부엌이 달라지고 있다. 옛날에 집안 구석에 위치하고 단순히 취사만이 가능했던 공간, 더욱이 남자들은 들어오지 못하게 하는 철저한 여성만의 공간이었다. 이런 부엌이 세월을 거쳐 이젠 주거공간의 중심으로 부상했다. 주거공간의 변천사, 그 가운데 부엌의 의미를 되짚어 본다.

본 연구에서는 한국과 중국의 부엌 공간 조명환경을 비교하기 위하여, 한국 115가구와 중국 70가구를 대상으로 실태조사를 실시하였다. 그 결과, 첫째, 부엌공간의 크기는 중국보다 한국이 좀 더 큰공간을 사용하고 있었으며, 싱크대와 식탁 높이는 차이가 크지 알았다. 둘째, 중국의 경우 국부조명을 사용하지 않는 비율이 매우 높게 나타났으며, 전반조명도 전반적으로 부족함을 알 수 있었다. 또한 부엌의 조도 측정결과, 싱크대의 KS 평균조도인 200[Ix]를 만족시키지 못하는 경우가 한국445[%], 중국63.1[%]로 나타났으며, 식탁의 경우 KS 평균조도인 400[Ix]를 만족시키는 경우는 한국과 중국 모두 10[%] 미만으로 매우 미약한 것으로 나타났다. 셋째, 부엌 공간 조명의 밝기정도와 만족도는 한국과 중국 모두 보통정도인 것으로 나타났으며, 실내환경의 문제점으로는 한국의 경우 열환경, 음환경, 조명의 순으로 나타났으며, 중국은 조명, 공기, 일조량의 순으로 나타났다. 또한 조명환경 측면의 문제점으로 양국 모두 밝기, 관리, 효율성 순으로 나타나 주택계획 시에 이러한 점에 주안점을 두어 조명환경계획을 할 필요가 있다.

Space plays a very important role in the human residential environment. Space is where the direct experience of life and expansion of that experience are made out of simple residential space. In particular, kitchen space is where the importance of the living space is perceived and is becoming an everyday part of life through television programs. Thereby, kitchen space is where the culture of everyday life plays a role in communication based on the very important production and function of television culture. The kitchen is where various experiences emerge. It is a space where the phenomena of communicating through cooking, experiencing tastes, and communicating with family members is realized. The purpose of this study is to analyze the relationship between communication and production in the kitchen through analysis of "Yune Restaurant 1" on tvN channel. The results of this study show that the human kitchen space leads to expansion of various experiences in the process of various cultural discounts.

The purpose of this study was to examine the changes of kitchen space based on the additional functions since 1960s'. The review of literature was performed to accomplish the purpose. The changes of paradigm of kitchen space due to the social, technological, cultural factors had made the additional functions of kitchen more complicated, and further, resulted in changes of floor plans of housing as well as kitchen space.

Kitchen space is one of the most dangerous places for the elderly. Modification of kitchen space for improving safety and independence for older residents is very important factor for aging -in-place. The purpose of this study wes to identify the current situation and modification of kitchen space by elderly-headed household. The sample included 108 respondents over the age 65 who consisted of elderly-couple or single person household with homeownership in Seoul. The data were analyzed by descriptive statistics. Based on the findings of the study, the present incidence and recognition of future need in kitchen modification were identified. Changes in kitchen space made tended to be nonstructural or relatively inexpensive items. In conclusion, this study suggests several ideas for improving current physical problems of kitchen space to support daily living of older residents.

The house of the China Korean ethnic group in the countryside, kitchen is one of the most important rooms, which works for cooking, warming, and storage. Besides, it has some complementary functions such as washing and showering. The spatial structure of the kitchen is divided into three types, 'jeongji', 'walkway' and 'independent' one. Those houses which are near Korea peninsula mainly belong to the 'jeongji' type; whereas those houses which are in the inland of Jilin, Heilongjiang and Liaoning Provinces mainly are 'walkway' and 'independent' types. The main constituents of the kitchen include pots and pans, water supply and sewerage, fuel and storage etc. The differences among these constituents lead to the geographic differences in the aspect of cooking method and dietary culture, and finally the different kitchen spatial characters are manifested.

This study investigated the status of kitchen of units in elderly housing facilities and the housing needs of residents. Compared with a lot of comprehensive and alternative studies on elderly housing facilities until now, specialized studies of behavior of elderly housing life and detailed dimensional study have hardly made. Therefore we intend to examine the status of kitchen planning on representative elderly housing facilities in Korea. As the methods of this study, we executed a field study into 4 representative elderly housing facilities in Korea. We visited each 2 units out of the outstanding 4facilities and surveyed the total 8 kitchens. Then we analyzed the space planning and kitchen furniture design of them and the state of kitchen commodities, and measured the kitchen equipment. In addition, we executed interview about satisfaction, preference, use from the residents. As a result, we could find out that depending on whether residents were sewed with meal offered from the facilities or not, the pattern of usage and commodities were quite different. It is necessary to supply the simplest spaces just for preparing some refreshment and tea are suitable. And for the self-cooking residents, much larger cabinets and utility rooms are additionally needed. Safety and functional aspect were quite well designed. Washing machines are usually built-in the kitchen cabinets, and residents are satisfied with this arrangement. We hope that the supplementary study about old people habit and behavior will be a good data of kitchen planning for Korean-type elderly housing units of facilities.

Objective : The purpose of this study was to investigate the preferences of kitchen environment for stroke patients. Methods : The subjects of this study were 97 who have experience in rehabilitation therapy at hospitals in Busan. A questionnaire was distributed and collected from February 24th to March 13th, 2014. Descriptive statistics of frequency Study were used to analyze data. Results : First, the subjects demand for improvement that use a chair for work and install non-slip tiles. Second, they preferred the non-slip mat, boilers in heating equipment, drawer storage, L-shaped safety handle, adjustable sink of the height, automatic cutout of gas leak, faucet of touch-sensitive type, ㄷ-shaped kitchen and the ceiling-type hood in ventilation system. Third, they need kitchen items such as the sink self coming down, scissors for slices and knife to avoid hand injury. Conclusion : This study would contribute to kitchen environment for fall prevention and ease in use.
