Dietary intakes of 57 college women were measured by 7-day weight food records(7WR) Nutrient intakes of 7WR were compared with results of using 1-day weighted food records(1WR) and 2-day weighed food records(2WR), 7WR were recorded for 7 consecutive days by subjects and its first two days were chosen to provide 1WR and 2WR Mean nutrient intakes of the group were not significantly different between 1WR or 2WRand 7WR. Within-person variations were found to be greater than between-person variations. The ratio of within- and between-person variability was lowest for the vitamin A and highest for the calcium. Data on 7WR were analyzed to estimate the number of recording days needed to ensure r$\geq$0.9 between observed and turn mean intakes. The 11 to 13 days needed for energy sugar protein and vitamin A and 20 days for calcium The results indicated that the number of days needed varied substantially among individuals for the same nutrient and within individuals for different nutrients.
Objectives: The objective of this study was to evaluate the effects of cytotoxicity, skin regeneration, anti-wrinkle, whitening and skin moisturizing of Oncheongeum (OCE).Methods: The cytotoxicity of OCE lyophilized aqueous extracts (yield=13.82%) was observed against human normal fibroblast cells and B16/F10 murine melanoma cells by 3-(4,5-dimethylthiazol-2-yl)-2,5-diphenyl tetrazolium Bromide (MTT) assay, and skin regeneration and anti-wrinkle effects were also evaluated through the assay of collagen type I synthesis compared to the transformation of the growth factor (TGF)-β1, hyaluronidase, collagenase and matrix metalloproteinase (MMP)-1 inhibitory assays compared to oleanolic acid (OA), and elastase inhibitory effects compared to phosphoramidon disodium salt (PP). In addition, OCE’s whitening effects were measured by a tyrosinase inhibitory assay and melanin formation test in B16/F10 murine melanoma cells compared to arbutin, and skin moisturizing effects were observed through a mouse skin water content test, respectively. Results: No OCE treatment-related cytotoxic effects appeared on human normal fibroblasts and B16/F10 murine melanoma cells. OCE concentration-dependently increased the collagen Type I synthesis on human normal fibroblast cells, and also effectively inhibited hyaluronidase, elastase, collagenase and MMP-1 activities. In addition, OCE inhibited melanin production of B16/F10 murine melanoma cells and activity of tyrosinase. And significant and dose-dependent increases of skin water content were detected in OCE-treated mouse skin compared to vehicle control skins. Conclusions: OCE showed favorable and sufficient effects in skin regeneration, anti-wrinkle, whitening and skin moisturizing in this experiment. But more detail mechanisms and studies on the skin protective efficiency of in vivo are needed with the screening of active biological compounds in individual OCE herbs.
The present study investigated the effect of Leuconostoc kimchii GJ2 (Leu. kimchii GJ2), an exopolysaccharide-producing lactic acid bacterium isolated from kimchi, on serum and liver lipid metabolism in rats fed a high-cholesterol diet. Male Sprague-Dawley rats were divided into four groups: a normal diet group (ND), a high-cholesterol diet group (HCD), a high-cholesterol diet and 200 mg/kg Leu. kimchii GJ2-administered group (HCD-LKL), and a high-cholesterol diet and 400 mg/kg Leu. kimchii GJ2-administered group (HCD-LKH). No between-group differences were found in body weight gain, food intake, or food efficiency ratio. The serum GOT and ALP activities that were elevated by the high-cholesterol diet were significantly decreased after Leu. kimchii GJ2 administration. Serum HDL-cholesterol level was markedly increased in the Leu. kimchii GJ2-administered groups, whereas the serum total cholesterol and LDL-cholesterol levels were lower in the Leu. kimchii GJ2-administered animals. Liver levels of total cholesterol and triglyceride were also markedly lower in the Leu. kimchii GJ2-administered groups. In addition, increased activities of HR-LPL and TE-LPL in adipose tissue, caused by the high-cholesterol diet, fell to normal after administration of Leu. kimchii GJ2, in a dose-dependant manner. These results suggest that Leu. kimchii GJ2 isolated from kimchi exerts an antiatherosclerotic effect by reducing serum and liver cholesterol levels.

In this study, vineger was produced after heat treatment of Elaeagnus multiflora juice and its fermentative characteristics were investigated. The heat-treated juice and vinegar of E. multiflora were similar in fruit color, with b values (redness) of 39.48 (juice) and 37.56 (vinegar). After 10 days of fermentation of E. multiflora fruit, the acetic acid bacteria viable cell number, pH, acidity, reducing sugar content, and alcohol content were 4.59-4.62 log CFU/mL, 3.14-3.45, 0.2-2.12%, 0.69-35.24 mg/mL, and 0.2%, respectively. The heat-treated juice and vinegar showed significantly higher radical scavenging and digestive enzyme inhibitory activities than untreated samples, and the levels of soluble phenolics, soluble flavonoids, flavan-3-ol derivatives, and phenolic and derivatives were increased. Additioinally, the heat-treated vinegar contained major organic acids, such as acetic acid (21.82 mg/mL), and major flavan-3-ols and phenolic acids, such as catechin ($72.24{\mu}g/mL$), catechin gallate ($273.36{\mu}g/mL$), epigallocatechin gallate ($68.35{\mu}g/mL$), protocatechuic acid ($12.84{\mu}g/mL$), and salicylic acid ($42.29{\mu}g/mL$). At $25{\mu}L/mL$ treatment, DPPH and ABTS radical scavenging activities and ${\alpha}$-glucosidase and pancreatic lipase inhibitory activities were 79.66%, 93.99%, 90.12%, and 64.85%, respectively. This result suggested that it is possible to produce new types of vinegar and beverages, using heat-treated E. multiflora juice.
In this study, the anti-oxidant, whitening, and anti-wrinkle effects of Castanea crenata inner shell extracts processed by enzyme treatment and pressurized extraction were investigated. The Castanea crenata inner shell was first hydrolyzed using celluclast, viscozyme, or hemicellulase. Then, it was subjected to pressure extraction for different durations (30, 60, and 120 min). The yields of the Castanea crenata inner shell extracts processed by different enzyme treatments followed by pressurized extraction for different times are in the range of 12.42-29.80%. The total polyphenol, flavonoid, and tannin contents of the C30m (celluclast enzyme and autoclave extracts at 30 min) extract were 15.48, 10.82, and 15.82 g/100 g, respectively. The total sugar content of the H120m(hemicellulase enzyme and autoclave extracts at 120 min) extract is 61.07 g/100 g. The 1,1-diphenyl-2-pycrylhydrazyl (DPPH) and 2,2'-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radical scavenging activities of the C30m extract at $1,000{\mu}g/mL$ are 89.20, and 81.96%, respectively. The superoxide radical scavenging and ferric-reducing antioxidant power of the C30m extract at $1,000{\mu}g/mL$ are 67.63% and $1,324.79{\mu}M$, respectively. Further, the tyrosinase and elastase inhibition activity of the C30m extract at $1,000{\mu}g/mL$ are 61.32, and 61.06%, respectively. Our results indicate that the Castanea crenata inner shell extracts processed by enzyme treatment followed by pressurized extraction could have beneficial effects on facial skin and they should be considered for use in new functional cosmetics.

This study investigates, the physicochemical characteristics of Sengmaksan (SM) prepared with Liriope platyphylla (LP) that had been roasted for different times (0, 30, 60, and 90 min, denoted as S-0, S-30, S-60, and S-90, respectively) The Hunter's color values such as lightness (L), redness (a), and yellowness (b) were the highest in S-0, while the lowest was found in S-90. The amount of soluble solid and reducing sugar content of S-60 were higher than the others. None of the samples exhibit significant differences in, their pH and acidity. The total content of phenolic compounds increased with the LP roasting time, but the total flavonoid and total anthocyanin contents of the SM decreased at the same time. The total ginsenoside (Ro, Rb2, Re, Rf, Rg1, Rg2, Rg3, Rh1, and Rh2) content did not show significant differences. The DPPH and ABTS radical scavenging activities increased according to the concentration, as well as with the LP roasting time. The ferric reducing antioxidant power (FRAP) showed trends similar to the radical scavenging activity, but it was more sensitive to the LP roasting time. From these results, the active ingredient in S-60 was higher, and the antioxidant activities of SM increased along with the roasting time of LP.
A green house experiment was conducted to find out the acetylene reducing and $N_2$-fixing activity from photosynthetic and aerobic heterotrophic nitrogen fixing microorganisms in submerged paddy soil under different agricultural locality, soil series, soil texture, soil type, and drainage condition in which samples taken from without nitrogen treatment plot of NPK trials on 16 sites of the farmer's field. The results obtained were summarized as follows: 1. The highest acetylene reducing activity was observed at 7 days after incubation in the light condition (photo synthetic microbes+heterotrophic bacteria) while it was observed at 35 days incubation in the dark condition (heterotrophic bacteria). 2. Among the soil series, photosynthetic nitrogen fixing activity was pronounced more in Jangae, Ogcheon and Hwadong series while lower was obtained in Buyong and Daejeong series. Aerobic heterotrophic nitrogen fixing activity was high in Buyong and Daejong series. 3. Estimated amount of $N_2$-fixation from acetylene reducing activity was equivalented to 3.0 mg in light condition and 4.9 mg/100g/105 days in dark condition. 4. Among the agricultural locality, photosynthetic nitrogen fixing activity was high in rather warm southern part while heterotrophic nitrogen fixing activity was predominated more in mountainous area and Chungcheong continental. 5. Photosynthetic nitrogen fixing activity was predominated in high productive soil while aerobic heterotrophic nitrogen fixing activity was pronounced more in crose coarse sandy soil. 6. The soils properties of high photosynthetic nitrogen fixing activity were constituted of poorly or imperfectly drained clay or clay loam soil while heterotrophic nitrogen fixing activity was pronounced more in well to moderately well drained sandy or sandy loam soil.
Plants were exposed to different sub-optimal growth temperature regimes for hardening or sprayed with abscisic acid (ABA) before being placed at $10^{\circ}C$ for three days. Comparisons were made with non-treated plants for plant survival, photosynthetic activities and fatty acids composition of phospholipids. The level of endogenous ABA of the hardened seedlings was compared with that in control and ABA sprayed-seedlings. The results of the above experiment were summarized as follows: 1. Compared to non-treated plants, the hardening and ABA treatment resulted in higher plant survival rate and better seedling growth following earlier transplanting. The low temperature hardening which gradually increased the duration of the low temperature treatment at 2-day intervals was more effective than the controled temperature hardening which gradually decreased the temperature from $25^{\circ}C$ to $20^{\circ}C$ and $15^{\circ}C$. 2. The photosynthetic activities of rice leaves after 3-day exposure to $10^{\circ}C$ were higher in hardened and ABA sprayed seedlings than in non-treated plants. The root activities after low temperature treatment were also higher in hardened and ABA sprayed seedlings than in control. 3. Fatty acids of phospholipids in rice plants such as stearic acid and oleic acid were decreased and the highly unsaturated fatty acids, linoleic acid and lenolenic acid were increased by hardening or ABA treatments. It is assumed that the increase of cold tolerance in these plants was due to the higher ratio of unsaturated to saturated fatty acids. Respectively, the ratio was 1.86, 1.97 and 1.80 in plants given controled temperature hardening, the low temperature hardening and ABA treatments. While in control plants, it was 1.17. 4. ABA content in rice seedling given the low temperature hardening treatment was 67.2 ng/g F.W which was approximately twice that of non-treated control, which was 33.9 ng/f F. W., in contrast, the ABA content of the ABA treated seedlings was 91.7 ng/g F. W.
The study was investigated to compare growth characteristics, the antioxidant activity, and the triterpenoid content of two Centella asiatica cultivars ('Giant Tiger Care' and 'Good Tiger Care'). At 41 days after transplanting, lengths of leaf and petiole were significantly longer in 'Good Tiger Care' than in 'Giant Tiger Care'. However, the growth characteristics (leaf area, petiole thickness, petiole length, and weight) were greater in 'Giant Tiger Care' than in 'Good Tiger Care' at 104 days after transplanting (harvest time). Antioxidant activity and total phenol content in four extracts (WE, water extract; HWE, hot water extract; 50E, 50% EtOH extract; 70E, 70% EtOH extract) of the two cultivars were high in 70E of 'Giant Tiger Care'. As a result of the triterpenoids analysis, the major triterpenoids of the two cultivars were identified as madecassoside and asiaticoside. The total triterpenoid content was high in 50E and 70E of 'Giant Tiger Care' and 'Good Tiger Care', respectively but the total triterpenoid content was highest in Good Tiger Care'. However, at the 104 days after planting, the yield of 'Giant Tiger Care' was three times higher than that of 'Good Tiger Care'. In addition, the total triterpenoid content that can be produced in the same cultivation area (3.3m2) was 2.459mg in 50E of 'Giant Tiger Care', which was ~2.2times higher than that of 70E of 'Good Tiger Care' (1.103 mg). Thus, it is considered economical to cultivate 'Giant Tiger Care' which has the highest antioxidant activity and high total triterpenoid production per cultivation area.
This study was carried out to investigate the economic value of organic wheat production using gelatin·chitin microorganisms in Gwangsan-gu, Gwangju city. The soil condition of experiment field was clay loam Jisan series. The organically cultivated fields were sprayed gelatin and chitin degrading bacteria. The test was performed at conventionally cultivated field and organically cultivated field. Emergence of weed on organically cultivated field was significantly higher than conventionally cultivated field which sprayed herbicide before seeding. Weed emergence have a critical impact on grain yield. Occurrence of diseases and insect pests were higher than conventionally cultivated fields. In 2019, the amount of lodging in conventionally cultivated field were higher than conventionally cultivated field. In 2020, lodging and wet injury were occur in both field. Comparing yield element between organically and conventionally cultivated experimental area, grain yield in organically cultivated field was shown slightly higher amount than conventionally cultivated field. However in the actual yield of 2019, organically cultivated field shows 20% deceased yield because of overgrown weed. In 2020, weed emergence and yellow mosaic virus by wet injury cause 30% decease in the grain yield in organically cultivated field. Content of protein, carbohydrates, ash, water and fat in the grain were not different significance. In 2019, net incomes of conventionally cultivated wheat was 461,031 won/0.1 ha while organically cultivated wheat was 443,437 won/0.1 ha. In the rate of income, conventionally cultivated field was 83.0% as against organically cultivated field (73.3%). In 2020, net incomes of organically cultivated wheat was 437,812 won/0.1 ha while conventionally cultivated wheat was 418,281 won/0.1 ha. In the rate of income, conventionally cultivated field was 81.6% as against organically cultivated field (73.0%).
