  • This study investigated the quality characteristics and antioxidant effect of muffins that were prepared with the following lemongrass-powder concentrations: 0%, 1%, 3%, 6%, and 9%. The lemongrass-powder concentrations were added to the flour during the basic-formulation process, whereby the heights and volumes decreased significantly when the amount of lemongrass powder was increased. As a result of measuring the colors, the lightness and yellowness of the muffins decreased, whereas the redness increased with the increases of the lemongrass-powder concentrations. When the textures of the lemongrass muffins were measured, the chewiness and adhesiveness decreased with the increases of the lemongrass-powder concentrations. When the sensual qualities of the muffins were measured, the colors, flavors, tastes, textures, and overall quality of all of the samples show that the 3% lemongrass-powder concentration revealed the highest sensual-quality indexes. Further, the DPPH and ABTS radical-scavenging activities increased according to the concentration of lemongrass powder, whereby the former increased significantly when the amount of lemongrass powder was increased.

  • This study was performed to examine the quality characteristics of the sponge cakes with different contents (2-10% (w/w)) of lemon grass powder (LGP). An increase in LGP content in the cake led to a significant increase in the specific gravity of batter, baking loss rate, redness, hardness, cohesiveness, chewiness, and 1,1-diphenyl-2-picrylhydrazyl radical scavenging activity of the cakes and a significant decrease in pH, moisture content, specific volume, height, volume and symmetry index, lightness, and yellowness of the cakes. Springness and resilience did not show any difference between the cakes. The consumer acceptance test indicated that the addition of LGP up to 2% did not cause a significant negative effect on the consumer acceptances in all attributes. The sponge cakes with 2% LGP can be recommended for manufacturing bakery.

  • This study investigated the Antimicrobial activity of Rutaceae fruit ethanol extracts against microorganisms-induced skin inflammation in cosmetic materials. Rutaceae fruits were separated in two parts of whole fruit (pulp, pulp fegment membrane, peel) and peel, and extracted with 70% ehtanol. The results demonstrated that Rutaceae fruit ethanol extracts showed antimicrobial activity in 5 strains except Staphylococcus aureus. In particular, the antimicrobial activity against Staphylococcus epidermidis was the best in fresh lemons whole fruit. The antimicrobial activity against Escherichia coli was shown only in fresh lemon peel and fresh trifoliate peel. Additionally, antimicrobial activity against Propionibacterium acnes was shown only in the dried lemon peel. In the results of antimicrobial activity against Pityrosporum ovale, in the case of fresh fruits, citron whole fruits showed the highest effect, followed by lemon whole fruits and mandarin orange peel. And in the case of dried fruits, orange peel showed the highest effect, followed by trifoliate peel, mandarin orange peel and lemon peel. Therefore, it is considered that lemon, which shows antimicrobial activity against all skin inflammation-causing microorganisms, can be used as a natural material for improving skin inflammation in cosmetics.

  • This study examined the growth of herb plants in response to irrigation on a green rooftop area in order to select herb plants that can be used for rooftop greening. Apple Mint (Mentha suaveolens), Lemon balm (Melissa officinalis), Spearmint (Mentha spicata), Pineapple sage (Salvia elegans), Choco Mint (Mentha ${\times}$ piperita 'Choco Mint'), Ox-eye Daisy (Chrysanthemum leucanthemum), Roman Chamomile (Anthemis nobilis) and Thyme (Thymus vulgaris) showed increased growth when irrigated. Conversely, Lavender (Lavendula angustifolia ), Peppermint (Mentha ${\times}$ piperita ), Vicks Plant (Plectranthus tomentosa), Feverfew (Tanacetum parthenium), Rosemary (Rosmarinus officinalis), Tansy (Tanacetum vulgare), Lemon Verbena (Aloysia triphylla), Heliotrope (Heliotropium arborescens), Soapwort (Saponaria officinalis) and Lady's mantle (Alchemilla vulgaris) demonstrated satisfactory growth regardless of irrigation. Peppermint, Tansy, Lemon Verbena, Soapwort, and Lady's mantle seem to be suitable for green rooftop because of their overwintering ability and drought hardiness. Pineapple sage, Apple Mint and Thyme would seem to be inappropriate for rooftop greening because they showed negative growth response to drought and failed overwintering. Although Spearmint, Lemon balm, Choco Mint, Ox-eye Daisy and Roman Chamomile had reduced growth during dry conditions, they were able to overwinter satisfactorily and can be used as rooftop plants with irrigation.

  • The healing effect of the aroma treated fabrics with lavender and lemon aromas was investigated by assessing the autonomic nervous responses of human body. For this cause Lemon and lavender microcapsules were coated on a cotton fabric using a water-based acrylic binder, respectively. And the study created a total of four aroma treated fabrics at a concentration of 2% and 5% respectively. Electrocardiogram(ECG), skin conductance, and Blood flow, of ten participants were measured for 30 sec at a stable condition, at a stress status (working memory task), and at a stimulation status (after rubbing aroma treated fabrics). Subjective sensibilities of the aromas were also evaluated. With regard to the responses of the autonomic nervous system, in order to understand how the values gained after the normalization process would cause different physiological signals between the stable state and the aroma-stimulated state as well as between the stress state and the aroma-stimulated state, the study conducted a non-parametric test, friedman test as well and analyzed tendencies. LF/HF turned out to be significantly different to the stress state, and according to the results of the post-hoc comparison, lemon 5% presented statistically significant differences among the lavender 2%, lavender5%, lemon2%. Lemon 5% stimuli increased stress but stimuli consisting of the lavender 2%, the lavender 5% and the lemon 2% decreased stress because of a psychological rest. And the stimuli of the lavender 2%, the lavender 5%, the lemon 2% presented a healing effect in this research.

  • This study was carried out to evaluate the antioxidant, anti-inflammation, and tyrosinase inhibitory activity of Melissa officinalis extracts and their fractions. The total polyphenol contents of the extracts were 33.02-302.76 mg GAE/g and total flavonoid contents were 9.98-325.07 mg CE/g. In 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging assay, DPPH radical scavenging activity was observed in the extracts and water fractions of M. officinalis and similar to that of ascorbic acid ($30{\mu}M$). In addition, the treatment of chloroform fraction significantly inhibited the production of nitric oxide (NO) in RAW 264.7 cells, indicating that they have anti-inflammatory activity. Tyrosinase inhibitory activity of $200{\mu}g/mL$ of 100% ethanol reflux extract showed better inhibitory activity than arbutin treatment at statistically significant level. As a result, it is considered that M. officinalis can be used as an effective cosmetic ingredient having antioxidant, anti-inflammation, and whitening activity.
