The diet food used in this test was composed of the total 16 kinds, such as refined water, herb extract, pomegranate extract, polydextrose and isomalto-oligosaccharide etc. Edible fiber as a major component in dietary food was contained to 2.60%(w/w) level. But the calorie was 104.57kca1/100g, contrast of control domestic saengshick product was 368.06kca1. As a result, calorie of dietary food sample was very low level. Vitamin and mineral as a minor component were determined 5, 6 kinds, respectively. On the other hand, dietary effect of body weight loss was determined about 14%(w/w) at animal test result used for rats during 4 weeks. The reason of dietary effect could confirmed from change of plasma neutral lipids, total cholesterol and HDL-cholesterol concentration. Increasing ratio of these in the general diet and dietary diet feeding groups during 4 weeks were 10.55, 6.90, 9.82% and 6.11, 3.85, 6.11%, respectively. from these results, decrease reason of body weight could confirmed the relative relationship with plasma lipids and cholesterol concentration. But plasma plasma glucose and insulin concentration have not positive relativity.

The study was conducted for optimum fermenting conditions of Dongchimi(pony tailed chinese radish kimchi) in production of ion beverage. The changes of pH and total acidity were increased as the temperature increased. Non-volatile organic acids, such as lactic acid, citric acid, malic acid and succinic acid were produced in Dongchimi fermentation. The amount of lactic acid was increased higher, followed by citric acid and malic acid. However succininc acid was produced a little of amount at $0^{\circ}C$. Lactic acid producing bacteria number increased in initial period and then decreased in last period of fermentation. During lactic acid producing bacteria was increased, the amouont of lactic acid was increased. The flavor components were tentatively identified as methyl pentane, ethyl thioethene 2, 3-diazaindolizine, dimethyl disulfide. The optimum fermenting conditions of Dongchimi for production of ion beverage were 24~29 days at $0^{\circ}C$, 9~12dyas at $5^{\circ}C$ and 16~22days at $10^{\circ}C$, respectively.

The medical use of Acer mono MAX. and Betula costata T. sap has had the long history in Korea. So the mineral and sugar contents of these sap gathered in Mt. Jiri area at spring were analyzed to investigate the scientific base of folk remedies by using ion liquid chromatography and high performance liquid chromatography. The values of chlorine and sulfate in Acer mono MAX. were 11.5 mg/l and 176.7 mg/l, and in Betula costata T. 26.5 mg/l and 162.4 mg/l, respectively. The values of potassium, sodium, calcium and magnesium in Acer mono MAX. were 67.9 mg/l, 5.6 mg/l, 73.8 mg/l and 4.5 mg/l, and in Betula costata T. were 152.1 mg/l, 9.7 mg/l, 39.2 mg/l and 5.7 mg/l, respectively. The values of copper, zinc and manganese in Acer mono MAX. were 0.057 mg/l, 0.483 mg/l and 5.071 mg/l, and copper, zinc, mangances and iron in Betula costata T. were 0.038 mg/l, 1.584 mg/l, 4.354 mg/l and 2.511 mg/l, respectively. The values of sucrose in Acer mono MAX. were 27.29 mg/l, glucose and fructose in Betula costata T. were 0.97 g/l and 3.05 g/l, respectively.

This study was conducted to compare fragrance and volatile chemicals of essential oils in Gom-chewi (Ligularia fischeri) and Handaeri Gom-chewi (Ligularia fischeri var. spicifoprmis). Essential oils were extracted by steam distillation of leaves of Gom-chewi (GC) and Handaeri Gom-chewi (HGC), after which samples were collected by solid-phase micro extraction and the compositions of the essential oils were analyzed by gas chromatography-mass spectrometry (GC-MS). The yields of the essential oils in GC and HGC were 0.12% and 0.04%, respectively, and the threshold levels of the essential oils in GC and HGC were 0.01% and 0.1%, respectively. There were 19 constituents of the essential oil of Gom-chewi: 14 carbohydrates, 4 alcohols, and 1 acetate, and the major constituents were L-${\beta}$-pinene (36.02%), D-limonene (25.64%), ${\alpha}$-pinene (24.85%) and ${\beta}$-phellandrene (5.39%). In the essential oil of HGC, 25 constituents were identified: 17 carbohydrates, 4 alcohols, 3 acetates, and 1 N-containing compound, and the major constituents of HGC were D-limonene (39.74%), L-${\beta}$-pinene (35.43%) and ${\alpha}$-pinene (11.94%). The minor constituents of HGC were ${\rho}$-cymene, ${\gamma}$-muurolene, ${\gamma}$-cadinene, germacrene D, ingol 12-acetate and butyl 9,12,15-octadecatriene and nimorazole were not identified in the GC essential oil. Overall, the results showed that the fragrance and chemical compositions of essential oils in GC and HGC differed, suggesting that both essential oils could be used for the development of perfumery products.
Concentrations of 5 major minerals(Na, K, Ca, P, Mg) and 3 trace elements(Mn, Mo, Ni) were measured in human milk samples collected from 21 highly selected healty lactating women at 2-5 days and at 1, 2, 4, 6 and 12 weeks postpartum. Significant decrease in contents of the major minerals and trace elements were found with time postpartum. Sodium contents decreased from 293.01ug/N at 2-5 days to 194.27ug/N at 12 weeks. Potassium contents also decreased from 436.18ug/N in colostrum to 358.51ug/N in matured milk at 12 weeks. The Ca/P ratios of colostrum transitional and matured milk were 3.39, 281 and 2.45 respecti-vely. Mean manganese levels of colostrum and transitional were 0.024ug/N and those of matured milk were 0.014ug/N. Molybdenum concentrations in the breast-milk collected at 1, 2, 4 weeks were higher than those in the milk samples at 2-5 days and 12 weeks Nickel content of colostrum was 0.062ug/N and those of trnsitional matured milk were 0.22ug/N and 0.017ug/N, These determinations will provide the basic information on the variability of minerals and trace elements as lactation proceed and the comparison of the components between term and preterm milk.

This study examined the nutrient components and physicochemical properties of Acer termentosum Maxim. leaf as a natural health food source. To accomplish this purpose, the general and antioxidative contents of Acer termentosum Maxim leaf were measured. Total contents of carbohydrates, crude protein, crude lipid, and ash were 53.6%, 24.3%, 3.5%, and 3.5%, respectively. Caloric content of Acer termentosum Maxim was 246.5 kcal, while total dietary fiber was 46.7%. Regarding mineral contents, K was the most abundant mineral, followed by Ca, Mg, and P. Therefore, Acer termentosum Maxim is an alkali material. Total phenol contents of the 70% ethanolic extracts of Acer termentosum Maxim was $116.35{\pm}1.4mg\;GAE/g$. Total flavonoid contents of the 70% ethanolic extracts were $20.3{\pm}1.23mg\;RE/g$. The antioxidative activities of Acer termentosum Maxim. were significantly increased in a dose dependent manner on DPPH(1,1-Diphenyl-2-picrylhydrazyl) radical scavenging, ABTS (2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt) radical scavenging, FRAP (ferric reducing antioxidant power) activity, reducing power. It is expected that follow up study of Acer termentosum Maxim through developing processed food and evaluation of their functional properties would provide useful information as a source of functional foods.

Nitric acid and hydrofluoric acid are used for acid pickling in zirconium alloy tubing manufacturing process. Nitrate and fluoride in the wastewater were treated by chemical coagulation and SOD (Sulfur Oxidation Denitrification) process. This study is investigated the effect of fluoride concentration and the optimal condition for SOD process. The limited fluoride concentration for SOD process was below 20 mg F-/L. The adjusted pH and alkalinity by NaOH and $NaHCO_3$ was shown to be more effective for removal of nitrate compared with using NaOH. Furthermore, the microbial activator mixed trace elements and ingredient for alkalinity did not only supplement with alkalinity but also enhance the growth and proliferation for sulfur-oxidizing bacteria. As a result, the inorganic industrial wastewater was successfully treated by the microbial activator in SOD process without continuous addition of seed sludge. Finally, SOD process was shown to remove nitrate in industrial wastewater and to contribute the microbial activator for activation of sulfur-oxidizing bacteria.

The proximate compositions, fatty acids, and amino acids of mung bean(Phaseouls aureus) were determind: 1. The proximate compositions of mung bean were 24.80% crude protein, 4.75% crude fiber, 4.75% crude ash, 46.03% carbohydrate and 0.82% fat. 2. Saponification number, iodine number and non-saponifiable content of the lipids extracted from mung bean were 154.99, 117.05 and 14.83% respectively 3. The protein of mung bean was composed of glutamic acid (15.92%) and aspartic acid (12.09%) as major amino acids and considerable amounts of leucine (8.19%), arginine(7.31%) and pheylalanine (6.41%). The essential amino acid content including lysine(8.3%), threonine (3.5%) and tyrosine (2.83%) was higher than those of rice and barley which are deficient in those amino acids. 4. The lipids were composed of 35.5% linoleic acid, 15.5% linolenic acid and palmitic acid, 37% stearic acid, 5% oleic acid as major components, and 0.4% myristic acid, 1.0% arachidonic acid and 1.2% behenic acid as minor components. The saturated and unsaturated fatty acid ratio of oil extracted with di-ethyl ether from mung bean was $42{\sim}43/57{\sim}58%$.

To evaluate Protaetia brevitarsis as a food material, we investigated its composition of nutritional and harmful components. Analysis of nutritional composition (moisture, crude protein, crude fat, crude ash, crude fiber, and carbohydrates) showed that the content of crude protein, fat, fiber, and ash were $57.86{\pm}0.01$%, $16.57{\pm}1.81$%, $5.31{\pm}0.10$%, and $8.36{\pm}0.10$% in Protaetia brevitarsis powder, respectively. Amino acids were composed of 17.68% essential and 33.97% non-essential in Protaetia brevitarsis powder. Protaetia brevitarsis powder contained 61.10% unsaturated fatty acid with oleic acids. Additionally, Protaetia brevitarsis powder had a large quantity of minerals related to body organization, such as K (1597 mg/100 g), P (724.1 mg/100 g), Mg (366.3 mg/100 g), and so on. We also confirmed that all bacteria and all heavy metals analyzed in this study, except for very small amount of Hg ($0.1{\pm}0.042$ mg/kg), were not detected in the lysophilized Protaetia brevitarsis powder.
Purpose: This study analyzed iodine intake by establishing an iodine database of general Korean foods eaten by Korean adults based on the data from the 1998 ~ 2014 KNHANES (Korea National Health and Nutrition Examination Survey). Methods: Data on 56,818 subjects aged 19 years and older were obtained from health behavior interviews and a 24-hour dietary recall survey. Iodine intake of subjects was analyzed according to general characteristics, dietary lifestyle, food groups, and cooking method. Results: An iodine database was established for 312 food items. The mean iodine intake of Korean adults decreased from $641.6{\mu}g$ in 1998 to $236.2{\mu}g$ in 2014 per day. Iodine intake of women was higher than that of men. For age distribution, those aged 30 ~ 49 years constituted more than 39 ~ 46% of subjects by survey year. Regarding iodine intake according to dietary lifestyle, the highest iodine intake was 29.4 ~ 34.4% for lunch while that of breakfast decreased. The highest iodine contribution by food group was seaweed such as kelp, sea mustard, and laver. Conclusion: The results of this study indicate that iodine intake of Korean adults has been decreasing, and iodine intake is associated with the prevalence of thyroid disease. This study provides basic data for the estimation of iodine intake in Korean adults.
