Variation of Seed Component Contents in Wild Soybean(Glycine soja Sieb. & Zucc.) (야생콩(Glycine soja Sieb. & Zucc.)의 종실성분 함량변이)

  • Studies were conducted to develop new breeding resources using wild soybean (Glycine soja Sieb. & Zucc.) species. In 132 wild soybeans, the average crude protein content was $45.4\%$, ranged from $37.4\%\;to\;50.2\%$ and average crude oil content was $9.3\%$ showing lower than cultivated soybean. The average total amino-acids content was $19,214\;{\mu}g/g$, containing $252\;{\mu}g/g$ of methionine and $103\;{\mu}g/g$ of cysteine, a sulfur containing amino-acid. In ratio of individual amino-acids, the glutamic acid, methionine and cystein content was $16.1\%,\;1.3\%,\;and\;0.5\%$, respectively. The correlation between total amino-acid and sulfur containing amino-acid was not significant. Total isoflavone concentration was, on average, $1,105\;{\mu}g/g$ in wild soybean germplasm. As a result of comparison with total isoflavone and genestein contents, significant positive correlations were observed between total isoflavone and genistein concentration.

Effects of Fermentation Method and Brown Rice Content on Quality Characteristics of Brown Rice Vinegar (발효 현미식초의 발효방법 및 원료함량에 따른 품질변화)

  • To evaluate the quality of brown rice vinegar made by traditional fermentation in terms of Zymotechnic data and material content, vinegars prepared using a traditional leavening agent and yeast were compared. Amino acid, total nitrogen, free sugar, organic acid, and mineral levels were assessed, with vinegars made with initial brown rice contents of 12.36% (w/v). Vinegar made using Nuruk as fermenting agent (traditional fermentation, TF), with a brown rice content of 20% (w/v), and vinegar prepared using yeast for fermentation (control fermentation, CF), with a brown rice content of 12% (w/v) were compared. TF vinegar had a total nitrogen content about 2.0.4.6-fold that of CF vinegar. Total nitrogen in TF vinegar was 350.460 mg/100g, and in CF vinegar the level was 100.140 mg/100g. TF vinegar had more minerals, free sugars, and amino acids compared with CF vinegar. When free sugar was assessed, TF vinegar had a glucose level of 3.45 g/100g, double that of CF vinegar. Amino acid levels were five-fold higher in TF vinegar then in CF vinegar. When brown rice content was 36% (w/v), the amino acid level was $6088.22\;{\mu}g/mL$ in TF vinegar and $1194.05\;{\mu}g/mL$ in CF vinegar.

  • The degermed Japonica and J/Indica brown rites were successively milled to give 4.4%(fraction I), 4.7%(fraction II) and 5.9%(fraction III) yield of flour, with the remaining as residual kernel. The amino acid composition of the protein in the milled fractions was similar, except serine and histidine. With some amino acids, particularly phenylalanie, glycine and isoleucine, differences among varieties were much greater than among fractions of the same rice. The content of lysine was the highest in fractions I and II, whereas isoleucine showed the opposite trend to lysine. The first and second limiting amino acids of all fractions were lysine and threonine, respectively. No varietal differences in the distribution of fatty acids within the kernel were observed.

The Effect of Chitosan Addition on Soybean Leaf Kimchi fermentation (키토산 첨가에 따른 콩잎 김치의 저장성 향상)

  • This study was conducted to investigate the presevative effect of chitosan on soybean leaf kimchi. Three different kinds of chitosan, molecular weihts(M.W) of 2,000, 30,000 and 300,000, were used. Kimchi, prepared by adding chitosan in 0.5% solution or control, was examined for evaluation of pH, acidity, vitamin C and number of Lactic acid bacteria during fermentation at 10$^{\circ}C$ for 20 days. As a result, the pH decreased and acidity increased with increasing fermentation periods. Kimchi with chitosan of M.W 30,000 showed Bower pH, higher acidity, more consitutional vitamin C content, and lower number of tactic acid bacteria than any other treatment. This results suggest that chitosan of M.W 30,000 could be more effective material in presenation of soybean leaf kimchi.

  • In order to investigate the changes of organic acid contents during the process of apple vinegar, this experiment was conducted by innoculating apple juice with Sarcharomyces cerevisae, and then the apple vinegar were prepared with Acetobacter. aceti and its mutants obtained by the treatment of ultraviolet light and N-methyl-N-nitro-N'-nitrosoguanidine. The organic acids were analyzed by gas chromatography. The contents of malic acid, citric acid and acetic acid in apple juice were 0.73 %, 0.038 % and 0.067%, malic acid, lactic acid and acetic acid in the apple wine 0.114%, 0.10%, and 0.03%, while acetic acid and malic acid in apple vinegar, 4.3 %, and about 0.05 %, respectively.

  • The patterns of fatty acid composition of lipid extracted from eight species of edible marine benthic algae; i. e. two species of green, five of brown and one of red algae, were investigated quantitatively by using gas liquid chromatography. The total lipid contents in average of the algae were $1.51\%$ in the green algae, $2.81\%$ in brown algae and $1.02\%$ in red algae respectively. Upon analyzing fatty acid composition, green algae contained the highest proportion of $C_{16:0}$ acid and comparatively higher content of $C_{18:1},\;C_{18:2}\;and\;C_{18:3}$ acids than the other algae. In brown angae, $C_{16:0}$ acid content was highest, but not more than that of green algae, and $C_{14:0},\;C_{18:1}$ acids were higher than other $C_{16:1},\;C_{18:2}\;and\;C_{18:3}$ acids while the content of $C_{18:0}$ acid was very low. Red algae showed low content of $C_{14:0},\;C_{18:1},\;C_{18:2}\;and\;C_{18:3}$ acids, but the content of $C_{16:0}$ acid was high as a major component. In regard to the composing patterns of carbon number of fatty acid of algae; i. e. $C_{14},\;C_{15},\;C_{16},\;C_{18}\;and\;C_{22}$ and $C_{22}$ acids, the green algae contained $C_{16}$ and $C_{18}$ acids, the brown algae $C_{16},\;C_{18},\;and\;C_{22}$ and $C_{22}$ acids, and the red algae $C_{15},\;C_{16}$, and $C_{18}$ acids as the major component.

Monitoring of Free Sugar and Amino Acid of Red Bean Paste by Corn Syrup Concentration and Heating Treatment Conditions (물엿농도와 열처리 조건에 따른 팥앙금 호화액의 당 및 아미노산의 변화 모니터링)

  • Dynamic changes of free sugar and amino acid in the mixture of red bean paste sediment by corn syrup concentration and heating conditions were monitored. Glucose and fructose contents of red bean paste increased with an increasing blown color intensity. Amino acid content was affected by the heating temperature, increased with an increase in browning color intensify. Browning color intensity of each samples increased up to $95^{\circ}C$, but decreased above $95^{\circ}C$. This result was the same tend as changes of glucose and amino acid. The result of correlation coefficients among free sugar amino acid and browning color intensity show that increase in browning color intensity was not correlated directly with changes of free sugar and amino acid content. It seems that the contents of free sugar and amino acid resolved from saccharides and protein were much mote than contents nea for browning reaction.

Isoflavone, Phytic Acid and Oligosaccharide Contents of Domestic and Imported Soybean Cultivars in Korea (국내산 콩과 수입콩의 Isoflavone, Phytic Acid 및 Oligosaccharides 함량)

  • Chemical composition, total dietary fiber(TDF), oligosaccharide, isoflavone and phytic acid contents of seven domestic and three imported soybean cultivars were determined. TDF contents were ranged from 16.83 to 21.71%(w/w) without remarkable differences among soybean cultivars. Phytic acid contents of domestic cultivars such as Geomjongkong 1 (3.02%) and Dawonkong (2.92%) were higher than imported ones such as Canadian (2.07%) and American (2.22%) soybeans for soybean sprout and US No. 1 (2.16%). The phytic acid contents of cotyledon parts were 1.5 to 2 times higher than those of hypocotyl parts. Isoflavone contents in whole seed were wide ranged from 371 to 2,398 $\mu\textrm{g}$/g among cultivars and it were existed mainly as glucoside isomers. Profiles of isoflavone aglycones were composed of 52% genistein, 36% daidzein and 11% glycitein. Hwanggumkong, Dawonkong, Geomjongkong 1 and American soybean for sprout contained lower isoflavone than others. Hypocotyl parts of soybeans contained from 6120.1 to 16921.1 $\mu\textrm{g}$/g isoflavone with ratio of 48% glycitein, 35% daidzein and 10% genistein. Isoflavone contents of cotyledon parts were ranged 375-2393 $\mu\textrm{g}$/g, composition of which had no glycitein, 55% genistein and 38% daidzein. Oligosaccharide contents were similar among cultivars. Stachyose of 3.0-3.9%, raffinose of 0.8-1.2%, sucrose of 4.5-7.8% and fructose of 0.3-0.8% were determined.

  • 단백질의 생물가는 그것을 구성하고 있는 각 아미노산의 양적및 질적조성에 기인하며 그들 아미노산의 양적 대소및 균형이 그 단백질의 영양가를 좌우하고 있다. 또한 인체및 동물에 대한 아미노산의 요구량까지도 보고되어 있다. 이와같이 단백질의 영양학적가치에 대한 개념이 아미노산에 대한 것으로 전환됨에 따라 식품중 아미노산의 함량조사가 여러 나라에서 보고되고 있다. 그러나 우리나라에서는 두류발효제품및 엽채단백질중의 유리 아미노산을 paperchromatography법에 의하여 검출한 것과 비색방법에 의한 양적변화 정도만이 보고되었을 뿐이다. 저자들은 미생물학적방법에 의하여 한국식품중 아미노산의 함량 조사를 착수하여 위선 지금까지 얻은 성적을 보고하고자 한다.

Effects of Chitosan Treatment on Changes of Soyasaponin Contents in Soybean Sprouts (키토산 처리가 콩나물의 Soyasaponin 함량변화에 미치는 효과)

  • Elicitors are defined as substances that induce defense responses in plants, which include an increased synthesis of secondary metabolites. Saponin, one of the secondary metabolites, has various physiological effects such as anticancer, antioxidant, cholesterol-lowering activities, etc, in human. This study was carried out to find whether a treatment of soybean sprouts with chitosan as an elicitor, increases saponin contents. Saponin contents in soybean sprouts increased by the chitosan treatment during cultivation, reached the peak on the sixth day, and then decreased. A biosynthesis of group B soyasaponin appeared to be regulated differently. The content of soyasaponin I, a member of group B saponin, was the highest in 250 ppm chitosan-treated soybean sprouts, while the contents of soyasaponin II, III and IV were the highest in 1,000 ppm chitosan-treated soybean sprouts. The content of soyasaponin V changed little in soybean sprouts that had been treated with various concentration of chitosan.
