Changes in Physicochemical and Sensory Qualities of Korean Pickled Cucumbers during Fermentation (발효 중 오이지의 물리화학적 및 관능적 품질의 변화)

  • The physicochemical and organoleptic properties of Korean pickled cucumbers were studies for their changes during fermentation. The Korean pickled cucumbers were prepared by salting in 5-15% NaCl solution and fermented for 7-10 days. The results showed that the increase of salt concentration in cucumber had a linear relationship with logarithmic value of brining time. The higher NaCl concentration in salt solution resulted a rapid salt penetration into cucumber while the rate of changes in pH, the total acidity and turbidity were reduced. The color of cucumber surface were changed from green to yellow-green color as the fermentation progressed. The hardness of cucumber decreased repidly after one day of fermentation, followed by a little decreased until it reached to pH 3.2. A little increase in pH and decrease in total acidity were measured thereafter. The evaluation of sensory quality showed that the acidic and fresh cucumber-like-flayer decreased and yeast-moldy increased as the fermentation progressed. The sensory changes were more evident for lower salt concentration of NaCl solution. The softness of cucumber became to be significant from 4th day of fermentation in 5% salt solution.

Characteristics of Acid Pre-treated Red Ginseng and Its Decoction (산처리 홍삼과 추출물의 특성)

  • This study was conducted to produce a new red ginseng by steaming ginseng using a new pre-treatment method, so as to develop ginseng products with improved flavor and thereby expand ginseng's consumer base. The color parameters (Hunter value), free sugar contents, and ginsenoside contents of the powder from the dried red ginseng, and the sensory test of the semi-dried red ginseng and the decoction from the dried red ginseng, were measured to investigate the effect of acid (ascorbic acid or citric acid) impregnation pre-treatment on red ginseng. The powder from the acid-pretreated red ginseng became lighter and more yellow than the red ginseng that was not pre-treated, but the redness (avalue) of the powder from the acid-pre-treated red ginseng increased. The ginsenoside contents of $Rg_2+Rh_1$ and $Rg_3$ increased with the acid treatment. There was a significant difference in the color and sweetness of the semi-dried acidtreated and non-treated red ginsengs in the sensory test. As the results of the sensory test were expressed in the hedonic scale, however, there were significant differences in the degrees of bitterness, astringency, sourness, odor, and color of the red ginseng decollation. Especially, the acid-treated red ginseng extract tasted less bitter, which shows the potential of new red ginseng products with improved ginseng flavor.

  • Previously, we reported LVH peptiede derived from Aurelia aurita as cosmecetuticals with anti-winkle activity. In this study, we synthesized pal-LVH using palmitic acid to enhance skin permeability of LVH and examined the effects as cosmeceuticals of pal-LVH. To evaluate these effects, we performed cell toxicity, wound healing, and patch test for skin irritation with LVH and pal-LVH and compared these results for their effects. As a result. pal-LVH was not showed in cytotoxicity and allergenic effect like as LVH. Besides, pal-LVH had almost same excellent anti-ageing properties in high concentration and anti-winkle effect in low concentrationwas as LVH. These results suggested synthesis of palimitic acid and LVH did not affect any functions as cosmeceuticals with increasing skin permeability. Therefore, pal-LVH can be adaptable as new cosmecetuticals with anti-winkle and anti-ageing materials and applied in the development of medicine through various convergence study.

  • The fire accident is a representative type of disaster that can largely impact on business. Therefore, precautionary measures and rapid initial response is very important when a disaster occurs. The storage of porous combustibles is inevitable in coal yard, plywood processing industry, and others that are currently operating. Initial fire fighting of fire and identifying the ignition point in such a porous combustible storage space are so difficult that if the initial response is failed, being led to deep-seated fire, surface fire is likely to result in secondary damage. In addition, deep-seated fire can cause personal injuries and property damage due to a large amount of toxic gases and reignition. Therefore damage reduction measures is required around the storage space to handle a porous flammable. Improving the penetration performance of the concentration of the surfactant is carried out as underlying study, which is about an deep-seated fire extinguishing efficiency augmentation when using wetting agents. The porous materials used in the experiments is radiata pine wood flour, which occupies more than 75% of the domestic wood market. Fire fighting water is selected as Butyl Di Glycol (BDG), which is being used for infiltration extinguishing agent, and the experiment was carried out by producing a standard solution. The experiment was carried out on the basis of the Deep-Seated Fire Test of NFPA 18. The amount of watering, porous material to the internal amount of penetration, and runoff measurement out of the porous material was conducted. According to experimental results, as the surface tension is reduced, the surfactant concentration macroscopic penetration rate decreases, but infiltration to a porous material is shown to have growth characteristics.

Analysis of Water Balance by Surface-Groundwater Interaction Using SWAT Model for Han River Basin, South Korea (SWAT 모형을 이용한 지표-지하수 상호작용에 의한 한강유역의 물수지 분석)

  • 본 연구는 한강유역($2,6018km^2$)을 대상으로 SWAT(Soil and Water Assessment Tool)을 이용하여 지표수와 지하수의 상호작용에 의한 물수지 분석을 수행하고, 수량측면의 유역 건전성을 평가하였다. 유역의 물수지 분석을 위해 한강유역을 표준유역 단위로 구분하고, 기상자료, 하천유량, 다목적댐(소양강댐, 충주댐, 횡성댐) 운영자료, 다기능보(강천보, 여주보, 이포보) 운영자료, 증발산량, 토양수분 자료를 수집하였다. SWAT 모형의 신뢰성 있는 유출량 보정을 위해 한강유역 내 위치하는 다목적댐 및 다기능보의 실측 방류량을 이용하여 댐 운영모의를 고려하였고, 실측 지하수위, 증발산, 토양수분 자료를 이용하여 모형의 보정(2005~2009)과 검증(2010~2014)을 실시하였다. 그 결과 토양수분으로부터 증발산이 발생하고 유출 및 지하수까지 영향을 미치는 물수지 현상을 잘 재현하고 있음을 알 수 있었다. 이후 유역의 수량측면의 건전성 평가를 위한 수문요소로 하천 유출량, 증발산량, 침투, 침루, 기저유출, 토양수분, 지하수 함양량 등을 도출하고 유역의 물순환을 해석하여 유역의 건전성을 평가하였다.

  • As Korea is a mountaneous country, many cut slopes are formed along the highways and in housing projects, by cutting through the layers which are composed of shallow soil depth and the underlying hard layers with different degrees of weathering. Such slopes are often foiled by heavy rainfall, and thus its effects on the slope instability are described in detail in. this paper. The importance of discontinuties on the slope stability as well as the effects of rainfall is emphasized for high quality design of cut slopes.

  • GSSHA(Gridded Surface Subsurface Hydrologic Analysis) 모형은 미 공병단 연구개발센터(USACE ERDC; US Army Corps of Engineers Engineering Research and Development Center)체서 개발된 물리적인 개념의 공간 분포형(PBSD; Physically Based Spatially Distributed) 수문모형으로, CASC2D 모형(Ogden 와 Julien, 2002; Downer 등, 2002)을 개선, 확장한 모형이다. GSSHA 모형의 실행에는 Brigham Young 대학의 컴퓨터그래픽공학연구실에 의해 개발된 미 국방성 WMS(Watershed Modeling System) 인터페이스를 사용하며, 이를 통해 많은 입력과 출력조건을 가지는 분포형 모형의 복잡한 모의 과정을 효과적으로 처리할 수 있다. 본 연구에서는 GSSHA 모형을 이용하여 경안천 유역의 물순환 양상을 분석하였다. GSSHA 모형은 유역을 균일한 유한 차분 격자로 나누어 각각의 격자를 기본 단위로 모의한다. 모형의 주요 모의 모듈은 강우 분포, 융설, 차단, 침투, 증발산, 지표면 저류, 2차원 표면류 추적, 1차원 하도 추적, 불포화 층 모의, 2차원 포화 지하 대수층 흐름, 지표면 유사 침식, 하천 유사 추적 등이 포함된다.

  • 미녹시딜은 말초혈관확장제로서 중증의 고혈압치료에 사용하여 왔으나, 이 약물이 투여된 고혈압환자에게서 다모증 현상이 나타난 이후 탈모증의 치료제로서 연구개발되었다. 그러나 미녹시딜은 투약중지와 더불어 모발의 성장이 중지되며 치료전의 상태로 환원되는 기간이 짧은 단점이 있으므로 이를 개선하기 위해 미녹시딜의 4-NH$_2$ 위치에 의약품의 각막박리에 쓰여지고 있는 살리실산을 도입하여 두피 모근 세포로의 약물의 침투성을 높여, 보다 지속적인 새로운 발모제를 개발하고자 하였다.

  • Hyaluronic acid(HA)는 보습성, 생체적합성, 고점도성의 특징이 있는 수용성 다당류로 분자량에 따라 보습, 탄성, 점성 등이 달라진다. 또한 피부의 침투성 또한 분자량에 가장 큰 영향을 받는다. 본 연구에서는 HA를 저분자화하여 10만Da-1천Da의 저분자 히알론론산을 제조하고 이를 아세틸화하여 항주름 및 항염활성을 측정한 결과 분자량이 낮은 분자량일 수록 우수한 항주름 및 항염활성을 나타내었으며 아셀틸화한 것이 하지 않은 것에 비하여 높은 항주름 및 항염활성을 나타 내었다.

  • After applying three types of composite resins - Hi-Pol composite with Enamel bond, Hi-Pol composite without Enamel bond, Restodent - to the intact and the ground surface of tooth that had been acid etched for one or two minutes, the author observed the penetration of these resins into the acid etched enamel surface with scanning electron microscope. The results were as follows. 1. All the experimented materials showed the penetration into the acid etched enamel surface, and the average depth of penetration was 7 microns. 2. There was no significant difference in the penetration of these three resins despite different etching, time. 3. The grinding of the Enamel surface before acid - etching was not effective in altering the depth of penetration of these materials.
