Effects of Dietary Supplementation of Mulberry Leaves Powder on Carcass Characteristics and Meat Color of Broiler Chicken (사료 내 뽕잎 분말 첨가 급여가 육계의 도체특성 및 계육의 육색에 미치는 영향)

  • This study was conducted in order to investigate the effects of supplementation diets of mulberry leaves powder on performance, carcass characteristics, blood characteristics, and meat color of chicken meat. Broiler chicks were fed diets containing 0% mulberry leaves powder (Control), 1% mulberry leaves powder (T1), 2% mulberry leaves powder (T2), and 3% mulberry leaves powder (T3) for five weeks. The weight gain, feed intake, and feed conversion were no significant difference among treatment groups. The carcass weight, carcass ratio, gizzard, cecum, heart, and abdominal fat weight were not significantly different. The liver weight significantly decreased by the supplementation of mulberry leaves powder compared to the control (p<0.05). The total cholesterol and LDL-cholesterol concentration of the control were higher than T3, but the HDL-cholesterol concentration, glucose, and albumin of the control were lower than those of the treatment groups (p<0.05). However, there were no significant difference in GPT and triglyceride concentration among treatments. In meat color, the CIE $L^*$ and $a^*$ value of treatment groups (T3) showed significantly higher value compared to the control, however, no difference in the CIE $b^*$ values was observed among treatment groups. In conclusion, these data indicate that 3% mulberry leaves powder supplementation was most effective in decreasing the total cholesterol and LDL-cholesterol as well as increasing the HDL-cholesterol, glucose, and albumin concentration.

  • This study was carried out to develop the utilization of mulberry resources conserved by Jeollabuk-Do Agricultural Research & Extension Services. Mulberry accessions were tested for agronomic characteristics and antioxidant capacity according to varieties. From that result, three suitable varieties such as 'Sinilppong', 'Suwonsang 2' and 'Ilbongeum' were selected for the production of mulberry leaves. They have strong agronomic characteristics like size, yield and resistance against damages by blight and harmful insects. Whereas, 'Gumunyoung' showed the lowest freezing resistance. In the antioxidant capacity analysis of mulberry leaves, autumn's mulberry leaves showed higher antioxidant capacity (ascorbic acid equivalent) than that of spring's it. According to collection time, antioxidant capacity were 2,109.8 nmol (August), 2,617.8 nmol (September) and 3,311.5 nmol (October), respectively.

Anti-oxidative Capacity of Mulberry Leaf and its Tea (뽕잎 및 뽕잎차의 항산화능)

  • The importance of genetic resources conservation and utilization for economy and the health and well-being of societies in general is recognized all over the world. Mulberry genetic resources contain many natural components and are considerable resource for functional sericulture. We carried out antioxidative capacity analysis of mulberry leaves that were collected from Korea and some of foreign countries and preserved in the greenhouse. The mean antioxidant capacity of 34 accessions was 892.30nmol(ascorbic acid equivalent). Also we evaluated fruity characteristics and selected 4 accessions as breeding resources for the production of mulberry fruit. To investigate the effect of tea on antioxidative capacity, five kinds of tea(coffee mix, green tea added brown rice, mulberry leaf tea, Polygonatum odoratum tea and black tea added lemon) were selected and analyzed. Their's antioxidative capacity were 2,531.01nmol, 1,867.42nmol, 1,053.72nmol, 292.71nmol and 188.91nmol, respectively. The antioxidative capacity of drinking water soaked with mulberry leaf showed 891.96nmol.

Development of Mulberry-leaf Tea Containing γ-Aminobutyric Acid (GABA) by Anaerobic Treatments (무산소 처리에 의한 감마아미노뷰티르산(γ-Aminobutyric Acid) 함량이 높은 뽕잎차의 제조)

  • To produce mulberry-leaf tea abundant in ${\gamma}$-aminobutyric acid (GABA), mulberry leaves were subjected to two distinct anaerobic conditions ($N_2$ and vacuum) for 12 h before the manufacturing process. Subsequently, changes in the GABA content as well as that of other components were measured. In anaerobically treated mulberry leaves, GABA content markedly increased by 436-472% compared with the control, while the glutamic acid content decreased. However, few changes were observed in the contents of the general components (moisture, carbohydrate, lipid, protein, and ash) and water-soluble solids. Free sugar, catechin, and total phenol content decreased after anaerobic treatment. However, the sensory test scores were not different between the control and anaerobically-treated samples. Consequently, tea products, manufactured post nitrogen gas or vacuum treatment of leaves after harvest, showed functional properties without sensory loss.

Antimicrobial Effect of Mulberry Leaves Extracts Against Oral Microorganism (뽕잎 추출물의 구강미생물에 대한 항균효과)

  • In the current research for natural product with antimicrobial effects, various extracts of Mulberry Leaves against microorganisms were evaluated in terms of the minimum inhibitory concentrations(MIC). In general, Candida albicans was more antimicrobial activity than the other microorganisms such as Streptococcus mutans, Staphylococcus epidermis, and Staphylococcus aureus. The maximum activity was exhibited by ethanol extract of the leaves of Mulberry Leaves against Candida albicans (MIC, $1600{\mu}g/ml$). These results suggest that ethanol and water extracts of Mulberry Leaves have a potential antimicrobial activity.

Analysis of Mulberry Leaves Yields and Amount of Silkworms raising in the Mulberry Tree-shape of Vinyl-house (오디용 뽕나무 시설재배 수형별 뽕잎생산량과 누에 사육량 분석)

  • This study was considered chances of additional income, if farmers raised silkworms in unused mulberry leaves, after harvesting mulberry, investigated yields of mulberry leaves in vinyl-house and optimal amount in raised silkworms, First, the results was investigated productions of mulberry leaves in the mulberry tree-shape of vinyl-house, T-shape harvested 7.07 kg, Y-shape was 6.55 kg, in comparison with convention of it was harvested 4.75 kg mulberry leaves/1 mulberry tree, was harvested 49%, 38% more each. Also, yields of mulberry leaves was used 302 kg when was raised 1box of silkworms in the mulberry tree-shape of vinyl-house. In other hand, yields of raising silkworms was analysed in the mulberry tree-shapes of vinyl-house, mulberry leaves of $1,000m^2$ vinyl-house mulberry tree was raised average of 3.74 boxs silkworms, in the concrete conventional-shape was 3.24 boxs, T-shape did 4.17 boxs and Y-shape was 3.83 boxs, Consequently, if the farmers of $1,000m^2$ vinyl-house mulberry tree raised silkworms with unused mulberry leaves, could get 1~1.2 million won additionally.

Effects of Number of Days After Urea Foliar Spray on Mulberry Leaf Components and Silkworms (요소 엽면시비후 경과일수가 뽕잎 화학성분과 누에에 미치는 영향)

  • The effect of short term duration(1, 2 and 3 days) after urea foliar spray on leaf quality was investigated by chemical analysis of leaves and silkworm rearing with leaves treated with urea in autumn. Foliar spray increased water content by 0.4~0.7% and total nitrogen by 0.19~0.51% in leaves compared to the conventional treatment. Foliar spray increased NO3-N concentration in leaf 503~1107 ppm more than the conventional treatment. NO3-N concentration in leaf decreased with days after foliar spray. Whole cocoon weight and cocoon shell weight increased by 0.02~0.14g and 0.5~3.1 cg, respectively in foliar spray than in the conventional treatment. Though foliar spray raised NO3-N concentration in leaf, leaves harvested one day after foliar spray were no harmful to silkworm.

Effects of Dietary Mulberry Leaf on Loperamide-Induced Constipation in Rats (식이뽕잎이 흰쥐의 Loperamide로 유도된 변비에 미치는 영향)

  • We investigated the effect of dietary mulberry leaf powder (MP) on loperamide-induced constipation in rats. Male Sprague-Dawley rats were given MP in their diets at a concentration of 0% 5% and 10% for 33 days. Rats were divided into 4 groups: normal diet group (NOR), normal diet and loperamide treated group (MPL0), 5% MP and loperamide treated group (MPL5), and 10% MP and loperamide treated group (MPL10). Constipation was induced by subcutaneous injection of loperamide (1.5 mg/kg body weight/day) for the final 5 days of the experiment Supplemental MP had no effect on the food efficiency ratio, but it reduced body weight gain and food intake in a concentration dependent manner. Administration of loperamide decreased food intake. MP had a concentration-dependent effect on decreasing total cholesterol, LDL-cholesterol, and triglycerides and on increasing HDL-cholesterol. Loperamide had no significant effect on serum lipid profiles. Loperamide decreased the number and wet weight of fecal pellets and fecal water content MP increased the number and wet weight of fecal pellets and fecal water content in a dose-dependent manner. In addition, MP increased gut transit time and transit speed, and the guts of mts treated with MP plus loperamide were longer than those of mts treated with loperamide alone. These results indicate that MP is an effective treatment for constipation.

A Study on the Optimization of Rice Pasta with Addition of Mulberry Leaf Powder (뽕잎 분말 첨가 쌀 파스타 제조의 최적화에 관한 연구)

  • The purpose of this study is to develop fresh pasta added with mulberry leaf powder as functional fresh pasta. Through previous research, the mixture of 40% of flour and 60% of rice powder was optimum for making noodles with mulberry leaf powder. Making fresh pasta with 40% of wheat flour, 60% of rice powder (optimum moo for making noodles) and mulberry leaf powder(0.5% 1.0% 1.5% 2.0%) was done, followed by the mechanical test(moisture content, color value, texture, tension) and the sensory analysis(quantitative descriptive analysis, preference test). Moisture contents of raw pasta and cooked pasta were the highest in control; scores for moisture contents of cooked pasta were higher than those of raw pasta. The result indicated that the more mulberry leaf powder was, the lower L-value and a-value were in raw pasta and cooked pasta. While the b-vale(yellowness) of raw pasta was the highest in control(9.81), 1.0% of mulberry powder addition sample was the highest in cooked pasta. For hardness, the 2.0% of mulberry leaf powder addition sample has high scores, and adhesiveness and chewiness were no significant difference. The 0.5% of mulberry leaf powder addition sample was the longest in tension distance, which was resulted from the lack of water contents in mulberry leaf powder. In cooked pasta, tension distance had no significant difference between the samples, and force showed the highest score in control. The quantitative descriptive analysis showed that color intensity, savory taste, bitterness were the highest in the 2.0% of mulberry leaf powder addition sample. Gloss and chewiness were no significant difference between the samples. Grassy flavor, savory flavor, bitterness and grainess were intense as mulberry leaf powder was added The preference test showed that MRP 1.5 containing 1.5% of mulberry leaf powder was the most preferable for color, texture and overall quality. In conclusion, 40% of wheat flour, 60% of rice powder and 1.5% of mulberry leaf powder made the best formula of fresh pasta with mulberry leaves.

Effects of Mulberry Leaf Extract Feeding on Lipid Status of Rats Fed High Cholesterol Diets (뽕잎추출물이 고콜레스테롤 식이 흰쥐의 지질대사에 미치는 영향)

  • This study was to investigate the effect of mulberry leaf water extract on lipid metabolism of rats fed high cholesterol diets. Sprague-Dawley male rats were randomly assigned to two normal groups; mulberry extract-free (N), 0.16% mulberry leaf extract (NM) groups and high cholesterol groups with four different levels of mulberry leaf extract; 0% (HC), 0.08% (HCL), 0.16% (HCM), and 0.32% mulberry leaf extract (HCH) groups. Serum levels of triglyceride, cholesterol, LDL-cholesterol and AI index in mulberry leaf extract supplemented groups were significantly lower than the HC group (p<0.05). The level of HDL-cholesterol in the HC group was significantly (p<0.05) reduced, compared with N group, but it was increased by mulberry leaf extract supplementation. Mulberry leaf extract had no effect on the UDP-glucuronyl transferase activity. Also, there was no significant difference in the level of liver cholesterol between the HC and mulberry leaf extract supplemented groups, while there was significant difference in the levels of liver total lipid and triglyceride. The HCM and HCH groups had more significant reduction in the activity of lipoprotein lipase in epididymal fat tissue than the HC group. The levels of total lipid, triglyceride and total cholesterol in epididymal fat tissue of HCL, HCM and HCH groups were decreased compared to HC group. The levels of total lipid, triglyceride and total cholesterol in feces from HCL, HCM and HCH groups were higher than those of HC group.
