Consumer Attitudes Towards Irradiated Foods (방사선조사 식품에 대할 소비자의 태도)

  • This study investigated the consumer acceptance toward irradiated foods and the factors to distinguish subjects with differential levels of the acceptance. Data were collected from 462 adults in Seoul, Daegu and Busan by the self-administered questionnaire. Frequencies and logistic regression analysis were conducted by SPSS. The results were as follows: (1) the level of awareness about irradiated foods was very low, but the acceptance toward them was high; only 2.8% of the respondents answered that they heard about irradiated foods and knew them very well, and 60.4% were wiling to buy them, and (2) sex, subscription of consumer magazines, and concerns about irradiated foods were factors to distinguish accepters from non-accepters; the respondents who were males, subscribed for consumer magazines, and had high concerns about irradiated foods showed less willingness to irradiated foods.

Effect of Si-Wu-Tang and Si-Jun-Zi-Tang on the Survival of Jejunal Crypt Cells and Hematopoietic Cells in Irradiated Mice (방사선조사 마우스에서 소장움세포 및 조혈세포 생존에 미치는 사물탕 및 사군자탕의 영향)

  • In order to investigate the radioprotective effect of Si-Wu-Tang (Korean name: Sa-Mul-Tang), a kind of traditional Oriental medicine as a blood-building decoction (Oriental medical concept: Bu-Xie), and Si-Jun-Zi-Tang (Korean name: Sa-Gun-Ja-Tang), one of the widely used Oriental herbal medicines as an energy tonic (Chinese medical concept: Bu-Qi). the jejunal crypt survival, endogenous spleen colony formation, and apoptosis in jejunal crypt cells were observed in irradiated mice. Jejunal crypts were protected by Si-Wu-Tang pretreated both per os (2 mg/mL of drinking water for 7 days, p<0.05) and intraperitoneally (1 mg/head, single injection at 24 hours before irradiation). Si-Wu-Tang adminstration before irradiation(1 mg/head, single injection at 24 hours before irradiation) resulted in an increase of the formation of endogenous spleen colony (p<0.005). The frequency of radiation-induced apoptosis in intestinal crypt cells was also reduced by pretreatment of Si-Wu-Tang (p<0.01). However, the radioprotective effect of Si-Jun-Zi-Tang was not as significant as that of Si-Wu-Tang. These results suggest that Si-Wu-Tang may be a useful radioprotective food, especially since it is a relatively nontoxic natural product.

Radio-sensitivity Analysis and Selection of Useful Mutants of Rape (Brassica napus L.) by Gamma Irradiation (방사선 처리에 의한 유채의 생육 및 감수성 조사)

  • Rape (Brassica napus L.) plants are one of the major oilseed crops. The main components of rapeseed are oil (35 to 47%) and protein (15 to 32%). For the biodiesel production, the development of a new variety of rape plant with high biomass and/or oleic acid contents is required. In order to determine the optimum dose of gamma-ray irradiation, the rape seeds of cvs. Hanra (Hr), Youngsan (Ys), Tammi (Tm), and Tamra (Tr) were irradiated with a 100~4,000 Gy dose range of gamma-rays. Considering the growth factors, the optimum doses were determined to be within the range of 600~1,000 Gy for the selection of useful mutant lines. Six-hundred and eighty-eight (688) $M_2$ mutant lines were obtained from 600~1,000 Gy gamma-ray-irradiated $M_1$ plants through selfing. The growth characteristics, leaf shape, early flowering, and flower color were all investigated. The selected mutant numbers of early flowering, leaf shape, and flower color were 34, 52, and 3 from the four cultivars, respectively. These mutant lines will be used for the development of a new variety of rape plant with high biomass and oleic acid contents.

Decontamination of Poultry Feeds by Gamma Irradiation (감마선 조사에 의한 가금용 사료의 살균)

  • The effects of gamma irradiation on microbiological and chemical qualities of four kinds of poultry feeds were investigated. The viable counts of total bacteria in the samples were $10^5\;to\;10^6/g$. They were reduced by 2 to 3 log cycles after 3 to 5 kGy irradiation, and were completely eliminated with irradiation of 7 kGy. Coliforms and enteric pathogens were contaminated in high levels in all samples, ranging from $1.2{\times}10^4\;to\;1.7{\times}10^5/g\;and\;4.0{\times}10\;to\;2.6{\times}10^3/g$, respectively, They were sterilized by 3 to 5 kGy irradiation. Fungi, ranging from $10^{2}\;to\;10^4/g$, mainly osmophiles were identified as Aspergillus and Penicillium. They were eliminated to a undetectable level by 5 to 10 kGy irradiation. Six kinds of species, including Aspergillus flavus, were potential mycotoxin producers. Chemical components, such as proximate compositions, and mineral contents were not affected by the gamma irradiation. However, TBA values and amino acid content seemed to be affected by gamma irradiation.

The Combined Effect of Heat and Gamma Irradiation on the Inactivation of Selected Microorganisms Associated with Food Hygiene (식품위생관계 미생물에 대한 가열처리와 감마선조사의 병용효과)

  • The bactericidal effectiveness of radiation alone or in combination with heat against 8 strains associated with food hygiene were evaluated. In the case of radiation alone, D$_{10}$ values of micro-organisms were 0.14~0.48 kGy, and inactivation factors were 4.54~21.43 at the doses of 2~3 kGy. Escherichia coli was the most sensitive among the tested strains, resulting in a D$_{10}$ value of 0.14 kGy. D$_{min}$ values of tile strains were 10~40 minutes at $50\pm1^{\circ}C,$ and 5~10 minutes at $60\pm1^{\circ}C.$ Combination with heat and radiation showed D$_{10}$ values of 0.04~0.31. Inactivation factors were 6.45~75 at the doses of 2 to 3 kGy. Therefore, heat treatment prior to irradiation significantly increased mactivation rate by increasing radiation sensitivity of microorganisms.ganisms.

Quantitative Comparison of 2-Alkylcyclobutanones from Raw Egg Yolk, Boiled Egg Yolk, and Egg Yolk Powder (생난황, 삶은 난황 및 난황분에서 방사선 조사에 의해 유도된 2-Alkylcyclobutanone류의 정량적 비교 분석)

  • We investigated the usefulness of 2-alkylcyclobutanones as markers for irradiated eggs and egg products by comparing 2-alkylcyclobutanone concentrations in irradiated raw egg yolk, boiled egg yolk, and egg yolk powder. One method of detection radiation-induced 2-alkylcyclobutanones involves extraction fat from irradiated egg samples separating 2-alkylcyclobutanones by florisil column chromatography, and identifying GC/MS. 2-(5'-Tetradecenyl)cyclobutanone of 2-alkylcyclobutanones was high relatively in boiled egg yolk, but 2-dodecylcyclobutanone was high in raw egg yolk and egg yolk Powder. Concentrations of the radiation-induced 2-alkylcyclobutanones increased linearly with the irradiation dose. The radiation-induced 2-alkylcyclobutanones from egg samples at 0.5 kGy over and not detected at the non-irradiated samples. Therefore, these compounds could be used as marker of Post-irradiation for egg Products.

Analysis of Radiolytic Compounds of Lipids for the Detection of Irradiation in Dried Mytilus coruscus (건조 홍합의 방사선 조사여부를 확인하기 위한 지방분해산물 분석)

  • Radiolytic compounds of lipids, as hydrocarbons and 2-alkylcyclobutanones, were determined to detect the irradiated dried Mytilus coruscus. The detection methods were composed of fat extraction by Soxtec apparatus from dried Mytilus coruscus, isolation of hydrocarbons and 2-alkylcyclobutanones with a florisil column chromatography and identification of GC/MS. Concentrations of the radiation-induced hydrocarbons and 2-alkylcyclobutanones increased with the irradiation dose. The major hydrocarbons in irradiated Mytilus coruscus were pentadecane and 1-tetradecene originated from palmitic acid, and heptadecane and 1-hexadecene originated from stearic acid. 2-(5'- Tetradecenyl)cyclobutanone of 2-alkylcyclobutanones was high relatively. The radiation - induced hydrocarbons and 2-alkylcyclobutanones from dried Mytilus coruscus were detected at 0.5 kGy over and not detected at the non-irradiated.

Enzyme-Linked Immunosorbent Assay for Identification of Irradiated Eggs (효소면역 측정법에 의한 방사선 조사 계란의 검출)

  • The ovalbumin, a most sensitive egg white protein to irradiation was purified from irradiated hen's eggs. Eggs were irradiated in their shells to 0~7 kGy. To investigate for a practical use in identifying of irradiated eggs, competitive ELISA using ovalbumin was peformed. The binding activity of ovalbumin to anti-ovalbumin IgG was reduced in a dose-dependent manner by irradiating up to 7 kGy, and consider-ably lowered after irradiating at 7 kGy. The concentration of 50% inhibition of ovalbumin to IgG was increased to 1.5~3.7 times in an irradiation dose-dependent relationship. SDS-PAGE of ovalbumin showed that the partial breakdown of ovalbumin was induced by irradiation. The lowering of binding activity was probably due to the partial breakdown of ovalbumin by irradiation. These results demonstrated that the ELISA should be quite useful and effective methods for the identification of irradiated eggs.

  • 건고추는 대부분 세척이나 살균의 과정을 거치지 않고 저장, 유통되므로 해충이나 미생물 오염에 의한 식품위생면이나 상품가치면에서 문제가 되고 있다. 고춧가루의 미생물과 해충 방제를 위하여 ethylene oxide나 propylene oxide 등의 훈증제가 사용되고 있으나 문제점이 많아 점차 사용이 금지되고 있는 실정에 있다. ${\gamma}$-선 조사는 훈증제, 자외선 조사, 초단파 처리등 기존의 방법에 비해 살균 효과는 물론 식품의 품질과 건전성 실험 결과에서도 우수하다고 보고되었다. (중략)
