옻나무 첨가 사료의 급여에 따른 한우육 및 돈육의 저장 중 산소 함량의 변화

  • 옻나무 첨가 사료를 급여하여 사육한 한우육과 돈육의 위생학적 품질을 시험하기 위하여 Pseudomonas aeruginosa를 각 한우육과 돈육에 접종하여 저장 중 헤드스페이스의 산소함량의 변화에 미치는 옻 급여효과를 조사하였다. 옻나무 첨가 사료의 급여가 한우육의 $5^{\circ}C$저장 중 헤드스페이스의 산소 함량에 미치는 영향은 저장기간 동안 옻나무 첨가 비율에 따른 차이는 없었다. 그러나 4%의 옻나무를 3, 4, 5, 6개월 급여한 경우, 3, 4개월 급여한 처리구보다 5,6개월 급여한 구가 높은 잔존 산소함량을 나타내었다. 옻나무 첨가 사료의 급여가 돈육의 저장 중 헤드스페이스의 산소 함량의 변화에 미치는 영향은 저장온도 $0^{\circ}C$의 경우 산소 함량의 변화가 미미하여 시험구에 따른 큰 차이는 나타나지 않았다. 저장온도 $5^{\circ}C$의 경우, 저장 14일째 옻나무 4% 첨가구가 2% 첨가구에 비하여 높은 잔존 산소 함량을 나타내었다.

  • 육가공품의 품질 평가를 과학적으로 객관적으로 하기위해 원료육의 결합조직내에 포함된 hydroxyproline의 함량을 정량화하였다. 축산물 중 hydroxyproline의 함량은 돈육 > 계육 > 우육의 순서로 나타났으며 이 중 돈육의 등급에 따른 hydroxyproline 함량은 등급이 낮을수록 높게 측정되었다. 이상의 결과를 통해 돈가스 육가공품의 hydroxyproline의 함량을 측정한 후, 제품에 포함된 돈육의 비율 및 수분함량을 계산하여 돈가스 제품에 사용된 돈육의 등급의 추정할 수 있었다.

  • 본 실험은 사료내 옻 급여 수준에 따른 돈육의 육질에 미치는 영향을 알아보고자 실시하였다. 사료 내 옻나무 첨가 급여 수준은 비육후기 사료에 옻 분말 2%, 4%를 첨가하여 8주 동안 급여하여 돈육의 육질 분석에 이용하였다. 옻 급여 수준이 돈육의 성별에 따라 다른 경향을 보여 주었다. 옻 급여구들이 대조구보다 pH값과 보수력에 낮게 나타났으나 유의적 차이는 없었다(P>0.05). 육색에 있어서는 전체적으로 옻 급여구들이 대조구보다 $L^{\ast}$값과 $a^{\ast}$이 낮게 나타났고 $b^{\ast}$값은 높게 나타났다. 기계에 의한 물성 특성에서는 옻 급여 수준에 따른 차이는 없었다.

Adherence Rates of Salmonella Typhimurium and Salmonella spp. in Pork Meat Contaminated during Processing (포장돈육 중 Salmonella Typhimurium과 Salmonella spp.에 오염된 돈육으로부터 식품과 식품접촉면으로의 오염 부착율)

  • This study was performed to determine the adherence rates of standard type Salmonella Typhimurium (ST) and wild type Salmonella spp.(WT) in pork after the following contact types and times at $10^{\circ}C$: pork meat (2, 6, 24 hr), conveyer belt (2, 6 hr), stainless steel (2, 6 hr), and cutting board (2, 6 hr). After 6 hr of pork meat to meat fat contact, the adherence rates for ST and WT were approximately 4.21 and 26.87%, respectively, and after 6 hrs of pork meat to red meat contact they were 16.40 and 27.48%, respectively. However, after 24 hr of both types of contact, ST and WT showed 100% adherence rates. The adherence rates for ST after 2 hr and 6 hr of pork meat to conveyer belt contact were 1.34 and 0.60%, respectively, while the adherence rate for WT was 5.14% after 6 hr of contact. After pork meat to stainless steel contact, ST showed adherence rates of zero and 1.59% after 6 and 24 hr of contact, respectively, while the adherence rates for WT ranged from 0.17% after 2 hr to 5.01% after 6 hr. On the other hand, neither ST nor WT offered adherence data following pork meat to cutting board contact. These results suggest that the adherence rates of ST and WT after pork meat to pork meat contact or pork meat to processing surface contact were significantly affected by the contact time and WT presented much higher adherence rates for both types of transmission than ST.

Effect of supercooling on the storage stability of rapidly frozen-thawed pork loins (과냉각 온도가 급속냉동-해동 처리된 돈육 등심의 저장성에 미치는 영향)

  • This study was performed to determine the rapid thawing method for reducing the thawing time of frozen pork loins and to examine the effects of supercooling on the microbiological, physicochemical, and sensory qualities of fresh and frozen-thawed pork during storage at -1.5, 4, and $15^{\circ}C$. Forced-air thawing at $4^{\circ}C$ was the most time-consuming process, whereas radio frequency thawing time was the shortest by dielectric heating. The supercooling storage temperature was chosen to be $-1.5^{\circ}C$ because microstructural damages were not observed in the pork sample after cooling at $-1.5^{\circ}C$ for 24 h. Fresh or frozen-thawed pork loins stored at $-1.5^{\circ}C$ had lower drip loss and total volatile base nitrogen, thiobarbituric acid-reactive substance, and Hunter b* levels than loins stored at 4 and $15^{\circ}C$. In addition, the least degree of increase in preexisting microorganisms counts of the fresh or frozen-thawed pork loin samples was obtained during supercooled storage at $-1.5^{\circ}C$. Sensory quality results of fresh and frozen-thawed pork loin samples stored at $-1.5^{\circ}C$ showed higher scores than the samples stored at 4 and $15^{\circ}C$. These data indicate that supercooling at $-1.5^{\circ}C$ in the meat processing industry would be effective for maintaining the quality of pork meats without ice crystal nucleation and formation.

Analysis of Transfer Rate on Listeria monocytogenes Contaminated Pork Meat During Processing (돈육 가공공정 중 돈육에 오염된 Listeria monocytogenes의 전이율 분석)

  • In this study, the transfer rate of wild type Listeria mon, ytogenes (LM) was investigated to establish the standard of safety management during pork meat pr, essing for meat to meat and meat to food contact surfaces contamination at 5 and $10^{\circ}C$. The transfer rate of LM from meat to meat during the pr, essing increased from 0.02% after 30 min to 0.42% after 120 min at $5^{\circ}C$, while for conveyor belt and stainless steel, it decreased from 0.015% and 0.013% after 30 min to 0.002% and 0.0003% after 120 min at $5^{\circ}C$, respectively (p < 0.05). When temperature increased to $10^{\circ}C$, the transfer rates of LM from meat to meat, conveyor belt and stainless steel were the highest at 60 min exposure, and all decreased after 120 min. In reverse, the transfer rate from food contact surface to pork meat was significantly higher than that from pork meat to food contact surface (p < 0.01). Also, the transfer rate to conveyor belt was significantly higher than stainless steel (p < 0.05) and it was highest at 30 min exposure time in both 5 and $10^{\circ}C$. This study indicates that the transfer and adherence rates of LM are influenced by the contact time and temperature. Consequently, these results were utilized to develop a predictive model with a high level of confidence which can lead to prevent cross-contamination during pork meat processing.

  • 이번호 세계의 축산현황시리즈(5)에는 우리나라와 가장 인접해있는 일본의 양돈동향을 소개하기로 한다. 작년도만 해도 돈육의 대일 수출의 기회로 양돈가가 급격히 늘었고 돼지 사육두수도 많은 증가를 보였다. 그러나 돈육의 대일 수출이 막히고 사료사정 특히, 강피류 사정이 악화되자 돼지의 방매현상까지 보이는 이때 우리가 일본의 양돈동향을 파악하는 것은 의의 있는 일이라 하겠다.

  • Digital photographs of 16 pork chops were taken and modified images to give 16 treatments: two levels of each of fat cover, color, marbling and drip. Consumers(n = 1,014) were randomly selected and a questionnaire asking for socio-demographic information was completed. Each consumer was asked to select preferred type from 16 treatments and this selection was repeated eight times. There were significant differences in pork selection among age, sex and occupation groups only except income levels. Pork preference choices were different in meat color, fat cover and drip depending on age group. Student consumers aging from 18 to 24 years preferred pork chop having darker color, thinner fat cover and more drip when compared to the other groups(p < 0.05). Male preferred pork having darker and more drip than female(p < 0.05). Marital status had a effect on the preference in meat color and drip. The consumers had different choice in color, fat cover and drip depending on occupation(p < 0.05). This results can provide a fundamental information for industries or processors to develop or produce pork that satisfy each target consumer group in the future.
