Changes of Free Amino Acid Compositions and Sensory Properties in Kochjang Added Sea Tangle Powder during Fermentation (다시마를 첨가한 고추장의 숙성 중 유리아미노산 조정 및 관능적 특성 변화)

  • 우리나라의 전통 발효식품인 고추장의 관능성 및 기능성을 더하여 품질을 향상시키기 위하여 전분질원료인 찹쌀무게에 대하여 2%. 4%, 6%, 및 8%의 다시마 분말을 첨가한 후 대조구와 함께 3$0^{\circ}C$에서 12일간 숙성시키면서 유리아미노산과 지방산 조성 acl 관능적 특성을 검토하였다. 숙정 중 대조고추장과 다시마고추장 모두에서 아미노질소는 서서히 증가하는 것으로 나타났으나 아미노질소의 경우 대조고추장에 비해 다시마 고추장에서 다소 낮게 나타났다. 숙성 30일째의 아미노질소량은 각각 171.31mg%, 172.10mg%, 174.18mg%, 185.60mg 및 161.70mg%로 최고값을 보였다 유리아미노산 중에서는 glutamic acid의 함량이 가장 높은 것으로 나타났는데 숙성 이 진행될수록 증가하였다. 또한 arginine, aspartic acid, proline, serine, leucine, lysine 도 비교적 높은 함량을 가졌다. 고추장에서 분리 확인된 지방산은 lauric acid myris-tic acid, palmitic acid stearic acid , oleic acid, linoleic acid 등이었고, 이들 중 oleic acid의 조성비율이 가장 높았고 palmitic acid가 다음으로 높았으며 stearic acid, lauric acid myristic acid의 경우 숙성 후기로 갈수록 산화되어 감소하는 경향을 보였다. 숙성 60일과 120일에 실시한 관능검사의 결과 8% 다시마 첨가구를 제외하고는 대조고추장과 비교하여 다시마 첨가구를 제외하고는 대조고추장과 비교하여 다시마 첨가가 고추장의 관능적 특서엥 영향을 미치지 않았으며 다시마 첨가수준이 높아질수록 높은 값을 나타내어 고추장에 다시마를 6% 정도 첨가하는 것이 적당하였다.

  • The electrically conducting cellulose acetate/polypyrrole composite films were synthesized by exposing cellulose acetate film containing oxidizing agent to pyrrole vapour and the formation of polypyrrole is confirmed by IR and electron microscopic studies. The morphologies of polypyrrole in the composites are different depending on the oxidizing agent. Ferric chloride is most effective among several metallic chlorides to synthesize the composites with high electrical conductivity. The conductivity of composite films synthesized with 50 wt.% of ferric chloride reaches upto $10^{-2}S/cm$.

Effect of the Addition Method of Mugwort on Antioxidant Effect, Total Plate Counts, and Residual Nitrite Content of Emulsified Sausages during Cold Storage (쑥 첨가방법이 유화형 소시지의 냉장 저장 중 항산화, 총미생물수 및 아질산염 소거에 미치는 영향)

  • This study was conducted to investigate the antioxidant effects, total plate count (TPC), and residual nitrite content of emulsified sausage with added mugwort during cold storage. The sausages were of five types: nothing added (control), mugwort powder added (T1), mugwort juice added (T2), mugwort ethanol extract added (T3), and mugwort hot water extract added (T4). Each sausage type was tested in triplicate and assigned to one of five storage periods: 0, 1, 2, 3, or 4 wk. As storage time increased, the presence of mugwort resulted in decreased pH, residual nitrite content, and meat color (CIE $L^*$ and $b^*$) and increased thiobarbituric acid reactive substance (TBARS) and TPC values. Values for pH, TBARS, residual nitrite, and TPC decreased significantly after adding mugwort compared with the control (p<0.05). Among all treatments, T3 was significantly (p<0.05) more effective in delaying lipid oxidation and microbial activity. The CIE $L^*$ and $b^*$ decreased significantly with the addition of mugwort relative to the control. In conclusion, the results demonstrate that adding an ethanol extract of mugwort (T3) to emulsified sausages tended to improve antioxidant and antimicrobial effects and residual nitrite content during storage compared to the other treatment groups.

Antioxidant Effects of Phenolic Acids and Ginseng Extract in Aqueous System (수용성 계에서 Phenolic Acid류와 인삼 추출물이 갖는 산화방지 효과)

  • The antioxidant effects of 700 ppm ginseng extract, 100ppm caffeic acid, ferulic acid, vanillic acid, or ${\alpha}-topherol$ on the 1% linoleic acid aqueous buffer system was studied by measuring malondialdehyde (MDA) and headspace oxygen. The compounds showed antioxidant activities in the following order: $caffeic\;acid{\geq}ferulic\;acid\;>\;{\alpha}-tocopherol$>ginseng extract>vanillic acid, with the oxidation inhibition ratio of 63.5, 62.9, 52.3, 51.2 and 5.6% of the control according to MDA results. The mixture of 100 ppm caffeic acid, 100 ppm ${\alpha}-tocopherol$ and 700 ppm ginseng extract had a high oxidation inhibition ratio of 91.2%. Headspace oxygen results had a similar trend with the MDA results. Headspace oxygen results showed that the antioxidant activities were in order of ferulic acid>caffeic acid>${\alpha}-tocopherol$>ginseng extract>vanillic acid and headspace oxygen contents were 18.56, 17.78, 17.17, 16.65 and 15.95%, respectively.

Synthesis, Dispersion, and Tribological Characteristics of Alkyl Functionalized Graphene Oxide Nanosheets for Oil-based Lubricant Additives (액체 윤활제 첨가제용 알킬 기능화된 산화 그래핀의 합성/분산 및 트라이볼로지적 특성)

  • Graphene has been reported to be an excellent lubricant additive that reduces friction and wear when coated on the surface of various materials or when dispersed in lubricants as an atomic thin material with the low surface energy. In this study, alkyl functionalized graphene oxide (FGO) nanosheets for oil-based lubricant additives were prepared by using three types of alkyl chloride chemicals (butyl chloride, octyl chloride, and tetradecyl chloride). The chemical and structural properties of the synthesized FGOs were analyzed by Fourier transform infrared (FT-IR), X-ray photoelectron spectroscopy (XPS), X-ray diffraction (XRD), Raman spectroscopy, scanning electron microscope (SEM), and transmission electron microscope (TEM). The synthesized FGOs were dispersed at 0.02 wt% in PAO-0W40 oil and its tribological characteristics were investigated using a high frequency friction/wear tester. The friction coefficient and the wear track width of poly alpha olefin (PAO) oil added with FGO-14 were tested by a ball-on-disk method, and the measured results were reduced by ~5.88 and ~3.8%, respectively compared with those of the conventional PAO oil. Thus, it was found that the wear resistance of PAO oil was improved. In this study, we demonstrated the successful functionalization of GO as well as the improvement of dispersion stability and tribological characteristics of FGOs based on various alkyl chain lengths.

Effect of Chlorine Addition on Low Temperature $SiO_2$ Deposition (저온 이산화규소 증착시 도입된 염소 기체의 영향)

  • 산화규소 증착 시 도입된 염소 기체는 저온부에서 수소기 감소에 효과적이었고, 증악 속도의 증가가 관찰되었다. 고온부에서는 증착속도가 감소하였고 막의 거칠기와 다공성이 증가 하였으며, 막내의 염소 잔존량이 감소함과 동시에 막은 불균일한 양론비를 나타내었다. 계면의 미결합은 모든 온도 범위에서 감소하였지만 염소 첨가량의 증가는 오히려 미결합을 증가 시키는 경향을 나타내었다. 계면의 미결합은 모든 온도 범위에서 감소하였지만 염소 첨가량의 증가는 오히려 미결합을 증가 시키는 경향을 나타내었다.

  • 이상에서 유자과피 분말을 첨가하여 유화형 소시지를 제조하였을 때 pH와 육색에 차이를 보였지만, 소시지의 지방산화를 감소시키면서 잔존 아질산염 함량을 낮추는 기능성 있는 육제품 생산이 가능한 것으로 사료된다.

Electrochemical Performance of CB/SiOx/C Anode Materials by SiOx Contents for Lithium Ion Battery (SiOx 함량에 따른 CB/SiOx/C 음극재의 전기화학적 특성)

  • In this study, the composite was prepared by mixing SiOx, soft carbon, and carbon black and the electrochemical properties of lithium ion battery were investigated. The content of SiOx added to improve the capacity of the soft carbon anode material was varied to 0, 6, 8, 10, 20 wt%, and carbon black was added as a structural stabilizer for reducing the volume expansion of SiOx. The physical properties of prepared CB/SiOx/C composite were investigated through XRD, SEM, EDS and powder resistance analysis. In addition, the electrochemical properties of prepared composite were observed through the charge/discharge capacity, rate and impedance analysis of the lithium ion battery. The prepared CB/SiOx/C composite had an inner cavity capable of mitigating the volume expansion of SiOx by adding carbon black. The formed internal cavity showed a low initial efficiency when the SiOx content was less than 8 wt%, and low cycle stability when the content of SiOx was less than 20 wt%. The CB/SiOx/C composite containing 10 wt% of SiOx showed an initial discharge capacity of 537 mAh/g, a capacity retention rate of 88%, and a rate of 79 at 2C/0.1C. SiOx was added to improve the capacity of the soft carbon anode material, and carbon black was added as a structural stabilizer to buffer the volume change of SiOx. In order to use the CB/SiOx/C composite as a high-efficiency anode material, the mechanism of the optimal SiOx and the use of carbon black as a structural stabilizer was discussed.

Surface Characteristics and Antifouling Performance of Inorganic MnOx-WO3-TiO2 Nanopowder for Self-polishing Copolymer Paint Applications (무기계 MnOx-WO3-TiO2 나노분말의 표면특성 및 자기마모형 수지 적용성 평가)

  • The $MnO_x-WO_3-TiO_2$ nanoscale powders were synthesized by sol-gel method in order to prevent the biological fouling on the ships and offshore structures. Powder characteristics and antifouling performance were investigated with respect to the crystalline, microstructure and surface property for application in self-polishing copolymer resins. The high antifouling activity of $TiO_2$-system biocide was attributed to its redox potential and soluble metal ions originating from tungsten oxides according to the improvements in the powder characteristics. Based on their physio-chemical characterizations, the specific surface areas of powders were about $90m^2/g$ and the grain size was in the region 100 ~ 150 nm. Powder characteristics and surface properties were improved by the addition of $WO_3$. Antifouling performance were analyzed according to their surface properties and static immersion tests to determine the effects of the $TiO_2$-system compounds. The surface of 2 wt. % added sample was clean for 5 month. This may be attributed to the ability of $MnO_x-WO_3-TiO_2$ powders to act as a promoter in antifouling agents.

Antioxidative Effect of Ascorbic Acid Solubilized via Reversed Micelle in Perilla Oil (역미설계를 이용한 들깨기름의 산화안정성 향상에 관한 연구)

  • Ascorbic acid was solubilized in perilla oil via reversed micelle using small amount of water and lecithin as surfactant. The effect of the solubilized ascorbic acid on the oxidative stability of perilla oil was investigated. The autoxidation of the oil was greatly retarded with the solubilized ascorbic acid compared to the synthetic antioxidants employed. However, the combination with ${\delta}-tocopherol$ did not show any significant synergism.
