Effects of Various Ventilation Systems on the Carbon Dioxide Concentration and Fruiting Body Formation of King Oyster Mushroom (Pleurotus eryngii) Grown in Culture Bottles (새송이버섯 병재배에서 환기방법이 이산화탄소 농도 및 자실체형성에 미치는 영향)

  • In an attempt to establish the appropriate ventilation device for the bottle culture of king oyster mushroom (Pleurotus eryngii), we investigated carbon dioxide concentration and fruiting body formation according to the various ventilation systems within the mushroom house. In addition to, the efficiency of air circulation and growth rate as well as the appearance of physiologically abnormal phenotypes during their growth stage were also evaluated. four different ventilation devices, parallel-pressure type, positive-pressure type, negative-pressure type, and positive- and negative-pressure type were applied in this study. The positive-and negative-pressure type showed the highest efficiency of air circulation as $CO_2$ concentration was 800 ppm and the level of air current was relatively low compared to the other types (the $CO_2$ concentration of parallel-pressure type was 1,400 ppm). Moreover, the stipe length, the cap diameter, yield, and general quality grown in positive- and negative type ventilation device were also better than in the other three devices though it took slightly longer period for harvesting (18.4 days) than the others (17.6, 17.9 and 18.3 days). The appearance of physiologically abnormal phenotypes such as fruiting body lump, soft rot, and brown rot were significantly decreased in positive-and negative type compared to other types, while the appearance rates were not much different for other symptoms of bacterial ooze, stipe limb and stipe bumpy. In summary, we propose that the optimal ventilation system for the bottle culture of king oyster mushroom is positive- and negative type, and this device is expected to increase the total quality as well as yield all year around.

  • King Oyster(Pleurotus eryngii) is one of the most promising mushrooms produced on the domestic farms. The quality as well as quantity of King oyster is sensitively affected by micro climate factors such as temperature, relative humidity, $CO_2$ concentration, and light intensity. To safely produce high-quality King oysters year round, it is required that the environmental factors be carefully controlled by well designed structures equipped with various facilities and control systems. In this study, we are focusing on carrying out growing experiment to find out reasonable range of each environmental factor together with economic and safe structures influencing on the optimal productivity of king oyster mushroom. The optimal productivity will be evaluated by considering the quality and quantity of mushroom production, energy requirements, facility construction and management cost, etc.

Solvent Extracted Volatile Components of Mushroom Mycelia Cultivated with Citrus Juice Processing Wastes (감귤 주스 착즙박을 이용하여 재배된 버섯균사체의 용매추출에 의한 휘발성 성분)

  • Solvent-extracted volatile components from dry powder prepared from Citrus unshiu products such as immature Citrus unshiu (PCU), mature Citrus unshiu (MCU), Citrus unshiu peel (CUP), and citrus juice processing wastes (CJPW), were examined. Also, solvent-extracted volatile components from mushroom mycelia of Pycnoporus coccineus (PC), Lentinus edodes (LE), Pleurotus eryngii (PE), Hericium coralloides (HC), Panellus serotinus (PS), and Ganoderma lucidum(GL), all cultivated using citrus pulp solid media, were assayed. Twenty-nine volatile components were identified in dry powder prepared Citrus unshiu and 18 volatile components were characterized from mushroom mycelia. Of these, ${\beta}-elemene$, germacrene-D, and ${\delta}-cadinene$, were derived from CJPW, but caryophyllene, hexadecanoic acid, decanoic acid, and tetradecanoic acid were synthesized by mushroom mycelia.

Agricultural and Marine By-Products Fermented Diet and Its Economic Value in Pigs (농수부산물 발효사료가 양돈에 미치는 경제적 효과 분석)

  • This study was conducted to investigate the economic analysis of fermented diet made of agricultural and marine by-products such as, dropped apples, persimmon shells, mushroom (Flammulina velutipes) by-products, king oyster mushroom by-products and brewer's grain in Berkshire or crossed pigs. The daily diet cost were decreased by 2.16~3.44%, 3.83~13.35% and 7.47~41.61% when fermented dropped apples diet, fermented persimmon shells diet and fermented mushroom (F. velutipes) by-products diet were fed to Berkshire pigs. The daily feed cost was also decreased by 1.59~4.05% and 59.09~66.90% when fermented king oyster mushroom by-products diet and fermented brewer's grain diet were fed to crossed pigs. Carcass prices were increased by 3.09%, 1.20~3.40% and 1.13% when 2% fermented dropped apples diet, fermented persimmon shells diet and 0.5~1.0% fermented mushroom (F. velutipes) by-products diet were fed to Berkshire pigs. Carcass prices were increased by 2.87~4.19% and 41.31~49.14% when fermented king oyster mushroom by-products diet and fermented brewer's grain were fed to crossed pigs. Therefore, fermented agro by-products diet of dropped apples, persimmon shells, king oyster mushroom, mushroom (F. velutipes) and brewer's grain was expected to improve swine farms income due to decreased diet cost and increased carcass prices in Berkshire pigs or crossed pigs.

Breeding of Pleurotus eryngii, "Aeryni 5" (큰느타리(새송이)버섯 "애린이5" 품종육성)

  • To breed a new Korean Pleurotus eryngii cultivar with high quality and yield, single crosses between $24{\times}46$ and KNR2539 were performed, and a new cultivar, $6{\times}13$, was selected based on the days to harvest (14.6 days), quality (7.2), and yield (85.9 g/850 cc bottle). The strain was named Aeryni 5 and cultivated on a large scale at the mushroom farms to compare with Keuneutari 2ho. The yield of Aeryni 5 (82.2 g) was 122.7% of Keuneutari 2ho, and the quality of the new cultivar was 7.7 while reference cultivar was 6.3. The yield and quality of the two cultivars were statistically different. The lightness of the pileus of Aeryni 5 (61.7) was greater than that of Keuneutari 2ho by 3.4 points; thus, the pileus of Aeryni 5 looked brighter. PCR with URP2 was used to discriminate between Aeryni 5 and Kenneutari 2ho.

Ash Reduction and the Change of Fuel Properties for Spent Mushroom Substrates by Acid Solution Extraction (산(acid) 첨가 용매 추출에 의한 폐버섯배지 회분 감소 및 연료특성 변화)

  • The ash reduction effects and fuel property changes of spent mushroom substrates by acid solution extraction, and the production possibilities of wood pellet fuel using them were studied. The ash weight of spent Pleurotus eryngii substrates was reduced from 8.81%(w/w) to 3.33%(w/w), and calorific value was increased from 3,958.3 kcal/kg to 4219.2 kcal/kg when extracted with a mixture of Acetic acid 2%(w/w) and Anhydrous citric acid 1%(w/w) in condition of liquid ratio 1:8, extraction temperature $55^{\circ}C$ and extraction time 180 min. The ash weight of spent Flammulina velutipes substrates was reduced from 14.91%(w/w) to 4.07%(w/w), and calorific value was increased from 4,190.3 kcal/kg to 4,219.2 kcal/kg when extracted with a mixture of Acetic acid 3%(w/w) and Anhydrous citric acid 1%(w/w) in condition of liquid ratio 1:8, extraction temperature $65^{\circ}C$ and extraction time 180 min. The ash weight of spent Pleurotus osteratus substrates was reduced from 3.31%(w/w) to 0.59%(w/w), and the smallest reduction was in calorific value from 4,558.6 kcal/kg to 4,216.2 kcal/kg when extracted with a mixture of Acetic acid 1%(w/w) and Anhydrous citric acid 1%(w/w) in condition of liquid ratio 1:8, extraction temperature $65^{\circ}C$ and extraction time 180 min.

  • Gyeongbuk Agricultural Technology Administration carried out the nation opinion research to mushroom industry in 115 of the citizen and the provincials from 10/17/2008 to 10/18/2008. Which was for both grasping the citizen's opinion and habits and understanding farmers'. The result of the research is the following. 37.4 percent people preferred Lentimus edodes among the all respondents and 27.0 percent preferred Flammulina velutipes. As for the purchasing place, 57.4 percent buy them in large retail stores, 40.9 percent buy them in traditional markets. 67 percent of the respondents mainly use them in fall, 31.3 percent use them in winter. 88.7 percent of them mainly eat the mushrooms at home, 11.3 percent is at restaurants. 63.5 percent of them responded that the price of mushrooms was resonable, 26.1 percent answered that was expensive. In appearance, 27 percent of them chose yellow Flammulina velutipes as a good-looking mushroom, 19.1 percent chose Lentimus edodes.

Drying characteristics and physical properties of medicinal and edible mushrooms (약용버섯과 식용버섯의 건조방법에 따른 품질특성)

  • In this study, the drying characteristics of medicinal (Ganoderma lucidum, Phellinus linteus) and edible (Pleurotus eryngii, Lentinus edodes) mushrooms were investigated. Their shrinkage ratios, Hunter's color values, and rehydration ratios were evaluated. Mushrooms were cut with rectangular (1 cm) and square ($1{\times}1cm$) shapes, and dried in the room temperature and at $50^{\circ}C$ and $70^{\circ}C$ using hot-air dryer. Initial moisture contents of edible mushrooms were higher than those of medicinal mushrooms, whereas final moisture contents were vice versa. Drying rate was the highest when drying at $70^{\circ}C$ (p<0.05). Moreover the drying rate of square slices was higher than that of rectangular slices (p<0.05). The shrinkage ratios of both medicinal mushrooms and edible mushrooms were the least when drying at $50^{\circ}C$ and $70^{\circ}C$, respectively (p<0.05). The changes of color values were less in the medicinal mushrooms dried in the room temperature than in the hot-air dried medicinal mushrooms (p<0.05). However, in case of edible mushrooms, the changes of color values were less in the hot-air dried mushrooms (p<0.05). Rehydration ratios of medicinal mushrooms dried at $50^{\circ}C$ was the highest (p<0.05). In contrast, rehydration ratios of edible mushrooms was the highest when drying in the room temperature (p<0.05). Thus, the hot-air drying at $50^{\circ}C$ would be suggested as the efficient drying method for both medicinal mushrooms and edible mushrooms.

Inhibitive Effects of Edible Mushrooms Extracts on Pathogenic Bacteria and Proliferation of Cancer Cells (식용버섯 추출물의 식중독균 및 암세포 증식에 대한 저해 효과)

  • The antibacterial effect of methanol and water extracts from edible mushrooms on the growth of pathogenic bacteria (Bacillus cereus, Bacillus subtilis, Staphylococcus aureus, Echerichia coli O-157, Listeria monocytogenes, Pseudomonas aeruginosa, Salmonella typhi) were investigated. The Lyophyllum cinerascens and Pleurotus ostreatus2 methanol extracts treated with 5.0 mg/disc showed the highest antimicrobial activity against 7 kinds of pathogenic bacteria. And methanol extracts of edible mushrooms showed higher antimicrobial activity against gram positive and gram negative microorganisms than water extracts. The methanol extracts of mushrooms revealed high inhibitive activites in cytotoxicity on human cancer HepG2 and HT-29 cells. The growth of cancer HepG2 and HT 29 cells which treated with 1 mg/mL of Cordyceps militaris and Sarcodon aspratus methanol extracts were strongly inhibited to $67\%$ and $81\%$ respectively. And most of the methanol extracts exhibited the stronger effects against these cells, at the same concentration, comparing with water extracts. Particularly, the methanol and water extracts of Cordyceps militaris, Agaricus blazei, Lyophyllum ulmarium, Ganoderma lucidum and Sarcodon aspratus have the strongest antitumoral effects on HepG2 and HT-29 cells. From these results, it is considered that wild mushrooms have stronger antimicrobial and in vitro cytotoxic effects.

  • 2010년 5월 중 서울 약령시와 서울시내 대형마트에서 유통 중인 약용버섯 및 식용버섯류 16품목 92건 대상으로 중금속(비소, 카드뮴, 납, 수은) 모니터링을 실시하였다. 식품의약품안전청에서 고시한 생약의 잔류오염물질 허용기준 및 시험방법에 따라 실험하였으며, 유통 버섯류의 중금속 함유실태를 파악하고, 버섯의 안전성 기준 제정을 위한 기초 자료를 제공하고자 본 실험을 실시하였다. 새송이버섯 등 생버섯 7종 15건에 대한 중금속 검사 결과 비소 0.01~0.26 mg/kg, 카드뮴 0~0.10 mg/kg, 납 0~0.03 mg/kg, 수은 0~0.007 mg/kg 으로 중금속 함유량이 낮았다. 상황버섯 등 11종 77건의 건조되어 식용 및 약용으로 사용되는 버섯류 중 노루궁뎅이버섯은 4건 중 2건(50.0 %)에서 카드뮴이 0.32~0.82 mg/kg으로 한약재 기준 대비 높게 검출되었으며, 상황버섯은 15건 중 5건(33 %)에서 카드뮴 0.58~0.85 mg/kg, 표고버섯은 9건 중 3건에서 카드뮴 0.42~0.74 mg/kg, 운지버섯 5건 중 1건(20.0 %)에서 1.66 mg/kg, 영지버섯 16건 중 2건(12.5%)에서 수은 0.415 mg/kg과 카드뮴 0.66 mg/kg이 분석되었다. 특히 아가리쿠스버섯은 10건 중 10건(100.0 %)에서 카드뮴(10건) 1.49~7.35 mg/kg, 수은(9건) 0.202~0.505 mg/kg으로 높은 유해중금속 함유량을 보이는 것으로 조사되었다.
