Freshness Extension of Cucumber packed with Expandable Polystyrene Box (Expandable Polystyrene Box 의 오이의 신선도 유지효과)

  • Weight loss of cucumber packed with corrugated paperboard box after 7 days storage at 20oC was 4.9%, and those of 20LD, 40LD film and EPS box were 0.8, 0.7, and 0.8%. Total ascorbic acid content of EPS was 15% higher than that of control. Hardness of EPS was also similar trend. Chlorophil content of cucumber packed with EPS box was 21% higher than that of control. Decay of control was 1-2 pieces per box, but the others was not found. Overall appearence of LD, EPS was better than that of control.

Ascorbic acid content of EPS was 20% higher than that of control. Hardness of EPS was also similar trend. Titratable acid and total soluble solid content of pear were not different among the packages. Decay of control was 1-2 pieces per box, but the others was not found.   • The results of studies for determining the nutrients sources of mycelial growth for optimal condition of Pleurotus cornucopiae are as follows; 1) Optimal carbon source of mycelial growth of Pleurotus cornucopiae is maltose(357mg/25ml/15d); 2) Optimal nitrogen source of mycelial growth of Pleurotus cornucopiae is peptone(347mg/25ml/15d); 3) Optimal organic acid source of mycelial growth of Pleurotus cornucopiae is glutamic acid(389mg/25ml/15d); 4) Optimal vitamin source of mycelial growth of Pleurotus cornucopiae is biotin(399mg/15d); and 5) Optimal C/N ratio for mycelial growth for determining the condition of Pleurotus cornucopiae is 40(398mg/15d).

  • This study was measured weight loss, total ascorbic acid, titratable acidity, and soluble solids content to investigate the effect of EPS(expanded polystyrene foam, foaming rate 55 times V/W) box, LDPE film pouches and double wall corrugated fiberboard box during storage at 20$\^{C}$. Weight loss of apple packed with corrugated paperboard box after 40 days storage was 5.7%, arid those of LDPE, CE(zeolited coated film) film and EPS box were 0.2-0.5%. Ascorbic acid content of apple packed with LDPE, CE, EPS was higher than that of control. Titratable acidity and total soluble solid content of control were changed 40% and 10%, but the EPS were changed 27% and 4%, respectively. Overall appearances of ‘Fuji’apple packed with LDPE, CE and EPS were better than that of control.

Study on the Chemical Change of Amino Acid and Vitamin of Rapeseed during Germination (발아에 의한 유채의 아미노산 및 비타민 함량의 조성변화)

  • The objective of this was to investigate the technical feasibility of producing toxicant-free by germination. To this end, rapeseed(Brassica napus L.) was germinated at $25^{\circ}C$ for 120 hours, and the chemical compositions of amino acids and vitamins were determinated in every 24 hours during germination. The results obtained are summarized as follows: Before germination, rapeseed contained 5.4g/16g N of glutamic acid and high percentage of the other amino acids in order of Asp>Leu>His>Pro>Arg>Lys>Gly>Ser>Ala>Val. The amino acids were gradually decreased until 96 hours during germination had tendency to show a slight increase in 120 hours. Vitamin B$_1$, B$_2$and C contents in rapeseed before germination were found to be 0.11, 0.21 and 3.72mg% respectively, and the vitamin E was 423ug/g. The vitamin C greatly increased in 72 hours during germination, while the vitamin B group was drastically decreased in 72 hours. The results obtained by this method clearly demonstrate that germination process is very effective to the removal of toxicants in rapeseed.

Antioxidant activity of vitamin C in iron-overloaded swine plasma (철분 투여한 돼지에서 비타민 C의 항산화 작용)

  • Iron deficient anemia in piglets could be overcome by supplementary iron. Overloaded iron induced peroxidation of cell membrane and increased malonaldehyde (MDA). Antioxidant activity of vitamin C has been studied in iron-overloaded swine plasma. Erythrocyte fragility, MDA, glutathione, vitamin A, and vitamin E were measured in swine plasma with or without iron (0~1mg/dl) and vitamin C (0~10mg/dl). Erythrocyte fragility increased from 8% to 45% in iron group and reduced from 57% to 43% in vitamin C group with dose dependant response. MDA was $0.94{\pm}0.05$ and $1.86{\pm}0.10$ nmol/ml in piglet and pig, respectively, and significantly high in pig (p<0.05). Iron increased MDA from $1.86{\pm}0.10$ to $9.46{\pm}0.04$ nmol/ml in pig, but not in piglet (p<0.05). Vitamin C reduced MDA from $9.46{\pm}0.04$ to $4.80{\pm}0.10$ nmol/ml in pig. Iron increased glutathione from $90.12{\pm}0.10$ to $108.52{\pm}5.29$ nmol/dl in pig, and vitamin C reduced glutathione from $108.52{\pm}5.29$ to $93.52{\pm}2.44$ nmol/dl (p<0.05). Vitamin A and E were $24.86{\pm}2.70$ to $138.29{\pm}6.70{\mu}g/dl$, respectively in iron group, and $35.76{\pm}0.60$ to $177.21{\pm}2.95{\mu}g/dl$, respectively in supplementary vitamin C group (p<0.05). These data indicated an antioxidant activity of vitamin C in iron-overloaded swine plasma.

Helicobacter pylori Infection and Vitamin C: Past, Present and Future Perspectives (Helicobacter pylori 감염과 비타민 C: 과거, 현재, 미래)

  • Helicobacter pylori is the causative agent of chronic gastritis and has a role in the pathogenesis of peptic ulcer diseases, and gastric cancer. There have been reports suggesting a close link between these gastroduodenal disorders and a state of vitamin C deficiency. In this paper, the past, present and future perspectives on H. pylori infection and vitamin C will be discussed under the following view points. Since the ecological niche of H. pylori is the mucus layer and intercellular junctions of the gastric epithelium, the various kinds of host inflammatory cells motivated by the local and systemic immune responses cannot eliminate the microorganisms. When the invading foreign body is not removed, despite full activation of defense mechanisms, adverse consequences of the immune responses develop on the host gastric mucosa. The reasons for the body vitamin C depletion could be explained as follows; 1) the increased vitamin C consumption by increased oxygen free radical production through the prolonged hypersensitivity reactions in the gastric mucosa, 2) the increased vitamin C oxidation by the nitrite which is formed from nitrate reduction by the intragastric bacteria proliferated in the hypochlorhydric gastric cavity, 3) the strong ${\gamma}$-glutamyltranspeptidase activity of H. pylori which depletes the glutathiones in gastric mucosa. Depletion of glutathiones in the stomach favors irreversible oxidative destruction of ascorbic acid. Both persistent inflammatory burdens in the stomach by H. pylori and resultant vitamin C depletions synergistically and uninhibitedly might aggravate the hypothetical sequence of gastric carcinogenesis: atrophic gastritis${\rightarrow}$intestinal metaplasia${\rightarrow}$dysplasia${\rightarrow}$gastric adenocarcinoma. High intake of vitamin C could reverse the hypothetical sequence of the gastric carcinogenesis via direct and indirect effects on H. pylori and host-parasite relationships.

Study on the Protective Mechanism of Vitamin C in the SH-SY5Y Cell Death Induced by the Streptozotocin (스트렙토조토신으로 유도된 신경세포사멸에서 비타민 C의 보호 기전 연구)

  • In this study, we analyzed the protective effects of the vitamin C in the streptozotocin (STZ)-induced apoptosis using the SH-SY5Y, a neuroblastoma cell line. The cells were pretreated with the vitamin C ($100{\mu}g$) for 30 min, followed by the 24-hr treatment with the 2.5-mM STZ. The cell-viability assay using the Cell Counting Kit (CCK)-8 revealed the cell-survival rate increased by 15% following the vitamin-C pretreatment compared to the STZ-only treatment. Moreover, we conducted the western-blot analysis to determine the protective effect of the vitamin C regarding the apoptosis. Compared to those in the STZ-only-treatment group, the p-ERK and Bcl-2 expressions increased in the vitamin-C-pretreatment group, whereas the p-JNK and Bax expressions decreased. The vitamin-C pretreatment increased the expression of the SOD-1, an antioxidant enzyme, by more than 30%, indicating its protective role in the STZ-induced oxidative stress. Also, we found both the intrinsic- and extrinsic-pathway mechanisms of the STZ-induced apoptosis. The results of this study $s{\mu}ggest$ vitamin C may help prevent the neurodegenerative diseases.

Association between Vitamin C and the Prevalence of Obesity among Korean Adults - The Korea National Health and Nutrition Examination Survey 2016-2017 - (한국 성인의 비타민C 섭취와 비만 유병률의 연관성 - 2016-2017년 국민건강영양조사 자료를 이용하여 -)

  • This study investigates the relationship between vitamin C intake and obesity prevalence among Korean adults. Based on data of the Korean National Health and Nutrition Examination Survey (2016-2017), a total of 1,356 participants were included in this analysis. Increasing the dietary vitamin C intake resulted in a significantly decreased occurrence of BMI obesity prevalence (p for trend=0.0194) and WC obesity prevalence (p for trend=0.0452). Moreover, increasing the dietary vitamin C intake of Korean adults having a high frequency of eating breakfast resulted in significantly decreased BMI obesity prevalence (p for trend=0.0406) and WC obesity prevalence (p for trend=0.0432). Among the Korean adults who ate out frequently, decreased BMI obesity prevalence was determined with increased intakes of dietary vitamin C (p for trend=0.0193) and total vitamin C (food and dietary supplements) (p for trend=0.0429), whereas significant decrease in WC obesity prevalence was observed with increased dietary vitamin C intake (p for trend=0.0484). Our results provide conclusive evidence that consumption of dietary vitamin C is associated with obesity prevalence in Korean adults, according to their habits of eating breakfast and frequency of eating out.

A Comparative Study of Bone Mineral Density and Urinary Bone Metabolic Makers according to the Nutrients Intake Levels in Postmenopausal Women (일부 폐경 후 여성의 영양소 섭취수준에 따른 골밀도와 소변 중 골대사 지표 비교연구)

  • To elucidate the relationship among the levels of nutrients intake, bone mineral density(BMD) and the urinary biochemical markers of bone metabolism, this survey is conducted with 225 postmenopausal women over 50 years of age. The urinary biochemical markers including deoxypyridinoline(DPD) and Ca excretion were measured. Bone mineral densities of lumbar spine(L2-L4), femoral neck, ward's triangle and trochanter were measured with dual-energy X-ray absorptiometry and the nutrient intake data obtained by 24 hr recall method. Mean age of all subjects was 64.8 years old, and the BMDs of the subjects were $0.86g/cm^2$(lumbar spine), $0.60g/cm^2$(femoral neck), $0.49g/cm^2$(trochanter), and $0.41g/cm^2$(ward's triangle). The results were compared among 3 groups with different nutrient intake levels classified by the percentage of Dietary Reference Intakes(DRIs) for Koreans as follows: low < 75% DRIs, 75% DRI $\leq$ adequate < 125% DRIs, high $\geq$ 125% DRIs. Bone mineral density of adequate protein intake group was significantly higher than those of low and high protein intake groups(p<0.05). Urinary DPD excretion was lowest in protein and calcium adequate intake groups(p<0.05, p<0.05), respectively. In relation to urinary Ca excretion, it is revealed to be considerably lower in the groups taking protein and vitamin C adequate intake(p<0.05, p<0.05). The percent DRI of protein and calcium were positively correlated with the BMD of the femoral neck after adjusted age(p<0.05, p<0.05). These results showed that there are probably some relationships between nutrient intake levels and urinary biochemical markers. For postmenopausal women with adequate nutrition expecially protein, calcium and vitamin C, has an important role to postpone bone resorption and to prevent the decrease of bone density.
