A Study of Cultural Aspects of Kimchi in 「Banchandeungsok」 (「반찬등속」에 기록된 김치의 식문화적 고찰)

  • "Banchandeungsok" is recipe book written by a woman from a noble family who lived in Cheongju during the late 1900s. The book has 9 among 46 Kimchi recipes. In this study, the literatures from 1700 to 1900s, "Jeungbosanlimkyeongje", "Gyuhapchongseo", "Siuijeonseo", "Buinpilji", "Bogamrok", and "Josenmussangsinsikyorijebeob" were reviewed to examine the significance of "Banchandeungsok" Kimchi in the aspect of food culture. The results are as follows. "Banchandeungsok" Kimchies were considered as typical type of Kimchi of the late Joseon, and the main ingredients include Chinese cabbage, white radish, and cucumber. Salted-fish juice was not used for making Mukimchi, Bachujjanji, Jjanji in "Banchandeungsok", and gallic, ginger, green onion were used as main spice. Therefore, "Banchandeungsok" Kimchies belongs to Damjeo (light salting) type, which is characterized by light and clear flavor of present Cheongju Kimchi. While salted-fish juice was not used for "Banchandeungsok" Kimchies, yellow corbina was used in the most of "Banchandeungsok" Kimchies. Various forms of pepper were used in "Banchandeungsok" Kimchies - green pepper, peper leaf, minced, sliced shredded and powdered red pepper. Two kinds of Kkakdugi were introduced in "Banchandeungsok", which is the first record in the literatures. A typical type of stuffed cucumber pickles and unique type of cucumber Kimchi appeared in "Banchandeungsok".

A Survey of Korean Housewives' Perception on the Commercial Korean Basic Side Dishes in Busan Area (시판 밑반찬에 대한 부산지역 주부의 인식조사)

  • The perception of Korean housewives was investigated on commercial Korean basic side dishes. The questionnaires were distributed to 464 housewives in Busan area. According to the survey, the housewives preferred discount stores (44.1%) to purchase basic side dishes. The reasons for purchasing them were convenience (54.6%) and readiness in small amount (23.1%). The housewives had high perception scores on saying cooking time (4.90/5.00), the possibility of purchasing when they need (3.93/5.00), and convenient use (3.85/5.00). However, they doubted the propriety of making use of chemical seasoning (2.15/5.00), the original place of raw food materials (2.21/5.00), and shelf life control (2.44/5.00). The satisfaction scores on the commercial basic side dishes were 3.06/5.00 in braised perilla leaves, 2.98/5.00 in braised soybean, 2.96/5.00 in pickled garlic, and 2.96/5.00 in stir-fried/muchim dried fish. The priorities on the improvement demand for the basic side dishes were appeared in order of the sanitary preparation, the consistent tastes, the proper amounts of chemical seasonings, and sanitary distribution systems.

Contents of Sodium, Potassium and Food-borne Pathogens Contamination of Side Dishes Distributed in Seoul Area (서울지역 유통 반찬류의 나트륨, 칼륨 함량 및 식중독균 오염도 조사)

  • To determine the contents of sodium and potassium in side dishes, 92 samples from 22 different kinds of side dishes that can be classified into 3 groups were collected in Seoul area and analysed using ICP-OES. The highest sodium content was detected in pepper doenjang muchim, while potassium content was the highest in kong jorim. When comparing the content of sodium and potassium in 3 groups, namely namul, muchim, and jorim, the sodium content of namul group was significantly different from those of jorim and muchim (p-value < 0.05). Sodium intake per serving size was the highest in parae muchim among the samples as estimated to 20.2% of WHO recommendation that is 2,000 mg/day. The amount of sodium by simultaneously intake of soybean sprouts namul, anchovy jorim and parae muchim per one serving size was estimated to 1,000 mg. The potassim/sodium ratios of spinach namul and kong jorim were 1.70 and 0.81, respectively, while that of bracken namul was very low as about 0.1. Food-borne pathogens were not detected out of 92 side dishes.

국의 영양소 구성의 다양성

  • 본 연구에서는 국의 영양소 구성의 다양성을 평가하고 국의 영양에 대하여 고찰하고 영양소 구성을 평가하는 방법에 대하여 고찰하였다. 국의 조리법에 관한 전문서적, 전문잡지 등으로부터 562가지의 국의 레시피를 수집하고 168가지의 전형적인 국의 레시피를 만들어 이를 기본 데이터로 하여 국의 열량 및 영양소를 분석하였다. 결과는 다음과 같다. 1. 168가지 국의 열량 및 영양소 함유량의 평균치를 보면, 한국인을 위한 영양권장량에 대한 충족률이 6.3%(열량)~41.3%(비타민 A)의 범위에 이른다. 그리고 (밥과 국)만으로도 지방을 제외한 영양소를 한 끼 영양권장량의 50% 이상 섭취할 수 있다. 국은 영양이 풍부한 음식임이 분명하다. 2. 영양소 구성의 다양성을 평가하기 위하여 한 끼 영양권장량의 50% 이상 섭취할 수 있는 영양소의 구성을 살펴보았다. 영양소 구성의 다양성에 따르면 (밥과 국)의 82.8%가 '양호한 영양소 구성' 이상이라고 평가되었다. 국은 훌륭한 영양소 구성을 가진 음식으로 평가한다. 3. (밥과 국)의 영양소 구성의 다양성과 국을 만드는데 쓰이는 식재료의 수, 종류, 중량과의 관계를 분석한 결과로부터 '양호한 영양소 구성'을 가진 국을 만드는 간단한 지침을 얻었다. 실제로 국을 만들 때 주로 쓰이는 식재료인 담색채소, 녹황색채소, 어패류, 육류, 두류ㆍ두제품 중에서 3가지를 100g 이상 되도록 준비하여 국을 만들면 '양호한 영양소 구성'을 가진 국을 만들 수 있다. 4. (밥과 국)의 영양소 구성의 다양성의 특징을 바탕으로 적절한 영양을 섭취할 수 있는 식사가 되기 위해 다른 반찬을 곁들이는 지침을 제안하였다. 국을 만들 때 1~2가지의 식재료를 이용한다면 영양소 구성의 다양성이 모자라기 쉽기 때문에 육류ㆍ어패류ㆍ난류 두류 반찬과 채소 반찬을 반드시 갖추어야 한다. 반면, 국의 식재료가 6이상이면 열량과 지방이 넘칠 수 있으므로 육류ㆍ어패류ㆍ난류ㆍ두류 반찬을 반드시 갖출 필요가 없다.

  • This study was conducted to investigate the breakfast patterns and preference with 380 elementary school student in Inchon city using questionnaires. As a result, the subjects were mostly eaten steamed rice with other side dishes and also expected Korean-style steamed rice as a breakfast. The main reason of skipping meal was lack of time. Gruel, bread, cereal, noodle were hardly selected as a breakfast. BMI(body mass index) and Broca index were normal range. Therefore, these results need to provide nutritional education for the elementary school students and reflect the patterns of breakfast through importance and diversity.

Microbiological Hazard Analysis of Commercial Side Dishes Purchased from Traditional Markets and Supermarkets in Daejeon (대전지역 일부 재래시장과 대형마트에서 시판되는 반찬류의 미생물학적 위해도 분석)

  • We evaluated the potential microbial hazard in approximately 19 kinds of side dishes purchased from traditional markets and supermarkets in the Daejeon area of Korea. The total microbial count in most of the side dishes except Kongjaban, Jwipo jorim, Anchovy bokkeum, Maneuljjong muchim, soy sauce red pepper jangachies, and Mumalraengyi purchased in traditional markets was significantly higher than in side dishes purchased in supermarkets. By contrast, Escherichia coli was detected at a level of 4.82 log CFU/g in Jinmichae purchased from traditional markets.

Prevalence of Microbiological Contamination in the Ready-To-Eat Side Dishes Sold in Gyeongsangnam-do, South Korea (경남지역에서 유통되는 즉석 반찬류의 미생물 오염도 조사)

  • The consumption of ready-to-eat side dishes is rapidly growing in South Korea. These foods are particularly vulnerable to microbiological contamination as they are often cooked without any treatment, such as heating or stored at room temperature after cooking. Hence, in 2022, we analyzed the ready-to-eat side dishes sold in Gyeongsangnam-do, South Korea for microbiological contamination. We collected 100 samples from supermarkets in 7 cities, and then examined them for presence of food-borne pathogens and sanitary indicator bacteria. In the analysis of the food-borne pathogens, Bacillus cereus and Clostridium perfringens were isolated from 51 samples (51.0%) and 3 samples (3.0%), respectively. However, both quantitatively met the Korean Food Standards Codex. Genes of five different enterotoxins and one emetic toxin were analyzed from the 51 isolated B. cereus strains. We detected enterotoxin entFM (100.0%), nheA (94.1%), hblC (58.8%), cytK (56.9%), and bceT (41.2%) in 51 isolates, and emetic toxin gene, CER, in only one (2.0%) isolate. We did not detect C. perfringens toxin gene (cpe) that causes food poisoning in any one of the three C. perfringens isolates. In the case of sanitary indicator bacteria, Kimchi had the highest levels of total aerobic bacteria and coliforms, followed by Saengchae, Jeotgal, Jeolim, Namul, and Jorim, respectively. We counted total aerobic bacteria at two different storage temperatures (4℃ and 20℃) to determine the effect of storage temperature. When stored at 20℃, total aerobic bacteria count increased in most of the ready-to-eat side dishes, except for Jeotgal. This result conclusively shows the need for refrigerating the ready-to-eat side dishes after purchase. Further research is needed to assess the risk and safety of the ready-to-eat side dishes available in the market and determine appropriate safety management practices.

Comparative Study on Content and Composition of Oligopeptide, Free amino acids, 5'-Ribonucleotides, and Free sugars in salted preserves Produced at Korea and Japan (한국과 일본의 젓갈 중 Oligopeptide, Free amino acids, 5'-Ribonucleotides와 Free Sugars 성분의 비교 연구)

  • To investigate the difference of palate between Korean and Japanese people, we analyzed oligopeptide, free amino acids, 5'-ribonucleotides and free sugars of salted preserves from Korea and Japan. The salted preserves from Korea were grouped into 3 classes, 'Food Market (Korea)', 'Side Dish (Korea)', 'Bottled (Korea)'. The 'Side Dish (Korea)' and the 'Bottled (Korea)' type are made by adding to the 'Food Market (Korea)' seasonings, red pepper or other food materials. The salted preserves from Japan were bottled goods purchased at food stores, and they were classified as 'Bottled (Japan)'. The results were as follows: (1) Sodium chloride was 23.2% in the 'Food Market (Korea)' type. 14.4% in the 'Side Dish (Korea)', 7.1% in the 'Bottled (Korea)' and 5.8% in the 'Bottled (Japan)', respectively. (2) The 'Food Market (Korea)' didn't contain free sugars. but all the other salted preserves contained $3,500{\sim}6,500\;mg$ free sugars/100g. (3) None of the salted preserves contained 5' IMP or 5' GMP. (4) The main free amino acids of the 'Side Dish (Korea)' were glutamic acid, leucine and alanine, but the 'Bottled (Japan)' contained an extremely high amount of glutamic acid.

Exploration of Preservation Hurdles in Korean Traditional Side Dishes (한국전통 밑반찬류에 사용된 보존 Hurdle의 발굴)

  • We investigated food preservation hurdles used for Korean traditional side dishes. As a first step of the research preparation and cooking recipes of the side dishes were surveyed, which are commonly used in Korean households. As next step, compositional and microbial quality attributes were measured onto the samples collected from the market. Antimicrobial ingredient added in the preparation are reasoned to work as important hurdles based on the scientific principles. Heating processes such as blanching, boiling, braising, hard-boiling and frying help to keep the produce decontamination or water activity adjustment. Measured salt contents of most side dishes were in the range of 1-5% with those of salt-preserved vegetables being higher. pH values were 4.7-6.4 with those of salt-preserved vegetables being lower and those of hard boiled fishes being higher. Soluble solids of braised or hard-boiled dishes were usually above $40^{\circ}Brix$, while those of blanched and seasoned vegetables had lower values. Water activity values were 0.93-0.95 for seasoned vegetables and 0.77-0.88 for hard-boiled or semi dried beans and seafoods. Product with processing steps of braising or blanching showed lower bacterial load of 102-104 cfu/g, while seasoned or salt-preserved vegetables and seafoods had aerobic bacterial count above 106 cfu/g. Korean traditional side dishes were found to apply the appropriate combinations of heating preparation process, water activity and pH adjustment and salting, providing the required preservation properties.

일부 서울지역 대학교 급식 식단의 메뉴분석-직영급식 및 위탁급식 운영 형태별 비교

  • 사회생활 양식이 점차 복잡해지고 생활전반의 조직이 고도화됨에 따라 대규모 급식의 필요성이 점점 증가되고 있다. 그 동안 단체급식은 자체적으로 운영하는 경우가 많았으나, 최근 들어 위탁운영의 효율성에 대한 인식이 높아짐에 따라 위탁 운영률이 크게 높아지고 있다. 현재까지 대학급식에 관한 연구는 대학식당의 이용실태, 대학 식단의 만족도 평가, 대학급식 메뉴 관리 및 운영 등을 조사한 연구는 많았으나 운영형태에 따른 식단 분석 연구는 미흡한 실정이다. 이에 본 연구에는 서울 시내 일부 대학교의 구내에 있는 5개 식당 23가지 식단에 대하여 직영급식과 위탁급식으로 나누어 학생들에게 제공되는 메뉴를 영양가면과 다양성 면에서 평가하고, 제공된 메뉴를 학생들이 실제 섭취하는 실태를 조사하여 섭취한 식단의 영양가와 음식의 종류를 분석하였다. 본 조사에서 이용한 식단은 총 23가지였고, 그 중에서 직영급식 13가지, 위탁급식 10가지였다. 제공된 상용식단형태는 직영급식은$\ulcorner$밥+국+반찬2+김치1$\lrcorner$, 위탁급식은 $\ulcorner$한그릇+국+반찬1+김치1$\lrcorner$이었으며, 우리나라 전통의 기본패턴을 갖추고 있었다. 제공된 식단 중 한끼 영양소 함량을 평가해본 결과 여자의 경우 1/3 영양권장량을 제공하였으나, 남자의 경우는 부족하였다. 제공되는 식단의 음식군별 제공열량을 살펴보면 밥은 평균 399㎉, 한그릇음식은 425㎉로 한 그릇음식의 경우가 높은 열량을 제공하고 있었다. 반찬의 경우 1가지로부터 얻는 열량은 평균 107㎉였으며 김치의 경우는 9.84 ㎉였다. 직영급식과 위탁급식으로 나누어 살펴보면 한 그릇음식, 반찬, 김치의 제공열량이 위탁급식에서 약간 높은 경향을 보였다. 대상자의 음식의 평균 가짓수는 직영 5.5가지, 위탁 4.3가지였으며, 음식 및 반찬 가짓수가 증가할수록 섭취열량이 증가하였다. 대상자들의 섭취한 식단의 한끼당 섭취한 영양소 함량은 직영급식 524㎉, 위탁급식 494㎉였고, 단백질, 지질, 인, 철, 비타민A, 나이아신 등이 유의적으로 직영급식에서 높았다(p<0.001) 섭취한 식단의 영양소 함량은 인과 비타민C를 제외한 모든 영양소에서 권장량에 미달되었다. 섭취한 식단의 영양소적정섭취비는 대부분 0.4-0.9의 값을 보였고, 평균적정섭취비도 직영, 위탁 모두 0.68로 낮은 값을 보였다. 영양소 밀도의 경우 절대적 섭취에서 직영급식이 대부분의 영양소를 많이 섭취하고 있는 것과는 달리 위탁급식에서 철분의 밀도가 유의적으로 높았다(p<0.01). 총 대상자들이 식단에서 섭취한 열량을 살펴보면, 주식류의 경우 밥은 298㎉, 한 그릇음식은 386㎉로 한 그릇음식이 많은 열량을 제공하고 있었다. 반찬의 경우는 1가지로부터 얻는 열량은 78㎉, 김치는 8㎉였다. 이상의 결과로 볼 때, 제공량은 직영급식에서 많았으나 영양밀도 면에서는 큰 차이가 없는 것으로 보아 위탁급식의 제공량을 늘린다면 급식운영형태별 두 식단의 질적 차이가 크게 줄어들 것으로 보인다. 그러나 두 급식 형태 모두 제공식단의 영양소 함량은 다른 지역이나 연령에 비해 부족한 것으로 나타나 아침 결식 및 불규칙한 식사 등 영양상태가 좋지 못한 대학생들에게 교내 식당에서 질 높은 식사를 제공해야 할 것이다. 또한 식단 작성 시 학생들의 메뉴 기호도를 충분히 반영시키고 다양한 메뉴를 제공하는데 한계가 있다면 주.부식 외에 다양한 후식제공을 통하여 학교 급식에 대한 질을 향상시키는 노력을 해야 할 것이다.
