkle depth and thickness, epidermis thickness, and collagenous fiber damage in the experiment groups (MEL: ME 3%, MEM: ME 5%, MEH: ME 7%, LEL: LE 3%, LEM: LE 5%, LEH: LE 7%) were remarkably reduced than in the control group (only UVB exposure group), while water capacity increased. The level of total wrinkles depth in the skin was decreased to be 30% of the control group by MEH and LEM. These results suggest that ME and LE are useful cosmetic materials for skin protection against UVB-inducing.

Study on the Application of Indigenous Pigmented Rice for Garaedduk Adapted with Mechanically Impacting Technology (기계적 충격기술이 토종 유색미 함유 가래떡 노화지연에 미치는 효과)

  • The present study was performed to expand the application of mechanically impacting technology reported in our previous studies. Several parameters were analyzed to research Korean indigenous pigmented rice. The proximate composition of Korean indigenous rice was the following; 12.0-13.4% moisture, 74.1-77.3% carbohydrate, 6.8-8.7% crude protein, 1.68-3.25% crude lipid, 0.78-1.38% crude ash, with a 6.6-7.07 pH value. The phenolic compound content of red rice was twice that of black rice. Moreover, antioxidative activity was estimated by DPPH radical-scavenging activity (IC50 = 0.15-1.04 mg/mL). Anthocyanin and chlorophyll in each pigmented rice type were detected by spectrophotometer. Garaedduk samples were prepared with non-waxy rice, salt, 24% water, and/or 15% indigenous pigmented rice(red, green and black, w/w of total swelling non-waxy rice) and adapted with or without mechanically impacting technology. Hardness, as a main texture profile parameter of Garaedduk was maintained up to 3 days under storage at $20^{\circ}C$. The results suggest that Korean indigenous pigmented rice can be applied for functional Garaedduk adapted with mechanically impacting technology.

Quality Characteristics of Backsulgi with Dextrinized Rice (호정화에 의한 백설기의 품질특성)

  • The purpose of this study was to investigate the effect of dextrinization methods (dry oven and roaster) and the ratio of dextrinized rice on the quality of Backsulgi during storage. The moisture content significantly increased with increasing the amount of dextrinized rice regardless of dextrinization methods. As the ratio of dextrinized rice increased, the L value of the Backsulgi decreased, but the a and b values increased. The a and b values of dry oven method were higher than those of roaster method due to their thermal denaturalization. However, there were no significant pattern's change in sample's colors during storage. In the texture profiles, the hardness, cohesiveness, gumminess and chewiness significantly decreased with increasing the amount of dextrinized rice depending on the dextrinization methods and the ratios. The time constant (1/k) of the Backsulgi with dextrinized rice comparatively higher than that of control and appeared to be the highest in the Backsulgi formulated by 100% of dextrinized rice. In the sensory evaluation, Backsulgi with dextrinized rice over 30% after 1day storage showed higher value in overall quality and lower value in hardness than control. The addition of 30% dextrinized rice made by roaster showed the most effective on the quality and retrogradation of Backsulgi.

검은비늘버섯을 첨가한 국수의 품질특성

  • 충청북도농업기술원 균이팀에서 재배한 검은비늘버섯 국수를 제조하기 위해서 밀가루에 3, 5, 7%의 버섯분말을 첨가하여 국수를 제조하고 그 품질 특성을 조사하였다. Farinograph를 이용하여 최고점도와 최종점도 및 노화도를 조사한 결과 무처리보다 버섯첨가구에서 모두 낮은 값을 나타내었으며 첨가량이 증가할수록 낮아지는 경향을 나타내었다. 버섯분말 첨가량이 증가함에 따라 수분 흡수율은 약간 증가하였다. 색도는 버섯분말의 첨가량이 증가함에 따라 분말, 반죽, 국수 등 모든 처리구에서 명도는 낮아졌으며, 적색도와 황색도는 증가하는 것으로 나타났다. 버섯국수 조리 후 중량과 부피는 버섯분말 및 식초 전처리 농도가 증가할수록 감소하였으며 국물의 탁도는 큰 차이가 없었다. 조리면의 물성 측정 결과 버섯분말 첨가량이 증가함에 따라 부착성, 탄력성, 씹는감은 증가하였으며, 부착성은 식초 0.2% 처리구보다 0.5% 처리구에서 감소하는 경향을 나타냈다. 관능검사 결과 식초 0.2%액에 침지한 후 건조한 버섯분말 5%을 첨가하여 제조한 처리구에서 기호도가 가장 높게 나타났다.

  • 우리나라 전역에 자생하는 소나무의 화분은 건강 식품의 하나로 당질, 단백질, 지질 중 PUFA와 식물성 sterol류, 무기질뿐만 아니라 자연의 항생물질, 효소, 호르몬, 성장물질 및 미지의 유효물질들을 다량 함유하고 있으며, 특히 강장작용, 심장병, 신경장애, 급만성전립선염, 동맥경화, 빈혈 및 간장해독 효과가 밝혀짐에 따라 송화가루에 대한 관심이 증대되고 있다 본 실험에서는 우리밀에 송화가루를 1%,2%,3% 첨가했을 때 제빵적성에 미치는 효과를 알아보기 위하여 반죽의 물성, 호화점도변화, 수분함량, 1차 발효손실률, 굽기 손실률, 색도, 부피 측정, 조직감, 노화도, 주사현미경 관찰, mold-free shelf-life 및 관능검사를 실시해서 최적 배합조건을 찾고자 하였다.
