  • As part of a study on insects as food, the nutritional and harmful components in the mealworm (Tenebrio molitor) were analyzed. In addition, due to a recent introduction of live Chinese mealworms in the Korean market, components between Korean and Chinese mealworms were compared. Analysis of general composition (moisture, crude protein, crude fat, crude ash, crude fiber, and carbohydrates) showed that crude protein (50.32~52.79%) was abundant in both Korean and Chinese mealworm powders, with the protein content in the Chinese mealworm powder higher than that in the Korean mealworm powder by 2.67%. The amino acid compositions were similar, but the fatty acid compositions differed in the Korean and Chinese mealworm powders. The unsaturated fatty acid contents were 76.80~80.55% of the total fatty acid content in the mealworms. The linoleic acid contents in the Korean and Chinese mealworms were $20.8{\pm}1.1%$ and $34.69{\pm}1.9%$; the linolenic acid contents were 0.47% and 1.31%; and the oleic acid contents were $51.40{\pm}0.9%$ and $40.20{\pm}1.5%$, respectively. With respect to harmful components, such as heavy metals and bacteria that cause food poisoning, bacteria such as Escherichia coli O157:H7 and Salmonella spp. were not detected in both Korean and Chinese mealworms, and the mercury content was below the standard values for common foods (Korea, 0.03 mg/kg; China, 0.08 mg/kg).

  • Antimicrobial activity of chitosan and chitosan oligosaccharides on the microorganism related to Kimchi was investigated. 5 kinds of chitosan, which have different deacetylation degrees and molecular weights were prepared and its effect on the organoleptic characteristics, pH and titrable acidity of Kimchi in the storage time were examined. C-4 and C-5 chitosan (D.A.:$92{\sim}99%$, M.W.: $16,000{\sim}32,000)$ recorded high score in the texture and showed pH 4.9 and titrable acidity 0.35%, compared with control (pH 4.1, titrarable acidity 0.50 %) evaluated to optimal ripening time. The chitosan oligosaccharides containing relatively large amount of $pentamer{\sim}heptamer$ were chosen from C-4 chitosan hydrolyzates. Antimicrobial activity of C-4 and chitosan oligosaccharides against B. subtilis, B. cereus, Pse. fluorescens, E. coli, Lac. plantarum, Leu. mesenteroides, Lac. brevis, Ent. faecalis and 3 kinds of microflora from Kimchi were examined. The clear zone against microorganism were $9{\sim}20mm$ at 3.0% C-4 chitosan and $8{\sim}24mm$ at 5.0% chitosan oligosaccharides, and MIC of chitosan and chitosan oligosaccharides was shown $0.01{\sim}0.05%$ and $0.05{\sim}0.2%$, respectively. The antimicrobial effect of chitosan and chitosan oligosaccharides was also observed in 3 kinds of total microflora from Kimchi and was most strong in the microflora from the ripening stage of Kimchi, suggesting C-4 chitosan and chitosan oligosaccharides could be applicable to extending shelf-life of Kimchi.

  • The muscles of wild and cultured carp (Cyprinus carpio), and Israeli carp (Cyprinus carpio nudus) were analyzed for the amino acid profiles, in vitro digestibility, predicted digestibility, C-PER and DC-PER. The distribution patterns of the total amino acid profiles in wild and cultured carp were found to be very similar, although there were relatively large differences in lysine, aspartic acid and glutamic acid contents which were higher in the cultured carp. Israeli carp was 2 times as much as wild carp in lysine. The quality of muscle proteins in wild and cultured carp, and Israeli carp was predicted by the in vitro method. The protein quality of Israeli carp was higher than that of wild and cultured carp, whereas there showed a similar tend to protein quality between wild and cultured carp. The contents of hitidine, tyrosine, aspartic acid, alanine and glutamic acid in diet showed stronger positive corelation with the levels of protein deposition than those of protein intake, and those amino acids would greatly influence on amino acid composition of muscle protein in fishes.

  • This study was carried out to investigate the effect of breed, parity, litter size, lactating period, and estrus interval on sow productivity traits in swine. Data from 492 heads of Landrace, Yorkshire or crossbred sow which were raised at Yonam College of Agriculture from March, 1998 to July, 2000 were analyzed for this study. The total number of pigs born (TN), the number of pigs born alive (NB), and the number of pigs suckled (NS) were greater in the crossbred sows than in the purebred. In TN and NB, the 3rd to 7th parities were greater than other parities, and the 8th parity was the lowest. The number of pigs stillbirthed (NSB) and the number of runt per litter tended to increase with the increase of TN. In addition, statistical analysis showed that parity had significant effect on most of traits. The current TN had highly significant effect on TN, NB and NS of the next parity As current TN increased, TN, NB, and NS of the next parity increased. The current lactating period also affected significantly for TN, NB, and NS of the next parity The sows which had the lactating period of 20∼21 days produced the greatest TN and NB in the next parity. Weaning to estrus interval(WEI) had significant effect on TN, NB, and NSB. Among WEI groups, the WEI group of 7∼13 days was the lowest in TN, NB and NSB.

  • The genetic analyses of Acanthopanax senticosus Harms from Korea, China and Russia, were made by comparing the internal transcribed spacer (ITS) sequences of the nuclear ribosomal DNA. The ITS region of A. senticosus was amplified by polymerase chain reaction (PCR) using the universal primers and then directly sequenced. The length of the ITS region including 162 bp 5.85 rRNA gene ranged from 608 bp (for Korean and Chinese) to 611 bp (for Russian). The G+C content of ITS region were 60.20% for Korean and Chinese plants and 60.06% for Russian plants. Sequence comparisons indicated that ITS regions of A. senticosus from Korea and China were identical, whereas the ITS sequence of A. senticosus from Russia showed 99.2% homology with the plants from Korea. Variation in sequences were attributable to 5 bp substitution such as transversion or insertion events. These results suggested that A. senticosus Harms from Korea and China were closely related in phylogenetic relationship compared to Russian. In addition, A. senticosus Harms were more similar to Kalopanax pictus than A. sessiliflorus in their ITS sequences.

  • Chitosan films were prepared using four types of chitosans with different molecular weight and the effect of molecular weight of chitosan on selected film properties such as color, water vapor permeability (WVP), water solubility (WS), tensile strength (TS), and elongation at break (E) was investigated. Generally, the total color difference (${\Delta}E$) and WS of the films decreased, while TS and E of the films increased as molecular weight of chitosan increased. WVP of the films did not show any significant relationship with molecular weight of chitosan.

  • Natural chitosan has high molecular weight and the poor solubility in water. Water-soluble chitosan with low molecular weight was prepared by the hydrolysis method. In order to develop an efficient gene delivery carrier, chitosan was conjugated with lipoic acid to form the comb-type copolymer. The copolymer with the amphiphilic property formed the self-assembled nanoparticles in the aqueous solution. The average size of nanoparticles was 217.6 nm and the average size of nanoparticles/DNA complex was 170 nm. New chitosan-lipoic acid copolymer showed the low cytotoxicity and 10 times higher transfection efficiency than that of the pure chitosan.
