Antioxidative Ability of Some Produces in Ulleungdo and Quality Characteristics of the Taffy Made from the Produces (울릉도 주요 농업특산물의 항산화능 및 이를 이용하여 제조한 엿의 품질 특성)

  • This study was conducted to investigate the anti-oxidative abilities of certain products in Ulleungdo, such as sweet pumpkin (Danhobak), goat's beard (Samnamul), and Aster glegni (Bugigangyi), quality characteristics of sweet pumpkin taffy containing these products. Total polyphenolic contents of the Samnamul water and ethanol extracts were 2.95 mg% and 3.57 mg%, respectively, whereas those of the Bugigangyi water and ethanol extracts were 2.77 mg% and 2.75 mg, respectively. However, the total polyphenolic contents of the pumpkin water and ethanol extracts were 0.32 mg%. Reducing power ($OD_{700}$) of the Samnamul and Bugigangyi water and ethanol extracts (0.01%, w/v) was in the range of 1.62~1.91, which was higher compared to those of sweet pumpkin (0.02~0.03). Electron donating abilities (EDA) of the 0.01% Samnamul and Bugigangyi water and ethanol extracts were in the range of 74.91~79.21%, whereas those of the sweet pumpkin water and ethanol extracts were 3.79~14.99%. Optimum mixing ratio of steamed sweet pumpkin and water taffy for the preparation of taffy was 25:75 (w/w), as evaluated by sensory evaluation. Optimum adding ratio of Samanmul and Bugigangyi ethanol extracts to pumpkin taffy were 0.4% and 3%, respectively. However, the adding ratios of Samanmul and Bugigangyi powder to pumpkin taffy were 0.5~1.0% (w/w) and 1% (w/w), respectively.

  • This study had done to find an easily-dyeing method for novices because the dyeing method of traditional indigo has not been general to the public so that only an expert could dye the fibers. The results are as the following. When the powders after burning the shell of cockle (tegillarca granosa) were added. pH of the solution was 12.35 The k/s value of 2.49 was the highest in the dye after dipping in the solution of indigo for 1-2 days and the k/s value was 3.10 when adding 20 g/l of the starch (55% corn-starchy products in Korean market) into the solution of indigo. In addtion, the k/s value was the highest when fermenting temperature was $30^{\circ}C$ and when the powders after burning the cockle shell were 4 g/l. There were no differences between water and lye of rice straw which had used for the ferment of indigo. The components of two dye which has traditionally made of the cockle shell and which has made of calcium hydroxide were all the same.

  • Yukwa, one of the favorite Korean traditional snacks, is a oil puffed rice cooky used for sacrifies, ceremony or celebration of an event. It had been prepared by most of house-wives for a long time fellowing old reference and still be made by some skilled persons in country side these days. The preparation methods of the Yukwa differ a little each other region by region. This survey was conducted to excarvate any hidden traditional methods and collect different cases as many as possible through pre-made questionaire. 151 questionaires were collected at 7 provinces and evaluted by similar items.

냉면소스 제조공정의 표준화를 통한 품질향상 연구

  • 최근 소득수준의 향상과 여성의 사회진출로 인해 우리의 식생활도 많은 부분이 사회화되고 있다. 즉 완전조리식품과 반조리식품이 급격히 증가하고 있다. 기존의 인스탄트식품이 저가격, 반건강 특성으로 생각되어진 반면 최근 고가의 건강 지향적인 반조리식품으로 변화하고 있다. 이러한 경향은 식품가공기술 및 식품포장기술의 향상과 사회적요구에 부합된 결과로 사료된다. 이에 대표적인 경우가 다양한 소스류의 상품화 경향이다. 본 연구개발 사업에서 이루어지는 냉면소스도 가정에서 하기에는 번거롭고, 건강지향적 식생활로 메밀의 수효가 증가하여 냉면의 소비가 증가하리라 생각된다. 현재 시판되고 있는 기존의 몇몇의 제품들이 있기는 하나 제조공정, 보존상태 등에서 많은 문제점이 있다. 따라서 문헌 통하여 기존제품의 배합비를 조사하고, 냉면소스 배합비의 최적화를 위해 10여차례에 걸쳐 20종류의 소스에 대하여 배합비의 변화와 관능검사에 의해 배주스, 양파, 겨자, 마늘, 설탕, 물엿, 소금, 미원, 참기름, 고춧가루, 진간장, 생강즙, 식초, 파인애플로 구성된 소스를 개발하였다. 개발된 소스의 pH, 당도, 염도, 색차를 측정하여 관능검사의 결과와 비교 검토하였고, 식품재료의 차이에 의한 맛의 변화를 보정하기 위한 근거로 사용하였다. 저장성 검사를 위해 일반세균과 대장균을 검사하였다. 그 결과는 다음과 같다. 소비자들의 기호에 맞는 냉면소스를 개발하기 위해 다양한 식품의 배합을 시도하여 상품성이 있을 것으로 판단되는 recipe를 완성하였고, 일반인(주부)들을 상대로 한 호감도 조사에서도 좋은 성적을 나타내었다. 시료를 1주간격으로 한달간 실험한 결과 쇠고기가 들어 있는 제품을 제외하구 대장균은 검출되지 않았으며 일반세균은 위생법의 허용치내에 있었다. 쇠고기가 있는 제품은 가격상승과 저장성에 문제가 있어 이를 제하고 최종적인 레시피를 결정하였다.있었다. 그러나 식이 섭취상태와의 관련성은 나타나지 않았다. 이상에서 생활습관이 신체계측치 및 혈중 지질 농도와 일부 상관을 보이는 것을 알 수 있었으며, 건강위험 요인도 관찰할 수 있었다. 고지혈증은 심혈관계질환의 주요한 위험 인자로 알려져 있으며, 그 유발 요인에는 여러 환경적인 요인과 식이 요인이 있다. 또한 생활습관은 영양소의 섭취량에도 영향을준다. 이처럼 식이 요인과 생활습관은 단독 혹은 상호 영향을 주게 되므로 고지혈증 및 심혈관계질환을 개선하려면 식사요법과 생활습관 교정을 병행하여야 한다. 고지혈증의 원인 중의 하나로 지적되고 있는 음주와 흡연은 상호 유도작용이 있으므로 금연이나 절주를 하고자 할 경우 두가지를 동시에 자제해야 효과적일 것으로 생각된다. 폐경후 여성들에게 발생 빈도가 높은 심혈관질환의 위험요인인 고지혈증을 예방하고자 하는 노력은 폐경후 여성들의 삶의 질적 향상을 위해서도 매우 중요하다. 또한 균형식 섭취와 운동을 통해 혈중 지질 수준을 건강하게 유지하고, 비만으로의 이행을 방지함으로써 심혈관계질환을 예방하도록 하여야겠다.료보다 절반이하 수준이었다. Manufacture of Fermented Cantaloupe Melon with Lactic Starter Culture (유산균을 이용한 참외 발효식품의 제조)

  • Addition of starch syrup, table sugar, potato powder, skim milk powder an parched soybean powder to melon flesh was suitable as fermented melon base. The manufacturing process of fermented melon was as follows: Pasteurization for 10 min at $95^{\circ}C$, use of 1% starter culture, fermentation for 12 hours at $35^{\circ}C$ and ripening for 3 days at $8^{\circ}C$. The growth and acid production of Pediococcus acidilactici among several starter cultures were most active for the first 12 hours, but such activities were disappeared during ripening. In the case of Lactobacillus plantarum, the activities were not high during fermentation, which, however, increased during ripening. Throughout the whole manufacturing process, the fermented melon with a mixed culture of P. acidilactici and L. plantarum showed more cell number of each bacterium and higher titratable acidity than that with single cultures. Also P. acidilactici surpressed the growth of L. plantarum during ripening.

Control Effects of Bemisia tabaci on Eggplant using Sticky Trap (가지에서 끈끈이트랩을 이용한 담배가루이 방제효과)

  • This experiment was conducted to develop control method for Bemisia tabaci (Gennadius) on eggplant using sticky trap method. According to the color of the sticky traps, the attractiveness of the B. tabaci was the highest in the yellow trap, followed by the green and orange. However, white, blue, red, black and green sticky traps have reduced attractiveness of B. tabaci. In order to improve the efficiency and attractiveness of sticky trap to the B. tabaci, the different kinds of sugars such as glucose, fructose, oligosaccharide, starch syrup and pure sugar were added to sticky traps respectively. However, the effect of B. tabaci attractiveness was low in starch syrup, pure sugar, and non-treated sticky traps. The attracting effect of B. tabaci was depending on the location of sticky trap. The highest value was obtained where sticky traps were located in the top of the eggplant, followed by 30 cm above from the top level. In addition, we were installed up to 40 sticky traps to determine the optimal amount of sticky traps to control B. tabaci in eggplant. When increasing the sticky traps, the number of adult and nymphs of B. tabaci were tended to be decreased significantly. This tendency was more effective in the latter stages than in the early stages. As the number of sticky traps increased, not only the growth rate of eggplant, leaf length, and stem diameter were to be better. But also number of fruits and product marketable value were increased at the early stage of growing as well. The study had proven that the sticky traps had an effect on increasing the yield at the early stage of growth, but the efficiency of controlling decreased due to the high density of B. tabaci of the next generation.

A Survey on the Sensory Preference for Making Summer Kimchi by Nationwide Region (여름철 배추김치 담금시 지역별 관능적 선호도 조사)

  • The purpose of this study was to investigate the preferred methods for making summer kimchi as a basic research of making commercial kimchi. Questionnaire were collected from 590 housewives nationwide in Korea, and the data were analyzed by SPSS program. The results were as follows: (1) The average salting time of Chinese cabbage was 3~5 hrs when the combined method of dry and brine salting was used, regardless of the region. (2) Seven jeotkals (salt-fermented fishes) including anchovy, anchovy juice, shrimp, northern sand lance juice, hair-tail viscera, flatfish and yellow corvenia were mainly used in kimchi. Among them, anchovy and anchovy juice jeotkals were preferred to all others in Southern area (Busan, Gwangju, Gyeongnam, Gyeongbuk, Jeonnam), while shrimp jeotkal in Seoul, Gwangju, Jeonbuk, Chungnam and Jeju, and northern sand lance juice jeotkal in Daegu, Daejeon and Gyeonggi, respectively. In most regions, however, blending type of 2 jeotkals was used in kimchi. (3) Eleven ingredients such as red pepper, garlic, ginger, green onion, radish, leek, onion, carrot, sugar, sesame and MSG were used as basic components for making kimchi. In particular, MSG was used as a basic ingredient regardless of region and age. However, a standard taste for making kimchi was depended on housewife in this study.

Quality Characteristics of Yanggeng Prepared by Different Ratio of Pumpkin (늙은 호박의 혼합비율을 달리하여 제조한 호박양갱의 품질 특성)

  • This study was performed to investigate the quality characteristics of yanggeng prepared with different ratios of pumpkin. Yanggeng was prepared with three concentrations of pumpkin paste, 87% (sample A), 90%(sample B), and 93%(sample C), to which was added agar, sugar, millet jelly and salt. Proximate composition, Hunter's color, texture profile analysis and sensory evaluation of yanggeng were examined. Lightness of pumpkin yanggeng increased with increasing pumpkin content. In the texture profile analysis, the hardness, cohesiveness and springiness of sample A were significantly higher than those of the other products. The gumminess of sample C was the highest, followed in order by A and B. The tendency of the pumpkin yanggeng to fracture increased with decreasing pumpkin content whereas the elasticity decreased. In the sensory evaluation, the color and taste scores of sample B were significantly higher than those of A and C. Also the overall acceptability of sample B was the highest of the three products.

The Change of Anthocyanin and Spreadmeter Value of Strawberry Jam by Heating and Preservation (딸기잼의 안토시아닌과 Spreadmeter치의 가열 및 저장중 변화)

  • In attempt to explain the effect of heat processing on the product quality in manufacturing strawberry jam, the heat stability of anthocyanin in strawberry by addition of some sweetners was studied, and the effect of sucrose by concentration and pH were also investigated. The heat stability of anthocyanin was maximum at pH 2.5 when maintaining at $87^{\circ}C$ for 60 minutes initially, but it was shifted to pH 3.0 after additional heating of 120 minutes. When the corn syrup, sucrose and glucose were used as a sweetner for manufacturing strawberry jam, the results showed that heat stability of anthocyanin in corn syrup was higher than that in sucrose and fructose, and the optimum concentration of sucrose for heat stability was 66 Brix%. The results also showed that anthocyanin content in strawberry jam significantly decreased logarithmically at $37^{\circ}C$, and spreadmeter value changed slightly at $37^{\circ}C$storage but it was not significant.

Establishment of the Preparation Method on Quality Changes of Seasoned Perilla Leaves during Storage (깻잎절임의 조리조건 확립 및 품질변화)

  • Process development and standardization are necessary in maintaining high hygienicquality of side dishes. Seasoned perilla leaves are a typical side dish needing process development. In this study the optimum condition for preparing seasoned perilla leaves was investigated experimentally. The best sensory quality was established by response surface methodology. The rinsing and washing method of preparing fresh perilla leaves was optimized to decontaminate the raw material and preserve the product in chilled storage. Washing and rising with 3% salt water reduced the aerobic bacterial count of perilla leaves to 0.55 (log CFU/g), while rinsing reduced the load from 8.08 to 4.27 (log CFU/g). The effect of rinsing method was maintained during subsequent storage of the prepared seasoned leaves at $10^{\circ}C$. There was no significant quality change in the product during chilled storage at $10^{\circ}C$. Soaking in 3% salt water for 1 min, followed by rinsing with tap water, contributed positively to the microbial quality, and is proposed as the optimal preparation method.
