Development Trend of Sodium Reduction Material (나트륨 저감화 소재의 개발 동향)

  • 나트륨(소금)의 경우 식품에 관능적 특성 부여 및 가공과정에 필수적인 물질이나 과다 섭취의 경우 고혈압 등 심혈관계 질환을 발생을 증가시키는 등 사회적인 문제가 되고 있다. 특히 한국인의 경우 장류, 젓갈 및 김치 등의 식품문화가 발달되어 WHO의 권장섭취량의 2배 이상 섭취하고 있는 실정이다. 나트륨 저감화의 경우 국민복지 향상, 의료비용 절감 및 사회적 편익비용 발생 등의 이유로 국가적 차원에서 나트륨 절감이 시급한 상황이다. 현재 식품의약품안전처 및 보건복지부 등에서 나트륨 저감화를 위한 다양한 정책 등을 추진하고 있다. 또한 세계적으로 무기염류 대체소금, 염미증진제 및 향미개선제 등의 개발 노력이 활발히 이루어지고 있는 상황이다. 그러나 낮은 관능적 특성 및 무기염류의 과량 사용에 관한 부작용 등으로 인하여 급증하는 소금대체 및 보완제 시장수요에 미치지 못하는 실정이다. 따라서 저염화 및 관능적으로 우수한 소금 대체소재 및 염미 증강물질 개발이 요구된다. 염미 및 지미상승 식물성 발효 조성물(SAP)의 경우 분리대두단백 등의 식물성 원료와 전통 장류의 제조원리를 응용한 염미증진제 또는 향미개선제이다. 관능적 특성을 조사한 결과 기존 사용되는 저염 소재에 비하여 염미 등의 관능적 특성이 우수하여 염미 및 관능적 특성 증진 소재로 활용 가능성이 높았으며 무기염류의 단점인 낮은 관능적 특성 및 무기염류에 의한 부작용 등의 우려가 없는 소재이다. 향후 염미 및 지미 상승 식물성 발효 조성물(SAP) 등의 활용방안 개발 및 적용분야 확대 등으로 국내 저염 식품 산업의 전반적 발전에 도움이 될 것으로 생각된다.

  • This study attempted to examine the effect on sensory characteristics and texture of Kyongdan in various volume of adding water and volume of adding salt the most favorite tendency on the guality was at the 25% adding water and 1∼1.5% adding salt. Evaluation was conducted through sensory evaluation and objective evaluation The results were summarized as follows. 1. In sensory evaluation on various volume of water and volume adding salt the most favorite tendency on the gualtity was at the 25vo adding water and 1∼1.5% adding salt. 2. This condition corresponded to the low level of hardness, adhesiveness, gumminess, chewiness and high level of springiness in compa-rison with Instron measurement. In summary the most favorite factor is 12 hours soaking time, 25% adding water (hot water), 1∼1.5% adding salt, over 50 times kneading.

Textural and Sensory Properties of Beef Jerky replaced Salt with Soybean Paste, Soy Sauce or Red Pepper Paste (소금(NaCl)을 된장, 간장 또는 고추장으로 대체한 우육포의 조직적 및 관능적 특성)

  • The aim of this study was to investigate the quality properties of beef jerky replaced salt (NaCl) with red pepper paste, soy sauce and soybean paste. The quality properties of beef jerky including water activity ($a_w$), pH, moisture content, protein content, color, shear force, texture profile analysis and sensory evaluations were investigated. The sliced beef samples were marinated at salt (control), soybean paste (T1), soy sauce (T2) and red pepper paste (T3) for 24 h and then dried at $70^{\circ}C$ for 8 h. The $a_w$ and moisture content varied from 0.88 to 0.79 and from 28.87% to 22.98%, respectively. All treatment samples showed higher final $a_w$ and moisture content than the control sample after drying for the 8 h (p<0.05). The protein content of T2 and T3 samples were lower than the control. Also, shear force and hardness value of all treatment samples had lower than the control (p<0.05). However, all treatment samples showed lower saltiness intensity than the control sample. Sensory panelists recorded greater flavor and texture scores to the samples with soy sauce replacement. Therefore, sensory panels found that the T2 samples had better overall acceptability scores than the other beef jerky samples (p<0.05).

  • This study attempted to examine the effects on sensory characteristics and texture of Kyongdan in various volume of adding water and number of kneading in the preparation of Kyongdan. Evaluation was conducted through sensory evaluation and objective evaluation. The results were summarized as follows. 1. In sensory evaluation on the various volume of water and unmber of kneading, the most favorite tendency on the overall guality was at the 25% addition water and over 50 times kneading with glutious rice powder. 2. This condition corresponded to the low level of hardness, gumminess, chewiness and the high level of springiness and cohesiveness in comparison with Instron measurement.

  • This study investigated the suitability of freeze-dried ice plant (Mesembryanthemum crystallinum) as the source of an edible healthy salt alternative by examining the content of NaCl, D-pinitol, total phenols, total flavonoids, and DPPH radical scavenging activity compared with those of natural and purified salts. Our results showed that the NaCl content of freeze-dried ice plant, natural and purified salts was 19, 94 and 99%, respectively. The D-pinitol content of freeze-dried ice plant was 777 mg/100 g, whereas D-pinitol was not detected in either natural or purified salts. The total phenol and flavonoid contents of freeze-dried ice plant were 115 mg GAE/100 g and 985 mg RE/100 g, respectively. The DPPH radical scavenging activity of freeze-dried ice plant was markedly higher than that of natural and purified salts. Altogether, these results show that freeze-dried ice plant contains both NaCl and bioactive compounds and can be used as a source of edible salt with positive health effects.

  • Domestic area of most be happened chloride deicer damage. Because daily mean temperature is below 0$^{\circ}C$ from the area of domestic most. Use of deicing chemicals has been and will continue to be a major part of highway snow and ice control methods. Chloride-containing chemicals such as calcium chloride or rock salt are main deicers for the road. Extensive use of chloride deicers is, however, not only the source of substantial cost penalties due to their corrosive action and ability to deterioration roadway surface materials but also the source of environmental damages. Particularly, it has been recognized that chlorides present in deicing agents can significantly increase concrete surface scaling. In severe cases, scaling can result in dislodgement of coarse aggregate. This research estimates that pH and test of specific pollutants, dynamic modulus of elasticity for freeze-thaw test of concrete were higher than those NaCl, $CaCl_2$, and NaCl+$CaCl_2$(7:3, w/w), also weight losses for scaling test of concrete were much lower than those of NaCl, $CaCl_2$, and NaCl+$CaCl_2$(7:3, w/w).

  • The L-ascorbic acid, when various kinds of flavoring and spices were added to it's solution individually or in combination, was determined by the 2,4-Dinitrophenylhydrazine method. The remaining rate of it in the solution, to which such spices and flavoring as vinegar, sugar, salt, glutamic acid-Na, welshonion, garlic, sesame, rice jelly, soy, pimento, hotbean paste, pepper, ginger and cinnamon were added individually, was higher than in the solution of itself alone. In the case of pinenuts, sesame oil and, bean paste, however, the remained total ascorbic acid was of little quantity, The rate of it's autooxidation in the solution added with fennel, cinnamon, ginger, pepper, bean paste, pinenuts, curry in individual were found high, but relatively low in garlic, sesame oil, glutamicacid-Na, sugar, honey, salt, pickled shrimps, hot bean paste, and soy. When combined spices and flavoring were added, the content of ascorbic acid showed high values in all cases, indicating that particularly high in soy-bean sprout namul, chinese radish namul, and muchim, seasoned with the most frequently used flavoring, No. 7,8,9,10 while low values in the combination of mustard muchim.

  • Deep sea water is deeper than 200 m in depth and maintains cool temperatures. It is clean seawater not contaminated by E. coli and other general bacteria. Because deep sea water is a recyclable resource with high industrial value, activities for commercial use are vigorously developing. We investigated safety, quality characteristics, and mineral contents of prototype products using deep sea water as a substitute for a curing agent and compared it with existing commercially processed products. This study examined the potential of deep sea water as an alternative to curing agent solution. As a result, safety and quality characteristics of processed meat products with deep sea water were not different from commercially processed meat products, but mineral contents were higher in processed meat products with deep sea water. Deep sea water could be widely used as purity salt and purity minerals that can replace chemical substances such as chemical salts. A new, active food market using deep sea water will emerge in the near future.

  • This study attempted to examine the effect on sensory characteristics and texture of Paeksolgi in various volume of adding sugar and steaming time. The most favorite tendency on the quality was over 15% adding sugar and 20 minute steaming time. Evaluation was conducted through objective evaluation firstly and sensory evaluation secondly. The volume of adding sugar was the significant factors which affected the textual characteristics of Paeksolgi. But steaming time and interaction had not affected. In sensory evaluation on the various steaming time Paeksolgi made by steaming time for 20min and over 15% adding sugar showed the most favorite tendency on the overall quality. This condition corresponded to the high level of hardness, adhesiveness, gumminess in comparison with Rheoner measurement. In summary the most favorite factor was 12 hours of soaking time, 10% adding water, 1% of adding salt, over 15% adding sugar, 20 minutes steaming time.

  • With a view of improving the quality of sardine sausage, the processing conditions of sardine sausage used raw sardine as materials and the effects of adding soybean protein and smoke flavor on the quality of product were investigated. Optimal amounts of additives in processing sardine sausage were 1.5% of salt, 1.5% of sugar, 0.2% of monosodium glutamate, 0.2% of white pepper, 0.2% of garlic powder, 0.2% of nutmeg, 0.4% of beef extract, 0.05% of food color solution(10% mixture solution of Red 40 and Yellow 5) and 0.1~0.2% of smoke flavor(Smok-EZ, Alpha Foods Co., Ltd.) based on washed sardine meat. The results showed that the benificial effects of adding corn starch(5%), ${\alpha}$-starch(2%), soybean protein(3%) to the washed sardine meat were exhibited in the improvement of texture and acceptability.
