The effect of roasting of Omija (Schizandra chinensis Baillon) on the physicochemical properties and the sensory quality of the extract was investigated in order to improve the quality of Omija beverage. The response surface methodology was introduced to optimize the roasting condition of Omija based on the sensory quality of the extract. The titratable acidity, the soluble solid content and the reducing sugar content of the extract increased with a mild roasting, but decreased with an excessive roasting. Prolonged roasting at high temperature decomposed red pigment making the color of the extract lighter, less red and less yellow. A mild roasting of Omija improved the sensory quality of the extract, and the highest sensory quality of the extract was provided with the roasting at $180^{\circ}C$ for 10 min, indicating the optimum roasting condition of Omija. The extract of the roasted Omija was superior in sensory properties to that of the unroasted one.

Sesame oil has superior oxidation stability and unique roasting flavor. Accordingly, this has been used for edible oil as well as a seasoning material for a long time in Korea. But sesame oil is a simple pressed oil, unrefined. During manufacturing process of roasting-expression, benzo(a)pyrene[B(a)P] formed as a strong carcinogenic substance causes a social problem. Detection of B(a)P in sesame oil was due to residual content in raw-sesame seeds and formation in roasting-expressing process. Especially, maximal forming process was roasting. Accordingly, in this study applied the traditional roasting method by roaster and microwaving method as a new type. Best roasting time by microwaving was for 5~10 min, B(a)P content in sesame oil was 0.53~0.79 ${\mu}g/kg$. These B(a)P contents showed 1/2 level than direct roasting method by roaster. As a result, B(a)P contents in sesame oil appeared the difference of more than 2 times according to roasting condition of sesame seed. For minimizing of B(a)P content in sesame oil is demanded roasting of sesame by microwaving than direct roasting by roaster.
Surface color, water extract color and soluble solids of the roasted barley resulted from the various roasting conditions were determined to establish the optimum roasting conditions. The correlation coefficients between the surface color of the roasted barley and its ground was in the range from 0.957 to 0.994, and which showed the internal color being well represented that of surface of the roasted grain. The degree of roasting was determined maim by the roasting temperature, rather than by the total heat energy input during roasting. The maximum yield of the water soluble solids was 68% and obtained from the barley roasted at $232^{\circ}C$ for 25 minutes. The readings of Y-value of the roasted whole barley was a good index to judge and control the degree of roasting.

Changes in physicochemical characteristics of steamed rice during roasting were investigated. Steamed rice was roasted at various temperature $(150{\sim}220^{\circ}C)$ for various time $(10{\sim}30min)$. L and b Hunter color values of steamed rice were decreased, but E value was increased by roasting. The water absorption index and the water solubility index were gradually with increasing roasting temperature and time up to $200^{\circ}C$ for 30min, but decreased at $220^{\circ}C$ for 20min. The yield of water extracts from steamed and roasted rice were sharply increased with increasing roasting temperature and time, however, precipitates and turbidity were decreased. The content of reducing sugar was slowly increased up to $200^{\circ}C$ and remarkably increased above it. The contents of amino acids were decreased by roasting. Among them, cystine, lysine and serin were significantly reduced with increasing roasting temperature.
Six kinds of sunsik containing different contents of brown rice(BR; 20, 30, and 50%) were prepared and subjected to various processing conditions(with or without roasting at $200^{\circ}C$ for 20 min e.g., designated as RBR50 or BR50) to assess their functionality as ready-to-eat foods. They were also assessed for their nutritional and sensory properties and oxidative stability. Dietary fiber contents were proportionate to the levels of added BR. Protein was highest in RBR50 (p<0.001), which also had the highest amounts of free and structural amino acids. The amount of free amino acids tended to increase with roasting, although most amino acids were present in structural form. Oleic acid and linoleic acid were the predominant fatty acids in all prepared sunsik, and RBR50 presented noticeably higher peroxidability index due to its higher amount of linoleic acid(p<0.05). Nevertheless, RBR50 showed good oxidative stability; this phenomenon was observed in all sunsik with roasted BR but not in those with non-roasted BR. It is implied that potential antioxidants might have been newly formed or converted from their precursors while BR was roasted. Roasting process also had an impact on the sensory properties of sunsik, e.g., sunsik with added roasted BR showed lower dissolution and darker color intensity compared to its counterpart sunsik.
This study was conducted to optimize roasting process of Job's tears for utilization as food Optimal condition for masting was investigated with changes in temperature and time by response surface methodology. The qualities of water extract such as browning degree, polyphenol and DPPH radical scavenging ability were affected more by roasting temperature than time. The values increased with temperature and time proportionally. The response variables were more significant with temperature than time and the established polynomial model was suitable (P>0.05) model by Lack-of-Fit analysis. Optimal roasting conditions with the limit of $0.2{\sim}0.3$ browning degree, $2.0{\sim}2.5{\mu}g/mL$ polyphenol, $30{\sim}40%$ scavenging ability and $0{\sim}100$ hue angle were $215^{\circ}C$ and 32 min.
This study was conducted to analyze the properties of the roasted dandelion tea prepared after various pre-treatments such as pre-drying, steaming and air blast drying. The dandelion tea was prepared by roasting the pre-treated dandelion leaves and its total yield, pH, soluble solid content, turbidity, browning and sensory value were evaluated. Total yield and soluble solid content were the highest in case of air blast drying. Turbidity and browning degree were similar in all the teas regardless of their pre-treatment including pre-drying, steaming or air blast drying. The best palatability in the sensory evaluation was obtained at the steaming condition for 60 sec without pre-drying. Longer air blast drying time resulted in the increase in the a and b values. turbidity, browning degree, total yield and soluble solid content in the air blast dried tea.

The characteristics of cold-pressed sesame oil (CPSO), virgin sesame oil (VSO), commercial heat-press extracted sesame oil (CHPESO) and commercial supercritical fluid extracted sesame oil (CSFESO) were investigated. The total phenolics of CPSO, VSO, CHPESO and CSFESO were 31.27, 68.33, 60.65 and 31.44 mg/100 g, respectively. Their $\gamma$-tocopherol contents were 32.82, 31.66, 29.26 and 26.87 mg/100g, respectively. The sesamol, sesamin, and sesamolin contents of VSO were the highest. The oxidation induction period (4.53 hr) of CPSO was lower than that of VSO, CHPESO and CSFESO (19.90, 16.50, and 12.23 hr, respectively). CPSO was rapidly oxidized during storage at $60^{\circ}C$ in the dark, and its peroxide value (POV) was increased about 14 times. Although there were few differences in electron-donating abilities at low concentrations (below 100 mg%), VSO showed the highest electron-donating abilities at higher concentrations (77.76% at 10,000 mg%). Contents of linolenic acid and oleic acid were $40.35{\sim}43.98$ and $31.59{\sim}33.46\;g$/100 g, respectively. CPSO contained the highest amount of oleic and linoleic acid among the variously extracted sesame oil.

The analysis of the change in the herbal tea composition according to the difference in processing conditions result. The effects of roasting temperature and time on the antioxidant activities of Cassia tora L. were investigated. In comparison with raw seeds (7.15 mg TAE/g), roasted seeds contained a significantly higher total polyphenol content (p<0.05). However, seeds roasted at a higher temperature ($250^{\circ}C$) for 10 min showed a significantly lower total polyphenol content (2.30 mg TAE/g; p<0.05). The electron donating abilities of Cassia tora L. seeds increased with an increase in roasting time; further, seeds roasted for 5 min at lower temperatures showed higher electron donating abilities (80.61% at $175^{\circ}C$; 80.75% at $200^{\circ}C$) than did seeds roasted for 5 min at higher temperatures (76.26% at $225^{\circ}C$; 77.35% at $250^{\circ}C$). Seeds roasted at lower temperatures showed adequate L values, regardless of roasting time; by contrast, seeds roasted for 10 min at higher temperatures, showed markedly lower L values. Our results indicate that roasting temperature and time must be controlled to produce high-quality Cassia tora L. products.
