Quality Characteristics of Rice Cookies Prepared with Different Amylose Contents (아밀로스 함량에 따른 쌀쿠키의 품질특성)

  • Physicochemical and sensory characteristics of rice cookies prepared with various levels of amylose content were investigated in this study. Dough pH of Jinsumi and Milyang 261 cookies was decreased by addition of rice flour. Density of dough with 100% substituted Jinsumi flour had the largest value of 1.09 g/mL, whereas that of Milyang 261 cookies showed no significant difference. Spread ratio of cookies was the largest in the cookies containing Jinsumi, and Milyang 261 constituted the 50% group. Preservation ability of Milyang 261 cookies surpassed above 30%. Lightness of Jinsumi and Milyang 261 cookies increased with increasing rice flour content. The results of our sensory evaluation demonstrated that the control sample was significantly more preferable in terms of overall acceptability compared to others. These results suggest that adding 30% Milyang 261 flour is the best substitution ratio for rice cookies.

Quality characteristics of meat seasoning sauce containing fermented Oenothra biennis juice (달맞이꽃 발효액을 이용한 양념육 소스의 품질 특성)

  • The characteristics and quality changes of sauces containing different concentrations (5, 10, and 15%) of fermented Oenothra biennis juice (FOBJ) were studied for its potential as a new meat seasoning suace. pH of the seasoning sauce was ranged from 5.23 to 5.37. Sugar content of seasoning sauces increased decreasing on increase of FOBJ concentration while the color (L, a, b) decreased. DPPH radical scavenging ability and TBARS values of the seasoning sauce was increased significantly by the addition of FOBJ (p<0.05). The total bacteria number of the seasoning sauces was approximately 3 log CFU/g while coliform bacteria were not detected in all tested sauces. The sauce containing 5% FOBJ showed the highest value in taste, color, overall acceptability among all tested sauces. The pH and titratable acidity of the meat seasoning sauces was not changed significantly during 25 days at $10^{\circ}C$. The total bacteria number of the seasoning sauces was steadly 3.62~3.83 log CFU/g for 25 days at $10^{\circ}C$. The number of coliform was not detected during storage periods. These results suggested the possibility of development of new meat seasoning sauce containing FOBI.

Fermentation and Quality Characteristics of Kimchi Prepared Using Various Types of Maesil(Prumus mume Sieb. et Zucc) (매실의 첨가 형태에 따른 배추김치의 발효 및 품질 특성)

  • The fermentation and quality characteristics of kimchi prepared using various types of maesil, including freshly sliced maesil (FSM), freshly ground maesil (FGM),and dried maesil powder (MP), were investigated during 25-day fermentation at 10C. The pH value decreased rapidly in the control fermentation but only slowly in maesil-supplemented kimchi. Titratable acidity values changed in the same manner. The addition of maesil significantly inhibited the growth of total aerobes, and lactic acid bacteria during fermentation over 10 days. The color (L, a, and b values) of kimchi did not differ between control and maesil-supplemented kimchi samples regardless of maesil type or concentration. Kimchi hardness did not initially differ among the various samples but decreased during fermentation. However, the hardness of maesil-supplemented kimchi was higher than that of control samples. Thus, kimchi supplemented with either 6% (w/w) MP or 6% (w/w) FGM maintained optimal hardness during fermentation. The antioxidant activity of kimchi was increased in a dose-dependent manner by addition of maesil. Kimchi supplemented with 6% (w/w) FGM showed the highest antioxidant activity. The sensory qualities (taste, flavor, color, and overall acceptability) of FSM-supplemented kimchi were better than those of control samples.

Quality Characteristics of Yogurt Prepared with Flowering Cherry (Prunus serrulata L. var. spontanea Max. wils.) Fruit Powder during Storage (버찌(Fruit of Prunus serrulata L. var. spontanea Max. wils.) 분말을 첨가한 요구르트의 저장 중 품질 특성)

  • This study was performed to examine the quality characteristics of the curd yogurt with different contents (0.5$\sim$2.0% (w/v)) of cherry powder (obtained from freeze-dried fruit of Prunus serrulata L. var. spontanea Max. wils.). Yogurt was fermented with two kinds of lactic acid bacteria (Streptococcus thermophilus, Lactobacillus bulgalicus) at $40^{\circ}C$ for 18h. During the period of 14 days of storage ($4^{\circ}C$, 14 days), acid production (pH and titratable acidity) of the yogurts increased significantly with the addition of cherry powder. The sugar content of the yogurts prepared with cherry powder increased but cherry powder yogurts presented lower viscosity values than the control. Hunter color values, lightness (L) and yellowness (b) of yogurt colors decreased as the concentration of cherry powder increased, whereas the redness (a) increased. Lactic acid bacteria of yogurts increased with the addition of cherry powder and all samples had increasing levels of lactic bacteria over the storage period. The sensory properties, such as flavor, taste, viscosity, and overall acceptability, of the yogurts containing the 1.0% cherry powder were superior to the control sample. Consequently, the optimal quality achieved in these experiments was yogurt with 1.0% cherry powder added.

Quality Characteristics of Brown Sauce with Added Apricot During Storage (살구 첨가 브라운 소스의 저장 기간에 따른 품질특성)

  • To evaluate the potential use of apricot as a sauce ingredient, the physicochemical and sensory characteristics of apricot brown sauce were compared. Various concentration (0%, 10%, 20%, 30%, 40%) of apricot were used to evaluate the quality characteristics of the sauce during storage for 12 days at $4^{\circ}C$. The pH value of the 5 types of brown sauce ranged from 3.8 to 4.6, and these pH levels were stable during the storage period. The L-values of the 0% apricot brown sauce were higher than those of the 10%, 20%, 30% and 40% apricot brown sauce. All the samples tended to have higher viscosities during storage, especially after three days after. In the sensory evaluation, softness, roasted flavor, texture, after taste, and overall taste were highest for the 10% and 20% apricot brown sauce. For the overall acceptability, the $10{\sim}20%$ apricot brown sauce attained the highest score.

Effect of Temperature and NaCl Concentration on the Characteristics of Baik Kimchi (백김치의 특성에 미치는 온도 및 소금농도의 영향)

  • The characteristics of an watery type Kimchi prepared without the addition of red pepper, were investigated focused on the effect of salt concentration and fermentation temperatures. The Chinese cabbage was brined in various NaCl solution to obtain the final salt concentration range of 0.5∼3.0% of the brined cabbage. Fermentation of Baik Kimchi was carried out at 10, 20, 30$^{\circ}C$ with addition of equal weight of water to brined cabbage. The result showed that the fermentation was generally increased as the NaCl concentration decreased for all temperatures based on the data of pH and total acidity. The higher temperature resulted in an increase in fermentation rate in terms of pH and total acidity. The organoleptic flavor properties of fresh sourness and acidity were significantly affected by NaCl concentration and fermentation temperatures. The Baik Kimchi prepared with 1.0% NaCl and fermentation at 30$^{\circ}C$ was found to be most acceptable.

Characteristics of Strawberry Jam Containing Strawberry Puree (딸기 첨가 수준을 달리한 딸기잼의 품질특성)

  • This study investigates the quality of strawberry jam containing different quantities of strawberry. Strawberry jam was prepared by the addition of 70-30%(w/w) strawberry puree, Sweetness, pH, total acidity, color, anthocyanin and pectin content, texture, free sugar, and organic acid content of the samples were measured. Decrease in the quantity of the strawberry puree led to a decrease in the following: total acidity(significance value p<0.05), anthocyanin, pectin, total free sugar, frutose, glucose, sucrose, and, organic acid content, namely oxalic acid, citric acid, malic acid, succinic acid, and formic acid. A texture profile analysis showed reduction in the hardness, gumminess, and chewiness of the jam. At the same time, decrease in the puree quantity also led to an increase in the sweetness, pH, L-value, a-value and b-value(significance value p<0.05) of the jam. These results promote, the consumption of fruit that are high in fruit, low in sugar, and do not contain any chemical additives.

The Effects of Timber Harvesting on Soil Chemical Ingredients and Stream Water Quality (성숙임목수확벌채가 토양의 화학성분과 계류수질에 미치는 영향)

  • The effects of clearcutting on soil chemical ingredients and stream water quality have been investigated at a natural deciduous forest catchment within the Seoul National University Research Forest in Mt. Paekun, Chunnam province during the periods of 1993 to 1998. Soil chemical ingredients and stream water qualities were monitored at a 13 ha clearcutting site and a non-treatment site nearby. During the first and second years after harvesting, the levels of total-N, and exchangeable ions (K/sup +/, Na/sup +/, Ca/sup 2+/, Mg/sup 2+/) decreased compared to the values of before harvesting. During the fifth years after harvesting, these levels were significantly higher than those during the first and second years after harvesting. But the chemical characteristics of soil were not changed at all. pH of water in the harvesting area was 6.5 in stream water. Among the nutrients, Cd, Pb, Cu, and phosphate were not found, and the level of BOD reached at the level of the domestic use suitable for drinking. Turbidity, odor, taste, NH/sub 4//sup +/ -N, NO/sub 3//sup -/-N, standard plate count, and coliform were also low enough to be used as the domestic use for drinking by the near villagers. During the first and second years after harvesting, BOD increased to about 1 ppm. For that reason, the harvesting planning should be built in the harvesting area in consideration of the control of water quality in the stream.

Physicochemical and Sensory Characteristics of Yakju Fermented with Different Ratios of Dandelion (Taraxacum platycarpum) Root Powder (민들레 뿌리분말의 첨가비율을 달리하여 제조한 민들레 약주의 이화학적 및 관능적 특성)

  • The physicochemical and sensory characteristics of Yakju fermented with different ratios of Taraxacum platycarpum (dandelion) root powder (0, 5, 10, and 15%) were investigated. The pH of Yakju decreased and the total acidity and sugar content increased according to the addition of dandelion root powder. Dandelion root powder (15%) showed significantly higher reducing sugar content on the 3rd day of fermentation compared with other groups, including the control. Also, further exposure of fermentation time showed a declining pattern of reducing sugar content. Including control, the alcohol content increased in all Yakju samples fermented with dandelion root powder as fermentation progressed. The Yakju fermented with 5% dandelion root powder showed the highest sensory scores for color, aroma, taste, swallowing, and overall acceptability as $6.38{\pm}1.27$, $5.58{\pm}1.02$, $5.79{\pm}0.98$, $6.08{\pm}1.21$, and $5.96{\pm}0.91$, respectively. In the present study for the production of Yakju, 5% dandelion root powder was the most appropriate amount to be added for the production of Yakju. The result obtained here may provide fundamental data for the traditional Yakju industry, which is interested in using a variety of natural resources.

Physicochemical Characteristics of Chokong and Soaking Solution on Soaking Period (담금기간에 따른 초콩과 담금액의 이화학적 특성)

  • Effects of soaking period on physicochemical characteristics of chokong (black soybean picked in brown rice vinegar) and soaking solution were investigated. The pH and soluble solid contents in soaking solution increased rapidly whereas total acidity decreased during the first 4 days of soaking. The sudden drop of color 'L' and 'b' values in soaking solution occurred one day after start of soaking; in contrast, 'a' value increased by 1 day, and then decreased for soaking periods. The strength and hardness of chokong showed a decreasing trend as soaking for a long time, and the values of chokong were lower than those of control (black soybean soaked in water and freeze dried). The protein bands of chokong for soaking appeared only under 24,000 Da of molecular weight by electrophoresis. The content of total amino acids of chokong pickled for 7 days was 86.86 mg%, about 3 times for 28.36 mg% of raw black soybean. The contents of essential amino acids, especially, leucine and phenylalanine increased greatly in chokong. In vitro digestibility for protein was 62% in raw black soybean and 84% in chokong pickled for 7 days. Therefore, these results may assumed that chokong will be good source of amino acids.
