The Eating Behaviors, Nutrient Intakes and Hematological Status of Primary School Children in Gwangju (광주지역 일부 초등학교 아동의 식습관과 영양소 섭취량 및 혈액성상에 관한 연구)

  • The purpose of this study was to examine height, weight, chest circumference, sitting height, hemato logical status, eating behaviors and nutrient intakes for primary school children in Gwangju. The subjects consisted of 101 boys and 109 girls aged $10{\sim}12$ years old. There were significant differences in the height, weight, chest circumference, sitting height between the boys and girls. Hct, WBC, RBC, Hb, serum GOT, GPT and cholesterol were measured. With regard to meal regularity, 47.4% of the subjects has been 'regular'. With regard to meal volume, 15.8% of the subjects has been 'heavy'. With regard to meal balance, 44.7% of the subjects has been 'no'. The study also found that 63.4% of the subjects skipped breakfast, liked western food. Their dietary intakes were assesed for 1 day by means of 24 hours dietary recall method. The mean energy intakes of the subjects were 1,663kcal for boys and 1,427kcal for girls. The subjects for boys(girls) consumed 58(52)g protein, 43(60)g lipid, 4.8(6.5)g fiber, 470(514)mg calcium, 896(824)mg phosphorous, 9.6(16.4)mg iron, 3,301(3,468)mg sodium, 2,169(2,192)mg potassium, 388(466)RE retinol, 1.1(0.9)mg thiamin, 1.1(2.2)mg riboflavin, 12.2(26.3)NE niacin, 146(99)mg ascorbic acid and 251(159)mg cholesterol respectively. Energy, protein, calcium, iron and retinol intakes were lower than the Korean RDA. The intakes of fat, fiber, calcium, iron, sodium, retinol, riboflavin and niacin of the boys were significantly lower than those of the girls. There were positive correlations between meal time and protein intake or fat intake of fiber intake or iron intake or retinol intake : negative correlations between meal time and sodium intake : negative correlations between saltiness and cholesterol intake : positive correlations between use of perilla seeds and riboflavin intake or niacin intake : negative correlations between energy intake or carbohydrate intake or phosphorous intake : negative correlations between frequency of eating-out and protein intake or fat intake or fiber intake or iron intake or retinol intake or thiamin intake or riboflavin intake or niacin intake.

Evaluation of Long-term Dietary Intakes of Housewives (장기간 기록법으로 조사한 주부의 식품 및 영양소 섭취 실태)

  • This study was designed to investigate and evaluate the dietary intake of 30 housewives, aged 35 to 59. The subjects kept daily diet records lot a period of one year. Their mean daily nutrient intakes met or exceeded the RDA (recommended dietary allowance) for all categories except energy, calcium, iron, vitamin A, and vitamin B$_2$. Mean daily calorie intakes were 81.2% of the RDA. The subjects received about 19% of their energy from fat and 15% from protein. Nutrient adequacy ratios (NAR) were 0.60 for calcium, 0.62 for iron, 0.71 for vitamin A, and 0.76 for vitamin B$_2$. The mean adequacy ratio (MAR) was 0.79. Subjects received various nutrients from rice, pork, eggs, and Kimchi. Rice was a major contribute. to many subjects' nutrient intake due to the high amount of consumption. Pork, rice, and vegetable oil greatly contributed to fat intakes while eggs, pork, and beef supplied a high level of cholesterol compared to other foods. Kimchi, anchovies, and milk were the major contributors of calcium, while rice, pork, and Kimchi were the major contributors of iron. These results indicate that the major nutritional problem of middle-aged housewives is an overall inadequate intake of energy, calcium, and iron.

The Association between Bone Mineral Density, Bone Turnover Markers, and Nutrient Intake in Pre- and Postmenopausal Women (폐경 전.후 여성의 골밀도 및 골대사 지표에 영향을 미치는 요인)

  • The purpose of this study was to examine the association among bone mineral density (BMD), biochemical bone markers, nutrients, and salt intake in premenopausal and postmenopausal women. We evaluated 431 subjects who visited a health promotion center of a university hospital between January 2008 and July 2009. We excluded those who were taking medications or who had an endocrine disorder affecting osteoporosis. The subjects were divided into premenopausal (n = 283) and postmenopausal (n = 143) women. We evaluated the correlation among BMD of the lumbar spine, femoral neck, and total femoral, as well as biochemical bone markers, hormone, serum profiles, general characteristics, nutrient intakes, and food intake frequencies. From a stepwise multiple regression analysis, lumbar spine BMD was positively correlated with weight (p < 0.001) and negatively correlated with osteocalcin (OC)(p < 0.001), Femoral neck BMD was positively correlated with weight (p < 0.001) and negatively correlated with C-telopeptide (CTx) and alkaline phosphatase (ALP)(p < 0.001, p < 0.05). In premenopausal women, femoral total BMD was positively correlated with BMI (p < 0.001) and negatively correlated with CTx (p < 0.001). In postmenopausal women, lumbar spine BMD was positively correlated with calcium intake (p < 0.01) and negatively correlated with sodium intake (p < 0.01). Femoral neck and femoral total BMD were both positively correlated with weight (p < 0.001), and femoral neck BMD was negatively correlated with age and ALP (p < 0.001, p < 0.05). Femoral total BMD was negatively correlated with age and OC (p < 0.001, p < 0.01). These results suggest that reducing sodium intake may play an important role delaying bone resorption and preventing a decrease in BMD.

A System for Nutritional Assessment and Diagnosis of Dietary Intakes through Internet (인터넷을 이용한 식사섭취의 진단 및 영양평가 시스템)

  • 본 연구는 영양분야의 전문 웹사이트로서 인터넷 상에서 이용할 수 있는 영양평가 시스템을 개발하기 위하여 수행되었다. 프로그램의 구성은 표준체중 및 열량필요량 자료, 식품 및 음식의 영양소 함량, 영양소별 20순위 식품, 식사섭취자료, 한국인 영양권장량 자료 등을 데이터베이스로 하여 사용자의 신체계측치와 활동정도에 따른 비만도 및 열량필요량의 분석과 섭취한 음식에 대하여 영양섭취상태를 평가받고 영양소별 함유량이 높은 식품과 음식에 대한 열량 및 영양소의 정보를 제공받을 수 있도록 웹 페이지 형식으로 만들어졌으며, 사용자는 인터넷 사이트로 들어가 자신의 이름, 성별, 나이, 키, 체중 및 활동정도를 입력함으로서 자신의 체중범위, 표준체중, 체격지수, 비만도, 기초대사량, 1일 열량필요량 및 이들의 섭취열량과의 과부족을 비교 평가한 자료를 얻을수 있으며, 만약 사용자가 비만이라면 체중을 감소하기 위한 1일 열량필요량도 얻을 수 있다. 또한 사용자는 음식입력 항목을 선택하여 날짜별, 식사별로 자신이 하루동안 섭취한 음식 및 섭취량 등을 입력하고 영양섭취상태를 클릭하면 식사섭취상태의 진단과 평가를 받을 수 있다. 즉 열량과 각 영양소에 대한 하루의 섭취량 및 아침, 점심, 저녁 및 간식의 섭취량이 분석되어지며 이들중 권장량이 정해진 영양소는 다시 사용자의 섭취량에 대한 권장량광의 비율을 그래프로 나타냄으로서 섭취된 영양소의 과부족을 쉽게 평가받을 수 있다. 지방질 역시 구성지방산과 콜레스테롤의 섭취 상태가 분석되어 이들의 표준섭취비율과 비교해 제시됨으로서 그릇된 섭취형태를 평가받을 수 있다. 이 밖에 식사별 열량영양소 구성비가 표준섭취비율과 비교 평가되어 그래프로 나타나며 급원식품에 대한 영양소 정보를 줄 수 있는 식품군별 영양소 섭취상태와 동식물성 식품 섭취상태도 평가되어진다. 따라서 본 프로그램은 인터넷을 이용하여 누구라도 자신의 영양섭취상태를 평가받고 과부족이 되기 쉬운 영양소의 급원 식품과 음식에 대한 영양정보도 제공받을 수 있도록 할 뿐 아니라 식이요법을 필요로 하는 질환의 영양상담을 위한 기본 프로그램으로 활용될 수 있도록 하는데 그 의의가 있다.

  • With the annual report of National Nutrition survey, the trend of food intake of Korean is analyzed from 1969 to 1989. Total food intake is about 1,000g. The amount of plant foods intake is decreased but the amount of animal food intake is increased. Among plant foods, the consumption of cereals and grain product and starch and starch roots is decreased gradually. The degree of decreasing are evident in the amount of cereal and grain product intake, The amount of vegetable intake is kept fluctuating, but the amount of processed vegetable products intake shows an upward trend. The amount of legumes and their products, vegetables, fruits and seaweeds intake is increased each year. In addition, among animal foods, the amount of meat and products, eggs, fish and shellfish and milk and milk products intake is increased greatly.

An iodine database establishment and iodine intake in Korean adults: Based on the 1998~2014 Korea National Health and Nutrition Examination Survey (요오드 DB 구축 및 한국 성인의 요오드 섭취 추이 분석 : 1998~2014 국민건강영양 조사 데이터를 이용하여)

  • Purpose: This study analyzed iodine intake by establishing an iodine database of general Korean foods eaten by Korean adults based on the data from the 1998 ~ 2014 KNHANES (Korea National Health and Nutrition Examination Survey). Methods: Data on 56,818 subjects aged 19 years and older were obtained from health behavior interviews and a 24-hour dietary recall survey. Iodine intake of subjects was analyzed according to general characteristics, dietary lifestyle, food groups, and cooking method. Results: An iodine database was established for 312 food items. The mean iodine intake of Korean adults decreased from $641.6{\mu}g$ in 1998 to $236.2{\mu}g$ in 2014 per day. Iodine intake of women was higher than that of men. For age distribution, those aged 30 ~ 49 years constituted more than 39 ~ 46% of subjects by survey year. Regarding iodine intake according to dietary lifestyle, the highest iodine intake was 29.4 ~ 34.4% for lunch while that of breakfast decreased. The highest iodine contribution by food group was seaweed such as kelp, sea mustard, and laver. Conclusion: The results of this study indicate that iodine intake of Korean adults has been decreasing, and iodine intake is associated with the prevalence of thyroid disease. This study provides basic data for the estimation of iodine intake in Korean adults.

A Study on Calculation Methods and Amounts Changes of Recommended Protein Intake in the Recommended Dietary Allowances for Koreans and Dietary Reference Intakes for Koreans (한국인의 단백질 섭취권장량 산출방법과 단백질 섭취권장량 변화 - 한국인 영양권장량과 한국인 영양섭취기준을 중심으로 -)

  • This research examined the method and amount changes of recommended protein intakes(RPI) for male and female adult, and pregnant lactating women from 1962's Recommended Dietary Allowances for Korean(KRDA) to 2010's Dietary Reference Intakes for Koreans(KDRIs) revised. As male and female adult's RPI calculation, factorial method was applied until 1989 KRDA, after that nitrogen balance study was applied. Basal factor in factorial method was standard protein(egg or milk protein) requirement or obligatory nitrogen(protein) loss. On the other hand, basal factor in nitrogen balance study was minimum dietary protein requirement to maintain nitrogen equilibrium balance(nitrogen intake = nitrogen excretion). Adjusting factors of RPI were stress and/or protein requirement difference among people. The RPI of male adults were 50~80 g/day, that of female adults were 45~70 g/day. The additional RPI of pregnant women were 10~30 g/day, were calculate based upon the extra protein needs caused by unborn child development. The pregnant women's additional RPI of 2010's KDRIs revised in the periods of first, second, and third trimester were 0, 15, 30 g/day, respectively. The additional RPI of lactation women were 20~30 g/day, were calculated based upon the extra protein needs caused by maternal milk secretion.

A Study on the Nutritional Status of Elementary School Children Attending a Rural Type School Lunch Programs (전남지역 농촌형 급식초등학교 아동의 영양실태 조사)

  • This study was conducted to evaluate the nutritional status of elementary school lunch programs. The subjects of this study were consisted of 220 elementary school students in the 5th and 6th grades. Dietary intake of nutrients was assessed by modified 24-hour recall method. The results are summarized as follows : The children' average body weights were 36.3$\pm$7.39kg in boys and 35.7$\pm$8.35kg in girls. Their average heights were 141.9$\pm$5.82cm in boys and 142.5$\pm$5.82cm in girls. Total daily energy and nutrients intakes were below the RDA's, except for intakes of niacin and ascorbic acid. The rate of calorie of carbohydrate : protein : fat was 73:13:14(male) and 70:14:16(female). Score of food habit was poor 43.6% of subjects.

A Study on the Intkae-Balance of Sodium and Potassium of College Men of Korea (한국 남자 대학생의 Sodium 과 Potassium 평형에 관한 연구)

  • This study measured the daily intake and excretion of sodium and potassium of eight 20-26years old college men during four weeks by means of analyzing their food intake, urine and feces, keeping their normal living pattern and body weight. This study also compared the actual measurement value of sodium and potassium intake by atomic absorption spectrophotometer with the conversion value of them by food table. The results are as follows ; Daily mean sodium intakes conversed ($2.36{\pm}0.03g/day$) was about 63% lower than those intakes meansured($6.36{\pm}0.13g/day$). Daily mean potassium intakes conversed($1.71{\pm}0.03g/day$) was not different of sodium and potassium were $5.49{\pm}0.19g/day\;and\;1.33{\pm}0.08g/day$, respectively. Daily mean fecal excretions of sodium and potassium were $0.24{\pm}0.02g/day\;and\;0.45{\pm}0.03g/day$, respectively. Mean prooportion of Na/K in urine was $4.3{\pm}0.1$.

Relationship of Nutritional Knowledge, Dietary Self Efficacy and Change of Dietary Behavior of Nutrition Professional (영양전공자의 영양지식, 식이 효능감, 식행동 변화간의 관련성)

  • The purpose of this study is to investigate the relationship of nutritional knowledge, dietary self-efficacy and dietary behavior of nutritionist. Total 190 dieticians of middle and high schools in Daejeon metropolitan city(44.2%) and Chungnam area(55.8%) were surveyed by questionnaires. The change of dietary intakes was used as an index of dietary behavioral change, and dietary self-efficacy are categorized into 4 sub groups of general dietary habit, choice of food, environmental stimulus and emotional conditions. Overall nutritionl knowledge of school dieticians was relatively high as 80.3 score, but specific and detail knowledge about food and nutrition yet have to be strengthened. Dietary self-efficacy of 'choice of food' was the highest with 85.4 and self-efficacy of 'environmental stimulus' was the lowest with 69.7 in the subjects. There was no influence between nutrition knowledge and dietary self-efficacy of school dieticians. According to the level of dietary self-efficacy, the intake of desirable food showed no significant difference, but the intake of undesirable foods decreased as dietary self-efficacy increased(p<0.001). In the analysis of correlation of change in intake of desirable and undesirable foods with nutrition knowledge and 4 different variables of dietary self-efficacy, a nutrition knowledge variable did not show any correlation with other variables. While, total dietary self-efficacy or each 4 sub items showed negative correlation with the intake of undesirable foods. And all 4 sub items of dietary self-efficacy could be the principal factors to constrain the intake of undesirable foods, but 2 items of dietary habits and emotional condition of 4 sub items are the factors to increase the intake of desirable food. Accordingly, it is suggested that dietary self-efficacy could be a powerful factor to induce the behavioral change of professional dieticians.
